HASTINGS CULTURAL OLYMPIAD BOAT, COLLECTIVE SPIRIT

March 25th 2011 seems a long time ago. Thatwas the date that artists Gregg Whelan andGary Winters – the artistic duo known as ‘LoneTwin’ – visited Hastings to gather donations ofwood with a tale to tell for The Boat Project*.Residents from Hastings & St Leonardsresponded in style and flocked to the Stade Hallto hand over their precious offerings. Theycontributed more donations than any one townin the South East. Those items, which include amast donated by Hastings fishermen and apiece of Hendrix’s guitar, have now beenincorporated into the hull of this beautiful –seaworthy – work of art, made specifically forthe London 2012 Festival.

The boat set off from Chichester on its maidenvoyage in May, and three of the six crewmembers nominated by members of the publicare from 1066 Country. Collective Spirit arrives

in Hastings on 6 July. Most other towns onlycatch a glimpse as it sails along the coast, but inHastings is fortunate to have the boat on displayon the Stade Open Space during the weekend of7 – 8 July 2012.

The Boat will be met at sea en route to Hastingsfrom Eastbourne by a flotilla of Hastings’ andSt Leonards’ vessels led by Hastings FishingFleet. It will moor off the Stade beach where itwill be greeted by the Hastings Shanty Singers,followed by a traditional blessing of the sea byFather Robert Featherstone of the Old TownParish. This event is produced with theassistance of the Hastings Fishermen'sProtection Society.

The boat will then be brought out of the waterand on to the Stade Open Space for the durationof the weekend. An exciting programme of

events is planned in honour of Collective Spirit.These include a singathon lasting two days withcommunity and school choirs; a sound andimage installation telling the story of The BoatProject and many of the local wood donations;new works presented by Project Art Works incollaboration with Jerwood Gallery, Lone Twinand Hastings Borough Council. You can see theBoat on shore at Hastings from 10am – 5pmSaturday 7 July and Sunday 8 July on the StadeOpen Space, Rock-a-Nore Road, The Stade.The Boat Project is a living archive of people’sstories and lives, a 30ft seafaring vessel madefrom donated wooden items. The Boat Projectby Lone Twin is part of Artists Taking the Lead,a series of 12 public art commissions across theUK to celebrate the London 2012 CulturalOlympiad. The Boat Project is the winningcommission for the South East region and isfunded by Arts Council England.

BONHAMS TICK UP HUGE PRICES FOR CLOCK

A fine robust clock that is still ticking despite abomb strike on the house, in which it oncestood, was sold in Bonhams Fine Clock sale onJune 20th for £43,250. This trooper of atimekeeper has a story to tell.

The clock survived the London Blitz in WWIIdespite an exploding bomb striking the top ofthe house. Shrapnel hit the clocks carrying case,stored in the attic, but thankfully thismagnificent clock remained unscathed in adownstairs room.

This rare mid 19th century French 'Bubble' topgrande sonnerie giant carriage clock, built ingilt bronze with a glass dome, stands 11 inchestall. The clock-making Berrolla family wholived in Paris Rue de la Tour between 1850 and1860 made and retailed this exquisitetimepiece. They showed their carriage clocks inthe Paris Exposition of 1839 and exhibitedcarriage clocks at the London Exhibition in1851 and 1857.

Another clock with an astonishing story is avery fine 18th century walnut longcase clock of

exceptional provenance built by GeorgeGraham of London which stands an imposing7ft 2in.This huge clock which had not movedsince 1733 sold for £175, 250.

This clock has been in the same British housesince new and was offered for sale by a familydescendant of the original purchaser. As such, itoffered a unique opportunity to acquire a clockthat was last sold in 1733.The clock was ingenerally excellent condition said JamesStratton, Head of Clocks at Bonhams. The salemade a total of £861,375 for 138 lots in all.

A DICKENS OF A TIME2012 IS THE BICENTENARY OF CHARLES DICKENS

This summer really does have an exceptionalamount going for it: the success of The Queen’sDiamond Jubilee; the London Olympic Games;and, of course, the ongoing bicentenarycelebrations of the birth of one of our greatestwriters – Charles Dickens. This anniversary isconsidered to be of such significance that theRoyal Mail has issued a set of commemorativestamps, featuring ten of Dickens’ mostmemorable characters.

The actual date of Dickens’ birth, 7th February,was marked by numerous ceremonies,including a service at Westminster Abbey,celebrations in the city of his birth, Portsmouth,and throughout Kent, with which he had alifelong association. International eventsincluded a 24-hour ‘readathon’ which linkedreadings from his works in countries fromAlbania to Zimbabwe. Meanwhile back inLondon, all members of the Cabinet werepresented with copies of Dickens’ works, thePrime Minister’s allotted titles being,incidentally, Hard Times and GreatExpectations...

Clearly, celebrations of the bicentenary of sucha major and influential figure could not becompressed into a single day, and events arebeing held, nationally and internationally,throughout the year. Dickens 2012 was set upby the Charles Dickens Museum and FilmLondon, in association with the DickensFellowship, to co-ordinate a wide programmeof events including theatre, outdoor performingarts, exhibitions, literary festivals, and film, TVand radio adaptations. Dickens’ love of Kent began with his veryhappy childhood in the county, to which hecame aged five, and his books contain manyand varied references to the people and placesof Kent. He enjoyed long walks with his fatherover the marshland and fields surrounding theRiver Medway near Rochester, a landscape

which featured strongly when he came to writeGreat Expectations, although the marshes aredescribed in the book as being around theThames.

