We will provide the cards and decorating materials. Contact Erika Likar at 914-737-2255

Baby, it’s cold outside! As I write this, My outdoor thermometer says it is 6 degrees! I can’t help but think of the poor animals that don’t burrow

with others or hibernate in a warm cave but deal with the elements all winter long. This is the time of year when the Eagles come, having

flown south, to our warmer shores. We attend Eaglefest in Croton annually and this year our son is volunteering as one of Teatown’s teens! Eaglefest teaches us about our majestic national bird, which was nearly a Turkey, if Ben Franklin has his way. It also teaches us about other birds of prey and their habitats, food, how to identify and protect them. If you have a chance, grab a pair of binoculars and go for a walk. With a guidebook in hand you would be amazed as to the vast array of birds we have in our own neck of the woods!Back to our own backyards…feed the birds! I mean

it! Right here in Croton we have a FANTASTIC store dedicated to just that, bird feeding and housing. I believe ‘Feed the Birds’ even carries bat houses… we purchased 2 window feeders there. It is still great fun to watch a bird land right at our window sill and peck at seeds. We also have a suet feeder and we make peanut butter feeders to hang in the trees. Just take a small piece of wood,

(AC Moore has tons of fun, cheap precut shapes), spread peanut butter and sprinkle with seeds. Hang in a tree and the birds will love it! In the spring, I put out cloth, hay and other nesting

materials. Many of them brightly colored, so that if they build near us, we can identify our hot pink and neon green clothes in the nests!Every morning we refill our many tree feeders, but

remember there are also ground feeders like Mourning doves and Blue jays. Even the crows need something on these brutal mornings. We keep a 40 lb. bag by the backdoor and that lasts about a month in winter. Also, contrary to popular thought, birds DON’T poop where they eat so, it is pretty mess free. The seed husks usually blow away with the first good breeze!Have a wonderful winter enjoying our birds!

HERE’S WHY, SUGAR IS ADDICTIVE!

Did you know….• Sugar can make you fat. Our bodies store excess sugar

as fat. • Sugar has NO nutritional value. It is VOID of minerals,

vitamins & fiber. It contains EMPTY CALORIES that keep you hungry for more!

• Sugar is hidden in many foods we eat like bread, peanut butter, lunchmeats, salad dressings, condiments, sauces, pizza, etc. CHECK YOUR INGREDIENT LABELS!

• Sugar is linked to behavioral disorders. • Sugar is acidic. It can leach minerals from your body.• A soda containing 40 grams of sugar contains 10

teaspoons of sugar! • A glass of juice can have the same amount of sugar as a glass of soda.• Simple sugars have been documented to contribute/aggravate health problems; asthma, mood disorders, heart disease, & arthritis & lead to “type 2” diabetes. • Americans eat approx. 165 lbs. of sugar a year, that’s approx. 31- 5lb. bags. • There are 4 grams of sugar in 1 teaspoon.• Artificial sweeteners are NOT a healthy replacement for sugar.

Americans eat 30 times more sugar than our ancestors did 200 years ago. Do you know why? We all need some sweetness in our life. Breaking up with refined sugars is not so hard to do when replacing them with natural sweetener. My two favorites are raw local honey and maple syrup.

Enjoy this sweet peanut butter cup recipe with the valentines in your life.

Many say change is constant even when it comes to parenting. However, there are some things that should remain consistent

to ensure a child’s short- and long-term development. If you’re a mom or dad who finds difficulty in dealing with your child’s demands or tantrums, then this article will certainly be a breath of fresh air. You’re not alone in your struggle, but neither should you continue to leave holes in your “No’s.”Shaky FoundationsEssentially, discipline revolves around the goal of

establishing a solid ground from which proper growth can begin. If your child’s asking for something that simply can’t be acquired immediately, the reasons should be clearly explained. This is particularly important with regard to raising toddlers. These kids are in their formative years and if they’re educated on how things are at a young age, they’ll know

