Tatar z łososiaPalce lizać! Ten przepis jest moim wynalazkiem. Gdy go przygotowywałam ciągle coś mi nie smakowało
i dodawałam kolejne składniki, które wyglądały na to, że będą pasować. Efekt tych poszukiwań był zadziwiający.
Przepis dla 4 osób400 g świeżego łososia.
Sos: 4 łyżki majonezu, 1 mała cebula, łyżka kaparów, 10 zielonych oliwek, 3 łyżki bezpestkowych rodzynek,
sos tabasco, musztarda Dijon, sól i pieprz.
Łososia zmielić.Rodzynki namoczyć w wodzie, gdy zmiękną chwilę miksować z resztą składników sosu na jednolitą masę.
Rozdrobnione kawałki powinny być małe, ale nie powinna to być miazga. Dodać klika kropli tabasco, sól, pieprz i musztardę Dijon do smaku.
Sos połączyć z łososiem i odstawić na 2 godziny do lodówki.Podawać z grzankami z białego pieczywa.

Salmon tartarFinger-licking good! � is recipe is my own invention. While I was preparing it, something didn’t taste quite right and I
kept adding one ingredient which seemed to go with the rest a� er another. � e result of this quest was astounding.
Serves 4400 g fresh salmon.
Sauce: 4 tablespoons mayonnaise, 1 small onion, 1 tablespoon capers, 10 green olives, 3 tablespoons seedless raisins,
tabasco sauce, Dijon mustard, salt, pepper.
Mince salmon.Soak raisins in water until so� , then mince with other sauce ingredients until completely blended.
� e pieces should be small, not turn into a purée. Add a few drops tabasco sauce, salt, pepper and Dijon mustard to taste.
Add sauce to salmon and refrigerate for 2 hours.Serve on white bread toast.

Jest naprawdę wyśmienity! Gdy usłyszałam jakie są w tym przepisie składniki, to pomyślałam, że to chyba nie może być dobre. Bardzo się myliłam i was też gorąco zachęcam, spróbujcie koniecznie.
1 kg śledzi dobrej jakości (najlepiej już w oleju), szklanka poszatkowanej cebuli, szklanka majeranku,
szklanka płynnego miodu wielokwiatowego, szklanka soku z cytryny, szklanka oleju słonecznikowego.
Śledzie pokroić na centymetrowe kawałki.Przygotować sos z miodu, soku cytrynowego i oleju, wkładając wszystko do dużego słoika i energicznie mieszając tak,
aby składniki się połączyły. Cebulę zmieszać z majerankiem i śledziami. Dodać soli i pieprzu do smaku. Wlać sos i wszystko wymieszać. Odstawić w słoiku do lodówki. Tak przyrządzony śledź musi poleżeć przynajmniej
tydzień a najlepszy jest dopiero po miesiącu. I zapewniam, że warto na niego poczekać.
Uwaga:Zamiast majeranku można dodać oregano lub zioła prowansalskie.

It really is delectable! When I heard what the ingredients in this recipe are, I thought it couldn’t possibly be good. I was very wrong and I wholeheartedly encourage you to try it.
1 kg good quality herring (preferably in oil), one cup � nely chopped onion, one cup marjoram,
one cup viscous multi� ower honey, one cup lemon juice, one cup sun� ower oil.
Cut herring in 1 cm pieces.Prepare sauce from honey, lemon juice and oil by pouring into large jar and shaking vigorously until ingredients are
blended. Mix onion with herring and marjoram. Add salt and pepper to taste. Add sauce and mix all ingredients. Refrigerate in a jar. Herring prepared this way should be refrigerated for at least a week, but it’s best a� er a month.
I assure you, it’s worth the wait.
Comment:Instead of marjoram, you can use oregano or Provençal herbs.

Sałatka z paluszków krabowych
Ta sałatka jest popisowym przepisem mojej koleżanki Eli. Wiąże się też z nią anegdota.
Na przyjęciu jedna Pani mocno chwali tę sałatkę gospodyni. Nagle pyta: – Te pyszne rzodkieweczki w sałatce mają taki inny smak co z nimi zrobiłaś?
– To nie rzodkieweczki tylko paluszki krabowe. – O Boże! Ja przecież nie lubię frutti di mare.
½ kapusty pekińskiej jeśli jest duża, cała jeśli jest mała,
½ kg pomidorów pokrojonych w kostkę, 1 opakowanie paluszków krabowych rozmrożonych,
majonez i ketchup w takich samych proporcjach, sól, pieprz i pieprz cayenne do smaku.
Kapustę szatkujemy, łączymy z pomidorami i pokrojonymi w plasterki paluszkami krabowymi. Majonez mieszamy z ketchupem i przyprawami, polewamy sałatkę i mieszamy.