Dickens World at Chatham, a permanent multi-media family attraction, is hosting numerousspecial events and shows throughout the year. (tel. 01634 890421, or go to www.dickensworld.co.uk).

Also in Chatham, performances of his workswill be held at the Historic Dockyard, whereDickens’ father worked and would often takehis son. The dockyard made a huge impressionon the young Dickens, and appears as abackdrop in many of his novels. Rochester,Medway and Broadstairs, which Dickensvisited regularly, hold annual Dickens festivals,plus special events to mark the bicentenary. Dickens stands as a colossus among the greatEnglish writers: in the rankings of the popularclassics, only the Bible and Shakespeare arelisted ahead of Dickens. He is also one of themost widely-translated authors, his worksremaining immensely popular worldwide. Sowhat gives Dickens’ books such a wide andenduring appeal, two centuries after theirauthor’s birth?

Each of the major novels contains a trulymemorable plot, and is populated by a wholerange of unforgettable characters, many ofwhom have entered the national consciousness.The miserly Scrooge from A Christmas Carol isa prime example of a Dickensian name whichhas come to bear an immediately recognisableconnotation. Then, of course, the wordDickensian itself has entered the lexicon,summing up various, usually less savoury,aspects of the Victorian era.

In our own, multi-media age, Dickens’characters and the novels they inhabit transferwith enormous success to visual interpretationon stage, television, and in film, where the oftenlarger-than-life characters and atmosphericVictorian settings immediately engage both our

attention and our imagination, drawing us intothe story and the lives of his characters, withpleasurable ease.

But the enduring popularity of his work, bothnationally and internationally, must mean thatthere is more to Dickens than the ability of amaster story-teller, however great. Looking athis work as a whole, it becomes clear thatDickens’ main theme runs through all hisnovels: the struggle of the individual against thesystem. Perhaps the example of this whichsprings immediately to mind is Oliver Twist,the orphan failed by the inhumanity andcorruption of the system, here represented bythe workhouse. Similarly, in Bleak House thesystem against which the individual muststruggle is the endless process of law; in GreatExpectations the enemy is a rigidly-enforcedclass system; in Our Mutual Friend it is moneyand in Hard Times it is the power of industry –which we would, perhaps, call Big Business.These themes are of course not restricted toVictorian England, but are both universal andtimeless. They remain as relevant to our globaleconomy in the twenty-first century as theywere to the Victorians’ Industrial Revolution inthe nineteenth. So Dickens is a writer whosework reaches far beyond his own time, countryand culture. He remains a huge influence oncontemporary art, literature, film and – mostimportantly, perhaps – conscience. As the Deanof Westminster said at the thanksgiving service:“This bicentenary should help renew ourcommitment to improving the lot of thedisadvantaged of our own day”.

So that now, as then, wherever there is injusticeor abuse of the innocent or the weak, Dickens’criticisms of the system still demand ourattention, and hopefully spur us to action,resounding with a relevance as fresh as whenthey first demanded attention, and action, inVictorian England. And that, surely, is a legacywell worth celebrating – in anyone’s book.

We spent the day at Knockhatch AdventurePark near Hailsham recently. The girls enjoyeda superb day out with a great combination oflearning and enjoyment.

There are farm animals,birds of prey and manyother animals from around the world living atKnockhatch. For dad the go karts let me showmy prowess on the track and my guerilla

fighting skills in the fantastic laser war zone.No one was impressed on the day.

I narrowly beat my 10 year old on the track andwas killed twice in the warzone. The boatingtrip was a great unwind in the middle of theafternoon.

The falconry display was the high point of the

day while the bungee jumping came a closesecond. This summer expect to see an influx ofmany baby animals to Knockhatch. Oh, andprices inside for refreshments are good, so noneed for picnics.

FARMER DAVY TAKES DELIVERY OF HIS NEW TRACTORFew things make Farmer Davy happier than thechance to try out a brand new tractor.

The hard-working farmer, who cares for themany animals at the Rare Breeds Centre inWoodchurch, near Ashford, is already puttingthe New Holland TD5020 through its paces atthe popular visitor attraction.

He said: “It is beautiful to drive! The maintractor driver, Pete Penfold and I, are verypleased with it. If you see me driving it aroundthe Rare Breeds Centre, then wave hello!”

The centre has another tractor, used for givingvisitors a tour of the extensive site, but this newone will be reserved for the really hard work.Davy added: “This is the tractor we will use formucking out, carrying bales of hay and otherduties. This is a real workhorse.”

A registered charity, the Rare Breeds Centre isowned and run by Canterbury Oast Trust, whichprovides care and opportunities for adults withlearning disabilities. Funding for the newmachine came from the trade-in of a previoustractor and from some generous donations. TheCivil Service Insurance Society, for example,donated £5,000 towards the buying of thetractor, through the CSIS Charity Fund, whichuses the annual trading surplus of the insurancesociety to support charitable causes. FarmerDavy added: “The new tractor is definitely

going to make work on the farm easier for Peteand myself. It should take a long time before wemanage to wear it out!”

Gill Gibb, chief executive of Canterbury OastTrust said: “If there is one thing which widensFarmer Davy’s smile it is brand new, heavyduty agricultural machinery – and who canblame him? The tractor will be a real boon tothe farm.”

The Rare Breeds Centre, which celebrates its20th anniversary this year, is open every day,from 10.30am to 5.30pm, until November.Admission is £9.95 adults, £8.50 seniors andchildren £8. A family ticket comprising twoadults and two children, is £28.

