As we celebrate our independence and salute the red, white and blue this month, I am reminded of the countless different ways that I am allowed to enjoy my freedom.

On a personal level, I am free to carve out a bit more “me” time as a result of my daughters planning their escape routes to college in the near future. And I hesitate to admit it, but I’m finding a bit of satisfac-tion in the tidiness of an untouched kitchen counter and for occasional silence in the den, which allows the occasional unscheduled half-hour to catch up on my favorite reads. I am also excited about reconnecting with a fun group of neighbors who gather to share stories about their lives, feast on scrumptious favorite recipes and roll the dice for a few fun rounds of Bunco at alternating homes throughout the year.

Professionally, I am grateful for the connections that I have made with so many individuals of Estrella, in an attempt to inform this community about the people and events that make this area of the valley such a desirable place to live. I would like to express my gratitude for allowing me to be a link between those stories and your mailboxes. Sharing those pieces of information has been a direct result of your willing-ness to reach beyond your own personal boundaries of duty and satisfaction to enhance the lives of oth-

ers; a direct result of freedom.

I’m sure that although the term free-dom is expressed uni-versally in this country, the word itself means something unique to everyone. Ask the military soldier who serves our country abroad, the small busi-ness owner, the retir-ing pilot, the teacher who enlightens her students with fresh new ideas she’s gathered through her sum-mer biosphere experience, or the mother of small children. Each unique individual would define their freedom differently.

As we step over this year’s half-way mark and gather together to celebrate our independence with the bursting, colorful firework displays over the Goodyear Ballpark, or by unifying with friends and family in cel-ebration of vacations, even if their furthest destination is our own backyards, I am reminded of one thing that is for sure - the price for freedom certainly isn’t free!

The Squadron Commander of the 69th FS Air Force Reserve, Steve Speckhard, parked his F-16 jet on June 2, 2010 for the last time at Luke Air Force Base, after a successful flying career that stretched over twenty years with the U.S. Air Force. With a group of his family, friends and fellow pilots standing close by, the retiring pilot, with the call-name “Speck,” emerged from the bubble canopy that settled restfully following the last 4-ship flight. “It’s been a great ride,” said Speck upon return, which included a ceremonial champagne shower, from his concluding flight path to a bombing range to do what the Squadron Commander loved to do best -- drop bombs!

Steve’s dream of becoming a pilot began in his child-hood back when he was just 10 years old. A cousin had taken him for a ride in a single-engine airplane, sparking his interest in aviation. It was the spark he wouldn’t forget. From that moment forward, Steve vowed that someday he would fly planes. He held true to his dreams; married his wife, Beth, who he met in college and began the career of his dreams, joining the U.S. Air Force.

His wife, Beth has been his continual supportive tower of strength at home in Arizona, where both of their boys have been raised since 1997. Beth recalls, “From our very first date, I knew Steve wanted to become an Air Force pilot. I was impressed that he had such a lofty goal. In our first year of marriage, I gave him an aviation book and in it I wrote, ‘To Steve-whose dreams are as high as the sky, from Me-whose aim is to help you achieve every one.”

As the pilot of an F-16 aircraft aggressor, the Commander’s assignments included a number of tours in Iraq in the early 90’s, as well as assignments in Texas, South Carolina and Korea. Besides being separated from his wife and young boys, he recalls that part of the hardship of being a pilot was losing friends over some of those years, both in combat and in training mis-sions. “There were tours and circumstances when not everybody came back,” remembers the Commander. But, despite the losses suffered over the course of his career, he fondly recalls the rewards of his chosen career path, which includes the many friendships, along with the physical demands of the job, and maintains a career-long focus on the tremendous sense of pride that he has received for being able to serve his country.

Back at home, Steve’s wife, Beth, and their two sons, Jake and Garrit, have reflected on their father’s accomplishments as a U.S. Air Force pilot with an equal sense of pride:

Garrit stated, “I think what I am most proud of is knowing that my Dad was responsible for keeping our country safe. I still brag about him to this day. Knowing that your Dad is a hero is a unique feeling that not all people know. I could always win a fight by saying, ‘Oh yeah? Well, my Dad drops bombs for

a living, and I know where you live!’”

