THE VENETO

The Veneto is the leader in wine production in Italy, and has 30% of the total DOC/DOCG production. Premium wine producing regions are Vicenza, Padova, Treviso, in the western province of Verona hills between Lake Garda and the town of Soave, and in the eastern plains of the Piave and Tagliamento River basins. Conegliano, the region famed for Prosecco, has set the standard for not only the production of sparkling wines, but Italian viticulture overall. Of all the wines produced in this region, 55% of which are white, Soave is the most popular varietal abroad. And among the reds, Amarone della Valpolicella is the flagship red wine of this region.

SUMMARY

In 1883, a young innkeeper from the Veneto region named Abele Bolla decided to make and serve his own wine as a means of offering his guests a superior experience. His wine, Soave, quickly saw immense success, not only at his inn, but in the surrounding regions as well. His wine endeavors grew, and with them, the fame of Bolla on an international scale. In 1947, Fratelli Bolla made its first shipment to the United States – 200 cases of Bardolino – and America’s love affair with Bolla wines began. Today, all award-winning Bolla wines are hand-harvested and created in Italy. The distinct flavors of the grapes can be attributed to the unique climate, soil and temperature of the region in which they are grown. Our goal is to capture those nuances so consumers will experience an authentic taste of Italy in every glass of Bolla wine.

ChRistian sCRinzi- WinemakeR

Christian Scrinzi has been a winemaker since 1989 and while he is Italian by origin, much of his formative train-ing was undertaken in New

World regions, including Chile, New Zealand, the United States and specifically Napa Valley; and in the Old World, France.

Scrinzi joined Bolla in 2001, eventually took on a key role in the “Revitalization Project” that began in 2006, and was ultimately appointed head wine-maker in 2009. His mission is a top-down renovation

with the goal of improving quality, starting in the vineyards, moving through the cellars, and extend-ing all the way to the finished wine in the bottle.

Scrinzi is the interpreter of Bolla quality. It was his grandfather who gave him his early fascination with wine through their many excursions to the vineyards around their home in Trentino, a well-known wine region in Northeast Italy. These early experiences led Christian to complete his studies in Agriculture and Oenology, then ultimately to Bolla, where he is the current Director of Oenology, responsible for creating the wines and carrying on the tradition of trusted quality that Americans have come to know and love.

• Hailed as the original Amarone. It was the first of its kind when the 1950 vintage was introduced.

Le Origini Riserva DOC: Deep garnet with a violet hue. Aromas of wild cherries, black fruit, vanilla with licorice with hints of cedar. Full-bodied and velvety, with ripe tannins and notes of plums, cocoa and spices.

Amarone della Valpolicella Classico DOCG: Aromas of wild-cherry jam, spice and hints of cedar. It delivers rich, dry, black-cherry flavors and a finish that is long, round, and persistent with cacao and spice.

Creso Rosso Verona IGT: Intense, dark, and deep ruby in color. The nose is ample, complex, elegant and fruity with notes of toasted wood. Grassy nuances of the Cabernet are evolving toward cocoa and wild berry with notes of cherry, spice, plum and violets. The wine is powerful and persistent with ripe berries, cocoa and plum, and offers sweet, silky and velvety tannins.

Le OriginiAmarone della Valpolicella Classico Riserva DOCProduction Area: In the original production area of Valpolicella Classico in the Veneto, Italy.

Grape Varieties: 75% Corvina and Corvinone, 25% Rondinella.

Description: Deep garnet with a violet hue in color. A bouquet of wild cherries, black fruit, vanilla with licorice with hints of cedar.

The grapes are all hand harvested and then dried on racks for four months in optimum temperature, moisture, and ventilation conditions. The raisined grapes are pressed at the end of January, followed by a cool (5° C) pre-fermentation maceration of about seven days. The grapes then undergo a slow fermentation for 25 days and are once again macerated for five days at 24° C. The juice is aged for 12 months in 100% French oak barrels and then 36 months in 100% Slovenian oak casks. The wine spends nine months in bottle before being released. The Riserva is aged a minimum of one year longer than Amarone.

This Riserva is perfect pairing with roasts, steaks, chops and aged cheeses.

Soil:Limestone, marl, some tuffaceous soil.

Grape Varieties:75% Corvina and Corvinone, 25% Rondinella.

Production Technique:Grapes are hand-harvested and dried on racks for four months. The raisined grapes are then pressed, followed by a cool (5° C) pre-fermentation maceration of seven days. The grapes then undergo a slow fermentation for 25 days and are once again macer-ated for five days at 24° C. The juice is aged for 12 months in 100% French oak barrels and then 36 months in 100% Slovenian oak casks. The wine rests nine months in bottle before being released.

