JOHN’S JOURNAL What a great day our last tour group enjoyed. So close to home!!! I’m sure Jenny’s Orchids will receive further visits from club members. Paul, the Park Ranger, reminded me of a close escape from “Ol’ Nick” when I received a huge electrical shock. It was a big thrill for me to see the photo of Vic Steen working on the Pump motor at Howard Springs.

I worked for Vic from early 1957 to late 1963 in Tatura, Victoria. Vic and his wife Carol attended our wedding in Echuca. After Sergeant Jason Blake’s talk on fraud we must keep our hands in our pockets. Fraudsters have their hands in everyone’s pockets. See opposite. Jim Wright as Rotary District Probus Chairman, through the Rotary Club of Palmerston/Litchfield has taken giant stride to the formation of the new Probus Club in Palmerston. A splendid turn up of our Club members to the Palmerston Golf Club to assist Wayne Zerbe promoting not only the new Probus Club, but Probus generally. Jim has approximately 26 likely members who have indicated their attendance at the meeting at Cazaly’s Club on Wednesday 17th October at 10:30am. Cheers Scotty. PS. Kenny Rogers Mum said, “find a job you love and you will never work a day in your life” PPS. I loved the building trade but it was WORK. Stop Press: The inaugural meeting of the provisional Probus Club of Palmerston was a outstanding success. 25 new members signed on. Some of our members will also become members which will be of significant value to the Charter President, Ken Cohalan. Congratulations!!

2. TOUR GROUP: has morphed into the GAMES and CARD day for November 28th at Tracy Village Sports Club, starting at 10:00am. The build up is too severe to be out and about, so a change of pace is in order. Please bring something for morning tea and

the only other cost is to buy your own lunch at the bistro. Choose from: Bridge, Canasta, Snap, Samba, Euchre, Monopoly Deal, Chess, Draughts, Chinese Checkers, Scrabble, Boggle, Dominos, Carpet Bowls etc. Play games for 1½ hours-rotation after 30-45 min. A slow braise can turn chewy morsels into tender mouthfuls. Braising is such a convenient cooking method, especially for some of the tougher muscles such as shanks and cheeks. Once the work of preparing ingredients is done and the liquid added, the braise can be left to simmer gently for hours unattended. And the result is a rich, full-flavoured dish not often matched by quick cooking. A case in point is our feature recipe, the peposo. Its full name is peposo all'Imprunetina, named after the town of Impruneta, a few kilometres outside of Florence. The town has always been famous for its fine terracotta made from the excellent local clay. The result is a rich, full-flavoured dish not often matched by quick cooking. The story of the peposo is that the kiln workers would prepare their next day's lunch by filling containers with cheap and often tough scraps of meat, along with aro-matic vegetables. A good dose of black pepper was mixed in to cover any hints of unsavoury flavours from the less-than-fresh meat. They'd cover the ingredients with red wine and leave it in the cooling kilns at night before they went home. The next day the peposo was removed and the kilns fired up again. The meat would be tender and the sauce rich and plentiful. PEPOSO BEEF CHEEKS BRAISED IN PEPPER AND RED WINE 2kg beef cheeks, cut into 3cm cubes (rolled in flour and sealed in small lots in a well oiled pan) 4 garlic cloves, peeled and lightly crushed 1 red onion, cut in 1cm dice 1 carrot, cut in 1cm dice 2 celery stalks, cut in 1cm dice 1L chianti or other red wine Salt and freshly ground black pepper 1 tbsp tomato paste 2 bay leaves 500ml veal stock Polenta or crusty bread, to serve Place sealed beef in a casserole pan with garlic, onion, carrot, celery and just cover meat with some of the wine. Simmer for 2 hours, partly covered with a lid. Add 1 heaped tbsp freshly ground black pepper, tomato paste, bay leaf, remaining wine and stock. Add 2-3 pinches of salt. Stir. Continue to simmer, uncovered, for 2 or more hours until sauce has reduced and thickened. If it dries out and catches on the bottom, stir in a little more stock. When cooked, check seasoning and add more salt if needed. Serve with polenta or crusty bread. Serves 6 as a main course

Correspondence: Details from Brisbane Bonus Club on “Operation Handshake”, a get together of Probus Clubs at “Expo 88” next year. Treasurers Report: Acting Treasurer N. Field reported a credit balance of $29.44. Still 5 members with out-standing fees General Business: Geo Fryson (RCDN) has set a date for the setting up of a Ladies Probus club. Guest Speaker: Ms Baiba & Mr. Greg Coleman of the NT Archives and Professor Alan Powell of the NT Uni-versity College all contributed to an interesting discus-sion on the description and collection of Archives with particular comments on the collection of Oral History Items. Greg Coleman indicated that he would be more than happy to arrange a recorder to be present anytime our Club conducted “Me” talks. Neil Conway passed the vote of thanks which was acclaimed by all members present.
