Tablespoon Butter 1 Tablespoon Granulated White Sugar 1 Tablespoon
of firmly packed Dark Brown Sugar 3 Drops of Vanilla Extract Small
Pinch of Kosher Salt 1 Egg Yolk (discard the egg white or save for
different recipe) Scant of All Purpose Flour (slightly less than of
a cup) 2 heaping tablespoons of Semi Sweet Chocolate
ChipsInstructions1. Start by melting your butter in the microwave.
Butter should just be melted, not boiling.2. Add sugars, vanilla
and salt. Stir to combine.3. Separate your egg and add the yolk
only to your cup. Stir to combine.4. Add flour, then stir
again.Measure a scant, slightly less than full, cup of all-purpose
flour.5. Add the chocolate chips, and give a final stir. Now your
mixture will look like cookie dough.6. Cook in microwave 40-60
seconds, start checking for doneness at 40 seconds. Mine takes 50
seconds. Do not cook past one minute, just like a regular cookie,
this will continue cooking as it cools. If the cookie is dry or
cake like, try less time.7. Serve warm.Microwave Brownie in a

microwave in just a few minutes.Ingredients 2 tablespoons of butter
2 tablespoons of sugar 1 firmly packed tablespoon of light brown
sugar teaspoon of pure vanilla extract Pinch of kosher salt 1 egg
yolk 4 tablespoons of flour 1 tablespoon of Hersheys unsweetened
cocoa powder 2 heaping tablespoons of semi sweet chocolate
chunksInstructions1. Melt butter in microwave safe mug or ramekin.
Butter should be melted, not boiling.2. Stir together butter,
sugars, vanilla and salt.3. Stir in egg yolk. Do not use egg white!
Save for a different recipe or discard.4. Add flour and cocoa
powder and stir again until well combined.5. Finally, add chocolate
chunks.6. Cook for about 45 seconds in microwave. Do not over cook.
Microwave times may vary.
Peanut Butter Mug Cakerecipe from//Kirbie's Cravings
4 tablespoons all purpose flour4 tablespoons white granulated
sugar1/4 tsp baking powder1 egg3 tablespoons peanut butter3
tablespoons milk3 tablespoons vegetable oil
Combine all ingredients in an oversized coffee mug. Whisk well
with a small whisk until smooth. Microwave on high for 1 1/2
minutes and then take it out to check to see if it is done. If not,
continue to microwave in thirty second intervals. Mine was done at
2 minutes. You dont want to overcook it or it will become rubbery.
You can also make this into two smaller-sized mugs. You can mix the
batter all in one mug and then pour half into another mug. Make
sure you cook each one individually.
Chocolate Peanut Butter Mug CakeYield:1 mug cake
recipe note: sometimes I like to stir in mini marshmallows or
some chopped walnuts to add a little something different! Add both
and it's like a Rocky Road Mug Cake!ingredients:3 tablespoons
flour2 tablespoons sugar1 1/2 tablespoons cocoa powder1/4 teaspoon

Start by melting your butter in the microwave. Add sugars,

then stir again. Cook in microwave about 60 seconds. Let cool a
minute or two. Cookie will be soft at first and will become chewier
as it cools.Serve warm.