The eldest son, Jake, a former Estrella Foothills High School graduate who now attends California Lutheran College in Central California, also took a few moments to reflect on his father’s career, “My Dad serving in the Air Force provided our family a unique opportunity in our upbringing; living in other places, making friends with many

people from all over the world. My Dad is great at what he does. He’s an exceptional pilot; that inspires me. He’s passionate about what he does. Even though we don’t have the same career paths, I hope one day to love what I do the way he does. I look up to him in all aspects of life; as a Dad and as a husband. He’s the kind of man I want to be.”

Undoubtedly, Steve surrenders his position with the support of his fam-ily. “Although I’m still on top of my game, my priorities have changed,” he states. It’s time for someone else to take over as Commander and for me and my wife to enjoy time together.” The retiring Commander hasn’t totally given up heights, however. He will continue flying as pilot for Fed Ex, as he has for the past ten years.

And so comes the time when Beth and Steve Speckhard, the “Specks,” might be seen more frequently visiting the boys in college; cheering on Jake from the football stands as he plays during his senior year this fall. Or, you might find them packing up, yet another bedroom in their home, as they deliver Garrit to his freshman year in college in pursuit of his degree in Marine Biology. Maybe you’ll discover they’ve planned a summer vacation to their cabin in Wisconsin or hear them refer to themselves a new self-given title - “Snowbirds.” But rest assured, the couple has plans to continue to travel to new heights, even if it’s by bicycle or on foot, winding through the trails of the Estrella Mountains in this Southwestern state that they continue to call home.

plans the assemblies and organizes the rewards programs that help students excel in many social aspects of being among peers in school. She is also admired as an educator for her willingness to accommodate all types of learners in her class-room, ranging from those students with special needs to the gifted.

Stacy is the “Gifted Teacher” for all qualifying second graders at Estrella Mountain Elementary School. She also hosts the after-school Science Club program, designed exclusively to teach sec-

ond graders about the effects of the earth and sun through science proj-ects. “There isn’t a time that I’m not thinking about lessons for the students,” says Stacy. With school out of session for just one week, at the time of this interview, Stacy has already emerged into interesting books and lesson plans to enhance learning while incorporating fun for

the children when they return to school in the fall.

In addition, due to a Grant from the University of Arizona, eight Estrella Elementary School teachers, Stacy included, will attend fifteen days of instruction from lead educators at the Biosphere II fellowship in Tucson this summer. Together they will study science and bring home fresh new teaching ideas to share with students. Stacy is overjoyed to gather knowledge and a wealth of information that she can bring back to next year’s second graders.

Stacy can’t wait to prepare her students for a variety of hands-on learn-ing experiences in science to prepare them for future years in science educa-tion that will be necessary for graduation requirements in the near future. “Science is an area that began falling by the way-side until we recently adopted the new FOSS kits,” she admits. “Science shouldn’t be scary,” she enthusiastically chuckled. “I want to bring that ‘Can-Do’ attitude to my students next year to enhance their excitement and love of learning the subject.”

You get Estrella Mountain Elementary School’s “Teacher of the Year,” Stacy Ruiz.

Stacy has been teaching second grade at Estrella Mountain Elementary School for the past six years. She was recently nominated for the prestigious title, “Teacher of the Year,” by the staff and administration at Estrella Mountain Elementary School. Along with her three children, ages eleven, eight and seven, Stacy and her husband, Michael, have recently relocated to the neigh-borhood, making the Estrella community their home. Stacy states that she and the kids couldn’t be happier about their shortened commute to school, which often includes walking together, instead of the lengthy car rides from their previous neighborhood. How many students can say they walk to school with mom, who is also “Teacher of the Year?”

“I can’t remember ever NOT wanting to be a teacher,” recalls Stacy. As a youngster, the second grade educator remembers having a cousin who was a kindergarten teacher, whom she admired and vowed to be “just like” when she grew up. Stacy grew up in a military family; her father was with the Army’s Military Intelligence. Because of his career, her family moved often. Changing schools was always a welcomed opportunity for Stacy to meet new people and fresh faces, she remembers. As a child, she lived in Maryland, Virginia, Pennsylvania, Kansas and three different cities in Germany, eventually landing in Sierra Vista, Arizona, as a junior in high school, where she met her husband, Michael. Stacy recalls being the most nervous about her move to Arizona. In her mind, the dry desert and going to high school among the brown dirt and snakes was a move that made her particularly nervous. But a positive attitude, combined with her love of talk-ing to people helped Stacy quickly adjust to the change. She admits that she quickly learned to love Arizona, vowing that she would eventually return to “settle out West.” She then returned to Kentucky and attended a small school called Eastern Kentucky University and transferred to the University of Kansas to earn her teaching degree, before returning to Arizona.

