the southwest ambulance – arizona celebration of freedom
Volunteers are needed for The Southwest Ambulance Arizona Celebration of Freedom Friday, July 1 and Saturday, July 2 for the second annual community independence festival.
The Southwest Ambulance Arizona Celebration of Freedom will feature more than a dozen cool zones, family fun zones, live music on multiple stages, Heritage Lane, Motorcycles on Main, a classic car show and fireworks. Volunteers are needed both days for a variety of ac-tivities, including information/lost and found, event set up/tear down/clean up, supervising fun zones, games and more. Volunteers must be 18 years of age. All volunteers will receive a commemorative t-shirt.

Delicious Lasagne SquaresMakes 8 servings.1 medium onion, chopped1/2 green pepper, chopped3 garlic cloves, minced2 tablespoons vegetable oil1 (28 ounce) can tomatoes1 (6 ounce) can tomato paste1/4 cup minced fresh parsley1/2 teaspoon oregano1 bay leaf8 ounces lasagne noodles1 package (10 ounces) frozen, chopped spinach (cook and drain)1 pound ricotta cheese1 egg3/4 cup grated Parmesan cheese1 teaspoon salt1/4 teaspoon pepper8 ounces grated mozzarella cheese
Saute onion, green pepper and garlic in oil until golden, stirring often. Stir in tomatoes, tomato paste, parsley, oregano and bay leaf. Simmer uncovered for 20 minutes. Cook noodles according to package directions and drain. Combine spinach, ricotta, egg, 1/4 cup Parmesan, salt and pepper. Spoon 1/3 of the tomato sauce in bottom of a 13 x 9 inch baking dish. Cover with 1/3 of the lasagne noodles, 1/2 spinach-ricotta filling, 1/2 mozzarella and 1/4 cup Parme-san. Repeat layers, using 1/2 remaining sauce and noodles, and all remaining filling. Top with remaining noodles, sauce, Parmesan, mozzarella. Bake at 350 degrees for 45 minutes. Let stand for a few minutes before cutting into squares for serving.
Easy Breakfast Ham & Cheese Bake2 cups diced cooked ham 2 cups Swiss or Sharp Cheddar cheese, shredded1 small onion, finely diced3/4 cups buttermilk baking mix such as Bisquick1 1/2 cups milk5 eggssalt and pepperFrank’s hot pepper sauce (optional)
Lightly grease (or spray with non-stick cooking spray) an 8 x 8 square baking pan or deep dish pie plate. Combine ham, cheese and diced onion in the bottom of the pan. In a large bowl mix together the baking mix, milk, eggs, salt and pepper, and hot sauce (if using). Pour over the ham mixture in baking dish. Bake at 400 degrees for 35 to 40 minutes or until a knife comes out clean when inserted into the middle.
Bow -Tie Pasta with ChickenMakes 4 servings.6 ounces bow-tie pasta3 tablespoons butter or margarine2 boneless, skinless chicken breast halves, cut into bite-size piecessmall container sliced, fresh mushrooms1 medium zucchini, sliced1/2 cup red bell pepper, chopped3 tablespoons fresh basilJuice from 1 large lemon1 ounce grated Parmesan Cheese
Cook pasta according to package directions. In a large pan, on medium heat, melt 2 tablespoons butter. Add chicken
and saute for a few minutes, then add mushrooms and cook all together for a few more minutes until brown. Add zucchini and pepper and cook until tender. Re-move from heat and stir in basil and 1 tablespoon butter. Combine chicken mixture with hot pasta, lemon juice and Parmesan cheese in a large serving bowl.
Sesame Salad1 head iceberg lettuce1 bunch red-leaf lettuce4 green onions, sliced4 tablespoons toasted sesame seeds1/2 cup slivered almondsbacon bitsDressing for salad:1/2 cup olive oil3 tablespoons sugar or 2 tablespoons agave nectar2 tablespoons white vinegardash of salt and black pepper, if desired
Shred lettuce and put all into a large salad bowl. Top with green onions, toasted sesame seeds and almonds. Whisk dressing ingredients together. Pour dressing over salad just before serving, then top with crumbled crisp bacon.