how to behave appropriately. For example, if your

child’s asking for a new toy and you just got him a new one a week ago, should he get another one? If your teenager demands to have a new handset because he’s sick of his old phone, is it practical to spend on the latest device? The values that you instill in your kids now will affect how they’ll perceive the

worth of things in the future.Spoiling the FutureHave you ever met someone who’s quite insensitive

and self-centered? Perhaps you once dealt with someone who strongly insisted on what he wanted, not what the situation called for. Well, these individuals were most probably raised with a loose grip. If there’s no balance and consistency in the way a child is disciplined, the line between “Yes” and “No” will blur. The lack of clear boundaries and authority will then spoil the youngster’s future. You might think that “spoil” is too strong a term to

use in this context, but it’s actually accurate. Parents who yield too easily to their kids’ requests end up with spoiled children. Do remember that these young boys and girls will grow up one day and be major contributors to society. How do you think will these “pampered” kids be like when they’re grown-ups?Give your child a chance to have a better future by

being firm when necessary. By not surrendering to any of your child’s “disarming” tactics that aim to challenge your “No,” you’ll be able to raise more responsible members of the society. It may take time to develop new habits with regard to parenting. Fortunately, you’re not alone in this endeavor. You can seek the support of other parents and experts. Saying “No” firmly, timely, and reasonably will show your child the significance of distinguishing between needs and wants. Ultimately, he’ll understand that “Yes” isn’t always what’s best.

How a Firm “NO” Affects

Your Child’s Tomorrow

HELENE KANE TUTORIAL SERVICE Testimonials

Growing up I was always very disorganized and my school supplies were always a huge mess. After seventh grade I wanted to get organized and stay that way. Dr Kane, asked if I needed help. I had said yes and the next Saturday she came over. She showed me how to get all my papers in to the right place. Two weeks later she came back and helped me more. After a few months it got to the point where I could stay mostly organized and if I ever did get disorganized, I could effectively reorganize again. To summarize she was a great help to me. -Zach Wolf, Student

Helene Kane is the ultimate Academic Achievement Coach. Having been a school principal and teacher for many years, Dr. Kane was at the forefront of the NY state ELA Core Curriculum. With a wealth of expertise, she will focus on the whole child. She begins by building your child’s self-esteem and emotional well-being. Once these barriers are broken she will proceed to provide essential strategies for a successful academic experience. I was duly impressed by Dr. Kane, the minute she intro-

duced herself to our staff and shared her future goals for our school. Her sincere humanistic approach towards everyone always showed great sensitivity. She always supported the children in her school to resolve problems that may have arisen. Dr. Kane is a rare and precious individual, who I admire and support. If anyone could get someone back on their feet and get the job done, she’s the one. She makes an exceptional and dynamic Academic Achievement Coach. -Irene Toovey, Teacher

Q: Do you have a harder chance of gaining admission if you apply early decision?_local student

A: Great question. I’m often asked if applying early decision to a college or university improves a student’s chances of being offered admission.

Similar to other questions pertaining to the highly publicized, stress inducing world of college admissions, my answer: “It depends.” Most often there is no one answer or policy that applies to all students, for all colleges, in every situation. This means that students must do their research on the

colleges they are most interested in applying to.Some colleges don’t even offer the option of applying

early decision. At most institutions, if offered, early decision is binding

and if applying for admission via early decision, the student must withdraw all applications from other colleges and enroll for the term he/she applied. Some colleges that offer early action, which isn’t typically

binding, may not permit the applicant to apply to another college through a binding early option. For many students, early action is an attractive option, as

it permits them to apply earlier in the school year and to find out their admissions decision earlier in the school year without being committed to the institution if admitted. The overall point is to do your homework and contact the

college should you be unclear about the early decision or early action options.A few things to consider about applying early decision or

early action:-Make sure you have all admissions requirements met

before applying early (standardized tests, reference letters, essays etc.) Sometimes, a student may discover that a specific exam is required in order to apply early decision, and if the application deadline is October 1, that often means the student must have taken all exams and met the application requirements prior to the start of the senior year. Again, do your homework earlier than later if thinking about applying early to a specific college;- Some colleges give preference to those who apply early,

