METHOD1 Separate the mushroom stems from the caps. Chop the stems and set aside.2 Melt butter in a frying pan and cook onion till soft. Add chopped mushroom
stems and cook for five to seven minutes.3 Meanwhile, in another frying pan, cook chopped bacon till crisp. Drain fat
from pan. Add bacon to the mushroom mixture along with the cheese and rosemary. Stir well.
4 Fill mushroom caps with cheese mixture. Place in a baking tin.
5 Preheat the oven to 200 °C / Gas 6.6 Bake stuffed mushrooms for 15 to 20 minutes.
METHOD1 Set oven rack on top shelf and preheat the grill. Line a baking tray with foil.2 Arrange jalapeno peppers, cut-side down, on the prepared baking tray.3 Grill jalapeno peppers until skins are bubbling and blackened, 10 to 15
minutes. Immediately place peppers in a resealable food bag; seal. Allow peppers to steam in bag to help loosen skins, about 20 minutes. Carefully open bag and pull skins off peppers; chop peppers.
4 Spread half the butter onto 1 side of each tortilla. Spread half the cream cheese onto the other side of each tortilla. Sprinkle half the jalapeno peppers, half the Cheddar and half the tortilla chips over the cream cheese-side of each tortilla, with the crushed chillies to taste. Fold each tortilla in half over the fillings with butter-side on the outside.
5 Heat a pan over medium-low heat; cook 1 quesadilla in the hot pan until golden brown, 2 to 3 minutes per side. Repeat with second quesadilla. Tip Wear gloves when working with raw jalapeno peppers.

METHOD1 In a medium saucepan, combine white wine, vinegar and shallots. Cook
until liquid is almost evaporated. Stir in double cream and boil down until reduced by half. Stir in butter one knob at a time, allowing each to melt before adding the next. Keep the sauce warm while preparing the scallops, to allow time for all the flavours in the sauce to fully blend.
2 Preheat oven grill.3 Brush scallops with olive oil and sprinkle with salt
and pepper. Place under preheated grill for two minutes on each side, until scallops are opaque, with a bit of brown around the edges. Place a spoonful of sauce on each plate, and top with four scallops.

METHOD1 Cut slits in the top of the leg of lamb
every few inches, deep enough to insert slices of garlic. Salt / pepper generously, placing several sprigs of fresh rosemary under and on top of the lamb.
2 Roast at 180°C / Gas 4, until the lamb is cooked to medium: 15 minutes per 500g (1¼ lb), plus 10 mins more. Do not overcook. The flavour is best if the meat is still slightly pink. Rest for 15 mins before serving.
METHOD1 Preheat the oven to 220°C / Gas 7.2 Peel the potatoes, place in a bowl of cold water to prevent browning.
Insert a skewer along the bottom of the potato (to prevent the potatoes from being cut all the way through). Slice across the potato about 3 to 6mm apart, down to the skewer. The slices should keep the potato in tact. Remove the skewer and repeat for the remaining potatoes.
3 Place the potatoes cut side up in a shallow baking dish or small roasting tin. Drizzle with half of the butter. Season with salt and pepper. Bake for 35 to 40 minutes, then remove from the oven, and drizzle with the remaining butter.
4 Sprinkle cheese and breadcrumbs onto the tops of the potatoes, and season with a little more salt and pepper. Return to the oven, and bake for an additional 20 minutes, or until golden brown and nicely roasted.