Year round sunshine, miles of golden sandbeaches, a handful of exclusive hotelsoffering the best in fine dining, a thrivingculture and magnificent wildlife right onyour doorstep – this was my introductionto The Gambia.

As one of Africa’s smallest and lesserknown destinations, its unspoilt andbeguiling charm go a little way toexplaining why the former British colonyis now emerging as a major player in thewinter sun holiday market. An increasingchoice of upmarket properties is attractingnew visitors and the fact that it’s just a sixhour flight away and on the same timezone too makes it an appealing alternativeto better known, longer haul resorts.

I stayed at The Gambia’s newest and mostglamorous hotel, the Coco Ocean Resort& Spawww.gambia.co.uk/cocoocean. ThisMoroccan inspired property with itsdistinctive domed architecture andimpressive white-washed buildings exudesa timeless elegant luxury and innovativestyle. Set within lush tropical gardensalongside a beautiful secluded beach,itswide choice of rooms include juniorsuites, club villas with spacious andprivate outdoor relaxation areas and

shared pool; Royal suites, each of whichhas its own private pool; and BeachHouses which sit directly on the beach.Alternatively, and for the ultimate inluxury, there’s the palatial Presidentialsuite which, as its name suggests, isfrequented by Heads of State andcelebrities and comes equipped witheverything you could ask for - includingbutler, chef, waiting staff and fullyequipped spa. As Coco Ocean’s wowfactor quickly unravelled, I grabbed anopportunity to sample one of the threecascading pools which led me down to thebeach to a privatecabana for somewelcome relaxation and shade beforedinner.

Within the hotel there’s a choice ofrestaurants providing formal and al frescodiningincluding its Coco Beach restaurantwith possibly the best beach views anyrestaurant could offer. International chefsproduce dishes from Morocco andThailand as well as European cuisine.

For many guests a key attraction is thefantastic Spa facility. Additional featuresinclude a Thalasso pool, plunge pool,Hammam, Finnish sauna, gym andrelaxation area with a full range of

treatments, along with a boutique andjuice bar. Weddings, honeymoons andspecial occasions can all be catered for,whether a simple celebration or a morelavish affair.

While the Coco Ocean Resort & Spa isideal for those seeking indulgence andrest, a trip to The Gambia would not becomplete without experiencing thesimplicity and warmth of the people andthe wealth of activity on offer. I soondiscovered that outside of the hotel lies anenriching and welcoming culture plus anincredible myriad of birdlife and wildlifeto discover. A range of tours andexcursions exploring the villages and bushwill provide visitors with a greatintroduction to Gambian life - whilewitnessing baboons and monkeys or themany species of exotic birds andbutterflies in their natural habitat is aneducation in itself and will captivatenature lovers.

The extreme luxury of my hotel contrastedstarkly with the day to day life of ordinaryGambians. Many of the locals live in whatwe in Britain would describe as extremepoverty, although relative to the rest ofAfrica Gambia is doing better than most.

The access to fresh water and the sea forfishing provides much needed lifelines forGambian families. Corruption is rife inlocal life and government and to my eyesit is the children who suffer most.

We visited a much needed local school(Gambians have to pay for their childrenseducation) to visit the new kitchenfacilities, paid for by donations. On theday we were told by the headmaster thatthe funds had not yet been used. Muchshuffling and turning of heads asquestions were asked. What was the shellof the kitchen building was stuffed withartworks crafted by the children. Ipurchased a few items and asked that themoney be given direct to the artist.

On a visit to a rural community the localssurvived on growing peanuts and variousroot crops in shack houses. No electricityor running water inside and ornaments ofplastic and glass scavenged from therubbish tips of the nearest town. An oldposter of now dead Ghadaffi hung limplyon a wall and an ancient 1960s TV sat inthe corner beside an old car battery forlife. Despite dirty clothes and bare feet thechildren were a joy to meet! Happy

smiling faces and animated with questionsand tales to tell, the children seemedhappy in their surroundings, as are theadults of Gambia. Everyone is influencedby the UK and the Premiership where anumber of Gambian home boys play.These players are revered as gods in theirhome country, where the locals genuinelythink that in England everyone lives likePosh and Becks.

A trip to Makasutu Cultural Forest, just a45 minute drive away from Coco Oceancomes highly recommended as a mustvisit. This 1,000 acre conservation area ishome to the impressive and award winningMandina Lodges, situated in the heart ofthe Gambian bush on a tributary of theRiver Gambia. Here guests can stay instilted or floating lodges on the water, orjungle lodges in the bush and, make use ofthedug out canoes and guides providedwhich enable opportunity to explore thewaters and forest where wildlife andbirdlife are plentiful.

Cruising over to Sitanunku Lodge aboarda catamaran was also on my list.This, anewly built collection of lodges on theNorth Bank of the mighty River Gambia,

offers guests a peaceful and idyllicriverside location with kayaking, fishingand birdwatching, among some of theactivities on offer. On the return journeydown river, an added attraction was thewelcoming reception from dolphins whichchaperoned us home.

As I sipped my sundowner back at thehotel, my thoughts turned to the manyvisitors whom I was told return to TheGambia year after year……perhaps Icould be one of them!

Wealden Iron Research Group (WIRG)welcomed visitors from the South-East HomeEducators (SEHE) at an experimental ironsmelt in the Ashdown Forest.

A group of parents and six children from theSEHE recently joined the Wealden IronResearch Group for one of the group’s periodicattempts to re-create ancient iron workingmethods of the Wealden area.