the frosting:1 cup of heavy whipped cream2 1/2 tbsp sugar3 oreos,
crushed into fine pieces (I ran mine through a food processor. the
cookie must be crushed enough so that it fits through the piping
tip)directions:1. Mix all ingredients for the cake in an oversized
mug except the oreos. After batter is smooth, add in the oreos and
crush oreos into batter with a metal spoon. Cook for approximately
1 1/2 minutes in microwave. Check on middle of cake. If not done,
cook for about 20 more seconds. Careful not to overcook or cake
becomes rubbery. Mine was done at 1 1/2 minutes.2. While cake is
cooling, making the frosting. Whip the heavy cream and sugar on
high speed. Crush oreos separately in a food processor. Oreo crumbs
must be fine enough that they fit through piping tip if you are
piping the frosting. After the heavy cream becomes thick and forms
peaks, gently fold in the crushed oreos before placing frosting
into piping bag. The recipe makes more frosting than needed for one
serving but it's hard to make a one serving frosting.
Nutella Mug CakeIngredients4 tablespoons self rising flour4
tablespoons white granulated sugar1 egg3 tablespoons cocoa powder3
tablespoons Nutella3 tablespoons milk3 tablespoons olive or
vegetable oilMethod1. Combine all ingredients in alargecoffee mug.
Whisk well with a fork until smooth. Microwave on high for 1 1/2 3
minutes. (Time depends on microwave wattage. Mine took 1 /2
minutes.) Top with whipped cream and a little chocolate sauce if
desired.2. Top with whipped cream and chocolate syrup. Enjoy!Note:
Depending on the wattage of your microwave, you may have to
increase cooking time.Makes 1 very large serving.
Red Velvet mug cake
ingredients:For the cake:4 tbsp flour4 1/2 tbsp sugar1/8 tsp
baking powder1 1/2 tbsp unsweetened cocoa powder3 tbsp oil3 tbsp
buttermilk1 egg1/2 tsp red food coloringFor the frosting:2 tbsp
cream cheese2 tbsp butter1/2 cup sugardirections:Mix all the
ingredients together into an oversized mug using a fork or small
whisk until batter is smooth. Cook in microwave for about 1 min 30
seconds. It might need an additional 30 seconds. Be careful not to
overcook as batter will become dense and rubbery.Let cake cool
slightly before piping frosting. For frosting, combine all
ingredients into a mixing bowl and mix on high speed until light
and fluffy. Pipe onto cake.The Ultimate Microwaved Chocolate Cake
in a Coffee Cup
4 tablespoons unsalted butter1 ounce bittersweet chocolate,
chopped, plus 1 ounce broken into 4 equal pieces1/4 cup (1 3/4
ounces) sugar2 large eggs2 tablespoons unsweetened cocoa powder1
teaspoon vanilla extract1/4 teaspoon salt1/4 cup (1 1/4 ounces)
all-purpose flour1/2 teaspoon baking powder1. Microwave butter and
chopped chocolate in large bowl, stirring often, until melted,
about 1 minute. Whisk sugar, eggs, cocoa, vanilla, and salt into
chocolate mixture until smooth. In separate bowl, combine flour and
baking powder. Whisk flour mixture into chocolate mixture until
combined. Divide batter evenly between 2 (11-ounce) coffee mugs.2.
Place mugs on opposite sides of microwave turntable. Microwave at
50 percent power for 45 seconds. Stir batter and microwave at 50
percent power for 45 seconds (batter will rise to just below rim of
mug). Press 2 chocolate pieces into center of each cake until
chocolate is flush with top of cake. Microwave at 50 percent power
for 35 seconds (cake should be slightly wet around edges of mug and
somewhat drier toward center). Let cakes rest for 2 minutes.
Serve.Mango Yogurt Pudding
Ingredients:400ml Low fat natural/mango flavoured yoghurt500ml
Hi-cal low fat milk500g mango puree90g castor sugar200g cubed fresh
mangoes (adjust amount according to your own preference)100ml
water30g gelatin powderMethod:1. Heat milk with sugar till sugar
just dissolved. Remove from heat and leave to cool.2. Stir mango
puree and yoghurt into cooled milk. Strain for a smoother
texture.3. Dissolve gelatin in 100ml hot water.4. Stir cooled
gelatin solution into mango yoghurt mixture. Blend well.5. Pour 1/2
mango yoghurt mixture into jelly mould, chill for 20 minutes, top
with cubed mangoes and pour in the remaining mango yoghurt
mixture.6. Chill for 3 hours before serving.
Blueberry, Mango & Raspberry Pudding
Ingredients 3/4 cup flour 4 cups whole milk 2 tablespoons butter
3/4 cup sugar 1 cup Blueberry smoothie (or juice) 1 cup Mango
smoothie (or juice) 1 cup Raspberry smoothie (or juice)Method1. In
a medium pot, reduce the smoothies (or juices) to 1/3 cup. Set
aside and let cool.2. In a large pot, melt the butter over medium
heat. Add 3/4 cup flour and whisk (it will look lumpy and give the
impression that this will never work with this amount of butter,
but it will trust me).3. Pour in 4 cups of milk and 3/4 cup sugar
gradually (whisking constantly and thereby dissolving the lumps)
and cook on low-medium heat until the mixture starts to thicken
(appx. 30-40 minutes).4. With the help of a hand blender, pulse
until all the lumps are gone and the flour is absorbed completely
by the milk. Take off the heat.5. Transfer 1 1/2 cups of pudding
(through a fine sieve) and 1/3 cup of blueberry smoothie (juice) to
a stand mixer and beat with the whisk attachment for 10 minutes.6.
Repeat with other flavors and assemble in your desired dish and
chill.
Donut Mug Cakesingredients:3/4 cup sugar1 large egg1 1/2 cups
all purpose flour2 tsp baking power1/4 tsp salt1/4 tsp ground
nutmeg1/4 cup vegetable oil3/4 cup fat free milk1 tsp vanilla
extractFor the chocolate ganache:4 oz bittersweet chocolate,
chopped1/2 cup heavy creamdirections:1. In a large bowl, whisk
together sugar and egg until combined. Add in flour, baking powder,
salt and nutmeg. Then mix in vegetable oil, milk and vanilla
extract. Mix until batter is smooth.2. Fill an oversized mug about
1/2 full with batter. Cook in microwave for about 1 minute and 30
seconds. Careful not to overcook or cake will become hard. If cake
is puffy and toothpick inserted comes out clean, then it is done.
You can repeat with remaining batter or store batter in fridge for
later use.3. While donut mug cakes are cooling make the ganache.
Heat heavy cream microwaveable glass cup for about 40 seconds in
microwave. Pour heavy cream into bowl of chopped chocolate. Stir
and mix until chocolate is completely melted and smooth.4. Let
ganache cool for a few minutes before drizzling over donut mug
cakes
Banana Cinnamon Chip Mug Cakeingredients:4 tbsp all purpose
flour1/2 tsp baking powder1/8 tsp cinnamon2 tbsp mashed ripe banana
(this is a little less than 1/2 of a banana. Keep in mind that 2
tbsp of mashed banana is more than 2 tbsp of whole banana. Just
like banana bread, the riper the better for the banana)2 1/2 tbsp
sugar3 1/2 tbsp fat free milk1 tbsp mini cinnamon
chipsdirections:Mix together flour, baking powder, cinnamon, mashed
banana, sugar, and milk into a microwaveable mug with a small whisk
until smooth. Stir in the cinnamon chips, leaving a few to sprinkle
on top. Microwave for about 1 minute. Surface of cake should be
dry. Let cake cool for about 1/2 hour before eating.
Banana Mug Cakeingredients:5 1/2 tbsp flour1/4 tsp baking
powder4 tbsp sugar1/4 tsp cinnamon2 tbsp greek strained nonfat
plain yogurt1 egg4 tbsp nonfat milk3 tbsp mashed bananas (about 1/2
of a banana, keep in mind 1 tbsp mashed banana is more than 1 tbsp
of a piece of banana before it's mashed)directions:1. Mix all
ingredient into an oversized mug until batter is smooth (make sure
to get the flour that sticks to the bottom). Cook for about 1 1/2
minute in microwave. Check for doneness. If inside is done, cake is
done even if outside appears slightly wet/gooey. Let cake cool
before eating.