but check with each school to confirm. You should ask each

college for the percentage of the class admitted each year via early decision or early action;-Some colleges will note that their early pool is as strong

or even stronger than the regular decision pool, hence the admit rates varying for early applicants as opposed to regular decision applicants. Ask the college for the typical first year profile of those admitted via early and regular decision to give you a sense where your academic record falls in comparison to others admitted in the past;-Because early decision deadlines often occur in the fall

and admissions decisions prior to the end of the calendar year, students may only receive an estimated financial aid award if admitted; as the FAFSA forms aren’t made available until January of each year. The estimated award letter will give financial aid applicants a good sense of the expected costs of attending the college, but it is estimated, and if seeking federal grants, loans and work study, confirmation of financial aid can only be determined after completing the FAFSA.-While many colleges will permit students to opt out of

the early decision agreement due to lack of funding once the firm award is made, one should check before applying early decision to any college. The bottom line is to think carefully if early decision is

a good option for you and consult with your parents, teachers and guidance counselors before submitting your college applications.

At a recent holiday party I was eyeing yet another piece of delicious looking cake, knowing that it was the last thing in the world I needed and the only thing I wanted at that moment. A friend stood next to me, obviously in the same conundrum. She sighed and

put her hands in her pockets, obviously having made this difficult decision. I commented on her self-restraint, and she told me she just been to the doctor, who had told her that her blood glucose levels were high and she might be developing insulin resistance (also known as metabolic syndrome or pre-diabetes). She wasn’t sure what it meant or what she should do about it and her doctor didn’t elaborate. She just knew what most people know; that sugar is bad for you and you shouldn’t eat it.Insulin resistance (IR) is not well understood by most people beyond the obvious link to refined

sugar. Simply put, IR is a condition in which the body produces insulin but does not use it effectively. When people have IR, glucose builds up in the blood instead of being absorbed by the cells and converted to energy. Left unchecked this can lead to Type 2 Diabetes as well as heart disease, cancer and Alzheimer’s. Symptoms of insulin resistance are often attributed to other health issues or brushed off as

conditions of aging. Many people don’t know that high blood sugar can cause chronic fatigue, brain fog, memory problems, agitation and depression when meals are missed, craving sweets, abdominal bloating, and getting sleepy after eating. Resistant belly fat and being overweight are the best-known issues, although normal and even underweight people can also be insulin resistant. If you are noticing any of the above symptoms, you may want to consider having your blood sugar

tested (or purchase a blood glucose meter and track it yourself). A persistent morning blood sugar of above 120 is cause for concern and you should see your doctor.Genetics, unmanaged stress, poor sleep patterns, meal timing, exercise habits and of course

proper nutrition all play a role in developing IR. The good news is that all of these are things under our control. Even if you have a genetic predisposition to high blood sugar, how those genes are expressed can be changed through making different lifestyle choices. Removing high carbohydrate foods and refined sugar and increasing the intake of green and non-starchy vegetables, adding certain supplements, recognizing and learning to manage stress, having a regular, moderate exercise program and getting adequate sleep can help you live a longer and happier life free of chronic disease.

Self-care is the Way. Without regard for one’s self it is impossible to live an abundant and prosperous life. In my experience I have witnessed many go

through the phases or degrees of self-care. One of the integral parts of life transformation is the requirement to improve one’s ability and desire for self-care. Only when one considers themselves in any given situation can one feel free to be exactly who they are. I challenge every individual that works with me to step up

their self-care. If they land in my office, it usually means that they have in some way forgotten who they are which directly relates to their level of self-care. When asked how

they are taking care of themselves, the standard answers are “what do you mean?” or “I’m not”. Then the journey through the phases of self-care begins. The first phase of Self-Care usually cares for the body.

