Equifax: Auto loan originations hit eight-year highStaff reports that auto loan originations are at their highest levels since 2008, according to the February 2016 Equifax Inc. National Consumer Credit Trends Report. More than 26.8 million auto loans totaling $554.8 billion were originated between January and November 2015, Atlanta-based Equifax (NYSE: EFX) reported. That marks is a 9.4 percent increase in accounts and a 12.4 percent rise in balances over the same time period in 2014. (Ga Trend)

On March 17, Stephanie Hollifield, UGA/Brooks County Extension ANR Agent/CEC, had the opportunity to visit with University of Georgia Senior Vice President for Academic Affairs and Provost Pamela Whitten. Provost Whitten was visiting UGA Tifton Campus-Tifton, GA with Dr. Laura Perry Johnson, associate dean for Extension, to learn more about UGA research and Cooperative Extension. Stephanie met Provost Whitten and Dr. Johnson along with Dr. Phillip Roberts and Dr. Jared Whitaker, at UGA Cotton Micro Gin, to discuss the importance of research conducted and delivery of UGA research based information to agriculture producers. Stephanie utilized this valuable time with Provost Whitten to highlight the importance of Brooks
County agriculture producers to the state’s economy. Stephanie discussed Brooks County commercial agriculture production, the high quality of Brooks County agriculture commodities, and valuable economic impact of Brooks County agriculture. Stephanie provided Provost Whitten with information that gave a brief history of Brooks County agriculture and the current important role that Brooks County agriculture contributes to our state. Also, thanks to Thompson Farm Smokehouse, Stephanie presented Provost Whitten and Dr. Johnson with gift bags that contained a variety of Thompson Farm products. Brooks County Extension appreciates Thompson Farm Smokehouse’s contribution to Provost Whitten’s visit to South Georgia.

EGGSHi, this is Roxie Price, Family and Consumer Sciences Agent with UGA Extension in Tift County.
We will soon have a refrigerator full of boiled eggs. So how long do we keep them? How long did you hunt them? Did they get cracked during the process?
These are all important questions to ask yourself before you eat those nutritious hard boiled Easter Eggs.
The eggs should have been hunted for no longer than 2 hours and then placed back in the refrigerator.
If any of the eggs are chipped or cracked do not use them for hunting. If some eggs were cracked during the hunt, those should be thrown out. Even the smallest crack can let bacteria in.
Now, if you were careful with the eggs and
you believe they are safe to eat, how long should you keep them in the refrigerator?
Hard cooked eggs can be safely stored in the refrigerator for 7 days. Do include these as healthy snacks in your diet. They are a good source of protein and only have 70 calories per egg.

Nor would he begin his day without asking God to guide him and guard him and give him His power and protection. And then - right in the middle of the day - he would stop everything and go to his Lord in prayer. He needed His help in the “now!” Prayer, for David, was not a trivial ritual. It was his life - his source of strength. “I cry out...He hears!”

Penne a la VodkaWhat You’ll Need: 4 Tbsp. extra virgin olive oil 1 lb. sweet Italian sausage, cut into 1” slices 1 lb. hot Italian sausage, cut into 1” slices 4 cups thinly sliced onions 1¾ tsp. salt ¾ tsp. freshly ground black pepper ¼ cup thinly sliced fresh basil leaves 1 Tbsp. minced garlic ½ cup vodka 2-16 oz. cans whole tomatoes, crushed with their juices 1 tsp. Emeril’s Original Essence ½ cup heavy cream 1 lb. penne pasta 15 oz. ricotta cheese 1 cup grated Parmigiano-Reggiano 1½ cups grated mozzarella cheese Crusty bread for serving
Instructions: 1. Preheat oven to 350F. In a large skillet heat 2 Tbsp. olive oil
over high heat, add the sausages and cook until browned. Add
the onions, ¾ tsp salt and the black pepper. Saute until onions
are transparent. Stir in the basil and garlic and cook for another
2 min. Add the vodka and tomatoes. Reduce heat to low and
simmer for 40 min. Add the Essence and the cream, stir to mix,
and simmer for 5 min. Remove from heat. Set aside.
2. Bring a large pot of water to boil with the remaining tsp.
of salt. Add the pasta and boil until al dente according to
manufacturer’s instructions. Drain. Combine half of the ricotta,
and half the Parmesan with the remaining 2 Tbsp. olive oil in a
large mixing bowl. Add the pasta and toss to coat. Next, add the
sausage mixture and the remaining ricotta and Parmesan, mix
well.
3. Spray a 9x13” baking dish with cooking spray and add
mixture. Top with mozzarella cheese. Bake for 45 min. until
golden brown and heated through. Serve with crusty bread.