One of the reasons Stacy Ruiz is so honorable to her co-workers, peers and students is the admiration they have for her enthusiasm to lead the Character Counts Program at Estrella Mountain Elementary School. Stacy

If you’ve ever traveled the diverse highways of varying terrain in Arizona in search of adventure within our state’s small towns or cities, then quite possibly, at one time or another, you’ve climbed to elevations where snow-capped mountains covered with ponderosa pine trees appear to touch heaven or, at the very least, pierce billowing white clouds float-ing within a crisp blue sky. Your travels might have included a breath-taking look through binoculars over the edge of one of the largest ‘holes’ in the earth, rich in artifacts and history, earning the title of one of the seven wonders of the world, as you caught a possible glimpse of the cold raging waters of the Colorado River, which has carved its way into the bottom of the canyon. Maybe you’ve taken a guided tour in a jeep, as it stumbled along the rocky dirt trails beneath the steeples of sharp red rocks that seem to melt into beautiful lakes and streams, or photographed the his-torical Copper Queen Mine in a small, quaint mining village in the southern part of this great state.

Arizona is a place where travelers can explore highways and by-ways that range in elevation from 12, 633 feet at the top of Mt. Humphreys Peak to a mere 70 feet at the base of the Colorado River. A single day’s drive can grant a curious adventure-seeker a wide-range of observations. Look closely to witness pine trees and cottonwood trees fade with the descending altitude to be magically replaced by tall saguaro cactus towering over the ocotillo and prickly pears, as they raise their arms proudly towards the sun, as if unable get enough of its radiant light or heat.

Along these stretches of beautiful scenery and open highways, in a state many of us call home, are some road signs, depicting places and landmarks that may have earned your second glance. Maybe you’ve even repeated the words on the sign aloud in complete astonishment of whom and how the name came about. Strange but true, as many history teachers and histori-ans will tell you, history sometimes has multiple explanations in regards to events. The same is true for these names.

Much of the following information is documented in a variety of sources, including Arizona Place Names by Will C. Barnes - University of Arizona. Others have drawn interesting comments and stories, exchanged by word of mouth. That being said, the strange, but very true, names of vari-ous places in Arizona continue to draw curiosity among passers by.

Let’s begin at home, in Goodyear:

goodyear - Goodyear Tire & Rubber Company purchased a large plot of land with the intent to grow cotton back in the late 1900’s. However, by 1944, Egyptian cotton was no longer important to the tire manufacturer, so that land was sold.

Jumpoff canyon - Early pioneers got creative when winding wagons among the cliffs of the Mogollon Rim. Brave travelers chose to jump to get to the valley below. The pioneers were believed to unload their belonging from their wagons and then tie the wagon to a tree, slowly lowering it to the ground below.

show low - A town earning its name over a game of poker between two founders -Cordon E. Cooley and Marion Clark. The winner got to stay, the loser would leave. Cooley, needed one additional point. “Show low and you win,” Clark said. Cooley’s next card was a deuce of clubs.

tombstone - Ed Schieffelin set out in search of mining prospects in the San Pedro Valley. He was warned about hostile Apaches that he was sure to encounter in the area. “You’ll find your tombstone,” they warned. Mr. Schieffelin instead discovered an area rich in silver, millions of dollars worth.

tortilla flat - Located just east of metropolitan Phoenix, a place where you might find an abundance of flat, circular rocks that resemble the Mexican-food staple that so many of us enjoy. Don’t expect to find a row of fancy Mexican restaurants in the small town, however. Documents show that a cowboy named Cline was once stranded in the area during a cattle drive in the early 1900’s.

Bloody Basin - Situated between the cities of Phoenix and Flagstaff, this exit’s unusual name has kept

me from stopping for a pit stop, and appears to have kept settlement away as well. Two theories state that the spot marks a battle stage between set-tlers and Indians in earlier days.

nothing, aZ - An abandoned-looking site located west of Phoenix, near the Nevada border, this spot has just two buildings, a gas station and a rock shop, but the sign, placed by former residents, marking the area on U.S. Route 93, proudly informs drivers of the town name, Nothing, Arizona.

Jacob lake - Named after a Mormon settler, Jacob Hamblin, whom after marrying his first two wives in Utah developed a close relationship with Indians, leaving his name on this small shallow lake.

monkey springs - Located in the far southeast corner of Arizona, Monkey Springs is believed to be named by American settlers who mis-pronounced the name of Captain Manje, a Spanish explorer who had traveled the region with Father Kino in 1694.