Amarone della Valpolicella Classico DOCGProduction Area: The upper hillside zone of Valpolicella Classico, Italy.

Grape Varieties: 70% Corvina and Corvinone, 30% Rondinella and other local varieties.

Description: Deep garnet, velvety-red in color, Bolla Amarone offers aromas of wild-cherry jam, spice and hints of cedar. It delivers rich, dry, black-cherry flavors and a finish that is long, round, and persistent with cacao and spice.

Select grapes, with high sugar levels, are picked and then arranged on flat drawers that easily fit into racks (or wooden cases), allowing a good circulation of air. They are kept in a dry, cool, well-ventilated room and are cleaned and turned about every 20 days, being constantly inspected during the four-month natural drying period. This drying period, or appassimento, causes a 40% loss of juice, resulting in grapes low in juice but extremely high in sugar and varietal character. The dried grapes are pressed at the middle/end of February, and go through a cold maceration with skins and stems intact for about 20 days. The juice is then fermented for 25 more days and then transferred to barriques and large Slavonian oak casks for 24 to 36 months.

Bolla Amarone pairs perfectly with red meats, roast and grilled dishes, game, braised meats, and all well aged cheeses.

Description: Bolla Creso is very intense, dark, deep ruby in color. The nose is ample, complex, elegant and fruity with notes of toasted wood. Grassy nuances of the Cabernet are evolving toward cocoa and wild berry with notes of cherry, spice, plum and violets. The wine is powerful and persistent with ripe berries, cocoa, plum and offers sweet, silky and velvety tannins.

Creso is a wine born of a special process of re-fermentation with partially dried grapes. Fresh Corvina and partially dried (40 days) Cabernet Sauvignon are vinified to create a cuvée of truly special elegance and structure. The fermentation takes place between November and December and lasts about 15 days. The wine then ages in French barrique (new and one year old) for about 12 months. Creso is then further matured in the bottle for about six months.

Croesus, the famous king of Lidia created the very first gold-silver coins, called Croesus. Creso is synonymous with richness, and opulence, as is this regal wine.

Description: Brilliant yellow in color, with hints of white flowers and luscious fruit on the nose. Tufaie is full, smooth, and well-rounded with hints of spice and a long, lingering finish.

Tufaie is the Latin name for the tufa-limestone quarries that once surrounded ancient Verona and that provided the beautiful golden-yellow stone, which was used to build many of the city’s most admired churches as well as the famed Teatro Romano.

Grapes are grown on the Veronese pergola system in vineyards within the province of Verona. Grape Varieties: 95% Garganega, 5% Trebbiano di Soave.

Description: Pale yellow in color with greenish hues, Bolla Soave has aromas of melon, ripe apple, and pear. The small amount of Trebbiano di Soave grapes adds body and complexity. The finish is crisp and balanced.

Hand-harvested grapes are crushed and gently pressed. Fermentation takes place at controlled temperatures in stainless steel tanks for three weeks and the wine remains on the lees as long as possible, before bottling. The wine is bottled young to retain its freshness.

Description: Ruby red in color with aromas of wild cherries, black currants, dried spring flowers, and a touch of licorice, Bolla Pinot Noir is well balanced and offers fresh fruit flavors with black-cherry nuances.

Hand-harvested grapes are whole-berry pressed and fermented in stainless steel on average for seven days. Extended maceration deepens the color and renders the tannins soft and silky. The wine undergoes malolactic fermentation, which increases the wine’s roundness and makes for a soft, full mouthfeel. The wine is aged without oak to retain its bright fruit flavors.

Bolla Pinot Noir pairs perfectly with grilled salmon, lamb, veal and pork. It is also good with semi-aged cheeses.

Description: Deep red in color, Bolla Sangiovese di Romagna offers aromas of violets, spices, cherries, raspberries, and plums. Medium bodied and well balanced with supple tannins, it delivers black-fruit flavors and a clean finish.

Hand-harvested grapes undergo a controlled winemaking process to preserve typical varietal characteristics. The wine is fermented in temperature-controlled stainless steel for about 2 weeks to obtain optimal extraction of fruit and soft tannins. The wine undergoes complete malolactic fermentation followed by a short period of lees aging in stainless steel to add complexity but without overwhelming the wine’s varietal freshness.

Grapes are grown on the Veronese pergola system in vineyards within the province of Verona. Vinification starts with a cold maceration of 2 days, which enables the extraction of the fruity varietal aromas of the grapes, as well as the deep, vivacious color. Following the cold maceration, fermentation takes place at a controlled temperature, resulting in a wine that is highly quaffable and seductive on the palate.