Iron smelting was a common industry inancient times and the end product, iron, washugely profitable. The smelting process, whichthe WIRG are keen to understand further, isvery complicated and involves many stages.Including mining and roasting the ore before itcan be charged (heated) in the furnace wheretemperatures reach over 1100 degrees Celsius.

The fully working replica furnace, which theWIRG group has constructed from clay, sandand straw using ancient techniques asunderstood from historical local records, wasshown to the SEHE group. The method ofsmelting was briefly outlined before thechildren were allowed to get hands on and havea go at using the hand bellows to pump oxygeninto the furnace to keep the furnace functioningat its optimum level. Once Dr. Tim Smith, ametallurgist who was leading the smeltdeclared the charcoal and iron ore had burntdown sufficiently, the front of the furnace wasremoved and the molten embers pulled out andcarefully sifted through looking for any ironyielded by the smelt. Anything produced fromthe furnace still needs to be hammered into‘billets’ while still hot before it is a saleableproduct.

Sonny 15, a visitor from SEHE who has aninterest in history and wants to be anarchaeologist in the future said: “My favouritepart of the day was pumping the bellows tokeep the furnace working. I found theexperiment interesting as I like to find out howthings were done and how people lived in thepast."

Lily 7, was “amazed” when the furnace wasopened up and she saw how hot it was inside.

Genevieve 9, found the day enjoyable: “I hadmore fun than I was expecting to, the best partof the day was using the mirror to look insidethe furnace and realising how hot it was. ASPARAGUS AND CRAB TART RECIPE

This is a fine thing to set up on a summer tablenext to a chilled bottle of white, personally I seethis as more a lunchtime thing if possible to beenjoyed alfresco

Information

Cooking time: 80 minutesPreparation time: 15-20 minutesServes: 6 to 8

You will need 25cm loose bottom tart case

Ingredients1 packet short crust pastry1 egg, beaten for brushing the case2 bundles of British asparagus50g butter1 small onion very finely chopped1 ½ tsp tomato puree1 generous tsp Dijon mustard300g soft fresh brown crab meat300ml single cream2 medium eggsA heavy grind of black pepper & salt to taste

Method

Pre-heat the oven to 190°cTake a tart case & roll out the short crust pastrynice and thin. Tuck neatly into the case whilstleaving the sides hanging down all the way

around. Scrumple up some baking paper, thiswill help you fit it over the pastry, pour in somebaking beans so the pastry is well weighteddown.

Put the case on a baking tray and cook in theoven for approximately half an hour until thevisible overhang appears to be turning a richgolden colour.

Remove from the oven, take out the paper &beans and put the tart back in for a further 5-6minutes, in order to crisp up the bottom.

Remove from the oven and whilst still hot paintthe entire of the case with a beaten egg.

Taking a small paring knife shave around therim of the case detaching the overhang, thismakes good bird food.

Cut the asparagus spears in half. Bring somesalted water to the boil, drop in the asparagusand when the water starts boiling again cook forno more than 1 ½ minutes, drain, cool in coldwater, drain again and thoroughly dry in a teatowel.

Melt the butter in a saucepan and sauté theonions slowly, this should take 10 minutes or sountil they are totally soft and pale gold. Stir inthe tomato puree and mustard and cook gently

for a minute or so more. Add the brown crabmeat, followed by the cream, salt & pepper, stirit all together

Take off the heat and beating the entire timebreak in the 2 remaining eggs, beat in well.Leave to one side.

Scatter the asparagus into the pastry case, pourthe crab filling over the top, gently return thetart to the oven & cook for approx 25-30minutes. When the tart is nearly done, give thetray a little shake, the filling should wobblefaintly in the middle. It is important to take thetart out at this time as it will go on cooking, youwant the filling soft rather than overset.Either eat warm or at room temperature.

BERRIES AND VANILLA CREAM PANCAKES RECIPE

You can’t have Wimbledon without strawberriesand cream. Every year during the event, peoplemunch their way through roughly 28,000vkg ofjuicy English strawberries. Even if you don’thave tickets to the tennis, you can still enjoy ataste of summer sweetness with Nielsen-Massey’s Strawberry and Vanilla CreamPancake recipe below.

This recipe, made using Nielsen-Masseyvanilla extract, arguably the best vanilla extractin the world, gives the old time favouritecombination a refreshing twist. The indulgentvanilla cream complements the fresh tartness ofthe strawberries, which sit on a blanket of fluffypancakes. This recipe is a winner - game, setand match!

Information(makes 4 servings)Ingredients250g Allinson Nature Friendly Plain WhiteFlour2 eggs1 pint whole milk½ tsp Nielsen Massey Vanilla Extract50g butter300ml whipping creamStrawberries, raspberries, blueberries orseasonal fruit of your choiceSilver Spoon icing sugar for dustingMethodSieve the flour into a bowl and whisk together

with the eggs

Slowly whisk in the milk making sure youdisperse any lumps

Heat a little lard in a large frying pan and tip tocover the whole surface, when sizzling, add aladle of pancake mix, move the pan so the mixcovers the whole surface

Cook for a minute on one side and then flip orturn over with a palette knife and brown on theother sideRemove from the pan onto a plate and place a

square of greaseproof on top, repeat until all themixture has been used

Whip the cream and add Nielsen-Masseyvanilla extract

Chop strawberries, raspberries or blueberriesinto desired sizes

Choose a pancake add a generous spoon ofcream plus a generous hand full of fruit andfold in half. Dust with icing sugar and enjoy!

