Highlights from JUNE
Quarterly Caregiver Welcome Dinner was held on Wednesday, June 20. Gorgeous peonies and amaryllis were graciously donated by the Wynn Las Vegas to brighten up the tables. NSS staff led some fun “ice-breaker” activities and presented the current NSS programs. Chef John provided the delicious meal to caregivers and participants. If you have not attended this program, you are welcome to join us in September. Contact Marcy or Nora for information. Watch for upcoming Caregiver Legal Workshop. Details to follow. Our Beautiful Planters built and donated by our local boy scouts have been planted in our Henderson garden . Our chief organic gardener and chef, Lori Greathouse assisted our participants and up are growing radishes, eggplants, okra (red box)-zucchini, spinach, and sweet pepper plants (yellow box). Flowers are growing everywhere and so are the smiles on the proud gardeners!

Recipe of the Month

Soy Sauce Marinated Pork Chops
Ingredients: 4ea. 6-7 oz. bone-in pork chops, trimmed (about ½ inch thick) ¼ cup reduced – sodium soy sauce 2 to 3 tsp. grated fresh ginger 3 Tbsp. lime juice ¼ tsp. crushed red pepper 2 Tbsp. sugar 4 cups mixed spring greens 1 Tbsp. canola vinegar ½ cup chopped fresh cilantro 1 Tbsp. cider vinegar Directions:
Place chops in a 3-qt. rectangular baking dish. In a small bowl whisk together soy sauce, lime juice, sugar, oil, vinegar, ginger, and crushed red pepper. Spoon 2 Tbsp. mixture over chops. Turn to coat. Cover. Let stand 20 minutes at room temperature, turning occasional-ly. In a small saucepan bring remaining soy sauce mixture to boiling. Boil gently 1 to 2 minutes or until reduced to about ¼ cup; set aside. For a charcoal or gas grill, place chops on grill rack. Cover; grill over medium heat 3 minutes per side or until chops are slightly pink in the center (145°F), turning once. Place greens on a serving platter. Top with chops. Drizzle with boiled say sauce mixture. Sprinkle with cilantro. Makes 4 servings.
Saturdays and Sundays Are Special:
Try not to miss our fun activities on Saturdays and
Sundays. On July 4th we’ll be celebrating
Independence Day. We will be also honoring our
seniors that served in the armed forces. There will be
a Patriotic Parade starring our seniors and delicious barbecue. Please come
dressed in your red, white and blue. Be on the look-out for some special
surprise events throughout the month. If these are not your regularly
scheduled days, we would still love to see you here. Please talk to our client
service representatives.
