The practice of distilling whiskyhas been lovingly perfectedthroughout Scotland for centuriesand began as a way of turning

rain-soaked barley into a drinkablespirit, using the fresh waterfrom Scotlands crystal-clearsprings, streams and burns.

To this day, distilleries across thecountry continue the traditionof using pure spring water fromthe same sources that have beenused for centuries. From the source of the water andthe shape of the still to the woodof the cask used to mature thespirit, there are many factorsthat make Scotch whisky sowonderfully different and variedfrom distillery to distillery.

No two are the same; each hasits own proud heritage, uniquesetting and its own way of doingthings that has evolved and been

rened over time. Paying a visit toa distillery lets you discover moreabout the environment and thepeople who shape the taste of theScotch whisky you enjoy. So, whenyoure sitting back and relaxingwith a dram of our most famousexport at the end of your distillerytour, youll be appreciating theessence of Scotland as it swirlsin your glass.

Home to the greatest concentrationof distilleries in the world,Scotland is divided into vedistinct whisky regions . Theseare Islay, Speyside, Highland,Lowland and Campbeltown.

Islay is one of many small islandsoff Scotlands west coast butit certainly stands out from thecrowd. Just 25 miles in length, its rocky bays and sheltered inletshouse eight active distilleries. It is perhaps only fair then thatindustrious Islay has long been

    crowned Scotlands whisky island.

Most of Islays original distilleries some long since lost to history started as farm distilleries, retreating to secluded glens andcaves when excise duty wasrst introduced on whisky in the17th century. In actual fact, theexciseman didnt dare set foot onIslay for over 150 years becauseof the fearsome reputation of theislanders, who were regardedat the time as wild and barbaric.Nothing could be further from thetruth nowadays, with Islay beingwell noted for its warm hospitality.

According to legend, monks rstbrought the art of whisky distillingto the island from Ireland whichon a good day you can see fromIslays south west coast. Onarrival, they found it to be morethan suitable for the purpose ofdistilling aqua vitae the water oflife thanks to its abundance ofpeat, fresh spring water and

    barley grown by local crofters.

The former is perhaps theelement that most dramaticallydistinguishes Islays unique singlemalts from the rest of Scotlandswhisky producing regions. Burnedin kilns to dry the malted barley

used in the distillation process, theislands peat has been formedover millions of years, rich indecaying mosses, heather andlichens and very different incomposition to mainland peat.

Frequently lashed by Atlanticstorms, salty spray blown over theisland for centuries has penetratedthe deep layers of peat andseeped into the warehousesof maturing casks, ultimatelyaffecting the taste and aromaof the dormant Scotch whisky. The resulting malts are pungent, powerful and characterful.Typically, Islay single malts arerenowned for their smokinesson the nose and palate with faintnotes of sea air and seaweed.

Browse the listings in this guideto nd out more information aboutthe distilleries in the Islay region, how to visit them or simply whichof their drams to sample.

    OVERVIEW

Lagavulin is one of three distilleriesthat sit on the southern coast ofIslay. Much like its neighboursLaphroaig and Ardbeg, the siteoccupies the shores of its ownsecluded cove, Lagavulin Bay. Asis also the case for many of thedistilleries on Islay, its whitewashedstorehouse is proudly emblazonedwith the distillery name, which canbe seen from the decks of thearriving ferry from the mainland.

The tradition of whisky distillingstarted on the spot where thecurrent distillery buildings standlong before it was built. As far backas 1742, there was anywhere up

to 11 illicit stills making whisky inLagavulin Bay. The current distillery, sitting in the shadow of the ruinedDunyvaig Castle once theseat of the Lord of the Isles wasntbuilt until 1816. The hallmark ofIslay whiskies is peat smoke, andLagavulin is not one to shy awayfrom this distinct characteristic. Itssignature expression, Lagavulin 16Year Old, is appreciated the worldover for its intense peat smokenotes a superb accompaniment toa ne blue cheese.

    OVERVIEW

Said to be the denitive tasteof Islay, Laphroaig (pronouncedLa-froyg) has been distilling on

Scotlands whisky island for twocenturies. Perhaps the smokiest ofthe Islay whiskies, it uses hand-cutpeat from the nearby Glenmachriebogs to dry malted barley in on-sitekilns.

Did you know that Laphroaig wasthe only spirit not banned duringProhibition in 1920s America? It wassold as a medicinal spirit becauseof its iodine taste, a characteristicderived from the moss and roots inthe peat.

From March to September, visitorscan help the distillery staff cut thepeat by hand at Glenmachrie readyfor drying as part of the Water toWhisky Experience tour, one ofseveral different tours operatedby the distillery staff.

The taste of Laphroaig also has alot to do with its location. Nestledin a cove from which it gets itsname (translated from Gaelic as thebeautiful hollow by the broad bay),it is in the direct path of strong saltysea winds from the Atlantic Ocean.

The moisture in the air gets into thewarehouse walls and casks, whichgives the whisky a maritime tasteprole.