Ingredients

Method

1. Heat the oil in a heavy frying pan to almostsmoking point2. Add in the Loch Fyne King Scallops, add inthe ginger, garlic and chillies, and toss once3. Sprinkle in the ground spices cumin,coriander & turmeric toss again4. Add the lime juice and chopped freshcoriander5. This should all be done in 2-3 minutes so thescallops are plump and juicyTo serve - arrange 6 per person in a neat lineand garnish with crisp salad and baguette.All products available at www.lochfyne.com

SMOKED HAM HOCK AND CORNICHONS TERRINE

Terrine serves 10 people 3 liters of water 3 ham hocks 2 large carrots, chopped 2 sticks of celery, sliced 1 large onion, cut in half 10 black pepper corns bouquet garni 100g Cornichons gelatin cling film 900g loaf tinPut the water into a large pan and add the hamhock(s), the carrots, celery and onion. From thepack of parsley take out a few sprigs and add tothe water along with the peppercorns.

Bring to the boil and cook for about 10 minutes.Then reduce the heat so that the water is hardlymoving and remove any scum that comes to thesurface. Cook for at least three hours or untilthe meat is easily removed from the bone.

Once cooked remove the hock(s) and allow tocool down. Sieve the liquid into a jug and put itto one side to cool down also.Once the meat has cooled down, remove asmuch fat as possible and pull the meat from thebone. With your hands pull the meat into shredsand place into a bowl.

Take the Cornichons and rinse them, cut in halflength ways and then chop into small piecesand add to the meat.

Take the rest of the flat leaf parsley and blanch

it in boiling water for about 15-20 seconds.Remove and chop finely (I used the stalks aswell). Add it to the meat. Take 500ml of theham stock that was set aside and place it in apan. Heat gently but do not let it boil as thegelatin might not set very well. I am using leafgelatin and whilst the stock is warming up, Iplaced 4 leaves of the gelatin (check yourinstructions on the pack as it may be different)into cold water. After 5 minutes remove it andsqueeze out any water then add it to the stock,stirring until the gelatin has melted. Removefrom heat and let the mixture cool down.

Take a long piece of Clingfilm and pull it overthe loaf tin, pushing it into the sides and thenback again, leaving an edge on both sides.Repeat this again, so that you have four layersin the tin.

Place the ham mixture into the loaf tin, pushingdown to get as much in as possible. If youhaven’t got a lid for your loaf tin, take a pieceof cardboard, the same size as your loaf tin andwrap tin foil over it. It will be used to sitdirectly on the meat.

Once the ham stock is cooler, pour it into theloaf tin, being careful not to pour too fast,otherwise the liquid spills over the top. Oncethe liquid has covered the ham completely, pullthe cling film over the top to over it. Put the lidon top and place in the fridge for 12 hours. Youneed to add some weight on to the lid so that itpresses the contents down. A couple of tins ofbeans (or similar) should do the trick.

Romney Marsh is a patchwork quilt ofagricultural land tacked onto the south-eastcorner of Kent. From its shingled beachdesolation to its manicured pastures, it’ssteeped in extraordinary legend. In winter itlooks worn, with birch and elms lining thehorizon like upturned witches’ broomsticks – acrow lonely landscape; but in summer ittransforms to an achingly beautiful emeraldgreen vista, punctuated by brilliant white sheepand tractors coughing along the horizons. It’s atranquil and untouched part of the county that’slong been a place where artists and writers seekinspiration. Here, in an area of some 100 squaremiles, Romney Marsh can claim as its own fourhistorical ruins, sixteen scheduled ancientmonuments, ninety-seven recorded archaeologicalsites, eight areas of special scientific interest,one national and one local Nature Reserve, andfourteen ancient churches. Like the 13thCentury St Augustine's church in Brookland, ahandsome place of worship that’s been standingthere, adding a little touch of nobility andgrandeur to the landscape for more than sevenhundred years.) And here it’s just ananonymous country church, treasured by a fewaging parishioners. Directly beside StAugustine’s church is the Royal Oak Inn,

originally built to house the parish clerk in1570. Now, sympathetically restored, it’s one ofthe few upmarket places to stay on RomneyMarsh. Having won numerous accolades, thisfour-star Inn has not lost its sense of tradition asit exudes olde-worlde charm, but in acomfortable, inviting way.

Accommodations on offer include five light andairy bedrooms - two of which are grandlyproportioned doubles with en-suites. The roomsare dressed in crisp white linens, soft drapesand Italian wool rugs, complete with a tranquil,dreamlike view of the neighbouringpasturelands and grazing sheep.

The Royal Oak is exactly what you’d want froma historic country Inn. Stripped-wood floors,ceiling beams hung with hops, real ales at thebar, a blazing inglenook fireplace, therestaurant buzzing with local diners whilstowner, David Rhys-Jones (whose brother-in-law, Prince Edward occasionally dines there),unobtrusively attends to guests both behind thebar and in the restaurant. When you cast youreye over the enticing specials board, hung at theentrance, you’ll soon realise they take theirfood seriously, which is why it’s essential to

book. The printed menu offers six starters andsix mains, whilst the specials board has anadditional ever-changing selection of threestarters and three main courses – all of themmouth-watering and showcasing only localsuppliers.

For lunch we started well with a creamyceleriac and garlic soup; breast of local woodpigeon seared to pink perfection; and succulentRye Bay scallops with chilli, ginger and garlic.Mains consisted of a steak, ale and mushroompie whose aromas drew much attention whendelivered; grilled fillet of sea bass with mind-blowing coriander salsa verde; and tenderbraised shoulder of venison with lardons,chestnuts and wild mushrooms. The grandfinale off the desserts menu delivered HokeyPokey - a riot of honeycomb and toffee lacedice cream; a velvety Pistachio crème brule; andhomemade gingerbread with vanilla ice creamas smooth as cold silk.

