Institution on 24 February 1975, .fter the draft· finalized by theFish and Fisheries Products Sectional Commi.ttee had been approved by theAgricultural and Food Products Division Council.0.2 Frozen frog legs have attracted overseas buyers panicularly (rontFrance and the United States of America. There is considerable scope forfurther development of export market or this commodity if the quality ofthe product is maintained continuously at a hiBh level, For the purpose,the Cormulation of this standard was undertaken at the instance of theF~sheries Development Adviser to the Govemment of India.1.3 This standard was lint published' in 19&1. The present revision •incorporates a number of important modifications, namely, (a) require..menu for raw material, hygienic processinK and the finished product havebeen made more precise; and ( b) an additional requirement for coagu­lase positive SlII,~t:i hasbeen included.0.4 In the preparation or this standard, due consideration has been givento the provisions of the Prevention of Food Adulteration Act" 1954 and thePrevention of Food Adulteration Rules, )955. However, this standard issubject to 'the restrictions imposed under this Act, wherever. applicable.0.5 For the purpose of deciding whether a particular requirement of thisstandard is complied with, the final value, observed or calculated, express­ing-the result of a test or analysis, shall be rounded off in accordance withIS :2-1960·. The number of significant places retained in the rounded offvalue should be the same as that of the specified value in this standard.

J. SCOPE .1.1 This standard prescribes the requirements and the methods of samplingand test for frozen frog legs.

2. TERMINOLOGY2.0 For the purpose of this standard, the following definitions shan apply.%.1 eo.., - Number of pain of frog I~gs per kilogram after thawing.

3. GRADES AND TYPES3.1 Grades - Unless agreed otherwise between the purchaser and thevendor, the material shall be graded as foUows: .

The material with count more than SOJkg shaU not be processed.3.1 Type.- There shall be three types of frozen frog )t'gS, namely,(a) creamy white, (b) light pink, and (c) light blue.

4. REQ,UlREMENT4.1 HyPe-Ie ReqalrelDeat. - The material shaJI be prepared underhygienic condirions, only in premises maintained in a thoroughly clean andhygienicmanner [sel IS :4·303 (Parts I &. II )-1967-] and duly approvedby the competent authorities.4.2 Raw Material - The material shall be obtained from live healthyfrogs. The legs shall be washed, trimmed, deskinned and cleaned properly.The raw material shall be. clean, wholesome, complete whole pieces, gene­rally free from blood clots and discolouration. The legs shall also be freefrom skin, any foreign matter before quick freezing. The muscles shall becomplete and intact. They shall be free from any parasites.

4.3 Proceasial43.1 Pr'/HWtlIion - The Jive frogs shaD be wuh~ in potable water to

remove dirt and soiJ and later washed with water chlorinated to a level of200 ppm chlorine. The frogs shall be paralyzed by dipping in 10 percentsodium chloride solution for J0 minutes. The hind legs shall be severed

&om the trunk in such a "oay that the intestines are least disturbed. Thesevered legs shall be immersed in 3 percent sodium chloride solutioncontaining 200 ppm available chlorine for proper bleeding. The looselyhanging intestines, if any, shall be removed and washed in potable water.The legs shall then be dipped in 5 percent sodium chloride solution chlori­nated to 500 ppm available chlorine for 15 minutes, and deskinned and thematerial dressed by removing the cloaca, the saddle, cla\\'s and hanging piecesof meat, etc. Each piece shall be washed three times using water chlorinatedto a level of 200 ppm available chlorine and dipped in the same level ofchlorine water for 10 minutes. The volume of water for dipping rna)' bethree times the volume of the frog legs. Finally t the legs shall be washedin 10 ppm chlorine water to remove excessive chlorine smell.

~.4 I'r.._.- The frog legs shall be either frozen in blocks or "Tappedindividually in polythene film or any other suitable moisture proof coveringalready dipped in 5 ppm chlorine water for 5 minutes. In case of delay inkeeping the material for freezing, the material shall be temporarily kept inchill room in 20 ppm chlorine water with suitable amount of ice. Thematerial shall be quick frozen at or below - 400e in the minimum possibletime. Broken or damaged legs shall not be used for freezing. The materialfrozen in trays without overwrap shall be uniformly glazed and filled insuitable containen. The frozen material shall be transferred immediatelv tothe cold storage maintained at or below -18°C. .-

~.5 ~-The mat~ria:l shaD be graded into differ~nt sizes on the basisof count (Stl 3.1). Grading may be done preferably before freezing butmay also be done after freezing. The material used for a particular size ofpack shall be oC a reasonably uniform size.

4.6 When thawed, frog legs shall have shining appearance and charac­teristic colour and odour of the species. They shall be soft but firm in texturewith SODle degree ~r elasticity. The frog legs should be completely free fromskin and, any foreign matter, and reasonably free (rpm dehydration,discolouration and blood clots. The)' shall not show any signs of dcteriora­lion and shall not have off odour.

5. PACKING AND_O5.1 Pac1dD.- The frozen material sbaD be packed in plywood or dealwood boxes or cardboard cartoDS. The containers shall be bound securelyand stored at a temperature of -18e-C. The mass of the thawed materialshall be not less than that of the net mass declared on the package.

6. SAMPLING

6.1 The method of drawing representative samples and aiteria for conform­ity shall be as given in Appendix B of IS: 6122·1971*.

7. TESTS

1.1 Tests shall be carried out as specified in 3.1. 4.2, 4.5, 4.' and 4.7 of thestandard.
