Blending, when a winemaker mixes wines of different varieties or
wines of the same variety from different vineyards or barrels, is acritical step in the process of making wine. The purpose of blendingis to create a more interesting wine. A winemaker may feel that the
addition of wine made from another grape will either fill in anyweaknesses of the primary grape or create a more complex wine, andconsequently, a more pleasing wine to drink.
Perhaps the most famous blended red wine in the world is
Bordeaux, from France. It is a blend of two to five grapes, thedominant ones being Cabernet Sauvignon and Merlot. The othergrapes that make up a red Bordeaux wine are Petit Verdot(contributes to color), Cabernet Franc (contributes to tannic structure
and richness of flavor) and Malbec (contributes to flavor).
Merlot is often used to blend with Cabernet Sauvignon to helpsoften, or round out, the Cabernet Sauvignon, which can sometimcontain harsh-tasting tannins. Syrah and Cabernet Sauvignon is al
popular duo having complementary characteristics. The percentagbreakdown of the components that make up a blended wine aresometimes indicated on a label, but it is not required to do so for American wines. In Australia, however, where the Cabernet/Syrah
combo is frequently found, label laws must show the percentages each grape that make up a blend.
Grapes that are used for blending purposes are chosen to eitheradd flavor, body, acidity, finish or aging potential. It is also possible
for white wines to be made from a blend of grapes, such as Sauvig
Blanc with Semillion, but white wine blends are usually less poputhan red blends.
When producers in the United States make a blended wine usi
the same grapes that are used to make Bordeaux wine, they arepermitted to identify these wines as “Meritage” style wines (rhymewith heritage). This is a unique, American term that may only beused on a wine label when the wine is blended from the Bordeaux
grapes mentioned above. If a non-Bordeaux grape, such as Zinfanis part of the blend, it is technically not a “Meritage” style wine.
I find Meritage style wines to be among the very best of Californred wines. They are elegant, layered with aromas and flavors and p
beautifully with many meat dishes.

Driving through wine country right now, asharvest is reaching its peak, gives your nose just as
many interesting things as your eyes. One of my
favorite post-workday joys is cruising past wineries
at night with the top down, smelling the
fermentations sweetly giving way to wines ready for
barrels. Or not. I also enjoy that the decisions
being made about so many thousands and
thousands of gallons of wine aren’t mine to make as
when the grapes come in, those winemakers have to
make decisions about oak usage and logistics almost
from the start, and there are lots of choices awaiting.
For whites, the decisions come down to thedegree, if any, of oak influence. Many white varieties
do not benefit from oak exposure, and even neutral
barrels (barrels used long enough that oak tannin is no longer
perceptible in wines stored therein) can cause a stylistic miscue since
barrels play host to Oenococcus oeni, the bacteria responsible for
malic-to-lactic acid conversion. Unless extraordinary and expensive
precautions are taken, most winemakers would combine separate lots
of filtered oaked and unoaked whites to arrive at a blend with the
desired level of oak influence rather than hoping to arrive at an ideal
middle through chance in the barrel.
Red wines, though, present a bit of a different set of options. Oak
is useful throughout the production process, so some folks will be
using toasted or untoasted oak shavings at the crusher to alleviate any
underripe “green” aromatics or flavor compounds from
methoxypyrazines, which contribute cigar or tobacco at low levels
and green pepper or grassy, herb-y notes at highelevels. Winemakers can ferment in barrels either
removing the heads and punching down into
upright barrels or through reassembling the barre
and using a rotation system to keep the cap wet b
spinning. They can use larger puncheons to give
more subtle, “rounder” notes to the wine without
giving as “oaky” a presence – liquid volume to
surface area matters a lot.
Post-pressing, most reds are aged either in bar
or in tanks with some kind of oak adjunct inserte
as with barrel options so go the aduncts:
winemakers have choices that range from oak sou(American, French, Hungarian and beyond), to to
level, to toasted or untoasted heads in barrels, and
slew of options for creating oak effects sans barrels including “bean
cubes, spirals, blocks, sticks-in-chains to fit into barrel bungholes
staves of various shapes and sizes for tank inserts. Think back to
your first visit to a big toystore as a kid; now picture an adult kid a

Agoston Haraszthy, self-proclaimed “The Count,” founded Buena Vista Winery in 18

experiment with California redwood casks for aging and fermenting and shared premiu
European viticultural practices. Haraszthy and his son Arpad took a wine expedition to
Europe and returned with more than 300 different varietals in his quest to produce thebest wines. The Count’s passion for innovation and excellence led to the development o
California wine world as we know it today. In 1863, he created the Buena Vista Vinicult
Society, an association committed to expanding and modernizing the wine industry wh
was the first of its kind.

