Weather plays an integral role in working with chocolate as every candy maker knows. And I should know, too. Seems like such a simple thing,

dipping strawberries in melted chocolate, and it is if you’re not working in a warm moist kitchen.

To get the down side out of the way, the chocolates won’t set up. You’ll have to make space in the fridge.

The up side is, of course, they’re utterly delicious and impressive, especially if you find long stemmed

strawberries perfectly ripe and use a high quality chocolate. I used Ghirardelli semi-sweet chips. Finely chopped bulk chocolate works even better.

Now these gorgeous strawberries have to be washed! Aye, there’s the rub. How do you gently wash a strawberry and get it completely dry which you must in order to dip them without messing up your chocolate? This is my aha moment. Dip the strawberries shaking very gently in cold water, lay them out on a clean towel, pat dry (which won’t be dry enough) and then, using a hair blow dryer on a low setting and no heat, dry those babies to the bone. That’s the trick and remember where you heard it.

For 12 huge strawberries, I melted one pound of chocolate in the top of a double boiler, over simmering water, but not touching it. I “seeded” the chocolate, adding more pieces to cool it down to a good coating consistency. A little corn syrup can add glossiness. If it needs thinning out, add a little cooking oil and stir, stir, stir.

Just hold the strawberries by their stems and spoon the chocolate on letting any excess drip off. Otherwise, you’ll have “feet”. Lay them down on a silpat sheet or parchment paper on a cookie sheet. If your kitchen’s warm, refrigerate.

What do you do with that leftover melted chocolate? Use your imagination. I made peanut clusters.

A great choice for both light meals or just fruit, cheese and good company. It is suggested that the wine should not be over-chilled to preserve its fruitiness.

CHIANTI 2011, Loggia del Giglio (IT)From the famous wine growing region of Tuscany, locatedin central Italy, we found a fine, straightforward Chianti.Deep red color leads to a burst of cherry flavors with ahint of sweet spices. This is a pretty wine that does not have overly aggressive earthy flavors. It has good acidity and is medium bodied with hints of vanilla and herbs. The mellow tannins follow through to the finish making it an ideal dinner wine.

Both wines were purchased from local wine shops and arepriced under $15 the bottle.

Well, folks, we've made it to the end of the School year and what a ride it has been. This was a great year for many people making tremendous

progress building their businesses and others who were just getting started. Many people were thriving and others were struggling. Some who were making thousands of dol-lars a month and others who were fighting to pay the bills. So, what’s the secret? Why do some make it while others

do not? The answer is simple: YOU Have To Keep Moving ForwardIn business as in life, you must keep moving forward to

be a success. You must have goals and you must have a plan. There is no such thing as an "idle success." Success-ful people are not satisfied to just stay in one place. They are not satisfied with what they have. They know that when you become satisfied with what you have, you will always have just that. Successful people are always looking toward the future and moving forward. I teach my students in the martial arts classes that the enemy of excellence is good enough. That just being good enough to get by doesn’t give you the opportunity to shine and make big improve-ments in anything you do.YOU Must Never Give Up, Never, Never Give Up!When life knocks you down it's easy to wallow in your own

sorrow. One day my mentor Bob Alexander, an employee

of Zig Zigler, told me about PLOM disease. It stands for Poor, Little, Old, Me! Life becomes a pity party and you are the star. When you fall off the horse, get back on. When life knocks you down, you have to get back up. I know it’s easier said than done, but action is the first step. It doesn’t have to be massive action, just some sort of action focus-ing on the goals you desire.YOU Can't Let Your Circumstances Dictate Your OutcomeWhen I was in my late 20’s, I was working for the cable

company, had a wife and a mortgage to pay for and things were going well for me. I decided to buy a new car. However, the day I signed the papers is the day I got into a car accident with the company vehicle. It was my fault and after a three day suspension, I was fired. No job, no income, but bills to pay. Medical insurance was just too ex-pensive to have. It would have been very easy for me to let my circumstances get the best of me, but I refused to give up. I set goals for myself. I created a plan. I took action that would get me out of those circumstances, not keep me there. Today, I now have a bigger house, with many big boy toys, a full time thriving business which I love to do where I employ many employees. Making a difference in life was my goal. With passion and persistence and a lot of patience, it all came true. Only YOU Can Truly Motivate YOUThe only person who can motivate YOU to take the action

necessary to be a success is YOU. Too many people are looking to others for motivation when only self-motivation really works in the long term. But Motion before Motiva-tion is the secret key. Do something, anything that will move you. Even failure is a positive as you will learn what doesn’t work. When you were a kid your mother motivated you to get out of bed and go to school and make good grades and come home on time. Well, you're a grown up now and you have to be your own motivator. You have to make yourself take action. You must have the drive and determination to do things on your own. No One Can Do It For YOUThe only person who can make YOU a success is YOU.