Surimi crab stick salad
� is salad is my colleague Ela’s showstopper recipe. � ere is also an anecdote involved.
At a dinner party, one woman is full of praise for the host’s salad. Suddenly, she asks:– � ese delicious radishes in the salad taste so di� erent, what did you do to them?

½ large Chinese cabbage or a whole small one,½ kg diced tomatoes,
1 package defrosted surimi crab sticks, mayonnaise and ketchup in equal parts, salt, pepper and cayenne pepper to taste.
Shred the cabbage, add tomatoes and sliced crab sticks. Mix mayonnaise with ketchup and spices, add to salad and stir well.
Simple, tasty and follows my rule that the best salads are made from three ingredients, apart from the spices and dressing.

Wykwintna pasta z łososia
100 g łososia wędzonego i 200 g � letów z surowego łososia, 125 g masła, 1 żółtko, 1 łyżka oliwy z oliwek,

Gourmet salmon spread
100 g smoked salmon and 200 g fresh salmon � llets, 125 g butter, 1 yolk, 1 tablespoon olive oil,
lemon juice and chopped dill.
Fry the � llets in some of the butter on low heat so that the butter doesn’t burn. Flake the fried salmon with a fork and add the rest of the butter,
as well as the smoked salmon, yolk, lemon juice and dill. Season with salt and pepper. Transfer to a bowl and refrigerate overnight. Serve on toast.

ki Pieczony boczek z cebuląPewnego dnia siedziałam w domu ze skręconą nogą i z nudów oglądałam jakiś program kulinarny w angielskiej
telewizji. Temat nie był dla mnie fascynujący, gdyż dotyczył boczku, którego w swojej kuchni nie uznawałam. Program mnie jednak tak zainspirował, że mimo gipsu na nodze wyszłam z domu do najbliższego sklepu mięsnego i poprosiłam
o boczek. Upiekłam go według zapamiętanego przepisu. Pachniało w całej kamienicy. Gdy mój mąż wieczorem go spróbował powiedział do mnie:
– Proszę nie rób tego więcej. Zaniepokojona spytałam:
– Nie smakuje Ci?– Ależ nie! Tylko to jest takie pyszne.
Od tego dnia przez jakiś czas jak się jeden boczek kończył u nas w domu, to trzęsły mam się ręce jak w uzależnieniu i pojawiał się następny, który koił nasze nerwy.
1 ½ kg surowego boczku, 4-6 równej wielkości cebul, sól, ziołowa przyprawa do grilla lub pieczonego mięsa.
Skórę boczku nacinamy w karo. Boczek nacieramy przyprawami ze wszystkich stron. Następnie skórę boczku nacieramy grubą warstwą soli. Cebulę obieramy i kroimy na pół. Połówki układamy na blasze do pieczenia, a na nich kładziemy
boczek. Wkładamy do piekarnika nastawionego na 100-120°C. To bardzo ważne, aby temperatura była niska, bo właśnie w tym tkwi tajemnica boczku. Pieczemy 3 godziny. Boczek jest pyszny na ciepło i może stanowić danie obiadowe lub na
zimno jako wędlina. Cebule, wytopiony sos i smalczyk, to prawdziwy rarytas.
W tak niskiej temperaturze i tak długo piekę też schab i inne mięsa.

One day I was sitting at home with a sprained leg and watching a cooking show on British TV. � e subject was far from fascinating to me, since it concerned bacon, which I didn’t allow in my kitchen. However, I was so inspired that, despite
the cast on my leg, I went to the nearest butcher shop and asked for bacon. I roasted it according to the memorized recipe. � e scent spread throughout the building. When my husband tried it in the evening, he said:
– Please don’t make this again.Anxiously, I asked:– You don’t like it?
– Not at all, it’s just so delicious!For some time since that day, when the bacon ran out at our house, our hands trembled like those of addicts until more
arrived, soothing our nerves.
1 ½ kg raw bacon, 4-6 equal size onions, salt, herbal grill or roast seasoning.