BRITISH ONION AND POTATO TORTILLAS

This is an ideal mid-week meal. It’s an ideadish to use leftovers so you could add bacon,peas or cheese.

Preparation Time: 15 minutes

Cooking Time: 25 minutes

Ingredients:

2 British brown onions cut onto 12 wedges3tbsp olive oil300g new potatoes, cooked and sliced5 eggs2 tbsp parsleySea salt and ground black pepper

To cook:

1. Heat the oil in a 20cm frying pan and add theonions. Cook the onions for 6-7 minutes oruntil the onions are soft and lightly brown.

2. Add the potatoes and toss with the onions.Cook for a further 5-7 minutes, shaking the panoccasionally to make sure nothing sticks to thebottom.3. Break the eggs into a small bowl and beatlightly with a fork. Add the parsley and season.Gently pour the eggs over the onion and potatomixture, shaking the pan so the egg mixture

runs into all the gaps.4. Return to a low heat and cook gently forabout 20 minutes or until the eggs are jut set.

5. Place the tortilla under a preheated grill and

cook for a few minutes further or until theeggsare completely set and the top is lightly brown.6. Serve with a salad or as part of a packedlunch or picnic.

SUMMER TAGINE

Serves 4 Prep Time: 20 Mins Cooking Time: 30 Mins

You will need:1 kg vine tomatoes, skinned, deseededand chopped250g green beans, blanched and cut into 2cm pieces175g podded broad beans, blanched and

peeled to remove tough outer skin1 med onion, finely chopped4 tbsp olive oil1 tsp cardamom seeds1 tsp ground cinnamon2 tbsp tomato puree2 tsp runny honey* or light muscovadosugar

To garnish35g toasted walnuts, chopped1 med lemon, cut into wedgesSeason to taste

You need to:1. Saute the onion in 2 tbsp olive oil until softbefore adding the tomatoes and spices. Cookgently until the tomatoes start to break up andthen add the puree, the other 2 tbsp oil and alittle water if the sauce seems too thick.Season well.

2. Add the green beans and simmer gently for15-20 minutes until cooked but still crunchy,adding a little water if necessary.3. Finally stir in the honey and the broad beans

and simmer for a further 5 minutes, at whichpoint the sauce should be quite thick.Serve with a fruity couscous with fresh herbs.

FACING UP TO THE PROBLEMHOW TO INFLUENCE POSITIVE DIETARY CHANGES

Nutrition scientists at the British NutritionFoundation (BNF) believe that a key to tacklingthe nation s obesity epidemic could lie withAristotle and the phrase the whole is greaterthan the sum of its parts . Their announcementis made as health professionals and academicsare gathering in London to discuss and debatehow to influence positive behaviour change ineating and lifestyle habits, at the BNF s 45thanniversary conference, being held at the RoyalCollege of Physicians.

A report by independent experts, commissionedby the government shows that there are morethan one hundred internal and external factorsthat influence what, how much and how oftenwe eat and exercise and, therefore, how able weare to manage our own weight and healthprofile.

Research into behaviour change has shown howthese internal and external factors can beinfluenced by interventions2, 3, 4, 5 and,following examination of current scientificresearch, the BNF s team believes that theextent to which we are able to successfullymaintain a healthy weight is directly, orindirectly, affected by any number of thesefactors at one time. The BNF says that peoplewho proactively focus effort on addressingseveral of these factors simultaneously willhave more success in their efforts to lose weightand maintain a healthy weight. BridgetBenelam, senior nutrition scientist at the British

Nutrition Foundation explained: We are allvery different and the way that we behave inrelation to external and internal stimuli variesconsiderably. So, what works for some peoplemay not for others.

Studies have identified at least 108 differentfactors that influence our ability to maintain ahealthy weight. So there are lots of differentoptions to choose from in terms of makingchanges in our behaviour that could have apositive impact on our health.

The BNF has grouped the different factorsidentified into seven broad categories: Social,Psychological, Eating and drinking, Physicalactivity, Environment, Physiology and Media.

Benelam continued: Within each of thesecategories there are multiple influencers and webelieve that by proactively selecting a range ofthese to focus attention on, people can make aseries of small changes to their behaviourwhich, when combined, will have a largeroverall effect.

For example, we believe that social engagementcan have a positive impact on weightmanagement for some people, as candeveloping cooking skills, keeping a food oractivity diary, spending more time outside, andusing the same weekly on-line groceryshopping list. On the reverse side, we know thatalways using a car for transport, social

isolation, stress and self-criticism, and largeportion sizes can have a negative impact onpeople s ability to manage their weight.

If everyone were to choose one factor to domore of and one to do less of, from each of theseven influencing categories, we believe theywould increase their chances of successfulweight loss considerably, while also finding theroute to a healthier and more enjoyablelifestyle.