Others can provide you with advice and tools to help make your journey more fruitful, but in the end it is up to YOU to make YOU a success. It is up to YOU to start your business and learn to market your product. It is up to YOU to make sales and carry the money to the bank. If YOU won't do it for yourself, no one can do it for you.YOU Make Your Own LuckFinally, remember this: there is no such thing as luck. YOU

make your own luck. Luck occurs when opportunity and action collide. It is all up to YOU.

As we approach the end of the school year (seems impossible, doesn’t it?), moms around the country are thinking about summer. Many moms I know

don’t like turning on the oven to provide meals when it’s really hot! I’d like to share a really fun and delicious recipe that kids love making and eating! Made at the counter and at the stovetop and is a blast for the kids to prepare.There are so many fun parts to this recipe. There is

measuring, mixing, kneading, rolling, spreading oil around the dough and cutting!!! It’s a sensory delight for the kids and they really enjoy the process.

Scallion Pancakes (adapted from www.spoonful.com) Ingredients:3 cups flour (plus more for dusting)1 tsp salt1 bunch of scallions, cut in small slices1 cup of water2 Tablespoons vegetable oil (plus more for pan)Directions:

In a large bowl, let the kids measure and pour the flour and salt and mix. Then have them make a hole in the middle of the mixture. Add the water slowly and mix to form the dough. Scrape down the sides and form a ball. It may take a few minutes, but keep at it!Once the dough comes together, leave it in the bowl and then cover the bowl with a damp cloth or plastic wrap for 5-10 minutes. Then take out a small amount of dough to roll out and when it's flat, put 1/2 Tablespoon (or eyeball a small amount) to spread over the flat dough. Then, add the scallions to the pancake over the oil. Roll up in a log, and then curl into a ball (as if you were coiling a tape measure). Then let the kids mush it and roll it out flat. Put on a pan until golden brown, then flip. Sprinkle salt on pancake when you take it out! Serve warm. My Grandmother owned two stores in her life and both at the same time. A bakery and a “dress shoppe” as she called it. She would “DO” a

wedding from the bridal shower, to the wedding cake, the bridesmaids dresses, to the wedding gown. She made it all! By the time I was born, she sold her stores and just made the odd wedding cake for family members and friends. I remember sitting at her side, as a child, making dozens of handmade roses out of Royal Icing for cakes. It was fun and I would tell her about my big, grand plans for my ‘someday wedding’. She would say “It is not the wedding that counts but, the marriage”, I did not get that...not then, at least.Fast forward to becoming a parent. I remember reading

every baby book, buying the most darling outfits and booties (most of which I still have). I researched every bottle, diaper and car seat. I sterilized everything and only bought wood toys and organic food and sheets. I went baby nuts. But that was over in a blink of an eye. He soon walked, then ran, then had a sibling to run with. Now, he is riding bikes alone to the Landing and going to sleep away camp in Canada!We held him in our arms that first day and VOWED to

protect and love him because great trust was given to us by his birth mother. I dreamed of all the time we would have before he started to walk, or go to kindergarten and now he is graduating and going to High School. 4 years till he is off to college….WHERE DID THE TIME GO? I have proof it all happened, pictures and videos by the

box load but, I want more! More time with that baby I wished for, more time for all the hopes and dreams to come true. I think that adoptive parents may dream and wish more because it is all out of our control and we put so much stock on that baby. But the blessing, and what really, truly counts is the RAISING of the child!As for my big grand ‘someday wedding’; we eloped

in Vermont in four feet of snow. My something old and borrowed was my Grandmothers wedding ring. Nearly 20 years later I still remember, “It’s the marriage that counts!”

