FROSTY THE SNOWMANStuffed Mushroom Caps

20 mushrooms

½ block cream cheese

1 garlic clove, minced

1 c cheddar cheese, grated

bacon bits, to taste

¼ tsp onion powder

black pepper, to taste

dash worchester sauce

spinach (optional)

paprika, to taste

Removes stems from mushrooms and chop � nely. Mix all

ingredients together and stuff mushroom caps. Bake for 20

minutes at 350˚ F. Garnish with paprika. Karin

Mix all ingredients and marinate 2 lbs of chicken wings or drumettes overnight. Cook at 375˚F for 45 minutes or longer. Serve with white rice!

In a small bowl stir together the sugar, nuts, and bran-dy. Cover and chill for at least 24 hours or up to 1 week. Place the brie on an ovenproof platter or pie plate. Bake at 475˚F for 5 min. Spread the sugar mixture on top of the warm brie and bake for another 2 min. Serve with crackers.

Chicken in Wine & Cream Sauce

4 chicken breasts

Flour, salt, white pepper

& garlic powder

2 tbsp fresh chopped parsley

4 shallots, � nely chopped

4 cloves garlic, pressed

1/4 c white wine

1 tsp lemon juice

1/4 c chicken broth

Pinch of thyme

1 c heavy cream

1/2 c sour cream

6 tbsp. butter

4 tbsp. melted butter

Cut chicken in half, dust with � our, baste with melted butter. Sprinkle with

salt, pepper and garlic powder. Place chicken in a 9x13 roasting pan and

bake in a 325°F oven for 15-20 minutes, or until just cooked through. Do

not over cook. Meanwhile saute garlic and shallots in butter until shallots

are soft, but not browned. Add wine and broth. Cook over medium high

heat until liquid is reduced to approximately one half. Add the remaining

ingredients, simmer sauce until slightly thickened, about three minutes.

Cook 1 lb. of linguine pasta and place on platter, top with the chicken

and sauce, sprinkle a little paprika on top for colour.

Chicken & Artichoke Ragout8 skinless, boneless chicken breasts cut in half1/4 c all-purpose � our1 tbsp. paprika1/2 tsp. ea. salt & pepper

1 tbsp. olive oil5 garlic cloves1 large red onion370ml jar roasted red peppers1 c sherry or dry red wine

2-284ml cans chicken broth1 can artichoke hearts, drained1 c pimento-stuffed olives1 c coarsely chopped fresh basil1 tbsp. grated orange peel

In a bowl mix � our with paprika, salt and pepper.

Coat chicken. Save any leftover � our mixture. Heat

oil in a large wide saucepan over medium-high

heat. Add half the chicken beasts and cook until

lightly browned, 3 to 4 min. per side. Remove to a

large plate. Repeat with remaining chicken, add-

ing more oil, if needed. Meanwhile, coarsely chop

garlic. Slice onion into thick wedges. Thickly slice

roasted peppers. Stir garlic and onion into oil in pan. Sprinkle with reserved � our mixture.

Stir constantly over medium heat 1 minute. Using

a wooden spoon, gradually stir in sherry, mashing

any lumps of � our against side of pan. Then grad-

ually whisk in chicken broth until it starts to thick-

en. Add peppers, artichokes and olives. Return

chicken to pan, which will be quite full. Bring to a

boil, stirring often. Reduce heat to medium-low.

Cover and simmer, stirring often, until chicken is

tender, 30-35 mins. Remove from heat. Sprinkle with basil and orange peel. Serve with rice.

When it boils, pour in the brandy and turn off the heat. Light the brandy in the pan with a lighter or long match. When the � ame dies down, stir in the cherries and serve over ice cream.

lightly browned, 3 to 4 min. per side. Remove to a

large plate. Repeat with remaining chicken, add-

ing more oil, if needed. Meanwhile, coarsely chop

garlic. Slice onion into thick wedges. Thickly slice

roasted peppers. Stir garlic and onion into oil in pan. Sprinkle with reserved � our mixture.

Stir constantly over medium heat 1 minute. Using

a wooden spoon, gradually stir in sherry, mashing

any lumps of � our against side of pan. Then grad-

ually whisk in chicken broth until it starts to thick-

en. Add peppers, artichokes and olives. Return

chicken to pan, which will be quite full. Bring to a

boil, stirring often. Reduce heat to medium-low.

Cover and simmer, stirring often, until chicken is

tender, 30-35 mins. Remove from heat. Sprinkle with basil and orange peel. Serve with rice.

FROSTY THE SNOWMANStuffed Mushroom Caps

20 mushrooms

½ block cream cheese

1 garlic clove, minced

1 c cheddar cheese, grated

bacon bits, to taste

¼ tsp onion powder

black pepper, to taste

dash worchester sauce

spinach (optional)

paprika, to taste

Removes stems from mushrooms and chop � nely. Mix all

ingredients together and stuff mushroom caps. Bake for 20

minutes at 350˚ F. Garnish with paprika. Karin

Chicken Wings1 c soy sauce1 c brown sugar1 c water3 green onions

1/4 c vegetable oil1 tbsp. grated ginger2 cloves minced garlic5 drops sesame oil

1/4 c packed brown sugar1/4 c chopped macadamia

nuts or pecans1 tbsp brandy1 (14-ounce) round brie

Mix all ingredients and marinate 2 lbs of chicken wings or drumettes overnight. Cook at 375˚F for 45 minutes or longer. Serve with white rice!

In a small bowl stir together the sugar, nuts, and bran-dy. Cover and chill for at least 24 hours or up to 1 week. Place the brie on an ovenproof platter or pie plate. Bake at 475˚F for 5 min. Spread the sugar mixture on top of the warm brie and bake for another 2 min. Serve with crackers.