So, they begin by taking care of their physical body-manicures and pedicures, massages, workouts, visiting doctors, new clothes, etc. This feels really good! When there is a nice routine established to take care

of the physical body, Phase two begins. In Phase two one begins to feed their mind by involving themselves in learning something new. One may take up a new hobby, or take a class or read a book on a new and interesting topic. They begin to connect with friends again and make new friends. Now this is feeling even better! Then in the final phase, one begins to feed their soul.

One begins to value oneself even more by setting appropriate boundaries with others and by protecting their time and energy. One begins to consider oneself with every decision they make. It becomes easy to speak their truth without guilt, trepidation or without fear. There is no more people pleasing. This feels even better and extremely powerful! We begin to allow our truth to be seen by all and as Marianne Williamson, the famous spiritual leader of our time says “And as we let our own light shine we unconsciously give other people permission to do the same. As we are liberated from our fear, our presence automatically liberates others”.

Catherine Anesi, LCSW specializes in helping people transform their lives. She is a licensed clinical social worker and sees clients in her office in Croton at The Lighthouse Retreat and Wellness Center, 1392 Albany Post Road (in the Coldwell Banker Building). She also

leads groups and retreats that aide in transformation. If you would like to contact her please email her at [email protected] or visit her website at www.TheLighthouseRetreat.com and Facebook at Catherine Anesi, LCSW, RM and The Lighthouse Retreat and Wellness Center.

Let’s face it, not everyone eagerly anticipates February 14th. Whether it is because you are single, unhappy in your relationship, or just don’t like being told

when you should be romantic, Valentine’s Day is often the scourge of peoples’ calendars. Instead of wishing your February days away or risk disappointing a partner, think about how to make Valentine’s Day work for you. If there are Valentine’s Day cards for grandchildren or pets, it is pretty safe to say that that the day is yours to define. Take the day and make it into something fun, creative, or indulgent.

If you are in a couple, consider:• Going dancing. Local venues offer everything from

swing to salsa.• Baking together, and don’t forget the icing!• Taking a painting class. New sites are opening up

where you can drink wine and paint together.• Sleeping naked. • Staying at a Bed and Breakfast.• Reading to each other. Short stories. Erotic stories.

Poetry. Or, tell each other a story about life together in the

future.• Going Bowling. Wear matching shirts to add some

humor.

If you are single, consider:• Eating at the bar of your favorite restaurant. • Buying your best friend flowers or handing a bouquet to

a senior citizen.• Painting your bedroom a new color.• Binge watching the series you meant to catch up on.• Writing a letter to your future lover to summon them

into your life. Maybe next Valentine’s it will be your card to them.• Signing up for online dating or Meetups.• Taking a group class in dancing, cooking, music, yoga,

art, etc.• Perusing petfinders.com. Nothing says unconditional

love like a wagging tail or a purr.

If you are in a relationship that is having difficulty, consider:• Talking to your partner about what their expectations

are for Valentine’s Day. You might not be the only one who wants to take a pass on the day. On the other hand, you might be surprised about what your partner is thinking.• Looking at the ideas above and see if you can bring

something new to the day.• Talking to each other. Talk about your feelings, your

dreams, and your wishes.• Writing a list of all things that you made you fall in love

initially.• Compose a story of how you first met in words,

illustrations, or collage.

Like any other day, Valentine’s Day is another day on the calendar. However, if you use it to make your life more meaningful, to mark your love for those you share your life with, or to share the tender thoughts too often keep to yourself, then the day becomes your day of celebration and not Hallmark’s. So, use your imagination and learn to have a Happy Valentine’s Day, there’s another one coming next year!