With spring sports gearing up, like lacrosse, soft-ball, and baseball, now is the time to think about how to keep your child safe while playing his/her

favorite sport. Along with goggles, helmets, and padding, a proper mouthguard is crucial in protecting your child’s health while playing the game! Studies show that athletes are 60 times more likely to suffer harm to their teeth when not wearing a mouthguard. Losing one or two teeth can affect many areas of your life – talking, eating, smiling, and self-confidence. Mouthguards can help minimize the effects of a blow to the face by cushioning your teeth, lips, cheeks, tongue and jaw.There are three types of mouthguards available:Custom-fitted. These are custom made for you by your

dentist. They are more expensive than the other types of mouthguards, but because they are customized, usually offer the best fit. Stock. These are inexpensive and come pre-formed,

ready to wear. Unfortunately, they are often bulky, ill-fitting, and can make breathing and talking difficult. Boil and bite. These mouthguards can be bought at sport-

ing goods stores and drugstores and may offer a better fit than stock mouthguards. First they are softened in boiled water, then inserted and allowed to form to the shape of your mouth.Dr. Glaser, at Glaser Orthodontics in Cortlandt Manor,

states that a properly fitted mouthguard is especially

important for people who wear braces. A blow to the face can damage the brackets or other fixed orthodontic appli-ances. A mouthguard also provides a barrier between the braces and your cheek or lips, limiting the risk of soft tissue injuries. If you wear braces or another fixed dental appli-ance on your lower jaw, a mouth protector for these teeth might be needed as well. Your dentist or orthodontist will be able to suggest a mouthguard that will provide the best protection. If you have a retainer or other removable ap-pliance, do not wear it during any contact sports. Once you have a mouthguard, it must be cared for in

order to keep it in tip-top shape to protect your mouth. Here are some tips for caring for your mouthguard:Rinse before and after each useBrush with a toothbrush and toothpasteCarry the mouthguard in a sturdy container that has ventsNever leave the mouthguard in the sun or in hot waterCheck for wear and tear to see if it needs replacing

Look around, and it is quite astounding how many couples seem to be divorced, separating, or strug-gling in their relationships. Today’s world places

different demands on us than existed for previous genera-tions. Marriage and commitment seem to be the indirect casualties of our increasingly stressful lifestyles. Couples try to find time for family life in a world where career, technol-ogy, and social media creates new and immediate de-mands. In many households both parents work to support the family, although the educational system still operates as though there is a stay-at-home parent. It is not surpris-ing that our stress levels are effecting our personal happi-ness and expectations of our partners.Many couples do well until after the children are born,

and then the extra time dedicated to caring for children and the extra expense needed to support the family bring about the end of the honeymoon. Both parents are as-suming the roles of providing financially, child-rearing, and homemaking. Often fathers find themselves feeling neglected and abandoned, as their wives focus turns to babies and children. Mothers often struggle with feel-ing like they are stretched thin and that, with all of their responsibilities, some are not getting enough of their at-tention. Neither feel appreciated enough for what they are contributing. Exhaustion sets in and the couple's friend-ship and romance degrade to a working partnership. Sex becomes a chore or an infrequent rendezvous. Although some couples manage to make it through

these times, many find themselves with school age chil-dren, feeling like their spouse has become their room-mate. If you find yourself in this situation, realize that you are not alone. It is understandable how you got there, and your spouse is probably feeling similarly. However, it is time to do something different, even if that change is starting a conversation about what is going on. Remem-ber that having a healthy, and romantic marriage enhances your children's sense of well being. Taking them to the playground, museums, concerts are all good. Showing them that their parents can have some fun on their own is comforting for them. For children, seeing their parents kiss, hold hands, laugh, or dance together are wonderful ways to teach them how to become a loving partner, and provide them with enduring memories of a happy child-hood. Just as unhealthy it would be to neglect your chil-dren to enjoy your spouse, is as unhealthy to neglect your spouse for your children or your job! Don't forget to argue, but do it constructively. Holding

everything in, or raging, or ignoring each other, or acting like a free agent are all unhealthy behaviors in relation-ships. Kids seeing their parents disagree, then work out a resolution are better off than kids who never experience their parents arguing. Children have to learn that it is okay to feel many emotions, but be responsible for their words and actions. Parents can model this by expressing disagreement and working it through. Avoid pointing the

