Aside from retaining a beautiful view and challenging at-traction like rafting and splashing, river also poses a habitat ofvarious food sources. There are fish, crab, shrimp and snails.Balinese people may call the latter as ungun or river snail. Thissnail has two forms, namely ordinary snail and half snail. Thehalf snail shapes like carapace of turtle. Its flesh is open and hasa piece of thin bone. When boiled, its flesh will easily get re-leased from its carapace, while the ordinary one should be takenout by pin, needle and so on.

When their delicacy is combined with sabrang or Balinesecherry potato, they will have typical flavor. Its shape is muchsmaller than common potato and its leaf resembles to that ofbroadleaf thyme (jinten). Apart from combined with river snailor chicken, this cherry potato is also good if cooked as singlevegetable. It is usually sold at traditional market or village stalls.

Ingredients: 2 handful river snail, 250gram sabrang or cherrypotato (peeled) and 800ml water for gravy.

Ground spices: 6 cloves shallot, 3 cloves garlic, 2 small chil-ies, 1 candlenut, 2 tbsp grated coconut (ground with other spices),slice turmeric, 1 slice aromatic ginger and 1 slice galangal

Others: 1 pc salam leaf, 1 tbsp palm oil and ½ tsp salt.Method:• Cleanse thoroughly the river snail and cherry potato

and drain.• Pre-heat the palm oil on the frying pan. Stir-fry the

ground spices until smelling fragrant. Add some water and waituntil boiling.

• Put the cherry potato and river snail together into thepan. Add salt, salam leaf and please wait until the cherry potatois cooked.

Whatever fish is used, it can be cut into small cubes or slicesbefore frying. Heat a little oil in a heavy frying-pan, and care-fully brown the fish in it. Meanwhile, in another frying-pan, frythe chopped shallots (or onion) and garlic until tender. Stir inthe chilli, ginger, turmeric, coriander, lemon grass, salam, saltand tamarind water. Let this mixture simmer for 10 minutes,then put in the fish. Cover, and simmer for another 10 minutes.

Add the santen and cook for a further 5 minutes. Serve hot,garnished with very thin slices of cucumber and chopped mint.(Alternatively, put the cucumber and mint into the kare itselffor the last 2 minutes of cooking.) Incidentally, the same karecan be made with prawns. There is no need to fry the prawnsseparately; but fry them in the mixture of onion, etcetera for afew minutes before you put in the tamarind water. BEIJING - China’s trade surplus ballooned to 28.7 billion dollars in July as exports hit a recordhigh, the government said Tuesday — data likely to intensify pressure on Beijing for a stronger yuan.

DUBAI - The music has been cut and the dancing has stopped— Dubai’s usually boisterous nightclubs are falling silent asthe Muslim holy month of Ramadan approaches. Many of thecity’s night spots were subdued Monday night while others hadshut their doors altogether, even though the fasting month hasyet to begin.

“You usually find dozens of taxis picking up people to andfrom clubs in the late night hours, but tonight no one’s goingbecause of Ramadan,” a taxi driver told AFP. The biggest night-club in Dubai, the Lodge, was shut while another popular club,Barasti, showed little sign of its usual vibrant night life, withpatrons sitting quietly sipping on their drinks.

“We serve alcohol after sunset, but no music and no dancingat all,” said waiter Ibrahim Khan. But some customers did notseem to mind. “Why would we find fault with that? We’re liv-ing in their country and under Islamic laws, why would wecomplain?” said Chris Kinsvill-Heyne, a British expatriate whohas been working in Dubai for more than 10 years.

However, an employee at a construction company who gavehis name as Vijay M. wasn’t too happy with the restrictions.“It’s definitely discouraging. This place is usually very livelyand you’d find people dancing but as Ramadan is coming, it’salready quiet in here. What’s the point of coming if there’s nomusic and no dancing?”

“It is not permitted to hold entertainment activities, celebra-tions, or parties at any time throughout the holy month ofRamadan,” the government said in an August 2 circular. “Inexceptional cases, religious rhymes, children programmes aswell as holding poetry sessions and educational competitionsare allowed,” it added, however.

Consumption of alcohol in the United Arab Emirates is offi-cially allowed only for licensed non-Muslims. But in practice,anyone can consume alcohol at licensed hotels and clubs.

“There are tourists and non-Muslims in the country and theycan go to closed bars in which they can be served alcohol,”director of Dubai government’s inspection and tourism permitsection, Mohammed Kahlifa, told AFP.

“Now I’m really looking forwardto getting back on the bike at Brno.It’s one of the most difficult circuitson the calendar; physically it’s verydemanding, but it’s also very enjoy-able to ride on a MotoGP bike. Youhave everything there: big elevationchanges, very fast corners where youneed to let the bike run through, andalso hard braking zones where sta-bility is very important.

“I would say that there is only onegood line, so it’s crucial to be fo-cused during the whole lap to get agood lap time – and it’s a very longcircuit. I’ve had many podiums inBrno, including two wins, so I wouldlike to add another one in MotoGP.

“It’s going to be a busy weekendfor everybody, not only with the racebut also because we stay on Mon-day for testing. It’s the only test dayremaining this season so we have tomake sure we do a good job to helpus in the upcoming races.”

Ferrari hopes for fresh ideas“We will be on holiday, but that

does not mean our brains will stopworking,” he said. “Maybe one caneven find fresh inspiration when out-side the normal working environ-ment and I expect this time to be afertile one for ideas, which when allis said and done, are what make thedifference.”

Ferrari heads into the summerbreak having been in the midst of oneof the more controversial issues ofthe year following the events of theGerman Grand Prix, and Domenicalihit out at the criticism of his teamconsidering other ongoing stories –including the issue of flexi-wings –amongst other teams.

“I was dumbstruck to see somuch hypocrisy in our world, but I

don’t want to add anything else,”he said. “There will just be morework to do; who knows it mightbe an added distraction for some.

“I have to say I was verypleased with the way our teamreacted at a point in the seasonwhen the results were just notcoming. The second half of Julywent very well and I hope it hasgiven the right impetus for thefinal part of the season. We knowthere is much to do, because westill do not have the best car, butthis should simply be a further in-centive. “We said it withFernando a few days ago: if wemanage to always be there, in thetop places, then we can get satis-faction.”
