How many times have you opened up a loaf of bread to find green or gray spots on the edge of a slice? Or found that piece of missing cheese in the refrigerator with a white, dusty layer on the surface? Perhaps a fuzzy circle of growth appeared on some fruit or a jar of jelly in your kitchen. These are all examples of mold growth on food. We are familiar with mold and even more so in the sum- mer when the warm, humid conditions make for optimal mold growth. Molds are microscopic fungi that live on plant and animal material. They have many cells (unlike bacteria, which are uni- cellular) and they have spores which allow them to spread by water, air or insects. It is unknown how many different species of mold exist, but esti- mates range from tens of thou- sands to over 300,000! Under a microscope molds look like tiny little mushrooms. They consist of root threads that obtain nutrients from the food, a stalk that rises above the food and then a spore at the far end of the stalk. Mold can be found in virtually every environment. Let’s look at what it means when mold is found on our food, how to deal with it and how to prevent it from growing! Warm, humid environments encourage mold growth, but mold can still grow in the refrigerator. Additionally, while many other food invaders are deterred by high sugar or salt concentrations in foods (such as in cured meats, jams and jellies) molds can tolerate these condi- tions. Sometimes mold growth is a beneficial process in the pro- duction of food. Certain kinds of cheese and cured meats have characteristic mold growth. Story continues on page A3

    How many times have youopened up a loaf of bread tofind green or gray spots on theedge of a slice? Or found thatpiece of missing cheese in therefrigerator with a white, dustylayer on the surface? Perhaps afuzzy circle of growth appearedon some fruit or a jar of jelly inyour kitchen. These are allexamples of mold growth onfood. We are familiar with moldand even more so in the sum-mer when the warm, humidconditions make for optimalmold growth.

    Molds are microscopic fungithat live on plant and animalmaterial. They have many cells(unlike bacteria, which are uni-cellular) and they have sporeswhich allow them to spread bywater, air or insects. It isunknown how many different

    Blue veined cheese such asRoquefort, blue, Gorgonzolaand Stilton are produced withthe help of a deliberate intro-duction of mold. Brie andCamembert have a white sur-face mold. These cheeses aresafe to eat.

    Cleanliness is vital to prevent-ing and controlling moldgrowth. The spores from affect-ed foods can build up in therefrigerator, on sponges or dish-cloths, and other cleaning uten-sils. Does your dishcloth smellmusty? That means it is spread-ing mold around. Discard anycleaning items that you cantclean or launder. Cleaning yourrefrigerator every few monthswith 1 tablespoon of bakingsoda in a quart of water fol-lowed by rinsing and drying is

    best for the main compartment.Using 3 teaspoons of bleach ina quart of water is recommend-ed for the rubber casings aroundthe fridge. The mold will oftenappear as little black spots onthe rubber surfaces. Keepingthe humidity level in yourhouse at 40% or lower will alsohelp reduce mold growth.

    To protect food from moldspores be sure to keep it cov-ered in clean containers. Thisincludes items in the refrigera-tor. Dont leave perishablefoods out at room temperaturefor more than two hours or if itis a warm day, one hour. Promptrefrigeration of leftovers andusing leftovers within 3 to 4days is best so mold doesnthave a chance to grow.

    Of course, mold will happen,especially during a hot and

    humid summer. If food is cov-ered with mold, discard it. It isrecommended not to sniffmoldy items as some molds cancause respiratory trouble. Putthe item in a paper bag or wrapit in plastic and dispose of itsomewhere that children or ani-mals cant get to it. Even if novisible residue is left in therefrigerator or cabinet wherethe moldy item was found,clean the spot to ensure nospores remain. Check nearbyitems for mold. Vegetables or

    fruit in a fridge drawer or abowl could easily contaminateother items they touch. Followthe guidelines below for otherspecific foods.