Szparagi z szynką i domowym majonezemGdy jest sezon na szparagi polecam je gotowane z masłem, to wystarcza.
To najprostsze danie jest najlepsze na świecie. Ale sezon na szparagi trwa niestety tylko miesiąc.
W pozostałym czasie musimy zadowolić się szparagami ze słoika. Tak więc:
Słoik szparagów białych, plastry szynki dobrej jakości.Na majonez: 1 całe jajko, sok wyciśnięty z limonki, 1 łyżka musztardy Dijon,
1 łyżka octu jabłkowego, szklanka oleju z pestek winogron, sól, pieprz i cukier do smaku.
Wszystkie składniki majonezu muszą mieć temperaturę pokojową.Całe jajko wrzucamy do wysokiego pojemnika, dodajemy musztardę, ocet, sok z limonki, sól, pieprz, cukier. Ubijamy.
W trakcie ubijania dodajemy wąskim strumieniem olej z pestek winogron. Ubijamy aż uzyskamy konsystencję kremu, taką aby majonez można było nakładać łyżeczką.Szparagi owijamy plastrami szynki i dekorujemy majonezem. Podajemy z białym pieczywem.

Ćwiartka selera bulwiastego, kawałek selera naciowego, biała część pora, 1 marchewka, 20 g pomarańczowej soczewicy,
jeden ząbek czosnku, przyprawa warzywna typu Vegeta, szczypta kurkumy, pieprzu cayenne, tymianku,
2 goździki, liść laurowy i oliwa z oliwek Extra Vergine, pieprz i sól.

Lentil soup

One piece beef for broth, preferably with bone, vegetables (2 carrots, parsnip, one half celery root) and 6 bulky leeks, Vegeta-type vegetable seasoning, one tablespoon butter, pu� croutons,
salt, pepper, allspice (4 berries), 3 bay leaves.
Wash meat and add cold water, allspice, bay leaves, boil for 15 minutes. Next, add sliced washed and peeled vegetables and boil for another 45 minutes. Towards the end of the boiling time add a tablespoon of seasoning and tablespoon of

Fried surimi crab sticks
3 packages surimi crab sticks, frying oil, pinch of dry chili � akes, 5 crushed cloves of garlic,
lime juice (substitute lemon in case lime not available).

Strudel z rybą i cukinią
Mrożone ciasto francuskie, 2 � lety z łososia, 4 żółtka, 250 ml śmietany 30%,
1 średnia cukinia, świeża bazylia, sól, pieprz.
Cukinię kroimy w paseczki. Ciasto rozmrażamy tak, jak w instrukcji i na nie układamy warstwę cukinii. Na wierzch kładziemy � lety łososia.
Szczelnie zawijamy ciasto i wstawiamy do piekarnika nagrzanego do 200oC i pieczemy ok. 15 minut. W międzyczasie mieszamy żółtka ze śmietaną na jednolitą masę, dodajemy sól i pieprz do smaku.
Po 15 minutach wyjmujemy ciasto i robimy w nim lejkiem dwie dziurki, przez które delikatnie wlewamy do środka sos śmietanowo-żółtkowy. Wkładamy na 20 minut do piekarnika i pieczemy aż ciasto się zarumieni.
Podajemy pokrojone w plastry i posypane świeżą bazylią.

Befsztyk z sosem ostrygowym
Befsztyki wykrojone ze środkowej części polędwicy wołowej (każdy o grubości 2,5- 3 cm), olej do smażenia, masło, sos ostrygowy, sól i grubo zmielony pieprz do smaku.
Rozgrzać dobrze patelnię (inaczej befsztyki będą się dusić, a nie smażyć) i wlać na nią olej. Befsztyki kłaść na patelni i smażyć po 1 minucie z każdej strony. Obrócić i znowu smażyć po 1 minucie tak długo,
aż uzyskamy mięso wysmażone tak jak lubimy.
Aby uzyskać befsztyk mocno krwisty przy grubości mięsa 2,5 cm należy go smażyć 3-4 minuty, krwisty otrzymujemy po 4-5 minutach, średniodosmażony 5-6 minut, dosmażony 6-7 a bardzo mocno dosmażony po ponad 7 minutach.
Tuż przed zdjęciem befsztyka z patelni polewamy go łyżką sosu ostrygowego. Uwaga pryska!
Podajemy natychmiast. Posypujemy solą i grubym pieprzem. Tak przyrządzony befsztyk jest pyszny z ziemniakami, frytkami i warzywami z wody.

