    A wines aroma is mostly responsible for what you taste. Trysipping wine while holding your nose closed and youll find that it

    has virtually no taste at all. The little bit of flavor that you get with

    your nose closed is because the wines aroma has entered your nasal

    cavity through your mouth.

    A wines aroma originates from chemical molecules in a gaseous

    state that rise from the surface of the wine. Even in small

    concentrations, we are able to detect the presence of these molecules

    in the form of distinct fragrances.

    Every individual aroma that we can identify in a wine, and thus,

    every flavor we perceive, is actually a chemical compound. These are

    compound groups such as alcohols, aldehydes and esters. They have

    names like ethyl acetate, benzoic aldehyde and piperonal. An off-smelling wine with the aroma of rotten eggs actually has excessive

    hydrogen sulfide.

    When sniffing and tasting wine, concentrate on the individual

    aromas that make up a wines overall impression. Wine is warmed as

    it enters the mouth, which releases the aromas that travel up a

    passage in the back of the mouth. The membranes along this route

    are what perceive the aroma as either pleasant or foul and enable yto identify a specific aroma.

    The next time you want to impress someone with your wine

    tasting aptitude, take a sip of Chardonnay with flavors of honey,

    butter and nuances of hazelnut and then declare how much you lo

    its balance of phenyl-ethylic acids and undecalactones. You will be

    admired more for your skills at pronunciation than wine tasting.

    Merryvale is unique in several ways. It was the first winery built in the Vall

    after the repeal of Prohibition (known then as Sunny St. Helena), and it put a

    shot into the arm of the domestic wine business, letting the country know tha

    Prohibition hadnt shut anything down in wine country. Equally, most wineri

    not just in Napa but throughout the world, tend to be in less-than-easy locati

    to reach, which makes sense given the necessity of having grapes in locations

    ideal for them rather than humans and the ability to process those grapes clo

    at hand. However, being in the city grants much easier access, not just to the

    winery but to the world-reknowned restaurants, shops, and community with

    easy walking distance. What greets visitors now are beautifully landscaped

    grounds, a glorious fountain, and a building which proudly shows off how loits been around, surrounded by the mid-Valley and its glorious views.

    The Schlatter family has created a tasting cellar which, befitting its links to

    Napas origins, shows off fir and redwood with lots to look at on the walls as y

    taste and wander around or sit at a table; the option of cheeses to pair with th

    wines is available, too, and adds a nice touch. Visitors can also choose private

    tastings in the Barrel Room, and there are often special events in the Cask Roo

    which shows off the history of Valley winemaking via two stories of century-o

    2,000 gallon aging casks.

    The wines are produced in different tiers, and as befits a winery with this

    much pedigree, there are lots of great options. The Prestige wines present two

    Chardonnay and the red

    Bordeaux blend, Profile, each of

    which is bottled to showcase the

    best lots from the estate

    vineyards in each vintage. The

    Merryvale Signature and Single-Vineyard wines are limited

    production releases of Cabernet

    Sauvignon, Chardonnay, Merlot

    and Pinot Noir, as well as

    vineyard designated bottles of

    Chardonnay, Sauvignon Blanc,

    Syrah and Zinfandel, among

    others. Starmont wines are

    produced as approachable and

    food-friendly bottlings of

    Cabernet, Chardonnay, Merlot

    and Sauvignon Blanc.

    For those wanting more to

    enjoy, there are a number of club

    options available to allow the

    experience to continue even

    when youve left the Valley.

    These include a choice of three

    or six bottles in each shipment,

    and the option of reds-only or a

    mix or reds and whites with each

    delivery. The Premium Club

    sends Merryvale and Starmontwines while the Prestige Club

    gives full access to limited

    production wines generally

    available only direct from the

    winery. For those seeking

    something even wilder, the

    Magnum Club offers only large-

    format bottlings of Merryvale

    and Starmont wines.

    As you can see, while wine is

    sometimes up on the side of amountain, it can also be just

    south of the heart of the Napa

    Valley. And that can be a very

    good thing. It makes for good

    times tasting great wines in a

    relaxed, welcoming atmosphere.