Bumble Bee - Located in the middle of the state, this small town was named because of prospectors who discovered honey near a small creek. The discovery included bee stings in abundance and the experience prompted the prospectors to make note of the area, Bumble Bee Creek. A decade later, when a post office was established in the area, the small town adopted the buzz name.

There you have it - a handful of historical facts about the Old West that are documented tidbits just waiting to be repeated. Wait a minute, I see you securing that flopping canvas hat beneath your chin, strapping the laces of those hiking boots and filling your camel-back full of drink-ing water. You’re an Arizonan and you’re at it again; enlightening your pas-sengers on your way to who knows where, as you wind your vehicle along the highways of Arizona.

local summer activities for Youngsters

So summer vacation has “set in” and you’re not quite sure how to keep the kids busy? We’ve got some answers. The City of Goodyear has a vari-ety of special interest classes for all ages, designed to help beat the summer boredom blues. For more detailed information and for registration for these activities, visit www.goodyearaz.gov/rec or call 623-882-7525. Youth special interest courses for July include:

hula. Ages 2 yrs to adult can learn the graceful movements and total body workout benefits of dance to describe a song. The second, four-week, sum-mer session is scheduled for July 5 through August 9 at the Palm Valley Community Center and the price is $30.

hip hop/tap combo or Ballet/Jazz combo classes for ages 3 to 5 focus on fun through a positive introduction to dance. The second summer session is set for July 21 through August 25 at the Steppin’ Out Performing Arts Studio at 13331 W. Indian School Rd, Litchfield Park and the price is $40. (Separate classes are also available for ages 5-7).

cheer/hip hop combo course for ages 7 to 12 will combine basic jumps and stunts with the latest dance styles that will be showcased for parents at the end of the session. The cost for this class is $35 and the second sum-mer session is scheduled for July 21 through August 25 at the Steppin’ Out Performing Arts Studio, located at 13331 W. Indian School Rd., Litchfield Park.

Babysitting. This community education program will cover child safety and basic care instruction, including pediatric CPR, first aid and general care. Interested students should call 1-866-508-7234 or email [email protected]. The fee is $45 for this Saturday, July 17th class scheduled at Fire Station 3 from 9 am to 1 pm.

aBc’s & 123’s. An alternative for little ones not yet enrolled in preschool or kindergarten. These youngsters will enjoy letter and number recogni-tion, physical exercise, Spanish, safety topics, crafts, story time and more. Children must be potty trained to attend this class, which is sure to help little ones gain independence as they transition into upcoming school years. Session two is set for July 6 through August 5 on Tuesdays and Thursdays at the Goodyear Community Center, with a $60 one-hour charge or $120 for 2 ½ hour class.

Please register a.s.a.p. for interested courses, as they fill rapidly. Proof of residency will be required for Goodyear residential rates.

Are you one of the 2 out of 3 Americans that are either overweight or obese? If yes, you may want to continue reading to gain insight on weight loss and weight management.

The risks associated with being overweight/obese are cardiovascular disease, type 2 diabetes and certain types of cancer, not to mention depres-sion and a lack of energy that people experience when carrying too much weight. By losing 5-10% of your body weight, you can significantly reduce your risks for these diseases.

Weight loss, for most, is not rocket science. If you expend more calo-ries than you consume, you will lose weight. Consume more than you expend and you will gain! 3500 calories equals approximately 1 pound of fat. If you burn an extra 500 calories per day for 7 days, you should lose 1 pound per week. The same results will occur if you eat 500 calories less a day. If you were to do both, you could lose 2 lbs. per week which is still considered safe weight loss. Research shows that you will lose weight either method, but you are more likely to keep it off if you are exercising. Once you lose roughly 10% of your body weight, your body becomes more fuel effi-cient; you will want to increase the amount of exercise to continue losing.

The American College of Sports Medicine (ACSM) and the American Heart Association (AHA) recommend that healthy adults between 18 and 65 accumulate at least 30 minutes of moderate intensity exercise a minimum of 5 days per week (150 minutes) for heart health. Think of brisk walking as moderate intensity, running is vigorous. You can do this in increments of 10 minutes or more to achieve the 30 minutes. For weight loss or main-tenance, the recommendations double, 60 to 90 minutes most days of the week (300 minutes).