Based on this theory, The Small Changes: BigGains chart has been produced by the BNF steam to help people identify small, positivechanges to make in their own behaviour. Whileincluding an hour-long aerobic class in yourexercise regime can help you burn off around400 calories, the BNF s suggestions for smallerchanges include getting up from the TV anddoing some housework during the ad breaks,which could help burn up 40 calories per hourof TV viewing; eating fruit instead of biscuitsas an afternoon snack to reduce calorie intakeby around 50 kcals each day; measuring outsmall portions of crisps rather than eatingstraight from the pack, which could lead to youeating up to 130 calories less each time; and ifyou are an office worker, getting up to talk to acolleague or make a drink at least once eachhour, which can use up around 120 calorieseach day. The village of Herstmonceux is a busyrural community on the A271 betweenBattle and Hailsham. The parish church,however, is two miles away down acountry lane appropriately named ChapelRow leading to Church Road. To find AllSaints Church you pass through the hamletof Flowers Green, with its barelynoticeable roadside sign, past the formerpub The Welcome Stranger, known locallyas The Nodding Donkey, but which has notbeen a hostelry for years although it stillretains its sign and car park, pastHerstmonceux Chapel, the Free Churchwhich celebrated its 200th anniversary in2011, until you can go no further. Thechurch is nearer to Herstmonceux Castlethan it is to the village. Although it hasbeen in existence for much longer than themedieval castle.

All Saints Church stands on an area ofraised ground, thought to be an earlysacred site, and commands unrivalledviews across the Pevensey levels to theSouth Downs. The Manor of Herste ismentioned in the Domesday Book whichalso notes ‘there is a church’. Theoriginal village, which probablysurrounded the church, was movednorthwards, possibly at the time of thePlague in the fourteenth century, or acentury later when Sir Roger Fiennes, aveteran of the Battle of Agincourt andbuilder of the nearby castle, receivedpermission to enclose 600 acres whichwould have included any houses and thechurch.

Whilst there is little doubt that a place ofworship has existed since Saxon times, the

oldest parts of the present church are thetower and the west wall, together withsquare-edged pillars in the north aisle,which date from the twelfth century. Thenave, chancel and aisles were added overthe next two hundred years, whilst thenorth, or Dacre, chapel was built in thefifteenth century. These additions reflectthe importance of the church and its ever-increasing links with the castle. This isespecially evident in the east wall, and thenorth wall of the chapel, which are built ofred Flemish brick in exactly the samemanner as those used for the castle. It isone of the earliest uses of this buildingmaterial to be found in a church in Sussex.

Due to the tower with its shingled spirebeing offset from the nave, the Dacrechapel having been added, and two large

dormer windows above the north andsouth aisles added in Victorian times, thechurch presents unusually varyingappearances. When viewed from thesouth, with prominent buttressessupporting the walls, and a porch, theformer church entrance, you could beforgiven for thinking that you werelooking at a country manor house ratherthen a rural parish church. Internally, thetrussed medieval roof with tie beams overthe nave, and the curved timber panellingof the chancel roof, provide a sense ofheight and space. The north porch, addedin the eighteenth century but replaced inI874, is now the main entrance to thechurch.

Between the chancel and the chapel is thechurch’s greatest treasure, the Dacre tomb.Erected in 1534, this magnificent tombchest and canopy is built of Caen andBonchurch stone and Purbeck marble. Itis probably the finest of its type in Sussex.The north side shows more signs of wearthan the chancel side which seems toindicate that it may have been exposed tothe weather and formed part of the outsidewall of the church until enclosed by thechapel in the fifteenth century.

On the tomb lie the effigies of Thomas,8th Lord Dacre (1470-1533), and his sonSir Thomas Fiennes, who pre-deceased hisfather in 1528. Both wear Milanesearmour, their hands in an attitude ofprayer. Their feet lie on animalsrepresenting the bull of the Dacres and thewolfhound of the Fiennes. It is thoughtthat the figures may have been broughtfrom nearby Battle Abbey, when dissolvedby Henry VIII, and originally depicted thebrothers Hooe until they were later alteredto represent Dacre and Fiennes. Above thecanopy on the chancel side is an ornatelycarved cornice of shields and helmets.The middle shield bears the arms andeagle crest of the Fiennes family, buildersof Herstmonceux castle in 1440 and Lordsof the Manor for nearly 300 years. Thetomb was restored and repainted, with theadvice of the College of Arms in 1970.

Although to modern eyes it might appeargaudy, it is believed to be accurate.

A further memorial to a member of theFiennes family, Sir William Fiennes,father of the builder of HerstmonceuxCastle, lies on the floor of the chancel.This memorial brass, dated 18th January1402, is in almost perfect condition. Itshows the knight in full armour wearing asword with his feet resting on a lion. Theinscription is in medieval French. Anotherdistinctive memorial in the chancel is theplaque commemorating Douglas McGarelHogg, 1st Viscount Hailsham, who“Served God and The King Truly, assoldier, lawyer and statesman”. A formerLord Chancellor, he worshipped in thechurch for many years and died in 1950.

On the west wall of the south aisle is amemorial to Lieutenant Colonel ClaudeWilliam Henry Lowther, erected by histwo sisters. He was Lord of the Manor ofHerstmonceux in 1911, after the castle hadbecome a ruin and been demolished, andwas responsible for initiating its repairand restoration. In 1914, at the outbreakof war, he raised and equipped threebattalions of the Royal Sussex Regimentwhose soldiers became known asLowther’s Lambs.

The stained glass in the east window ofthe south aisle commemorates the fivesons and two daughters of William andAnne Hooper Greenaway. On the southwall of the tower there is a brass plaquecommemorating one of their sons, MajorHenry Greenaway, 1840 -1879, “In affectionateremembrance of an honoured comrade andtrue friend” which includes the regimentalbadge of the 10th Bengal Lancers,Hodson’s Horse, inscribed with the battlehonours “Abyssinia, Delhi and Lucknow”.A far cry from the rolling meadows andwoods of Sussex.