    Every year, Matanzas Creek Winery attracts wine lovers, n

    and far to experience the enchanting world of wine and laven

    Their annual festival, Days of Wine and Lavender, takes place

    Saturday, June 30th from 12 to 4 p.m., encouraging guests to

    unwind and relax in their luscious lavender gardens, sipping

    distinctive award-winning wines, paired with bite-size culina

    delights.

    Matanzas Creek is located off Bennett Valley Road in Santa

    Rosa, nestled between three mountain peaks in stunning

    Sonoma County. Guests are welcomed at the entryway with a

    glass of wine, under beautiful olive branch trees. Stroll the lo

    walkway and feast your eyes on an eclectic blend of bloominlavender gardens, exotic perennials, lush Chardonnay vineya

    and native grasses.

    The Days of Wine and Lavender festival is all inclusive. Fo

    THE CORLEY FAMILYSMONTICELLO VINEYARDS

    No matter how long youve lived in or visited wine country, its still a challenge to

    all the wineries, right? You develop a list of favorites that you must visit every trip

    theres only so much time Thats why its always a thrill to discover a new favorite, o

    old favorite, as you will when you drop in at 40-year-veteran Monticello Vineyards on

    Ranch Road in Napa.

    A Dream Takes Root

    In 1969, the Stanford-educated Corley was a running successful publicly tra

    company in Los Angeles, but wanted to trade his three-piece suit for overalls. After

    farming was in his blood. Every generation of my family for 400 years has been farm

    As a boy, I loved spending time on my grandfathers farm in southern Illinois. I just al

    wanted to get back to farming.At the time, Corleys friend, a wine shop owner in Los Angeles, was developing a p

    of property in Yountville. He invited Corley to come for a visit, and Corley was hooked

    he came with the spirit of a pioneer, intent on finding some land to grow his favorite v

    etals. I would come up nearly every weekend for nine months to see what was going

    here. I would just roam around, get to know people, ask questions. There werent m

    people around, but the ones who were, as Corley ticks off the names of contempo

    Napa Valley pioneers, were very helpful.

    A self-described Burgundy guy with a taste for Pinot Noir and Chardonnay, Corley

    looking for a place where those varieties would thrive. He found it in an 80-acre pr

    orchard at the southern end of Napa Valley. He liked the propertys proximity to the coo

    breezes of the San Pablo Bay, and the fact that it sat next to the Napa

    River. I didnt think of being on Highway 29 to capture visitors, I

    wanted to be on the river because I knew access to water would be

    essential.

    Once the property was cleaned up, Corley didnt cut cornersplanting the vineyard. We used all of the new technology coming out

    of Davis. We tested the soil everywhere, and we drilled holes in the

    ground to see how the water was flowing. Then we planted the vines

    closer together than most people were doing in those days to stress

    them.

    Jay Corley was a grower only until 1980, when he hired a wine-

    maker and started to produce wine, too. Jay Corley has since passed

    the reins of the vineyards and winery to three of his sons: Kevin, wine-

    grower and president; Stephen, who oversees marketing and adminis-

    tration; and Chris, the winemaker.

    The Next GenerationThings went well enough those first years to make Corley think,

    we can do this. Soon the successful winegrower wanted to build a

    winery. As a graduate student years earlier, Corley had written a thesis

    on starting up a winery. He opened his desk drawer, dusted off the old

    thesis and got started.

    All seven of Corleys children helped out at the winery during their

    high school years. But Corley encouraged them to go off, experience

    the world outside of the winery where they had grown up, and then

    come back if they wanted. Kevin Corley, now Winegrower and Pres-

    ident, became a successful banker in Los Angeles. Stephen Corley,

    now the winerys Director of Sales and Marketing, was a CPA who

    worked at the accounting firm KPMG before he came back to thewinery in 1997.

    Chris Corley, the youngest of the three, has worked at the winery

    the longest. Initially aiming to be a marine biologist, Chris eventually

    decided he would rather drown in wine than sea water. He wor

    in the cellar under other winemakers for 13 years before he earn

    enough stripes to become head winemaker in 2002.

    Now the three brothers form a harmonious management team

    Monticello. Three of them is better than one of me, says the senCorley.