finger at your mate unless you can clearly express how it makes you feel (the emotion invoked), and why you per-sonally are effected in that way.If you used to have a good sex life before the kids came

along, and you no longer do, then chances are one or both of you are unsatisfied. Time to start reconnecting. Find-ing the time for intimacy is one of the greatest obstacles couples face, not finding it is often the greatest oversight. Breaking the ice again after long periods without sex may start off slowly or awkwardly, but may also give you the opportunity to tweek a couple of things that might have previously gone unmentioned. It is a good time to discuss your sexual needs and desires, what you always liked, what else you might like. Couples who commit to process through difficulties have

a much greater chance at staying together. There will be hard times, there will be times when you feel more distant, but communicating, feeling understood, and showing your affection are the best starts toward making the changes that save relationships.

I recently had the privilege and pleasure of going on a beach vacation to North Carolina with my 14 month old baby granddaughter Maddie, and her parents. I got to

experience the world through the eyes of a one year old; a world that is new, exciting, and oh so simple. Walking is a relatively new skill for her and it delights

her to no end. She walks with determination, as if she has somewhere important to be, but in reality just walks for the pleasure of walking. She doesn’t need toys or gadgets to keep her happy. Just give her an open field or park, where she can practice this wonderful new skill, and she can entertain herself for hours. But don’t try to buckle her in the stroller when she is having fun walking, because she will arch her back and somehow manage to wiggle her little body out of there, and return to her favorite activity of walking. Since I had nowhere in particular to be, I took my time and allowed her to explore the world that excites her so much. This precious time with my granddaughter re-minded me that life is a journey, not a race. She reminded me to live in the moment and enjoy the simple things.She and I walked to the beach; she fearlessly walked into

the waves, laughing and squealing with delight each time a wave came crashing over her tiny feet. We later sat in the sand where she found a shiny, smooth rock. We spend some time passing the rock back and forth between us.

Each time she touched the rock her face broke into a big smile, and in her baby language she told me a long story about this fabulous rock. On the way back from the beach she spotted anoth-er interesting rock in the sand. She stepped on it with her bare feet, which apparently felt good, because she insisted on doing this several more times before she was ready to move on.Most of us lead very

rushed and stressful lives. We are always in a hurry, running from place to place, leaving very little time to stop and “smell

the roses”. Vacation time usually allow us to be more relaxed, to slow down a little, de stress and enjoy the mo-ment. As we grow up life inevitable becomes more compli-cated. Things are not as simple as they were when we were one, but we could all learn something about life from the babies and toddlers in our lives. Stop rushing around, stop buying so many gadgets and toys, feel and experience life to its fullest and live in the moment.Babies are fascinating beings; they grow and learn so

quickly and their minds are like sponges. Just one year ago my granddaughter was basically a blank slate, ready for her mind and body to absorb all of life’s experiences. In one short year her experiences has taught her to feel safe in her environment, and she is eager to explore the world around her. She has formed a secure attachment with her parents; she trusts them and separates easily from them, because she knows they will be back. Children learn what they live, and if they grow up in

loving, caring, patient and dependable environments, they will grow up to be loving, compassionate, confident people, ready to conquer the world, and to love and be loved.

It’s June and in June traditionally we celebrate Father’s Day. For those of us whose fathers are still here, we celebrate by honoring our fathers. We have parties,

give gifts, and sometimes make special phone calls send-ing special good wishes. Sometimes our relationships with our fathers is not what we had expected. Sometimes we have a lot of old “stuff” that still lingers in the background affecting our relationship. It is especially troubling when our fathers are gone and we haven’t had the opportunity to clear the air, or heal the old wounds that still drive us in this life. I often encounter people who come to see me in my practice that have issues that were never healed and their fathers are gone. I highly recommend that if your father is still alive and you have issues with him that you deal with them now, before it is too late. I have had the opportunity to connect with my father since my Mom passed a little under two years ago. He and my Mom were extremely connected and my mother’s health issues took most of the energy of the family. There was little oppor-tunity for me to connect with my Dad. Since my Mom’s passing, my Dad and I have been connecting in ways that I never thought possible. He is 84 years old and is spend-ing some time reflecting on his life. We have had conver-sations where he has come to me and has expressed his positive feelings towards me. We have been able to share in a way that I never thought was possible for us. In my practice as a therapist I have seen many people