The font of light-coloured sandstone witha square bowl supported on a circular stemand four octagonal pillars dates from thelate fourteenth century and is covered by a

distinctive wooden carved lid, probably ofVictorian origin. Next to this, in the northaisle, stands a marble sculpture of a smallchild known as ‘the cherub’. It is thoughtto be the work of the celebrated sixteenthcentury French sculptor, Jean Goujon, andwas presented to the church by ColonelLowther.

The exceptionally fine pipe organ,installed in 1878, was made by HenryBevington. The organ in St Martin-in-the-Fields church in London is by the samedistinguished firm. The All Saints organwas restored to its original condition in1997. Dark oak box pews, some withdoors and tall brass candle-holders at theaisle ends, add a Dickensian touch andremind of the church’s nineteenth centuryrestoration.

In the early hours of the morning of 3rdJuly 1944 the church suffered damagefrom an enemy bomb which demolishedthree windows and damaged the roof,spire and other windows. Much of thestained glass was smashed but the oldestfragments that remain are the fifteenthcentury yellow and white glass in theupper lights of the east window in thenorth chapel. Three months later, afterurgent repairs, the church re-opened.

The main entrance to the church fromChurch Road is directly opposite thegateway leading to Herstmonceux Castle.This highlights the historic bonds thathave linked the buildings and thecommunities associated with them fornearly six hundred years. An ageingmounting block stands hard against thechurch wall outside the gate. It is notdifficult to imagine, in centuries past,members of the congregation afterMorning Service on Sundays walkingthrough the churchyard and then mountingtheir horses for the long ride back to thevillage, or the shorter distance to thecastle. In view of the location of AllSaints Church, these sturdy and well-wornstone steps tell their own story.

Coach partiescan be catered for and there is a disabled toileton site. Ample free parking and wheelchairaccess is also provided.

Hospice in the Weald is a local Kent charityproviding desperately needed palliative care tothe people of Kent and East Sussex.

To raise funds for this vital work, Hospice inthe Weald will be holding a Mid-SummerGarden Party at the Chilstone Showgardens(Langton Green, near Tunbridge Wells TN30RD) on Sunday 8th July, 12-5pm. Refreshments &

A Sussex inventor who came up with a novelsolution that allows gardening enthusiasts togrow plants and vegetables while generatingelectricity at the same time has now installedhis design of greenhouses all across the UK.

Uckfield-based New Horizons Solar will beexhibiting the company’s unique solargreenhouses at this year’s RHS Hampton CourtFlower Show from 3rd to 8th July aftersuccessfully launching the product last year.

The unique arrangement of photovoltaic panelson the Solar PV Greenhouse, which is made ofbeautiful cedar wood, is capable of generating70 per cent of the average household’selectricity needs while providing a perfectenvironment for growing plants. Thegreenhouse is also a great solution for peoplewho can’t or don’t want to put solar panels ontheir roofs.

Managing Director of New Horizons SolarRussell King, who developed the product, said:“We are exhibiting at RHS Hampton courtbecause it is the perfect showcase for the SolarPV Greenhouse. The show is important becausewe believe this new product is ideal forgardeners and the type of eco-conscious peoplewho will be at the event.”

Since launching the product last year, Russellhas installed Solar PV greenhouses all acrossthe UK including in conservation areas andnational parks. The combination of an attractivegreenhouse that also generates electricity isbeing well received by the clients and planningofficers.

“Our design of greenhouse is very attractiveboth inside and out and can be installed in anysize garden,” Russell explained.

The Solar PV greenhouse has been redesignedthis year to increase its power yield and reducecosts. For instance, the model on display thisyear has increased its power by 36 per cent andthe solar panel prices reduced by over 50 percent. The soaring cost of electricity will makethe greenhouse attractive even with reducedgovernment subsidies.

There is a 25-year warranty on the panels andthe system qualifies for the Government’sFeed-In Tariff (FiT) scheme.

Also being launched at Hampton Court is ahidden, rain water storage system. Similarsolutions are very popular in Australia as theycan store thousands of litres of rainwater whichmakes them ideal for watering through thesummer or topping up the swimming pool.

What makes this product different is that theycan be easily retro-fitted to existing gardenssuch as under decking or hidden next to wallsor fencing. It is modular, easy to fit and requiresno excavation. The rain water storage system isnew to this country – it takes the idea of waterbutts to a grand scale allowing people to collectenough rain water to last through the summer.

Mercedes-AMG has achieved the output of 591hp through in-engine dethrottling measures inconjunction with an increase in peak pressure.The GT version of the front mid-engined amg6.3-litre V8 responds with even greater agilityto accelerator pedal movements and exciteswith even sportier performance characteristics.

The reaction time experienced by the driver ismade even more emotional as a result of moredistinct gear changes. The automatic double-

declutching function when shifting down is alsomore pronounced due to an increase in enginetorque in manual mode The shift procedure iseven quicker than previously – and isaccompanied by some passionate acousticfeedback for the driver. Overall, theoptimisation of the dual clutch transmissioncomplements the sporty nature perfectly.

But it is not just the 6.3-litre v8 front mid-engine and the optimised dual clutchtransmission which are responsible forincreasing the driving dynamics. The newlydeveloped ride control performance suspensionalso enhances the vehicle's sportiness.

As standard, the vehicle comes with 265/35 r19 tyres on the front and 295/30 r 20 tyres onthe rear, fitted to weight-optimised AMGforged light-alloy wheels featuring a 10-spokedesign and painted in matt black and with ahigh-sheen finish.