    The USDA recommends dis-carding the following foods ifmold is found on them:Luncheon meats, bacon or hotdogs, cooked leftover meat andpoultry, cooked casseroles,cooked grain and pasta, yogurtand sour cream, jams and jel-lies, soft fruits and vegetables,peanut butter, legumes andnuts. Any item with a highwater content has potential forbacteria growth along with themold growth. Bread and bakedproducts should also be dis-carded because they are porousand mold may have contaminat-ed below the surface of thefood. Soft cheeses with moldgrowth that is not part of thestandard production process

    should also be discarded.

    Several items are consideredsafe for consumption by theUSDA even if mold growth isfound. Dry salami and countrycured hams can still be con-sumed after the mold isscrubbed off the surface. Hardcheese can still be consumed aslong as the moldy portion, aswell as one inch around themoldy portion, is removed. Thisalso applies to hard fruits andvegetables like cabbage, bellpeppers and carrots. When cut-ting off the moldy portion ofcheese, fruits or vegetables,ensure that the knife does notcome in contact with the moldor the spores could contaminatethe rest of the product via theknife blade.

    Incessantly scouring the uni-verse (and my back yard) for theweird, the wacky, and thethoughtful so you dont have to.

    When I first started at my latestwork (coming up on a year;there was a lot to learn), I madenumerous mistakes I left out aphone number a couple of timesin an ad, I typed in the wrongnumber or even totally deletedan ad. I am pretty much pastthat, but I dont feel so bad any-more.... The Pentagon acciden-tally shipped anthrax to severalstates and overseas! There aremistakes and there are MIS-TAKES! Whew! I have beentold by my co-workers theresnothing I can do that cant bemade right... but I feel like I amtrying to prove them wrongsome days.

    I received a survey from myCongressional Representativeregarding what female leader Ithink should be on the $20 bill;there are six names and a box forOther. At least my opinion isvalued on the important stuffand not the trivial stuff likewars, Wall Street, corporationsas people,the whole systembeing broken, etc.

    Then I received a notification toparticipate in a FREE HealthStudy that includes a FREE

    hearing screening, FREE advicefrom a hearing health expert,and the option to PURCHASEhearing aids at a reduced cost good advertising on someonespart. I am not sure how theyknew I will soon need some-thing. Serendipity (or did some-one sell them my name)?

    Finally, yet another letter arrivedannouncing the retirement of Dr.Richards, my ophthalmologistfor longer than many of youhave been alive. I wish him wellin his retirement and say (1)Thank you and (2) Thankyou. So, which is clearer,Number 1 or 2? 1 or 2; 1 or 2....

    I am not saying there is quite thesizeable field of Republican can-didates running for President (anunderstatement), but I suspect Icould make the news if Iannounced I am NOT running.

    They always say if you want tolearn about your family tree andmembers backgrounds, run forpolitical office. For example, Iguess its worthy of the news(not) to learn that Marco Rubioand his wife, Jeanette, haveaccumulated a total of 17 driv-ing infractions since 1997(oooh). In fairness to the senator,his wife has most of them, 13.The tickets cover everythingfrom reckless driving to speed-

    ing to blowing red lights andstops signs. Both have wound upreporting to driver-improvementclasses. I mean, thats big stuff...isnt it? (Unlike the formerSpeaker of the House DennisHastert who is alleged to have...ah, never mind; its not impor-tant).

    (Terribly serious moment fol-lows) A lot of the early BermansBits posts (were talking back inthe 70s here), dealt with the mis-use of alcohol, which becameknow in my column as LiquidStupid Pills! Then, as now, I seealcohol to be very much likeguns it sits there and doesntdo anything until someone picksit up (with the two sometimesgoing together with unfortunateresults). Today, its even worsewith drug use adding totragedies. So, so sad! If Ithought it would make a differ-ence, Id toss out a challenge(which I will do anyhow), one ofthe hardest ever! If you aremajorly into alcohol or otherdrugs and they are causing prob-lems in your life, admit it andget some help before its toolate. Just say to someone, Ineed help! Seriously. Thank melater!

    So the last couple of NASCARraces have been on a channel Icant get with the TV and equip-ment I have. Guess I will have toask how much more I have tospend to get what I really wantto watch (or at least have on inthe background).... Wouldnt itbe nice if we could just pickwhat channels we want? I justwhipped through the list of basicchannels I could get if I had theright equipment and there areeasily 15 I never watch.

