The benefit for Susan Johnson on October 24th was magnificent,” as stated by a T&C employee and I couldn’t agree more! I don't how much money was raised for Susan's care but based on the size of the crowd, I'm sure it was substantial. Equally important was the outpouring support for Susan from her family, friends and the T&C community. Thank you to everyone who attended the event or who made a contribution to help Susan. We wish her the very best as she continues her road to recovery. On November 10

th, the golf course will close after what has been a somewhat

unusual year. First, you may recall the golf course did not open until May 1st which

was perhaps the latest opening on record. In addition, our golf course is undergoing its most significant renovation in the last 50 years. A substantial amount of the renovation will be completed before the snow flies this year and the remainder of the project should be completed by June of 2014. The changes that are occurring are dramatic and I believe will make our golf course more fun and challenging to players of all abilities, as well as improve upon its existing beauty. I'd like to thank our Green Committee Chair, Devin Rice, the members of the Green Committee, Ryan Rindels and the golf staff for their suggestions and input to these great changes to our golf course. Finally, a big thank you needs to go to Bill Larson and his team who have worked so hard on the project. I'm continually impressed with Bill's creativity and vision and we are so lucky to have him as our golf course Superintendent. I wish everyone a Happy Thanksgiving and I look forward to seeing you at the Club soon! Tom

the correction from their office. If you have any questions, please give me a call. ICE SPHERE The Japanese invented it to serve in their hand-crafted whiskey. Why? Whiskey wants ice. Some would argue that it needs it. A little bit of water melting into whiskey helps it to bloom, by which we mean brings out all the flavors and aromas that sometimes get trapped under the bracing hit of alcohol. Now, no one wants watered-down whiskey which happens when you use regular ice. Thus, the invention of the ice sphere. Originally, spheres were hand-carved by Japanese artisan bartenders from a block of ice. The Club has no blocks of ice or Japanese artisan bartenders, but we have purchased a commercial Cirrus Ice Ball Press. The next time you order your preferred single malt scotch or whiskey neat, be prepared to be amazed by this cool (and functional) piece of science. Have you tried the ice spheres and want to have some for home? The Club will be offering them for purchase at $1 each. Chef John Kain and his staff have a wonderful menu planned. Having to attend another soiree that evening? That’s okay! Now that we’re into November, it’s time to start thinking about Christmas shopping. The 6th

Annual “After Thanksgiving” Sale will run for two days only, Black Friday, November 29

th and Saturday, November 30

th.

Golf Shop hours will be 9:00am – 5:00pm on Friday and 10:00am-4:00pm on Saturday. Almost all merchandise will have an opportunity to earn discounts ranging from 10%-50% off. Don’t miss this two-day

event to do your Christmas shopping at the Club! We’ll have complimentary mimosas, juice, coffee and rolls in the morning and complimentary wine and cheese in the afternoon (Friday only).

President’s Cup Championship Goes to Dan Matschina & Dave Cornell It was an uphill battle the entire way for Dan Matschina and Dave Cornell, playing (arguably) the toughest teams in the field to reach the Championship round. Having to battle Bruce Ackland & Chris Brandt in the final was enough to get all of their competitive juices flowing and it showed in the first five holes…they were four under par and four up on the match. Despite a couple hiccups mid-round, they maintained their lead going into the par 5’s and claimed their first President’s Cup Championship. Congratulations Dan & Dave! 2013 Golf Staff As most of you know, our Golf Shop and Outside Operations is mostly made up of young adults aspiring to be in the golf business. Hiring only PGM Interns, PGA Apprentices and those with strong golf backgrounds make the entire T&C staff among the most knowledgeable in the business. This year’s PGM Intern, Chase Davis, did an excellent job and will be back for the 2014 season as a six-month intern (May-October). Erik Adolph (Outside Operations Supervisor) will also return next year, but now as a PGA Apprentice working towards PGA membership. Todd Litterbrant was promoted to Caddie Master this season and should be acknowledged for

his performance. Coming off our lowest annual caddie rounds in 2012 (800 loops), we had a goal to improve our caddie rounds to 1,200 this season. With extensive off-season Caddie Master education, an improved interview and testing process, and more detailed and hands-on training, our caddie rounds this year reached 1,530! A big “thank you” goes out to all members who took caddies/forecaddies this year. Andy, Sara and I will be working thru the PGA Certification Program this winter to continue our education and gain more experience. Andy and I will become PGA Certified in Golf Operations and Sara will become PGA Certified in Instruction/Coaching. Marty Flaherty, who was a great addition to the T&C Golf Staff this season, will be competing on the Dakota Tour next year. We thank Marty for his time here and wish him the best of luck in his playing endeavors. Reflecting on the 2013 golf season as your Head Professional, there were so many positives to build on that I am already looking forward to next year. Our overall participation in events increased, our junior program grew by 10% (450 juniors total!), and our Men’s League reached a milestone 200 players. My staff and I will be working hard this off-season to continue to find new and exciting ways to enhance your experience here at the Club. Thank you to everyone who not only participated in events this season, but to those who brought out guests, played on a regular basis, and those who just stopped by to say hello. Loft & Lie Check/Adjustments Now Available

Andy Gerber, First Assistant Golf Professional

For those of you who want to ensure that there is consistency in your iron play, have you considered a Loft and Lie check and adjustment? Typically, the loft between each iron is 4 degrees, but through usage and practice, the loft of your clubs can change over time. For example, your 7-iron may go only 5 yards further than your 8-iron, but 15 yards shorter than your 6-iron.