    In the quaint, rustic tasting room, the staff pours either t

    Monticello Vineyards Tasting or their Corley Reserve Tasting

    can do both and have a little bit of almost everything the Cor

    produce from their estate vineyards in Napa Valley. The real treat i

    get downstairs in The Cellar of The Jefferson House and taste in

    Library or The Reserve Room. Also, guests at Monticello often g

    chance to do some barrel tasting on the fly, during weekends (Fri

    Saturday and Sunday) before noon with a comparative samplin

    Cabernet Sauvignon from three different estate vineyards.

    The Corleys love to tailor tastings to their guests preferences (w

    appropriate advance notice), so dont be shy about telling them wyou like. They also like to show off their library and library wines

    vertical format. Slip into the comfortable black leather chairs

    enjoy a flight of Cabernet Sauvignon, some Merlot or their v

    popular Corley Proprietary Red Wine.

    The Jefferson Connection

    Jay Corley was a great admirer of Thomas Jefferson, who was

    only a founding father but also Americas first great connoisseur.

    Margo Van Staaveren doesnt have a very long resume. In fact, I would be surprised if s

    ever had one. Margo has been spent her entire wine industry career, 32 years including t

    last ten as winemaker, with Chateau St. Jean. The Marin County native led a somewhat

    normal life growing up in Terra Linda, graduating high school and then enrolling at U. C.

    Davis, not for the winemaking courses, but I eventually fell into it, says Margo Van

    Staaveren, and quickly adds, the degree that was being offered back then wasnt in

    winemaking but in Fermentation Science. Now its called Enology.

    What really got her hooked was working a harvest that her dad had signed her up for

    Beringer Vineyards. In addition to picking the grapes, Margo would check the brix and te

    to everything else that was related to the harvest. And shortly after receiving her Davis deg

    she joined Chateau St. Jean as a lab technician and never looked back.

    Her first day on the job she met her future husband as they were both clocking in to b

    work in the vineyards lab. Sometime later, they started dating and then they married, both

    remaining in the lab at the winery. They both worked their way up the wine ladder to the

    position of assistant winemakers, and had time to raise a family as well.

    Husband, Don Van Staaveren, was named winemaker and eventually created the 1996

    Cinq Cepages, a unique blend that totally blew away the wine industry when it was releas

    in 1999. Wine Spectator named the 1996 Chateau St. Jean Cinq Cepages the Wine of the

    Year, the very first Sonoma County wine ever to receive the distinction. As assistant

    winemaker, Margo, too, was part of the team that brought home the glory to Chateau St. J

    Soon after creating the wine, Don Van Staaveren left to work as winemaker at Artesa

    Winery. Presently, he creates wines for Three Sticks Wines in Sonoma. In August of 2003,

    was Margos turn to become winemaker. They offered and I took it, says Margo. The kid

    were older and it made a lot of sense for me.

    As winemaker, Margo makes the final decisions involving the blend and the style to

    continue to produce consistently high quality wines. I believe that great wines are grownshe says, and we are very proud of our vineyard designated wines, utilizing the best fruit

    with exceptional varietal character.

    With the myriad of decisions that need to be made as winemaker such as when to pick

    grapes, what to blend, how long to barrel, when to bottle, how long to keep it in the bottl

    and when you are making some 40 different wines for a company the size of Chateau St. J

    there are a lot of decisions to be made.

    Some of the newer vintages that will be released before too long include a Malbec Rese

    a Cold Creek Chardonnay and a Russian River Pinot Noir, which, Margo says, is a multi-

    vineyard wine that we are trying for the first time.

    At present, Margo and her staff are working on several wines that will be released next

    summer such as the 2011 Fume Blanc. Were also blending some reds a Sonoma Caber

    and a Sonoma Merlot, says Margo. Blending goes on around here all year long. Were alstasting though the last vintage wines and assessing how to put them (blend) together. The

    an amazing amount of diversity to what we do here.

    One of her favorite aspects of her job is being able to create a wine and in a year or two

    even longer, be able to drink the fruits (no pun intended) of her labors, reliving all that we

    into the making of the wine.

    I love all the challenges of the wine business, Margo says, but it is important to realiz

    that first and foremost, this is an agricultural business, which makes it both exciting and

    humbling, especially when Mother Nature is involved.