    Littering, vandalizing a ceme-tery, hurting animals, hurtingpeople.... It escalates. If even thelittle things dont matter tosomeone, why should the big-ger? Whats with people?

    So jockey Victor Espinoza rodeAmerican Pharoah to the TripleCrown meaning a high demandwith stud fees of $6 or more mil-lion dollars for years to come,maybe decades.... What a luckyjockey! What.... you mean theywerent talking about Victor???

    The US as a nation has becomea shape-shifter, adapting to pret-ty much everyone who comesalong rather than vice-versa. Iremember having class discus-sions about The AmericanDream and what makes some-one an American. I am feelingthat was a long, long time ago.

    Plenty of attack ads showing upon TV already about Governor

    Maggie Hassan... whens theelection? Dont tell us about theothers! Tell us what you aregoing to do and HOW you willdo it. Then we can make up ourminds in an informed way! (Andif you dont do what you said,you are out!)

    Finally, I found eight magicwords that could quickly end somany problems between people.They were part of a longer piece,but they do stand alone with noelaboration needed. Try themsoon and see what happens. Letme know: I was wrong. Youwere right. Im sorry.

    There are moments I am sur-prised by joy, even on dayswhen I am already happy. Itseems to me that these periodicbursts of bliss are tied intonature. Such was the case thismorning as we walked thewoods below White HorseLedge along a spider web oftrails crisscrossing the BrycePath.

    Although early, a hint of thewarmth to come later in the daycould be found in the sultryscent of the forest. Its a muskydelight that comes from theearth and trees and the slightest(almost imperceptible) bit ofhaze in the air. Its like leaninginto a lover and finding the hintof perfume on the nape of herneck. The woods still felt cool,but I could tell it wouldnt bethat way for long.

    A gentle breeze stirred loosepine needles and sent them tum-bling down to earth around us.Atticus stopped as if to inhale

    the scent of a wild animal everynow and then. The dirt under-foot wasnt damp, but it wasntdry either. The best way I candescribe the coming of thedays heat is the same way Iddescribe the coming of a stormin late afternoon. The subtleshift in electrons, the receptorsin our skin that allow us to feelatmospheric changes, and, ofcourse, the smell of it all.

    To be afoot in a forest to wit-ness this change has a primitiveappeal to it. It had me reflectingon Thoreaus, The savage inman is never quite eradicated.And this had me thinking howgrateful I was to have some ofthat savage still within me.

    As has been his style lately,Atticus tailed behind, unlike thefirst ten years of our hikingtogether. Its his age. He stillenjoys the trails but the pace isdifferent. He rarely takes thelead, and that only happenswhen its cool or else he wantsto make sure we take a certaintrail.

    When we came upon the BrycePath a second time, he surprisedme by taking a left turn andheading up toward the saddlethat sits humbly betweenCathedral and Whitehorseledges. Its a short section oftrail, but steep enough to makeyou stop, grab hold of a tree onoccasion, and gulp for air, andthen gulp down some water aswell.

    In that saddle, which has a feel

    of the medieval to it, with itspockmarked sign slightly lean-ing to the right, one almost feelstransported to the days of oldwhen knights were horsebackwould come trotting by, the airwas thicker, but still refreshingenough to be pleasant. Wemade for the top of WhitehorseLedge, the taller of the two, andthe one that is private becauseyou cannot drive to the top of it.I was pleasantly surprised to seeAtticus bounce along the climb,looking back over his shoulderfor me, stopping every so oftento wait for me whenever I rest-ed.

    Halfway from the saddle to thesummit, we came to a ledgewhere we have sat many timesin the past, often watching a fullmoon rise above the easternhorizon. Below us was theemerald green of Echo Lakeand across the busying valleysat the mountains of the GreenHill Preserve. The air wasdenser, the temperature rising.But gosh, how it felt grand to beout there in the aging day, fol-lowing my aging friend.