Easy Cherry Blossom Cheese Tarts18 vanilla wafers16 ounces cream cheese1/2 cup sugar2 eggs2 teaspoons vanilla1 can cherry pie filling
Soften the cream cheese then mix together with the sugar, eggs, and vanilla. Beat at medium speed for a few minutes until mixed well. Place paper cupcake liners in muffin pans. Place one vanilla wafer into each cupcake liner. Fill each with the cheese mixture (fill to within 1/4 inch of the top of liner). Bake 12 to 15 minutes in a 350 degree oven. When cool, spoon cherry pie filling on top of each and chill. Delicious!

am sure that in every artists life there is a moment when something magical happens and the brush seems to take on a life of its own and what began as one thing is suddenly transformed into another...a ‘meta-morphosis’ emerges right before your eyes. I’m always astounded when this occurs.
That is what happened with ‘Homage’ the cover painting presented here, What began as an addition to my ‘Women of the Vineyard’ series of paintings became my
gift to the memory of my mother, my grandmothers and all those who came before them. The lovely, strong figures are appropriately set in the vineyard where the vines are planted and lovingly nurtured and protected to produce and celebrate the finest wines.
My ‘Mom’ was always my best friend, my strongest critique, my biggest fan. I always knew when the canvas stayed bare and the brushes were dry, I could rely on her for inspiration and encouragement. Now it’s my turn to do
the same for my children and grandchildren as well know-ing full well that hers are very hard shoes to fill. I take on this role with a goodly portion of trepidation always trying to remember all the wisdom and love she instilled in me.
Mothers Day has always held a special place in my heart for it’s a day to take a moment to reflect and remember all that these precious women meant to me. ‘Homage’ is now hanging on my living room wall. I’m happy I’ve decided to keep it in the family as a memorial to them.

Grilled SalmonServes 6 –81 6-ounce salmon fillet per person2 tablespoons Ac’cent Flavor Enhancer2 tablespoons paprika2 tablespoons cayenne pepper (or to taste)1 tablespoon fresh ground black peppercorns2 cloves of garlic, crushed3 tablespoons onion flakes2 tablespoons dried oreganoOil
Mix all dry ingredients together with a mortar and pestle until powdery. Rub all over salmon fillets on both sides and leave for 1 to 2 hours. Heat a ridged grill pan, chargrill or BBQ until hot. Spread some oil over the salmon fillets and place on the grill. Cook for 5 minutes. Turn over and cook until done. Test by poking a knife into the center of fillet and look inside; the fish should flake easily. Serve with a mixed pasta salad.
Smokey Steak KabobsServes 62 tablespoons Wright’s® Natural Hickory Seasoning1/2 teaspoon Ac’cent Flavor Enhancer1 cup coffee1/2 cup chopped onion1/3 cup oil2 pounds steak (rib-eye or sirloin) cut into1-inch cubes1 large green pepper, cut into chunks1/2 pound fresh mushroomsCherry tomatoes
In a bowl, combine hickory seasoning, flavor enhancer, coffee, onion and oil. Add steak cubes and stir occasion-ally. Marinate 45 minutes. Drain. Using long skewers, al-ternate steak cubes, green pepper chunks, mushrooms and cherry tomatoes. Place skewers on grill over hot coals. Grill 6 minutes, turn and grill additional 4 to 6 minutes.
Cajun BurgersMakes 4 hamburgers1 1/2 pounds lean ground beef1/2 cup finely chopped red orgreen bell pepper4 teaspoons Red DevilTMCayenne Pepper Sauce2 teaspoons Worcestershiresauce1 teaspoon dried thyme leaves,crushed (optional)1/2 teaspoon Ac’cent FlavorEnhancer1/2 teaspoon salt
In large bowl, combine all ingredients; shape into 4 patties. Grill or broil until beef is no longer pink. Serve, if desired, on hamburger buns and top with shredded lettuce and cheddar cheese.
Grilling Tips Let meat rest for several minutes before slicing or
serving. This lets the juices redistribute throughout the meat, which keeps it nice and juicy.
Slice flank steak diagonally across the grain, otherwise it will be too tough.
Know your ribs. Pork spare ribs come from the outer edge and tend to be leaner. Baby back ribs are shorter and are cut from the back. Country style ribs come from the shoulder area and are meatier than the other cuts.
When buying shrimp for grilling, make sure you get at least jumbo sized (12 to 15 per pound), or colossal (about 10 per pound). If they’re much smaller, they will be harder to handle and will cook more quickly than the other ingredients on the skewer.