    So lets not worry about that resume that she probably doesnt have. I dont think Margo

    Van Staaveren is going anywhere anytime soon.

    FILET OF BEEF AU POIVRE Serves

    This classic French bistro dish was surely created with B.R. Cohns

    Olive Hill Estate Cabernet Sauvignon in mind. Always a go to, feel

    good, special occasion or not recipe that is all about lush flavors that

    soar when paired with their Estate Cab!

    6 filets mignon, cut 1 inches thick

    Kosher salt

    2 tablespoons coarsely ground fresh black pepper

    3-1/2 tablespoons unsalted butter, divided

    1-1/2 tablespoons B.R. Cohn Grapeseed Oil

    3/4 cup chopped shallots (approximately 4 shallots)

    1 cup beef broth (homemade, canned or in the box) 1/2 cup Cognac or brandy

    Place the filets on a board and pat them dry with paper towels.

    Sprinkle filets with salt and then press the freshly ground black peppe

    evenly on both sides. Allow the meat to rest at room temperature for

    at least 15 minutes.

    Heat 1- tablespoons of butter and the grapeseed oil in a large saut

    pan over medium-high until the butter almost smokes. Place the

    steaks in the pan and lower the heat to medium. Saut the steaks for

    4 minutes on one side and then for 3 minutes on the other side, for

    medium rare. Remove the steaks to a serving platter and cover tightly

    with aluminum foil.

    Meanwhile, pour all but 1 tablespoon of fat from the saut pan. Add

    the shallots and cook over medium heat for 2 minutes. Add the beef

    broth and cover over high heat for 4 to 6 minutes, until reduced by

    half. Be sure to scrape the brown bits from the bottom of the saut

    pan. Add the Cognac or brandy and cook for 2 more minutes. Take

    the pan off the heat and blend in the remaining 2 tablespoons of

    butter and salt. Serve the filets hot with the lush sauce poured on top

    fruit-forward Zinfandel and a little known, but magnificent blend, La

    Salette. While lacking the big name appellation, these wines are by

    no means also-rans. In fact, the region is rated as the oldest and best

    in the State of California by the U.C Davis University. These are

    seriously good wines.

    The Vezr Family Vineyard tasting room is located in the tinyvillage of Mankas Corners. The town was originally established by a

    local miner in 1846. Hints of its old west history can be seen in the

    old general store and surrounding buildings. The tasting room is

    open seven days a week and no appointment is necessary. The ten

    dollar tasting fee is waived with a wine purchase. But, to really get the

    most out of your visit, opt for their VIP Barrel Blend Tour. At a bargain

    price of $35, this tour is well worth the extra investment.

    PEJU PROVINCE WINERYYou Wont Want to LeaveBY JoSh Stein

    Peju is simply unforgettable. Its no accident that the winery is called Peju

    Province, for it presents a world unto itself and tasting experiences unlike

    anything else in the Valley. Originally founded in 1982 by Tony and Herta Pe

    on thirty acres in Rutherford, Peju is now the responsibility of the second

    generation, daughters Lisa and Ariana and has expanded its reach to include

    one hundred thirty acre Persephone Ranch in Pope Valley, too. The winery is

    well known for its highly regarded bottlings of Cabernet Franc, Cabernet

    Sauvignon, Chardonnay, Merlot, Sauvignon Blanc, Syrah, Zinfandel and seve

    blends, including the proprietary Provence, a red/white cuvee, and Fifty/Fifty

    an equal mix of Cabernet Sauvignon and Merlot, the 2009 bottling of which

    was just declared one of Twelve Napa Standouts by Wine Spectator with a

    point rating. There are also several tasting-room-only releases perfect for the

    summer, including the lovely white Carnival; Peju Pink, with ten percent of

    proceeds funding cancer assistance in the Valley; and the brand new Ros of

    Syrah.

