Whey proteins are the group of milk proteins thatremain soluble in whey after precipitation of caseinsat pH 4.6 and 20°C. Whey proteins represent themajor proteins in human (breast) milk, in contrast tothat of cow’s milk where casein is the major protein.The whey protein is a heterogeneous grouping ofseveral dissimilar proteins: α-lactalbumin, β-lactoglobulin, immunoglobulin, lactoferrin,lactoperoxydase, immunoglobulins, proteosespeptone, etc. It contains lactose, minerals andlipids.Whey is the watery portion obtained from cheesemanufacturing. It is called “sweet whey” (pH greaterthan or equal to 5.6) if it comes from rennet-

whipping functions in a food application. They haveno flavor on their own and are compatible withcooked meat flavor and spice/seasoning blends.Their capacity of water-binding make possible toimprove cook yield and to have a positive economicimpact. They give firmness texture and facilitateretention of moisture during process and cooking.For example, high solubility over a wide range of pHmakes WPCs a good candidate for a sport beverageor meal-replacement beverage.

They can emulsify fat-containing beveragesand aerate shake-type drinks and impart a lowviscosity useful in dietary product or convalescentfood.Finally, they provide an economical source of high-nutritional-quality proteins which makes themparticularly useful in sports nutrition: They have anexcellent metabolic efficiency and are easilydigested. They have the highest concentration ofbranched chain amino-acids (BCAAs), are a goodsource of sulphur-containing amino-acids thatmaintains antioxidant levels in the body, containglutamine and high levels of arginine and lysine thatmay stimulate growth hormone release and anincrease in muscle mass.

Usage of WPC 35 as a food ingredient will grow.WPC 35 will find enhanced usage, particularlybecause of its gelifying functionalities in moresophisticated products.