With the hottest months of the summer season upon us, it’s especially important here in the desert to conserve water. According to the City of Goodyear’s Water Conservation Division, our city uses an average of 7.1 million gallons of water every day. So now that you’re asking yourself, “What can I do to help reduce that number?” Well, one easy way to do this is to repair or replace dripping faucets, wasteful showerheads or running toilets.

Here’s how…

Call the manufacturer for a replacement faucet if yours is still under war-ranty. They will be happy to send you a new one or at least the replacement parts to repair it.

Go shopping for a new replacement faucet, if it is not covered by a war-ranty. There are some really attractive styles and finishes to compliment your décor.

There are new showerheads that not only save water while on, but also can “pause” while the water gets hot enough for your morning shower. Costco Warehouse has a nice one that even comes with a rebate for being “green.”

If it’s your toilet that is running, it may need a new fill valve or flush valve. You can get a kit to replace both in the plumbing department for about $25.

Perhaps now is the perfect time for a new toilet to freshen up a tired bathroom. Toilets may not be that glamorous, but new technology has made some really nice ones available these days that actually use less water while providing more flushing power, such as the American Standard Champion 4, which is our top pick. You can also get toilets that are a little higher and provide better comfort when sitting.

July and august find us squarely in monsoon season. while we welcome the summer rains, the vigorous storms present some challenges for plant material. as your landscape management provider, we are prepared to deal with the effects of monsoon events.

prior to the monsoon, Dlc resources, inc. has already utilized a proactive tree management pro-gram. although strong storms and microbursts can damage any tree, we continually seek to minimize tree damage by identifying trees most likely to be severely affected by high winds. these trees are pruned to remove overly thick foliage and dead or structurally unsound branches to minimize the chance the tree will be damaged or cause dam-age during a storm.

when monsoon storms arrive, the emphasis shifts to clean-up and repair. typically, the summer storms occur late in the day, after crews have left the property for the day. for immediate emergency aid, we have personnel on call 24 hours a day. these workers are equipped to deal with the most pressing effects of the storm, such as trees blocking streets or sidewalks. full scale cleanup generally begins the fol-lowing morning. normal maintenance activities may need to be suspended or reduced in scope while the crew clean up debris and perform repairs. if neces-sary, extra personnel will be provided to expedite the storm cleanup.

in spite of the damage these summer storms can cause, there is a silver lining to the monsoon clouds: moisture! the monsoon presents us all with a great

opportunity to save water. we assess the amount of water each storm brings and suspend or adjust irrigation schedules appropriately. not only is rain-water free, it is also superior to irrigation water due to its lower alkalinity. in addition to providing moisture, the rainwater helps leach accumulated salts away from the roots of shrubs, trees and turf.

Assess Your Own YardYou can benefit from similar pre-monsoon

practices in your yard. assess your trees and have dead branches removed. if the foliage in your tree is

exceedingly thick and heavy, have the tree pruned. You may want to hire a certified arborist to do the assess-ment for you.

following a storm, check the status of your irrigation controller. power outages can reset irrigation clocks and schedules, and it may not be appropriate for the weather. if your property receives a substantial amount of rain,

turn off your irrigation system. Be aware of your plant material and soil moisture in order to deter-mine when the water needs to be turned on again. Overall, you may not need to water as much as you did in the drier months of may and June.

even if it does not rain, be aware of high humidity; observe the condition of your plants and check the moisture of your soil. the best way to check soil moisture is to stick a screwdriver in the ground. if you are able to insert the screwdriver easily to approximately 6 inches, there is enough moisture in the soil. if you have difficulty, you may need to apply more water.

people in your neighborhood

I first met Angie and Tim when they contacted me wanting to share a sophisticated, rapid-growing Century Plant, which was gaining attention in their front yard. It had sprouted up rapidly into the beautiful blooming stalk that we shared with you in our June issue of My Hometown Estrella. Landscapers had put it in, at their request, and finally Tim, Angie and anyone who hap-pened to be passing by, were enjoying its unique beauty. Their exquisite landscaping along with their infectious enthusiasm for life, prompted me to share a glimpse of this special couple with you.

Tim runs his own local pest control company, Pest Experts, right here in Estrella. He has been doing this type work for the past eight years and prides himself on being a hands-on business expert, giving his customers the best local service. When he’s not eliminating pests, he enjoys cooking with Angie (apparently, the two of them have come up with some tasty, yet secret, recipes). In addition, Tim teaches country dance lessons of all types at Roman Oasis in Goodyear, where he and Angie met.