A loft check and adjustment can eradicate this. Secondly, your lie angles may be inconsistent and cause inaccurate shots with directional issues on the Golf Course. Clubs that are too upright will tend to go left; while clubs too flat will tend to go right. In addition, golfers who have not had their clubs custom fit may require an adjustment to help hit the golf ball straighter. A complete loft and lie check (irons) and adjustment is $25. Winter is fast upon us and the change in season brings with it new dining menus. Adam Fredrickson, our Sous Chef who joined us in September, has been working feverishly to produce and create some really interesting new dishes and flavors to introduce to our members. He and Grady have collaborated to create some new and exciting menu items and I am confident that you are going to love it!

November is turkey time of course, so plan ahead and let us do all the work. The Thanksgiving take home menu is online and has been sent with member statements as well. Spend more time visiting with your family and less time in the kitchen. There are lots of events planned again this month, so check your calendars and sign up early. Last month I started a feature that focuses on one of our local vendors. This month it is Hidden Stream Farm in Elgin, MN. The farm is operated by the Klein family. Below is an excerpt from their website:

Hidden Stream Farm produces MSG free meat, beef and pork with no chemicals or antibiotics based on a grass fed family farm. We are located near Elgin, MN, not far from the bluffs of the Mississippi River. We raise our animals using a grass-based system. This allows us to farm in a more environmentally friendly and sustainable way. It also allows us to produce a product free of any unwanted antibiotics and/or hormones. We are proud producers of happy, healthy chicken, beef, and pork.

Hidden Stream Farm is aligned with the Midwest Food Alliance, which was developed through the Land Stewardship Project and was created to promote sustainable agriculture and to help farmers become more "environmentally sound, economically viable, and socially responsible." They are also members of Pastureland Co-op, which is a small dairy cooperative located in Southeastern Minnesota. Pastureland Co-op is made up of grass-based dairy farmers who allow their cows to harvest the naturally occurring health benefits of grass. These health benefits are passed on to people through the cheese and butter products the Co-op offers.

T&C EMPLOYEE SPOTLIGHT

Date started at T&C: May 2006 Position(s) held: Grady started as a cook just as T&C was opening the new Pool and Tennis Complex. At the start, he worked days and nights, 6 days a week. Grady next moved into the Clubhouse as the evening Sous Chef for a la carte dining. Eventually, Grady took on the morning Sous Chef position and it is his favorite role yet! Grady enjoys the organization and planning that goes into running a busy kitchen. He keeps T&C stocked with everything needed to make our member dining and banquets a success. Memory from the first day of work: Grady’s first full day was on the Saturday of Memorial Day weekend and it coincided with the grand opening of the new Poolside dining. The turnout was much bigger than expected, so much so that the Club actually ran out of chicken! Best part about working at T&C: One of Grady’s favorite times at T&C is during the Holiday Grand Buffets. He loves all the planning and prep work and especially enjoys seeing the families come together to celebrate the Holidays. When he goes home at the end of the day, someone else has done the cooking for him! Hobbies and Interests: When Grady is not at work, he likes to go fishing, work on home improvements (he’s a DIY guy), spend time with his family, and cook (yes, cook!). Family: Grady and his wife, Becca, have two daughters, two year old Sylvia, and 7 month old Mallory. Thank you, Grady, for all of your hard work and dedication you put forth to create successful dining moments.

As we celebrate our 125th Anniversary of Town & Country Club, we hope you will enjoy as we share a bit of T&C Club history in each issue of our newsletters throughout 2013. We also encourage you to leisurely review and admire our unique and storied history as illustrated throughout the walls and trophy cases in the Clubhouse.

November 20th, 2003 ushered in the approval of the T&C Bylaw change to include the Social Membership Category; a decision that has forever changed the club membership mix and paid dividends to the club during the economic hardship experienced in the late 2000’s. Below are the details of the motion:

As illustrated in the August 2006 issue of Club & Resort Business, Town & Country Club’s Board of Directors decided to leap into a very successful $3.8 million renovation of the Club’s swimming and tennis facilities. It was a decision that proved to be worth its weight in gold, as it forever changed the dynamics of the membership for the success and longevity of T&C for years to come. The renovation enhanced the Club’s dining offerings, elevated the member programming and ultimately the member experience at T&C, among many other attributes.