who have not had the opportunity to heal their “father wounds” before their fathers have passed on. It is so much more difficult to do the work when your father has gone. When you do the work, and heal the wounds, you can change your experience of life. You no longer create realities that match that which you have experienced but are refreshed by new realities that emerge from an entirely new sense of self. Please enjoy your Father on father’s day regardless of

whether he is here or not. Honor him by having gratitude for all that he taught you no matter what the situation was for you. Healing the old wounds creates the opportunity for a life of your choosing, rather than a life of unconscious choices.

Simple Food Rules For Summer WellnessWarmer weather, longer daylight hours and the

relaxed energy of summer make it a perfect time to focus on your wellness. For anyone that knows me, eating healthy (and delicious) is paramount!There is a lot of confusion and conflicting health advice

surrounding food, nutrition and wellness today. Most of us know what we need to do to be healthier but we don’t always act on that knowledge.One of my favorite books, Food Rules, by Michael Pollan

offers sensible and simple principles to kick off your summer wellness program. There are 64 rules guaranteed to resonate and entice you to create a paradigm shift in the way you shop and eat.

Here are some on my favorites:• Eat food, not too much, mostly plants.• Don’t eat anything your grandmother wouldn’t recognize as food.• Don’t eat anything with more than five ingredients, or ingredients you can’t pronounce.• Don’t eat anything that won’t eventually rot.• Don’t buy food where you buy gasoline.• Avoid foods that are pretending to be something they are not.• Avoid food products that make health claims.• Avoid food products containing ingredients that a third-grader cannot pronounce.• Avoid food products containing ingredients that no ordinary human would keep in the pantry.• If it came from a plant, eat it; if it was made in a plant, don’t.

When you keep clean food in your house, you eat clean food. Kick off your summer of wellness by eating a lot of fresh raw, vegetables, fruits and berries, Go through your

pantry and purge anything that doesn’t follow Food Rules. Take an honest approach, choose real food, and by avoiding “industrial novelties”, you will reward yourself with a bountiful summer full of wellness. One of my favorite summer recipes… Quinoa Tabouli Salad

Ingredients• 1 cup quinoa, rinsed• 2 cups water• 1/4-cup fresh lemon juice• 1/4-cup extra virgin olive oil• 2 medium cloves garlic, crushed• 4 green onions, finely minced (whites and greens)• 1 cup minced parsley• 10 to 15 fresh mint leaves, minced • 2 medium ripe tomatoes, diced• 1 medium cucumber, diced• Salt & black pepper, to taste

Directions• Boil 2 cups water• Add rinsed quinoa to boiling water, reduce heat, cover & cook 10 minutes (or until water is evaporated.) • Cool quinoa to room temperature.• Add green onions, parsley mint, tomatoes & cucumber to quinoa• Wisk lemon juice, olive oil & crushed garlic and dress the salad• Salt / pepper to taste

SuggestionsAdd avocado, hemp seeds, and sunflower seeds before serving.

Know where you want to go but be grateful for where you’ve been. Many times clients talk about regaining weight

previously lost. They focus on the disappointment they have with themselves. We can’t change yesterday, however we can focus on where we want to go and learn from where we’ve been. Rather than beat ourselves up, instead, I want you to think about what worked to help you lose the weight in the first place and then think about why you started down the path on regaining the weight. Are you an emotional eater? If so, start tackling the emotions. Journal rather than eat; exercise rather than put food in your mouth; think about alternatives besides food that will help you cope with your emotions. Lift yourself up by changing your behavior! It’s important though to acknowledge your journey and be grateful for your experiences. Be thankful for what you have and you will end up having

more. If we continue to focus on what we don’t have, we’ll never have enough.When you focus on what you have and appreciate it or

focus on what you want, you’ll start to see that many of those desires will appear in your reality. By being thankful and making appreciating a regular habit you can quickly change a negative situation or thought into a positive oneChange your view of failure.One of the big things holding us back from getting what

we want is the fear of failure. Failure is actually a very helpful learning experience. Think about my weight loss example above. Failing at something teaches us what

