White GrapesSAUVIGNON BLANCSauvignon Blanc, except in rare instances, is the most important variety for dry white wines. It provides the wines with the necessary acidity as well as minerality, aromatic freshness, and varietal aromas, such as citrus, boxwood, and fig leaves.

SEMILLONSémillon is the main grape variety for semi-sweet and sweet white wines and is almost always a component of dry white wines as well. It contributes roundness, richness, and apricot and honey aromas. When affected by ‘noble rot’, it develops an inimitable bouquet.

MUSCADELLEMuscadelle, which plays a secondary role in the blend for both dry and sweet white wines (generally no more than 10%), is a fragile but very interesting variety with musky floral overtones.

Red Grapes MERLOTEarly-ripening Merlot is the most widely-planted grape variety in Bordeaux. It expresses its full potential on cool soils, producing smooth wines with a great deal of color, roasted aromas, and flavors reminiscent of red fruit (such as plums) and figs after ageing in bottle for several years.

CABERNET SAUVIGNONCabernet Sauvignon is a traditional late-ripening local variety. The gravely soil of the Left Bank provides the necessary warmth for optimum ripening. This grape variety contributes structure to the wines as well as hearty tannins and a flavor profile including liquorice, black fruit (such as blackcurrant), and elegant aromas of forest floor with age.

CABERNET FRANCCabernet Franc ripens earlier than Cabernet Sauvignon. It is an excellent complementary grape variety that rarely makes up the majority of the final blend. It adds freshness, finesse, and aromatic complexity as well as hints of raspberry and violet.

Petit Chablis, J. Moreau & Fils 350 Chardonnay A dry and fruity wine, easy to drink. Very fresh aromas reminiscent of citrus (lemon or grapefruit). On the palate, dry and fruity, with mineral notes.

Chablis 1er Cru ‘Vaillons‘, J. Moreau & Fils, 2011 690 Chardonnay This dry, medium-bodied and fruity white displays a complex and medium nose. On the palate, it’s refreshing acidity and broad texture precede a medium finish.

Hautes Côte De Nuits, Jean Claude Boisset 395 Chardonnay A clear white wine with a bright golden color. Very intense on the nose, with notes of grapefruit and toast. Very good attack on the palate, with plenty of freshness and elegance, and a refined structure.

Pouilly Fuisse, Les Pierres Blanches, Cave de Lugny, 2011 590 Chardonnay Beautiful white fruit aromas that mix very-well with fine almond notes. There are also Muscat-like aromatics that can be smelt and which linger in the mouth. A wine to be savoured whilst young with lovely minerality and focused finish.

Meursault, Les Criots, Domaine Ballot-Millot, 2011 1,190 Chardonnay Dry white wine, Spicy white oak, crunchy orchard fruit, brioche and the tell tale hazelnut finish. So full of flavour and yet elegant and pure on the palate.

Corton Charlemagne Grand Cru, 2,900Domaine Bonneau Du Martray, 2002 Chardonnay On the nose, there are some subtle tones of rose, fresh almond, citrus, honey, exotic wood and spice. Majestic and well balanced on the palate. Generous and lively at the same time. Intense and complex aftertaste. All the aromas mingle and linger for quite a long time afterwards.