Angie enjoys working out, travel and spoiling her new miniature schnauzer, Sophia. She is employed by Coldwell Banker. Prior to moving to Arizona, she was an Escrow Manager for Chicago Title for 25 years. “I thought I would like to experience the other side of the real estate coin and sell homes and I love it,” she said.

angie baca and tim gibbonsTime spent together is important for this couple,

so they’ve planned many weekends riding two of their horses, camping in the northern parts of the state, and even ocean swims on the cooler beaches of Rocky Pointe, Mexico. A special trip to Yellowstone National Park is also on the agenda for later this year. Some of the far away destinations that they dream of visiting include Ireland, Paris and Australia.

Together, these residents of The Links think it would be fun to own a country-style Bed & Breakfast business, where they could offer some old-fashioned hospitality and

put some of their wonderful secret recipes to great use with potential custom-ers seeking a sweet retreat. In the meantime, they get rave reviews and plenty of taste-testing opportunities from neighbors and family members during the different holidays and at block parties in their neighborhood. And, what amazing neighbors they have! Four different families living close to them are members of their very own extended family. Organized activities include street barbeques complete with bouncies for the kids, Bingo night for the ladies and poker night for the gents. “I love having the best neighbors ever all around us,” says Angie.

Look for Angie and Tim at the swimming pool at Starpointe with their granddaughter this summer. In addition, they both added, “With the exercise gym so close to home, there’s no excuse not to get some exercise in often.”

No Bake Desserts Using 6 Ingredients or LessBaby, it’s hot outside! I wanted to make a dessert without heating

up my house or driving down the hill for ingredients so I went flipping through my old recipe box and found these old favorites. What’s better than a cool and creamy dessert that is quick to prepare with few ingredients that you probably already have on hand? How about all that and no bak-ing required? That makes these recipes great for all the potlucks, parties, and picnics we all attend in the summer. These recipes are also great for children to make as one of their first kitchen experiences.

The common ingredient in all these recipes is frozen whipped topping.

1 (6oz) can frozen lemonade

1 (14oz) can sweetened con-densed milk

1 (8oz) tub frozen whipped topping, thawed

1 ready made graham cracker pie crust

mix all ingredients in stand mixer or with hand beater until fluffy.

pour into crust and refriger-ate until firm

lemonade PieServes: 8

1 (8oz) block cream cheese, softened

1/2 cup sugar

1 (8oz) tub frozen whipped topping, thawed

1 (19oz) can cherry pie filling

1 ready made graham cracker pie crust

Blend together cream cheese and sugar. fold in whipped topping.

spoon into graham cracker crust, spreading cream cheese mixture up the sides. the cream cheese mixture will be about an inch thick on bottom and sides of crust.

pour cherry pie filling into center. chill at least 3 hours until firm

cherry cheesecake PieServes: 8

1 (8oz) block cream cheese, softened

1 1/2 cups confectioner’s sugar

1 cup peanut butter

1 cup milk

1 (16oz) tub frozen whipped topping, thawed

2 (9 inch) prepared graham cracker pie shells (I like chocolate)

Beat cream cheese and confectioners suger together until smooth and creamy. mix in peanut butter and milk. Beat until smooth. gently fold in whipped topping.

spoon into the two gra-ham cracker pie shells. cover and freeze until firm

2 (3.5oz) packages instant vanilla pudding mix

1 (8oz) tub frozen whipped topping, thawed

3 cups mik

1 (16oz) pkg graham crack-ers

1 (16oz) pkg prepared choc-olate frosting

in medium bowl, mix together the pudding mix, whipped topping, and milk. Blend well.

arrange a single layer of graham cracker squares in the bottom of a 13x9 pan. spread half the pudding mix-ture evenly over the graham crackers. top with another layer of graham crackers, then the remaining pud-ding mixture. finally, top with another layer of graham crackers.

spread the frosting over the whole cake to edges of pan. cover and chill at least 4 hours before serving.

Serves: 14

I usually have one or two tubs in my freezer – unless of course, my teenager has gotten to it and eaten it like ice cream. You can always whip up your own real whipped cream instead, but the calorie count will be much higher and the texture will be different.

Speaking of calories, all of these recipes can be modified to be lower in fat and sugar by substituting ingredients to your liking. One warning, though – in recipes calling for instant pudding mix and milk – do NOT use soy milk as the pudding will not thicken.