does and doesn’t work; it allows us the opportunity to re-evaluate a situation and see how we can do it differently next time. So, instead of seeing failure as something big and scary, redefine it in your mind as a learning experienceYou get what you give. If you give sugar you usually get more sugar, and of

course the same works for the vinegar you dish out too! The more negativity you throw out into this life the more you get in return. This behavior actually takes a toll on our health. The more negativity you dish out, the worse you tend to feel in your everyday life. The more problems you’ll find start popping up in your everyday reality. We are the ones responsible for creating our life! Everything we are is a direct result of something we do

or something we don’t do. We are in the driver’s seat of our own life!!! Rather than using your energy to complain about what has happened; or what you don’t have; or how lousy you feel, take that energy and do something about it. Visualize the body you want; visualize the life you want; visualize the job you want and go after it!!! Take responsibility and know that you have the power to create the life you want!!

• Give only what you can afford. Your own financial security should be your first priority. Since there is no way to know with any certainty how long you will live or how the market will perform, make sure you give within your budget to avoid compromising your own financial health. family vacation. To help keep spending in check, create a budget and let everyone know what you do and don’t plan

to cover — from travel expenses to food, lodging and ex-cursions — so that everyone knows upfront what to expect. Also, be thoughtful of those who have to take time off of school or work by scheduling travel over national holidays or school breaks.• Give equally. To help prevent family battles and avoid

damaging relationships, give equally to your children and grandchildren to the best of your ability. If you need to give more to one person to help him or her through a rough patch, consider adjusting your will if you want to even things out. • Clarify whether you’re making a loan or giving a gift. If

you are loaning money, be specific about the terms and a repayment plan. Also, make sure you have a written docu-ment that both parties sign and date. This will help safe-guard your financial situation if things go bad by providing you with legal recourse. If you are giving a gift, be upfront about it. Let the recipient knows it’s a gift to alleviate any uncertainty about whether or not they need to pay you back.

Q:How do colleges view students that take a semes-ter or two off before applying? -Cortlandt Manor, NY

A:This really depends on the reason the student is taking the time off. If the student would offer a more competitive application with the year off before

applying, that is very different than if the student can offer an attractive application before the gap year but needs the time off to mature, work, or just needs a break.

Most colleges permit students to take a gap year or two if admitted as long as they agree not to enroll at another college.

My faculty will often support a student who seeks a gap year, especially if the year off is intended to help the student become better prepared to begin studying a year later. Many of these students begin on our campuses more focused and confident in their ability to make the most of their college education. The year away from study can of-fer an opportunity to grow. What is most significant is that the student make the most of the time away from formal schooling. There is no tried and true path that is right for all students. It is up to the student to define how to use the gap year, and in no way will that time away be negatively viewed by the colleges where you seek admission.

For many students, high school can be intimidating, overwhelming, and stressful; but it doesn’t have to be that way. Several high school students shared

what they’ve learned about high school, and what advice they would give to other students about making through.Follow Your Own Path. You shouldn’t let what other

people are doing influence you. You should do what you want to do and follow the path that’s right for you. Take classes you like. Take classes that interest you. Don’t be afraid to take harder classes even if no one else is doing it. Don’t overdo it with your classes and let yourself be overwhelmed by too many AP courses. Pursue what you want to do not what you “should” do.Take Initiative. Just go for it. Accept challenges. Give

it your best shot. Join school clubs, organizations, and sports; or if you would rather, join organizations outside your school. They are the same amount of work and you still meet tons of people. Make sure you get your work done... The first time around. One student said, “You get out what you put in.” Don’t be afraid to ask for help if you need it. Talk to your teachers and classmates. You’re not fighting a war all on your own, but people aren’t going to offer help unless you ask for it.Live Your Life. High school isn’t as big a deal as everyone

thinks it is. You and your classmates will all grow up together and you will all change. Your life is so much more than just your high school years. Don’t take yourself too seriously. While what you do in high school is important, it’s not the be all end all. If you do poorly in high school it’s not going to ruin your life. If you do poorly in college it won’t ruin your life. You should enjoy your youth and if you spend all your time stressing out you will miss out on so much.Everyone’s high school experience is different. Four years