Steaks cut from middle of pork sirloin (2,5 – 3 cm thick each), frying oil, butter, oyster sauce, salt and coarsely ground pepper to taste.
Heat frying pan well (otherwise the steaks will stew instead of frying) and add oil.Place steaks in frying pan and fry for 1 minute on each side. Turn and fry for another minute as many times as necessary

1 kg udek z kurczaka.Sos teriyaki:

Pieczone polędwiczki wieprzowe
Jedna polędwiczka na osobę, 1-2 łyżki przyprawy czerwonej do mięs Knorra, (w zależności od ilości mięsa),
oliwa z oliwek, łyżka octu jabłkowego.
W pojemniku mieszamy oliwę z octem i przyprawą Knorra, w takiej marynacie moczymy polędwiczki tak, aby każda była nią powleczona. Pojemnik przykrywamy i odstawiamy na godzinę w temperaturze pokojowej, aby wszystkie
składniki nabrały odpowiedniego aromatu. Następnie mięso wstawiamy na kilka godzin do lodówki.
Pieczemy w piekarniku w temperaturze 100-120oC ok. 30 minut. Wyjmujemy mięso i każdą polędwiczkę z osobna zawijamy w folię aluminiową na około10 minut przed podaniem. Tak zrobiona polędwiczka świetna też jest na zimno.
Wtedy zostawiamy ją w foli do ostygnięcia i wkładamy do lodówki.
Polędwiczkę podajemy z ziemniakami lub ryżem.

Pieczona pierś kaczkiW sklepach z jedzeniem chińskim można kupić przyprawę do pieczonej kaczki.
Stosuję tę przyprawę inaczej niż jest to w sposobie użycia.
Jedna pierś z kaczki na osobę, 1-2 łyżeczki chińskiej przyprawy do pieczenia kaczki,

½ kg cukinii, mała cebula, ząbek czosnku,
100 g sera pleśniowego dojrzałego, 200 ml śmietany 18%, olej do smażenia.
Cukinię ścieram na tarce lub kroję w drobną kostkę. Cebulę siekam w kostkę a następnie wraz z wyciśniętym czosnkiem smażę na patelni, dodaję cukinię i smażę dalej aż będzie półmiękka. Dodaję śmietanę i ser pleśniowy pokruszony na małe kawałki. Mieszam aż się ser rozpuści i podaję. Cukinia może być osobnym daniem, ale wtedy należy zrobić jej
więcej i podawać z chlebem, grzankami lub ryżem. Może też być jarzynką do dań mięsnych, a także świetnym sosem do włoskiego makaronu.

Cykoria karmelizowanaTo niecodzienne danie w polskim domu, natomiast chętnie jadane we Francji. Bardzo lubię tak zrobioną cykorię.
1,5 kg cykorii, masło, 40 g cukru i 2 łyżki miodu, sól i pieprz do smaku.
Cykorię umyć i obrać z uszkodzonych liści. Ostrym nożem odciąć ok. 1 cm podstawy cykorii, gdyż tam znajduje się „głąb” nadający cykorii gorzkawy smak.
Następnie należy obgotować cykorię przez 5 minut w gorącej osolonej wodzie. Wyjąć i osuszyć. W naczyniu rozgrzać połowę masła i na nim zrumienić cykorię. Gdy cykoria jest zrumieniona dodajemy cukier, miód, resztę masła i dusimy

Bakłażan marynowany

Tarta czekoladowa
200 g herbatników, 150 g masła, 3 łyżki kakao (opcjonalnie), 300 g gorzkiej czekolady (3 tabliczki), ½ litra śmietany 30% lub 36%,

Herbatniki kruszymy wałkiem lub miksujemy. Mogą być konsystencji tartej bułki, ale ja wolę, gdy są grubsze kawałki. Masło roztapiamy na małym ogniu. Do herbatników dodajemy kakao i masło mieszamy dokładnie. Masę wysypujemy
na tortownicę i ugniatamy dokładnie tak, aby powstała równa powierzchnia. Wkładamy do zamrażalnika na czas, kiedy przygotowujemy masę lub na 30 minut do lodówki.
Podgrzewamy śmietanę na małym ogniu wkruszamy w nią czekoladę i mieszamy do momentu aż powstanie jednolita masa czekoladowa. Dodajemy alkohol i tak przygotowaną masę wylewamy do tortownicy.