    Once on top we shared the viewand some water. Then I pausedand thought of my friend Anniewho is in Sloan Kettering today,hoping she remains cancer freeafter seven months off treat-ment. A few prayers were sprin-kled over the valley and senthigh above. Then, without anylonger delay, Atticus was on hisway again, curling round thebackside of the ledge, on to thesouthern boundary, and eventu-

    ally reaching the forest floorafter a rumble through the boul-der field.

    When we reached the car, wewere both happy to have beenout there, but also happy to bedone. The drive home with win-dows wide open was a blissfulreward. Now to be home writ-ing about it, with the air condi-tioner going, is another. Thatssavage within me is taking abackseat to the civilized mannow as I sit at my old writingdesk and Atticus snores con-tentedly nearby.

    We stopped peak-bagging sev-eral years ago, about the time Idecided to count experiencesinstead of mountaintops. Thatswhen we set about hiking forthe beauty of it, letting ourdesires take us instead of fol-lowing the strict orders of onelist or another. Now in this sum-mer of no expectations due toAttis age I often say hesretired I am surprised by joymore often than ever. Eachwalk in the woods, whether it ishalf mile or five miles, comesas a gift. Nothing is taken forgranted. We enjoy it all, andluxuriate whenever possible especially when we come tostreams where we wade andAtticus drinks and it feels a bitlike heaven after a good walkthrough a forest which is nowgreener than I could have imag-ined it being back in the nakedcold of winter.

    On days such as this I realizeweve come to what may be the

    Samboree, standing for GoodSamaritan, is a family campingrally.

    Each State puts on at least oneSamboree a year and the NewHampshire Samboree is held atthe North Haverhill, NH fair-grounds in August.

    Campers from all over the USand Canada arrive for thisevent, some arriving as early as Monday while most arrive onThursday or Friday for theweekend event. Throughout

    2015. Bill will be rememberedfor his stories and humor. Heserved in the U.S. MarineCorps. and was a member of theMoosehillock Masonic Lodge#63 in Warren for fifty years.He loved travelling and became

    the owner of a KOA camp-ground which led him to hisgolden years in Naples.

    William is survived by his sons,Rick Nelson and his wife,JoAnn; Brian Nelson and hiswife,m Donna; and grandchil-dren, Joshua and Keith Nelson.He was preceded by his wife of56 years, Nancy GenellSmith/Nelson.

    A memorial service will be heldon Saturday, July 20th, at11:00am at the WarrenMethodist church, Warren, NH.

    Pike, NH- Barry Jay Young,60, died unexpectedly at hishome on Lime Kiln Road onFriday, May 29, 2015.

    Barry was born in Haverhill,NH on July 30, 1954, to Geraldand Catherine Avis (LaVoice)Young.

    Barry worked for the NewHampshire Department ofTransportation as a grader oper-ator out of the Wentworth Shed# 202. He also was a partner inB&B Trucking and worked atthe former Gerrity Lumber inWoodsville.

    Barry loved working for the

    DOT and took great pride in hiswork. He was a former mem-ber of the Haverhill Corner FireDepartment and during theearly 1980s, he volunteered tofight forest fires in the westernUS. An avid outdoorsman,Barry enjoyed hunting and bowhunting. He was most passion-ate about fishing and lovedboating both on the ocean andin fresh water. In his sparetime, he enjoyed metal scrap-ping. As a handyman, he couldrepair anything. He was alwayspleased to help his fellow man.

    He was predeceased by his par-ents, Gerald and CatherineYoung; a sister, Patricia Naylor;and two brothers, Gerald R. andBenny Young.

    He is survived by his wife often years, Joanne (Prescott)Young, of Pike, to whom hewas married on May 28, 2005;a son, Allen Young of Pike; adaughter, Lisa Chase of NorthHaverhill; Joannes children,Jennifer Larson and husbandJames of Salem, CT, Billy JoeBoutin and companion TaraFrizzell of Pike, NH, and KatieField and husband Andrew ofFairlee, VT; two grandchildren,Thorin Larson and AutumnBoutin; three sisters,Marguerite Peggy Donlonand husband Dave of Pike andBonnie Hanson and husbandButch of Haverhill, NH; twobrothers, Carroll E. Young andwife Verna and Brian H. F.Young and wife Cheryl, all ofNorth Haverhill; 3 sisters-in-law, Pam Young of Plymouth,

    NH, Marlene Young ofWillsboro, NY, and GloriaYoung of Idaho; two specialchildren in his life, GabrielleKeysar and Evan Rollins;nieces, nephews, and cousins;and his dog, Kasha.