Memphis-Style BBQ SauceMakes about 2 cups1 tablespoon butter1/4 cup finely chopped onion1 1/2 cups ketchup1/4 cup chili sauce4 tablespoons brown sugar4 tablespoons Grandma’s Molasses2 tablespoons yellow mustard1 tablespoon fresh lemon juice1 tablespoon Worcestershire sauce1 tablespoon Wright’s® Liquid Smoke1/2 teaspoon garlic powder or granulated garlic1/2 teaspoon salt1/2 teaspoon Ortega Chile Seasoning MixDash cayenne pepperSauté onion in butter until soft. Add remaining ingredients.Simmer about 15 minutes. Adjust seasonings to taste.
BBQ RibsServes 6 –84 slabs (about 10 pounds) pork spareribsDry Rub:2 tablespoons kosher salt2 tablespoons black pepper2 tablespoons onion powder2 tablespoons garlic powderRub on both sides of ribs and refrigerate 2 to 4 hours, or overnight. Heat oven to 250°F. Line a rimmed baking sheet with foil. Add 2 cups water to baking sheet. Place ribs on rack on baking sheet. Bake 4 hours or until very tender, adding water to pan as needed. While ribs are baking, make BBQ sauce. Preheat grill to medium. Place ribs on grill and baste with sauce, turning frequently, for 15 to 20 minutes.

There are so many effective methods to ridding yourself of the clutter in your home. You have to find what works best for you. Celebrate even your small accomplish-ments during this process! Declare War! On ClutterUse Space Creatively! Walls and ceilings are very rarely treated as a means for storage, when in reality they can be a great and also an attractive place for certain things taking up space in your home. Meanwhile, hidden nooks and crannies can be used to hide less appealing items in your home. You can also get creative with things so that they better fit their designated areas, rolled tow-els might fit more snugly than a stack. A collection of photos competing for space on an office desk might be better suited for the bare spots on your walls. Thinking outside of the box can go a long way in developing a more functional space!
Go at your own pace! You will be amazed at how much you can accomplish in ten minutes. Every day take five minutes to straighten up and another five minutes to focus on cleaning out the clut-ter in a drawer or on a shelf or flat space, and you will find your house to always be in order. Think about it -- if you do this five days out of every week, you’ll have purged 260 small areas in your home at the end of a year! Don’t become obsessed with getting rid of ALL your clutter now, set a pace that works best for you, and know that little by little you are making your way to a clutter free space.
Create a system! There is a reason you look around and see the stacks of papers, old maga-zines, and laundry baskets full of clothes you haven’t touched in a year. Once you’ve purged your space of unwanted junk, you can more easily focus on up keeping the clutter free space you have successfully created. What you will need is a regular system for keeping things functional. You’ll never get to per-fect, but if you think more intelligently about how your house got cluttered, per-haps you can find ways to stop it from happening again.
Toss Obvious Junk! Take a little walk around your house with a trash bag in tow and get rid of anything that has expired such as food, medicines, coupons, make- up that has exceeded the one year mark, and any-thing that is broken. Tackle these items the night before your trash is picked up, that way you won’t be tempted to retrieve them. Also if you find any-thing in your closet you haven’t touched in a year, that’s a good sign that its time is up. Put these items in a bag for Good Will and you can be sure you will be blessing someone less fortunate!
emotional Intelligence has been brought up before in this column and lately, I’ve received a number of inquiries related to “eQ”, because the concept applies to many types of relationships. It even includes the relationship we have with ourselves.
this concept was first introduced in the 1920’s as “social intelligence”. According to the founders of the term, Peter salovy and John D Mayer, eQ involves “the ability to monitor one’s own and others’ emotions, to discriminate among them, and to use the information to guide one’s thinking and actions”.
there is copious discussion on how to use eQ for interpersonal relationships - our connection with others.
But how can eQ apply in our intrapersonal rela-tionship with ourselves?