    Its not just the wines, by any means, which make Peju unforgettable. The

    winery and its surroundings and the variety of options for experiencing the

    wines are what truly set Peju apart. Driving down the Sycamore-lined privat

    lane away from Highway 29 leads to first sight of the Tower, the fifty-foot,

    copper-topped centerpiece which houses the main tasting area, framed on th

    inside in gorgeous woods and an antique 1906 ten-by-twenty-foot stained g

    window and on the outside by stone and copper. Surrounding this are the

    gardens designed by Tony and personally maintained by Herta herself. A Cu

    Willow grows next to a koi pond and rocks from the Pope Valley estate dot tarea. The circular courtyard in front of the winery contains a magnificent

    Camphora tree, ushering you into the experiences which await.

    And those are the true standouts as even a regular tasting at Peju is far a

    away anything but regular. The Classic Tasting is conducted in a novel

    presentation style, with groups of tasters spending time with an ambassador

    who discusses the wine, winemaking and the winery itself. There is also a

    Private Tasting available several times each morning for those who desire som

    special alone time or for larger groups. Equally, individualizing the experienc

    what Peju is all about, so the Premier Peju Experiences give some great

    options. Peju Fromage is a wine and cheese tasting in the Peju Kitchen,

    bringing great wines together with local artisan cheeses and crackers. Peju

    Cpage presents a private tour of the estate, vineyards and gardens incombination with a barrel tasting of reserve wine. Peju Priv is a private,

    reserve wine tasting of estate grown, limited-release bottlings hosted in the

    At Frank Family Vineyards, you might want to come for the history of the

    place, which goes back over a 125 years, back to 1884, when it was Larkmea

    Winery. Or, you might want to see the beautifully restored, multi-room tastinroom set amidst the expansive manicured lawn with its rose bushes, towerin

    old oaks and trimmed hedges, near the barrel cellar and the century-old nati

    sandstone winery building. But, what do people from all over the world real

    come for? For the outstanding wine poured by some the friendliest people y

    will find anywhere. The motto at Frank Family has long been Youll never h

    better wine ... or a better time and that is accurate, though perhaps a bit of a

    understatement. If you dont leave there with a smile on your face, after havin

    tasted an outstanding roster of wines, then I worry about you.

    While the winerys setting is exceptional, even more-so are the wines they

    produce, age and pour. There are legions of loyal wine lovers who will most

    enthusiastically attest to that. This group may not qualify as a full-blown cult

    but they are pretty close and they are international in scope, joined by their land respect for this winery. So, on second thought, maybe its more a matter

    people joined together by a discerning palate and good taste.

    Having sent scores of people there, and having escorted friends from a do

    countries to this property over the last couple of decades, I have yet to hear

    anything but praise. One friend from Boston comes to the Napa Valley twice

    year for two reasons: to go out to eat and to visit the tasting room at Frank

    Family. Not necessarily in that order.

    With so many wines with a Robert M. Parker, Jr. score of 90 or above, it i

    hard to know where to begin. But if I were to go there today which, now th

    I think of it, is a pretty good idea I would certainly consider the Reserve

    Chardonnay and the Reserve Cabernet Sauvignon. Their Chardonnay has

    always been a favorite wine for virtually everyone, even people who vow tha

    they only drink reds. As a wine to have with food, or simply by itself, it is in

    league of its own.

    Frank Family red wines are the measure of what red wines should be. In

    addition to the Reserve Cab there is the dense, spicy Zinfandel where the f

    seems to combine dark chocolate and cracked black pepper notes with an

    essence of raspberry to create a wine that fairly explodes in the mouth.

    Also available are a Reserve Petite Sirah; the Reserve Pinot Noir; another

    perpetual favorite, the very food-friendly Rutherford Reserve Sangiovese; and

    indescribable Winston Hill Red Wine. Then, add to that, the collection of

    sparkling wines, a Late Harvest Chardonnay and the often sold out Zinfande

    Port. It all combines to make for some of the most sought after, most coveted

    and most honored wines on the planet.

    The stewardship of the historic property is now the responsibility of

    Hollywood icon Richard Frank, recipient of an Emmy for lifetime achieveme

    As chairman of Walt Disney Television, president of Walt Disney Studios for

    almost ten years, and president of the Paramount Television Group, he expec

    perfection at the winery that bears his name and it shows up in every shining

    facet of this historic property.

    As legendary tasting room manager Dennis Zablosky, an icon in his own

    right says, I want visitors memories of the winery to be as much about their

    experience here as the wines they taste. And so it shall be.