    Also surviving are members ofthe Prescott family, mother-in-law, Lorraine Prescott of NorthHaverhill; sister-in-law, DonnaBixby and husband Tim ofHaverhill; and brother-in-law,Bill Prescott of NorthHaverhill.

    Good FriendsFriday was a full day after a weekof hot and sweaty work. A longlist of errands turned the after-noon to evening, and it was witha sense of relief and impendingrelaxation that I greeted Mica andlet the two of us in the door. Isettled myself into clean clothesand a bowlful of dinner. Ryanwas traveling home from a classin southern NH, so the next houror two would be mine to melt thework of the week from my shoul-ders and enjoy the quiet of ourniche in the woods.

    No more than a few bites into mybig salad, however, and I heard amuffled call sounding much likehelloooo.... coming from thewoods. Mica went out to barkhis heart to contentment; Iresumed dinner, hoping the callswere nothing more than seasonalneighbors across the river shout-ing their start to the weekend.

    Nonetheless, Mica continuedbarking - vigorously - and thecalls resounded once, twice,thrice more; this was decidedlynot in the direction of the river.Lamenting a change in plans, Ifollowed Micas lead to the edgeof our clearing.

    There, dragging through the muda wheelbarrow and a cart, balanc-ing a cooler and camping gear,was our friend John. Despite my

    total desire for solitude in thatmoment, I couldnt be disgrun-tled. John was here to help uswith a daunting task: moving 250cinder blocks from where theywere delivered at our propertyline to where we would be usingthem to construct a root cellarlater this year. The direct route,and only path free of roots &rocks, included the muddystretch John was now pulling hisbelongings through.

    We greeted each other withenthusiastic hugs. Before wecould say more than hello Johngot down to business: Ok, doyou have boards? We need toshore up this path. I agreed100% with each statement, butbegged him to come inside for aminute while I finished my din-ner. We yaked, to use his term,and caught up on the fine andsundry details of the past couplemonths.

    By then, though, it was back towork. Johns determination andlove of efficiency cant be put onhold for long. I pointed out ourcollection of old planks and lethim go about fashioning a rudi-mentary boardwalk while Iwatered the greenhouse and col-lected cooking wood for themorning.

    With breakfast behind us the fol-lowing day, we were ready.More friends trickled in as we

    started wheeling cinderblocks.Steve, Katie, Eve, and Tylerjoined John, Ryan, and I for anawesome display of friendshipand human-powered work.Using four wheelbarrows, onecart, and a packboard, the stacksof blocks dwindled in size. Wedidnt want to jinx ourselves, butit seemed like we were makingquick progress.

    And indeed we were! Two hoursfrom when we began the lastblocks were lifted from thewheelbarrow and added to thepile alongside our building site.We were stunned! So were thefive additional friends, andRyans parents, who arrived justas we headed to celebrate withlunch and refreshments alongsidethe river. Timing is everything.

    It was a scorching day, and thegreatest challenge that remainedwas deciding whether to eat firstor to swim first. Some chose theformer, others the latter - myselfincluded. It was a refreshingreward, and I hoped our compa-triots enjoyed it. How could wethank such effort and kindness?

    The summer brings us manyenjoyable moments. The summeralso brings us thunder storms.My topic this week is how to pro-tect your computer during astorm.