What’s the first clue that something truly special is going on at Chateau St. Je
in Sonoma Valley this holiday season? It’s hard to miss the giant inflatable Cinq

Cinq Cépages (literally, “Five Varieties”) has been Chateau St. Jean’s flagship wsince it was first produced in 1990. Each vintage is a blend of the five Bordeaux
varietals – Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petite Verd
in amounts adjusted each vintage to create a unique style that is at once plush,
elegant, complex and ageworthy. That doesn’t mean you have to sock it away for
years to enjoy it, as Cinq Cépages is also approachable and delicious now!

Keeping the Focus on Great Wine in CarnerosBY JOSH STEIN
A visit to Bouchaine Vineyards, the oldest continually operating winery and
southernmost vineyards in the Carneros region, brings you full-circle within the valley’s
winemaking history. First planted by Boon Fly in the mid-nineteenth century, the prope
like much of the Carneros District, was forgotten about until the end Prohibition when
property was purchased by Johnny Garetto in 1927. After Repeal, he operated the first
winery with a tasting room in the Carneros region. Garetto sold the winery to Beringer
Brothers in 1951, who used the winery for thirty harvests. In 1981, Tatiana and Gerret
Copeland, a successful business couple from Wilmington, Delaware, fell in love with th
property, and thus began the modern-day revitalization which greets visitors today.
An almost total renovation took time but was completed in 1995, updating andrefurbishing the entire winemaking facility and visitor spaces. Guests are now greeted by
the production facilities laid out within the surrounding vineyards such that the rest of
valley is forgotten about. What surrounds you are vineyards, views and breezes – and n
much else, the way Carneros was at the beginning. You will also see a sign that says that
pets are welcome “by appointment.” Since between two and four winery pups inhabit th
spacious property, the Bouchaine folks are sensitive to the fact that not all canines get alo
with each other. Your own is welcome (on a leash); just call first and they will take care
everything else.

For all of Napa Valley’s world-renown as a wine-tastingdestination, did you know that the valley also has one of only three
“Old Faithful” geysers in the world?Located at the north end of the valley in Calistoga, Old Faithful
makes for a fun and fascinating afternoon stop between wineries.About every 30 minutes, visitors to “the geysers” are treated to a first-
rate show – an eruption of steam and extremely hot water spraying60 to 100 feet in the air.
The term “Old Faithful” refers to geysers that erupt on regular
intervals. Water for the Old Faithful Geyser of California comes froman underground river. When this water flows over the hot moltenmagma deep in the earth, it boils, expands and then collects in largecavities. Under tremendous pressure from the heat, the superheated
water is forced through the fractures and erupts with an outpouringof steam followed by hot spewing water.
Old Faithful is surrounded by palm trees and thick bamboo,making for a relaxing and partially shaded setting. There are picnic
tables with umbrellas and a covered seating area, all with excellentviews of the geyser. The gift shop is stocked with snacks such as icecream bars, chips and a variety of drinks, or if you want to make it a
lunch stop, bring in a picniclunch from town and a bottle of wine from one of the nearbywineries!
Don’t miss some of the otherinteresting features at Old
Faithful. Check out the wishingwells that were once used as hot
mineral therapy pools. There’salso an informative exhibit areaon geyser eruptions andearthquake predictions, as well as
a brief history of the town of Calistoga. And best of all, there’s apetting zoo with Tennessee
Fainting Goats, Jacob’s Four HornSheep and Guard Llamas.

famous Lindt USA company will be the highlight of a three-day
Dessert Boot camp offered by The Culinary Institute of America,
the world’s premier culinary college. The popular class, ideal for
foodies of all skill levels, will be held December 3-5 at the school’s
Greystone campus, located in the heart of California’s Napa Valley.
Master Chocolatier Ann Czaja from Lindt & Sprüngli, the
world’s leading producer of premium chocolate, will provide a
unique demonstration for Dessert Boot Camp attendees. Students
will be regaled with the history of chocolate and chocolate
production, savor the key ingredients for making premium
chocolate, learn about Lindt’s premium chocolate productionprocess and be led in a guided connoisseur-level tasting session of
Lindt premium chocolate. Finally, they will prepare a classic Lindt
chocolate recipe
The American-born Czaja began her career in Zurich,
Switzerland where she first developed an interest in culinary arts.
After she completed a three-year course of study in desserts, Czaja
became a licensed pastry chef/chocolatier. She began work for
Lindt & Sprüngli as a Master Chocolatier at one of Lindt’s Zurich-
based chocolate boutiques, conducting live demonstrations on the
art of working with premium chocolate. In 2006, Czaja returned
to the United States and was named the Lindt Master Chocolatier
for Lindt USA. She is co-author of “Lindt Chocolate Passion,” ahistory of chocolate and Lindt’s Master Chocolatiers.