Spring is fast approaching; and, it is time to begin searching for your new home. But before you do, make sure your financial house is in order. Becoming

a home owner takes more than simply finding the right house. Do some basic financial homeworkFirst - before you begin your search - do you know your

credit score? Have you recently reviewed your credit report? How would your financial situation be evaluated by a mortgage broker or a mortgage bank? Are there questionable items on your report which need to be changed? Do you need to improve your score? If you cannot answer these questions, you need to get a copy of your credit report, and review your credit history and credit score. If you are dissatisfied with or unsure of the results, you should speak with a credit consultant.Get prequalified Second, as I mentioned in a previous article in this column

(see: A Homebuyer’s Competitive Advantage: Prequalified, then Preapproved) you should get a prequalification of your financial capability. What is a prequalification? It is the determination - by a reputable lending source - of the amount of mortgage for which you might qualify. Although, the determination is based on a review of your financial position (including your current credit report and monthly obligations), it is not a commitment by the lender that they will grant you a loan. A prequalification is important because: (1) it tells you

what the lender thinks of your financial status; (2) if there is

a problem, you have time to fix it; and (3) it prevents you from wasting time looking at houses you cannot afford. Don’t add to your stress by looking at houses for which you cannot get a mortgage: stay within your financial capabilities. In part II (March) of this article, I will provide useful

information about conducting your search, finding an agent and selecting your house. In part III (April), I will discuss some of the mortgage products which are currently available. Attend my ‘From a Renter to a Home Owner’ seminarFor more detailed information, please join me on

Saturday, March 14, at the Hendrik Hudson Library in Montrose from 1:30 to 3:00. I will be hosting a ‘From Renter to Homeowner’ seminar. Erik Stuerken – from Better Qualified Credit Management – will discuss how to improve your credit score and Tom Pasqualini - from Hudson United Mortgage - will discuss mortgage products which are currently on the market. I, of course, will talk about the home search and selection process. To pre-register for this free event at the Hendrik Hudson

library, please call: 914-739-5654, ext. 404.About the authorVicki Jimpson-Fludd is a Lic. NYS Real Estate Salesperson

Yes! It’s high time overlooked and under-appreciated yams and other root vegetables asserted themselves. They’re not only full of health benefits, but delicious

and colorful in their deep orange interiors. Yams are significant sources of vitamin B6 and potassium. They’re rich in fiber, complex carbohydrates and known as an energy boost.

Yams are great roasted, pureed, turned into sweet confections like pies and yes, yam bread. This is a quick bread, a snap to put together with no mixer or food processor needed. Great with a cup of tea or coffee. Actually, it’s somewhere between a bread and a cake and makes a scrumptious dessert.

This recipe was developed by my son Chris who is a terrific cook and has a natural talent for putting flavors together.

Yam BreadSet oven to 350 degrees. Butter and flour the bottom and sides of a 9 x 5 x 3 inch loaf pan. Set aside.

Ingredients3 medium yams, rinsed and patted dry1 ¾ cups all-purpose flour¾ cup sugar1 t baking powder¼ t baking soda¼ t salt1 t ground cinnamon1/3 cup coarsely chopped walnuts2 eggs, lightly beaten½ cup unsalted butter, melted and cooled1 t pure vanilla extract1 ½ cups mixed dried fruit cut into a medium dice—apricots, dates, prunes, raisins, cranberries, candied orange peel (your choice)

DirectionsRoast 3 medium yams for about I hour until pierced easily

with a sharp paring knife. Set aside to cool enough to handle. In a large bowl combine the dry ingredients: flour, sugar,

baking powder, baking soda, salt, cinnamon and nuts.Cut yams in half and scoop out the pulp into a medium-

sized bowl and mash (about 1 ½ cups). Add the eggs, melted butter and vanilla. With a wooden spoon or spatula, gently fold the wet

ingredients into the dry. Add the chopped dried fruits and continue folding just until combined and the batter is thick and chunky. Don’t over mix. Scrape batter into prepared pan. Bake

for one hour until bread is golden brown and an inserted toothpick comes out clean.* Place on a wire rack to cool. Run a table knife around edge and remove from the pan. Slice and serve. Makes one 9 X 5 X 3 inch loaf.

Optional--At this point the hot loaf can be glazed by brushing on melted orange marmalade. Thanks to Michael Pollan for title.Recipe by Phyllis KiriginPhotos by Chris Kirgin and Michael Kirigin