    Damage to a computer during athunderstorm is a common occur-rence here in the North Country.The damage caused to a comput-er from a storm can very from apower supply or modems to themost expensive repair a systemboard. There are inexpensiveways that you can protect yourcomputer from this type of dam-age. The most effective protec-tion is unplugging your computerfrom the wall outlet before thestorm arrives, you must alsounplug your telephone line fromthe modem in the computer. Thealternative to unplugging yourcomputer is to purchase a powerstrip that has surge protection;you should buy one that providesprotection to your computer from

    both the power and phone lines.One thing to keep in mind issurge suppressor will protect youfrom power fluctuations but willnot protect you from spikes orlightning strikes. The amount ofvoltage produced by lightningwill jump any fuse or surge pro-tection you have, so to be safeunplug your equipment.

    I recommend to people who mustwork on their computers duringstorms, such as businesses toinvest in a backup power supply.Basically a backup power supplyis nothing more than a powerstrip with surge suppression andtwo lead acid batteries within acase. Should the power spikes orlightning strike it provides heavyduty protection for your comput-er and accessories connected tothe device. The advantage of thebackup power supply is shouldthe power fail, the computer willcontinue to operate giving youenough time to safely shut it off.

    That is important if you shouldbe working on a document, noth-ing is more frustrating then hav-ing the computer shut off whenspending hours doing schoolwork and then lose it all frompower failure. Most companieswho manufacture power backupsupplies will provide limitedinsurance should your computerget damaged while using theirproduct. I also recommend youcheck your house insurance cov-erage. Many policies only coveryour computer for direct light-ning strike damage. They do notcover it from fluctuations andspikes.

    So a rule of thumb if you aregoing away and the weather fore-casts call for thunderstorms,unplug your computer from theelectrical outlet and dont forgetto unplug the telephone line fromthe computer that is also true ifyou are on a DSL high speed con-nection.

    Downhill skiers choose a NewHampshire ski destinationbased on a mountains geo-graphical features far more thantheir family vacation history oran internet review, according toa new study conducted byPlymouth State Universityresearchers. Skiing is a hugeeconomic engine for theGranite State, generating morethan a billion dollars in revenueper year, according to PlymouthStates Institute for NewHampshire Studies.Determining how skiers choosetheir favorite slope is a criticalpiece of marketing informationfor state tourism officials andthe ski industry, according toMarina Plopeanu 15, a PSUanthropology student who per-formed the study along withDepartment of Social SciencesProfessor Brian Eisenhauer.

    My research indicates that, theyounger the visitor, the more

    they focus on the features of themountains and less on theamenities, said Plopeanu. Ifound key motivators influenc-ing destination choice are relat-ed to having fun, excitementand a sense of achievement. Ifski resorts want to attract oldervisitors, then I believe ameni-ties are an important factor inbringing back that revenuesource to the resort.

    The survey results show price,proximity and personal recom-mendations ranked lower thangeographical features as decid-ing factors in choosing a skidestination; online reviews andfamily history of attendancewere not strong considerations.Friendliness of resort staff andsnowfall amount were also con-sidered minor factors.

    The three-week long study wasconducted in April 2015, withmore than 80 recreational skiersand snowboarders of all agesparticipating. The survey ques-tions were distributed in personand online through social

    media. The survey includedLikert scale items (stronglyagree, agree, neutral, disagreeand strongly disagree) and mul-tiple-choice questions. Slightlymore men were surveyed thanwomen, more than half wereskiers, one-third were snow-boarders and the remainderwere engaged in other activitieslike tubing and snowshoeing.

    The results from this type ofresearch can help organizationslike Ski NH and its member skiareas customize their marketingmessages for various audi-ences, said Jessyca Keeler, SkiNH executive director.Because snow sports are sucha critical economic driver inNew Hampshire, informationprovided by the type of researchMarina did can help our indus-try do a better job in attractingpeople of all ages to come toour ski areas.

    This research is a great exam-ple of the kinds of work our stu-dents are engaging in that canreally impact our state, said

    Eisenhauer. While a limitedbudget means wed need moredata to draw solid conclusionsfor ski resorts to act upon, thedesign of the research Marinaconducted was excellent andcould easily be scaled up. Thefocus of her research in con-necting place attachment to

    marketing the ski industry isinnovative and has high poten-tial to enhance our understand-ing of ski tourism dynamics.

    There are 33 downhill andcross-country ski areas in NewHampshire.
