Soon afterwards theKempinski's Executive Chef,Jordi Batallier, who has beenwith the Hotel for many years,was honoured by the oldestgastronomic academy in Spain,the "Academia Gastronomica deMalaga". He received the JoséMeliá Sinisterra Prize for the"Best Hotel on the Costa delSol". This prize recognizes thequality and ability to provideguests with a healthy anddelicious cuisine.
The Nominations for the CondéNast Traveler Gold List 2011and for the World Travel Awardsas Spain's Best Resort Hotelfollowed before the summerarrived. How does Cava compare to Champagne?
„They are very different!” – that is what you hear, ifyou ask experts. And they do also explain why: “The
climate and the soil make them so. Cava is not as acidic because in Spain they have plenty of sunshine,
but on the other hand, the acidity can be nice; it makes the wine fresher and allows it to stay longer in
the bottle.” Cava is made exactly the same way as Champagne. But still, Cava is not as expensive as Champagne.

he question of what isbetter (Champagne orCava), does not only existsince Cava was made. The
same question is raised for a lotof other products, such as forwine (Rioja or Bordeaux?), cars(Porsche or Ferrari?), cigars(Davidoff or Cohiba?), DSLRcameras (Canon or Nikon?), etc.,etc., and can not be answered toall satisfaction.Because they are all different,beside the basic facts that a caris a car with 4 wheels and amotor, a cigar is made out ofleafs, a DSLR camera is usingthe mirror technique, etc.etc.
Simple said: Don´t ask ifChampagne is better or not thanCava, instead admit that theyare of course different sparklingwines, and both have their fans,their occasions, their community.
So, what is the differencebetween Cava and Champagne?
Champagne is a sparkling wine – but not every sparkling wine is a
Champagne.
This is the fact, since the Frenchauthorities defended the brandand the use of the term„Champagne“ as a protecteddesignation of origin in theEuropean Union.
Before Spain became in 1986 amember of the EU, at least theuse of the term méthodechampenoise was still allowedfor the producers of „champagnestyle“ sparkling wine.After repeated protests of the
roundabout 300 Champagneproducers from the Champagneregion, the French Authoritieswere forced to forbid the use ofthe word champagne in anydescription and so opted all theother producers of sparkling winein France and in the EU to useinstead „méthode traditionelle“to signify that their wine is madeusing the same productionmethods as Champagne. InFrance the sparkling wine fromany other region is calledCrémant (Burgund, Bordeaux, deLoire, Jura, etc.).
Talking about production: Cavais Spain’s sparkling wine – theSpanish version of Champagne,created by the Catalunyan JosepRaventós in 1872. He returnedfrom France, where he has been1860 and learned how toproduce a sparkling wine, usingthe French techniques. That’swhy Cava is made exactly thesame way as Champagne. But,Champagne is made only in oneregion in France, Cava on theother side may be produced ineight wine regions in Spain.

Talking about prices: Cava iswith around 15 Euro/bottle for abroader community affordable.Expensive Cava cost around 60+Euros (Gran Reserva).Champagne prices are fromaround 40 Euro/bottle and canreach that price 100 times morewith no limit to the sky.
The factor, that Champagne isonly produced in one smallregion in France is of courserelevant for price strategy andmakes Champagne since everexclusive, special and luxury.
So, at the end the question isanswered in terms of admittingthat both sparkling wines doindeed have their differencesbeside the fact, that they areproduced the same way.Different grapes, which aregrowing in different soil and indifferent climate zones, bringdifferent taste into the sparklingwine.
Some more facts:
• Benedictine monk Dom Pérignon (1638-1715) invented champagne
• Champagne is made out of only 3 grapes: Pinot Noir, PinotMeuniere, Chardonnay
• Cava is made mainly of 3 grapes: Macabeo, Parellada, Xarel-lo (all native spanish), although other grapes, such asthe native grape Samsó, as well as Chardonnay, Pinot Noir and Subirat are used
• Champagne bottle ages a minimum of 15 months (Vintage36 months)
• Both, Champagne and Cava, are produced in varying levels ofdryness: brut nature, brut, extra brut, sec, demi-sec and dolsec
Talking about sparkling wines ina group of friends you could endup chatting the whole night withlots of arguments and opinions –my advise: better you just opena bottle of either Cava orChampagne – enjoy and havefun!
