Chicken and Hummus Wrap Ingredients 2 whole grain tortillas 1 C cooked chicken, chopped ½ C hummus, any flavor 1 C fresh spinach Sliced red onion This recipe makes 2 servings. Prep-time: 4 minutes 1. In a medium sized bowl, mix together hummus and chicken. 2. On each tortilla layer half of each of the spinach, onion, and hummus chicken mixture. Take care to place the ingredients in the center of the tortilla leaving the edges clear for folding the wrap as seen below. 3. To fold the wrap, bring the right and left sides of the tortilla in to the center. Next, take two corners and also fold them to the center as pictured below. Roll the tortilla about half-way over and fold the remaining two corners towards the center as well. Finish wrapping all the way. 4. If packing for lunch, wrap this recipe in plastic wrap to ensure that your wrap maintains its shape.