Nagrzać piekarnik do temperatury 200-240°C. W dużej misce ubić jajka z cukrem aż masa będzie biała. Dodać cukier waniliowy i śmietanę. Ubijać, aż składniki dobrze się połączą. Wlać płyn do 6 miseczek żaroodpornych. Miseczki
umieść w kąpieli wodnej (do blachy z wyższym bokiem wlej ciepłą wodę i w niej umieść miseczki). Piec w piekarniku aż krem się zsiądzie, czyli będzie stały po bokach miseczki, ale wciąż luźny w centrum (40-45 minut).
Wyjąć z piekarnika i pozostawić w kąpieli do ostygnięcia. Można jeść po minimum 2 godzinach, ale najlepszy jest następnego dnia. Krem może też postać kilka dni w lodówce.
Tuż przed podaniem posypujemy krem cukrem i karmelizujemy go. W sprzedaży są specjalne zapalniczki do tego celu. Możemy też sobie poradzić wstawiając na chwilę krem pod rożen w mikrofalówce lub w piekarniku.

Zagnieść ciasto z podanych składników i odstawić do lodówki na 30 minut. Następnie rozwałkować go i ułożyć w tortownicy (24 cm średnicy). Nakłuć widelcem żeby nie urosło w trakcie pieczenia.

Ciasto owocowe

Niecodzienna szarlotka
1 kg renet, 50 g masła, 4 łyżki cukru.Rodzynki i cynamon opcjonalnie (można dodać gotową przyprawę do strudla � rmy Kotanyi).
Jabłka opłukać i pokroić w talarki (można zetrzeć na tarce, która ściera w talarki). Jabłka ułożyć w wysmarowanej masłem żaroodpornej formie posypując cukrem, cynamonem i rodzynkami (układać warstwami). Jabłka dobrze ubić.
Brytfankę przykryć folią aluminiową i wstawić do gorącego piekarnika na 1 godzinę (230oC). Po pół godzinie wyjąć brytfankę i ugnieść jabłka pod folią. Ja to robię ręką w rękawicy ochronnej.
Po upieczeniu zostawić do całkowitego wystygnięcia.
Szarlotkę można wzbogacić lodami i bitą śmietaną.

for 1 hour. A� er half an hour remove the baking tray from the oven and press the apples � rmly under the foil. I do this by hand, wearing an oven mitt.
Let cool a� er baking.
Can be topped with ice-cream and whipped cream.

Gotowe blaty bezowe 3 sztuki, ½ litra śmietany 36%, 1 łyżeczka cukru waniliowego,
mrożone truskawki lub maliny, sok z ½ cytryny lub limonki,
3 łyżki cukru pudru, puszka ananasów.
Ubijamy śmietanę z cukrem waniliowym.Z truskawek robimy lody, czyli miksujemy zamrożone truskawki z dodatkiem cukru pudru i soku cytrynowego
w blenderze do uzyskania konsystencji lodów. Ananasy kroimy w kawałki. Blaty bezowe smarujemy na zmianę warstwą lodów i bitej śmietany. Na to kładziemy ananasy i przykrywamy kolejnym blatem bezowym. Znowu układamy warstwę
lodów, bitej śmietany i ananasów i przykrywamy bezą. Wszystko smarujemy pozostałą śmietaną i wstawiamy do zamrażalnika. Gdy deser się zmrozi kroimy na kawałki i podajemy.

whipped cream and pineapple and cover with a meringue base. Spread the rest of the whipped cream over the top and place in freezer. When chilled, cut into pieces and serve.

‘I only use the best. � e blocks of couverture are slightly larger than
house bricks, one box of each per delivery, and I use all three types:
the dark, the milk and the white. It has to be tempered to bring it to
its crystalline state, ensuring a hard, brittle surface and a good shine.
Some confectioners buy their supplies already tempered, but I like to
do it myself. � ere is an endless fascination in handling the raw dullish
blocks of couverture, in grating them by hand – I never use electrical
mixers – into the large ceramic pans, then melting, stirring, testing
each painstaking step with the sugar thermometer until just the right
amount of heat has been applied to make the change.’

Maliny zasypać cukrem i odstawić w zaciemnione miejsce na 1,5 miesiąca. Po tym czasie zlać sok do butelki i odstawić na 1,5 miesiąca. Pozostałe po odlaniu soku maliny zalać spirytusem i odstawić na 1,5 miesiąca. Gdy ten czas upłynie
zlać spirytus z malin i połączyć z sokiem malinowym. Znów odstawić tym razem już na 3 miesiące. Po tym czasie pić w małych kieliszkach na specjalne okazje gdyż, nalewka urzeka swym smakiem i aromatem.
