RRuuffuuss hhaass hhaannddffuull!!THE KEY THING to remember regardingOrchid’s phenomenal feat at the awards thisyear, is how young the company is.

Orchid were the youngest company at 31/2 to make theshortlist for the top 25 in 2010, and they’re the youngestcompany at 41/2 to make the top 5 this year – which isincredible!The night looked like it was thoroughly enjoyed, with a

particularly amusing pic of an overwhelmed and ‘overwined’CEO holding all the company’s awards. The news of Orchid’swin seemed to cement some of the company’s values firmlyinto place, and the notions of ‘our people make thedifference’ and ‘create an enjoyable place to work’ certainlygained even greater meaning after the Sunday Timesfeedback was given.

The company pipped household names like Waitrose,Marriot Hotels and McDonalds to the post of No.5, andrightly so; although a quarter-pounder with cheese is goodand that, here’s hoping that Orchid have some better food onthose menu thingies to give their staff.

The only reason we can keep bangingon about this number (and we will,and so we should) is thanks to all ourpeople, so give yourselves a hugewallop on the back for not only gettingus this great achievement, but also forenjoying where you work, and as TheSunday Times quoted about thecompany, for keeping our glass ‘mostdefinitely half full’.

Apparently people love working forOrchid so much so, that if they wereoffered another job tomorrow, theywouldn’t leave! Staff returned positivescores of 72% and 71% for the twoquestions in the survey regarding howmuch they loved their job, and wouldthey leave if able to.

“People are the lifeblood of ourbusiness. Without their passion,commitment and motivation Orchidwould not continue to prosper” saysour CEO Rufus Hall. Questionnairesreturned included 69% of usrevealing that we see Hall as aninspiration.

The Orchid Group scored particularlyhigh in the clear communicationsection of the questionnaire, and alsoregarding staff camaraderie, with peopleknowing exactly what is expected ofthem (80%) and feeling a true sense offamily in their teams (77%).

Our people were reported to have agreat deal of faith in their own leaders(80%) and that their respective bossesare supportive (79%) and are alsoexcellent role models (73%).

“We believe by recruiting,training and motivating our staffwe will reduce [staff] turnover,improve morale and increaseproductivity – ultimately leadingto increased profits”, says Hall.

your stories . . .ORCHID EXPERIENCES - ORCHID PEOPLE

Hi all,I’M JADI and will haveworked for Orchid for twoyears by the end of March.The last 12 months havebeen as hectic as they havebeen fantastic!

Starting off at The Links Hotel inFleet, my then Manager GinniMain believed in my potential andentered me onto the Steps toExcellence programme. Althoughthe initial assessment wasextremely daunting I found thetraining to be absolutely brilliant.I’m not really academicallyminded having been a chef since Ileft school, I’m more of a practicalperson. Having said that the Stepscourses gave me the tools to buildon the skills I had and to gain newones that have made my job somuch easier. Lucy Craig is anamazing trainer and helped bytalking me through things in a waythat I could grasp easily. Thecourses were fun which made thelearning process exciting andmade everyone want to return.

Since finishing and graduatingSteps (the graduation party initself is worth doing the coursesfor!) I returned to The Links for ashort time, as the HoldingManager when Ginni waspromoted to the White Hart Hotelin Hook. From there Pip Whitedecided to test me with The Bell atMaidenhead for 3 months, and I’mnot too proud to say that this wasquite a difficult relief to do.Completely out of my comfortzone, with no friendly faces toreassure me and with no Deputy insupport, this relief was a hugelearning curve that made me re-evaluate myself and the role that I

had undertaken. I understood thatperhaps I was not quite ready totake on my first appointment, butthat did not make me give up onwhat has fast become a solid lifeplan for me.

I am currently still on relief at TheRed Lion Hotel in Cosham - whichis again another of Mr Whites testsfor me! This has also been tough tomanage, with no Deputy for thelast couple of weeks andoccasional staffing issues that Ihaven’t always dealt with in thebest way (I am still learning afterall), but with some sound advicefrom Pip I have managed toresolve the issues with minimumfuss.

Pip and I have a good relationshipand are able to talk honestly witheach other. He told me that hedidn’t think I was at the right stageto run a pub on my own, and Iknow that for the moment he isright. He has always had my bestinterests at heart and wants toensure I have the best careerwithin Orchid, so much so that heis willing to lose me from his area,and along with Jo Probert theyhave both created an amazingopportunity for me to work withYvonne Craig, one of our PlatinumPartners, at a new acquisition inBroxbourne, Hertfordshire. I willbe working with Yvonne as herDeputy in our newest ValueCarvery and I’m very excited to bemoving to Fresh Dining and gettingmy teeth into a new concept.

HAVING GRADUATED fromSteps I could quite easilyapply and be appointed formy own pub and do an ok jobat it, but I don’t want to justdo an ok job. I want to be the

best at what I do and have a long,strong career with Orchid. So thisis the best way for me to achievemy dreams by learning all that Ican from Yvonne - who I can notwait to start working with!

Experience, training and acompany that will break theirbacks to help everyone on anindividual basis is priceless, and Icount myself lucky to be workingwithin a company that does justthat. I can’t thank everybodyenough for what they have givenme so Lucy, Tracy, Pip, Jo, Ginniand Yvonne…….. THANK YOU!

OOMMGG!!BEN KEGGANS’ ‘Pork belly on a black pudding and Bramley apple mash with sage jus’

All you Jamie’s and Delia’s, andwell… Ben’s out there shoulddelight in OMG!’s featuredrecipe this month, created byour very own developmentchef, Ben Keggans.This delicious dish won Ben

the Red Tractor porkcompetition – so it must begood! Just follow theinstructions below!

Serves 4 You will need...1200g pork belly2g sea salt260ml beef jus100ml red wine25g redcurrant jelly8g fresh sage25g butter150g Bramley apples180g black pudding 800g mashed potatoes3g fresh parsley

RecipeTime!

�Score the skin on the pork belly and rub all over with the seasalt. Place in an oven set at 1400c and cook for approx 2hours or until the flesh is tender.

� Turn the heat up to 2000c and cook until the skin crisps.� Place the red wine in a hot sauce pan and reduce by half,

add the beef jus, bring to the boil and simmer until the saucehas thickened, add the redcurrant jelly.

� Chop the sage leaves and add to the jus. Peel and cut theapple into 1cm dice. Cut the black pudding into similar sizeas the apples.

�Heat a frying pan, melt the butter and sauté the apples untilsoft, add the black pudding and continue cooking for 5minutes.

� Chop the parsley leaves. Add the cooked apples, blackpudding and chopped parsley to the hot mashed potatoes,stir to combine.

�Spoon the mash in the centre of the plate. Cut the crisp porkbelly into 4 equal sized portions, then cut each portion into3 slices. Arrange the slices on top of the mash. Spoon thejus around the plate and serve!

THE 3D REVOLUTION has definitely been felt by Orchid withover 180 of our pubs, restaurants and bars showing Sports in3D. If you’ve yet to experience the magic of 3D sport, you’re in for a realtreat! However don’t be alarmed when you walk in to find a crowd of peoplein what look like ‘Blues Brothers’ sunglasses.Although many of us were promised we’d have hover boards and flying

cars by now, you still need to don your stylish 3D glasses to enjoy 3Dbroadcasts. These are available at the bar for a small fee which goes tocharity – every little helps!Since Sky launched Sky 3D it has broadcast sports including football,

rugby, cricket, golf and darts! It has taken time to get the angles right, withSky having to buy season tickets from fans to get the perfect spot for theircameras.