of America can only have deliciously educational results,” said
Certified Master Chef Brad Barnes, ’87, CCA, AAC, the senior
director of continuing education at the CIA. “Our CIA Dessert
Boot Camp is ideal for all foodies, whether you’re a beginner or a
veteran of the home kitchen. Boot Camp will greatly expand your
culinary skills and self-confidence.”
In the CIA’s Dessert Boot Camp, students will learn the key to
preparing a variety of well-loved desserts, from the traditional to
the trendy. Unlock the secret to homemade cream puffs and
cupcakes. Learn the techniques for making fillings such as custardand mousse, as well as perfecting presentation methods using
dessert sauces and impressive garnishes. All students in the CIA
Dessert Boot Camp will receive a chef’s uniform, which includes a
jacket, pants and neckerchief. Paper hats, side towels and aprons
will be provided in class. The class will run from Monday,
December 3 to Wednesday, December 5, 2012, from 2 to 8:30
p.m. each day.

Let’s start outside – you pull into the parking lot and notice the beautiful landscap
surrounding the brown, barn-like building that is the winery and tasting room. A
flagstone path leads you through a riot of colorful flowers to a breezeway that separa
the winery from the tasting room. Glass doors provide a view into the barrel room an
winery. Most likely, you’ll be greeted by Dutchess, a sweet, tail-wagging yellow Labra
Retriever, owned by Dutcher Crossing Winery’s Proprietor, Debra Mathey.
The picnic area is lovely and its views of the Dry Creek Valley are breathtaking. Th
are six picnic tables under a wisteria-covered arbor. The colorful, fragrant landscapin
and manicured lawns will make you want kick off your shoes and stay a while.
The tasting room is large, bright and airy, with high ceilings, glossy wood floors an
tasteful décor. A goodly selection of tasteful non-wine items is artfully displayed arou
the room.
During the week, there is a $5 tasting fee (waived for wine club members) to samp
a variety of six wines, and on weekends a $10 reserve tasting is available as well.

I really enjoyed all the wines I tasted, but the following three wines were my favori2011 Sauvignon Blanc, Estate ($23): Oooh! Pretty! Alluring aromas of pink grapefr
ripe melon and hints of mineral lead into a clean, juicy mouthful of consistent flavor
2009 Maple Vineyard Zinfandel ($40): Picture a warm blackberry pie, dusted with
cinnamon and pepper and you’ll have this wine in a nutshell, er, wineglass. Aromas
flavors of sweet, ripe blackberry and peppery spice abound, all wrapped up in a
luscious, velvety mouthful of Zin goodness.
2009 Proprietor’s Reserve Cabernet Sauvignon $29: In a word, wow! What a
fantastic Cabernet Sauvignon! Seductive scents of plum, black cherry, anise and spice
leap out of the glass and lure the taster into a voluptuously rich mouthful of ripe dar

As grape growers harvest this season’s grape crop, dozens of
Mendocino County wine leaders agree that the 2012 season isshaping up to be one of the best on record. A lack of rain late in the
season, combined with warm days, cool nights and an ideal growingseason have produced bountiful crops throughout this Northern

2012 Winegrape Harvest Slated To Be a Best in Year
With the arrival of November, the pace of life impossiblyquickens. How could it get any crazier, we wonder, as the impending
holidays drive us inexorably forward as if smacked by an invisible
whip. Some vineyards will still be hanging fruit, awaiting the finalpick of the season, while others will be thankfully pressing off lastfermentations into barrel, ready to put a fork in the 2012 harvest,
pop the cork and commence celebrating. It’s been quite a season,with great yields, good chemistry and outstanding flavors. We can’twait to begin barrel tasting after the wines get through malolactic.
This year brought a particularly bountiful harvest to Loma Prieta,
where they picked nearly seven tons of estate Pinot Noir, along withtwo tons of estate Pinotage. This high elevation site, at 2600 ft, is theonly vineyard in the Santa Cruz Mountains to grow both of thesevarietals. Loma Prieta also sourced another 23 tons of awesome
looking Pinotage from the Amarosa Vineyard in Lodi and the KarmaVineyard in Amador. Stay tuned for thePinotage Release Party,