First, it can help us become aware of what it is that we are feeling as it happens. It’s part of “responding” vs. “reacting”. Feel the feeling and don’t forget to breathe!
then whether it’s justified or not, it’s valid, so become very clear on what you are feeling; it’s when you become the observer. this is new to many people so just do it over and over again and it becomes a natural response.
next is to manage the emotions. Continuing as the observer, realize what is behind that feeling, and exam-ine options and ways to handle those emotions of fear, anxiety, sadness and/or anger.
the next step is key; you then create a plan to chan-nel the energy of those emotions into the service of a goal. using your emotions productively help you have more emotional self control, including stifling impulsive behavior and delaying the gratification in a reaction.
so this is an effective and rewarding process that also validates your emotions and what you experience.
example: Fred approaches sally on a social group hiking event. she and Fred have become friendly and she has become interested in him romantically. As Fred has done recently, he apologizes for not calling her again on the phone last night, as he said he would. He explains that he will be too busy to call for a few days and he is going to go talk to some friends and will see her later.
sally has some options; she chooses the eQ response. First, after Fred walks away, she sits and experiences how that exchange has made her “feel”. she notices that she is breathing shallow breaths and consciously returns herself to normal, deeper breath-ing. she realizes that she is somewhat angry and sad, as she feels disappointed and let down.
she validates herself; it does feel like a blow when someone you are interested in doesn’t connect with you when they say they will, and then treats you like you are unimportant to them.
But being clear on this, she gets to make her own decision. she decides that she is done putting her-self in that position with Fred and that he will only be one of the hiking buddies to her from now on. Also, she will watch for similar behavior from anyone else she becomes interested in and decides to let them know early on that it’s not ok in a calm and friendly way. she makes it a goal to establish and maintain those healthy boundaries.
eQ can give you more control over your situations. It can help you to put less expectation on others so you experience less disappointment. You can have better understanding of what has put you in the emotional state you are in, which helps you manage your emotions for a more productive outcome from now on.

we all need something from God that only God can give! We try to find the thing that only God can give in other places, to no avail. Whether it be satisfac-tion, fulfillment, joy, peace, etc… only God can give us the deepest desires of our hearts. We try with all our might to gain what we need without God’s intrusion, but we must admit we fall short. Ultimately, all of us need something that only God can give. What if I were to tell you that your needs will only get met through something we call amazing grace?
For the grace of God has appeared that offers salvation to all people. 12 It teaches us to say “No” to ungodliness and worldly passions, and to live self-controlled, upright and godly lives in this present age, 13 while we wait for the blessed hope—the appearing of the glory of our great God and Savior, Jesus Christ (Titus 2:11-13)
What is grace? We can answer that by first stating what it is NOT! Grace does not mean your sin doesn’t matter. Your sin does matter. It cost Jesus His life. Your sin cut you off from God. Your sin makes you dirty and unholy. Your sin made you turn your back on God. Your sin does matter. The fact that Jesus moved and died for your sin just shows us how much more amazing grace is, but it does not take away from the awfulness of your sin. Your sin does matter.
What then is grace? It is more than just going to Heaven when you die. God’s free gift of grace received by you through faith means you get Heaven after you die, but it means more than that. Grace, according to Titus and other passages, helps us for the here and now. Grace
teaches us. Grace helps us live apart from sin and enables us to look more and more like God the Son. Grace gives us the courage to face the reality of our sins, heal in spite of them and be forgiven of them.
Since the grace of God helps us in the here and now, it shows me that I don’t have to be afraid of what is really going on inside of me. Because grace is a gift it means that I can never earn it (it is a gift) and I do not deserve it (because it is a gift). Since Jesus gave me this gift while we were still sinners, I can be me when approaching the throne of Grace. God will give me what I so desperately need for my sins, worries, problems and I don’t have to hide them, or pretend that I am better than I truly am. I can come the way I am, and grace helps me to not stay that way!
God gives grace that gives courage. Grace does not make you soft, as if your sins, problems and worries don’t matter, they do matter, but to clarify: grace is NOT the mattress at the bottom of a cliff that softens your fall. Grace doesn’t mean that life is easy and you won’t have pain. That
is not grace. If you commit a crime, or betray a relationship or rob or hurt or harm someone – grace doesn’t mean you won’t have to pay for your deeds. Grace is not the mattress that makes sure you have no consequences for your sin – because if you do certain things: you’re going to jail and you may lose your spouse and your kids may not want to talk to you – grace, though – helps you face all of that. Grace helps you to recognize that your identity can be recovered and restored. But it does not take away the consequences.
Let’s say you stole from your employer: grace will hug you, love you, help you and strengthen you to walk through the ordeal. But you’re still fired! That is how the grace of God can help us in the here and now. We can say NO to things before they come. Grace can help us do the work needed to heal for the stuff we already did. This grace has appeared to all humankind. But only a few recognize it, believe it and accept it. Be one of the few that takes from God what only God can give and daily be amazed by His grace, and changed by it!
