Having enough daily fiber in your diet has become increasingly important because fiber helps support asmoother, more functional digestive system, provides stronger immunity, and promotes overall well-being.But did you know that even though you make an effort to eat healthily, you may still have trouble reachingyour daily fiber requirement? Many Americans average only half of the recommended 25 to 30 grams ofdietary fiber per day, according to the Academy of Nutrition & Dietetics, and the current average daily intakeof fiber is just 15 grams.

It’s impractical to think that you can get your daily fiber requirement from food alone, however, even thoughyou can find it in edible plants, including many fruits, vegetables, grains and legumes. For example, youwould need to eat about 10 apples or bananas every day to obtain your daily fiber requirement. Gettingenough fiber in one's diet can be a challenge so try these tips to increase your fiber intake:

Make your grains whole: Read labels and swap out conventional grains for whole wheat when buyingthings like bread and crackers, and choose brown rice over white.Make your veggies green: Green vegetables, including beans, spinach, cabbage, and asparagus are goodsources of dietary fiber.Go bananas: Many types of fruit are high in fiber, but bananas are an especially rich source.Add a supplement: Sometimes eating enough fiber-rich foods is a challenge so choose a dietary fibersupplement with prebiotic effects like those which occur naturally in high-fiber foods.

The Eskimo Pie, a chocolate covered ice cream bar, is something we take for granted, but thinkabout it for a second: Why does it even work? How do you get hot chocolate around ice creamwithout melting the ice cream? These are all questions Christian Kent Nelson pondered whilerunning an ice cream parlor in Onawa, Iowa in 1919. A relative of Nelson’s said the idea for theEskimo Pie began when a child walked into Nelson’s ice parlor and couldn’t decide between anice cream cone or a candy bar.

After numerous failed attempts to create a frozen ice cream bar, Nelson began shopping aroundthe idea in the 1920s and, truth be told, he hadn't figured out the process either. It took a fellownamed Russell Stover, a former chocolate factory superintendent, to make the sweet idea a reality.And the trick, in part, was the temperature of the chocolate. If you heat it to 115 degrees, thenlet it cool to 90 degrees, you can dip in a hard block of ice cream. Instead of the hot chocolatecausing the ice cream to melt, the ice cream causes the chocolate to harden.

Russell and Nelson teamed up and sold the idea of their chocolate-shelledvanilla ice cream bar to ice cream companies, taking a penny royalty for everydozen bars made. They were soon hauling in $30,000 a week in royalties --virtually an overnight success.

You might recognize Stover's name because he and his wife Clara went on toform Russell Stover Candies, a venture that started right in Clara's kitchen.At the time of Russell's death on May 11, 1954, the Stovers were selling 11million pounds of candy every year. Eskimo Pie’s are now marketed by Nestlé.

How about our first ever “Managers’ Ice Cream Recipe Showdown”!The managers from Sacramento and Enhanced will be battling it out for Best CreativeIce Cream Flavor. Make sure to make your way over to the Sacramento Building,Tuesday, July 16th at 2pm to taste all of the flavors.We tried something NEW at the Del Oro Competition, Risotto. Not just one, not eventwo, but three risotto flavors! Each chef from Carlton’s Northern Region made adifferent risotto. Chef Kirk made his Wild Mushroom Risotto, with Chef MJ making hiscreative Chocolate Risotto and Chef Roger made his Bacon and Butternut SquashRisotto. They were so delicious and each one very unique in their flavors, however, wewere unable to capture the win at the Del Oro Competition this year. Not for lack oftrying!This month we say hello to our new Director of Resident Services, Andrew Stevenson.He is an old face around here at Enhanced, who you may remember as one of ourMedication Technicians. This month we also unfortunately said goodbye to HaleyHowland, our Personal Care Manager who had to leave our team suddenly. We wishthem both success in their new endeavors and can’t wait to see Andrew flourish in hisnew role.I would like to send out a personal thank you to all of the residents that have beenattending our Resident Council Meetings. The feedback and information that you havegiven us during the meetings has proven to be invaluable. My team and I will makesure that we address all of your concerns given during the meetings.Since we are entering the Sacramento summer, make sure you stay hydrated andcover up when outside. Regular exercise can help seniors remain healthier and more independent asthey age. Studies have shown that seniors who exercise regularly have longerlife expectancies, remain independent longer, and improve both physically andpsychologically.

Balance decreases as we age, and more importantly, falling is a major problem.According to the U.S Centers for Disease Control and Prevention (CDC), one ofevery three Americans over the age of 65 falls each year, and among individuals65-84, falls account for 87% of all fractures and are the second leading cause ofspinal cord and brain injuries. Many seniors believe that walking is enoughexercise to stay fit and healthy but, according to Dr. Robert Sweezy, renownedosteoporosis expert, walking is not enough to increase muscle and bone density,a key component in remaining independent.
