Applying HACCP or Hazard Analysis and Risk-Based Preventive Control principles can be complex and difficult, even for companies with extensive food production experience. The HACCP Consulting Group was founded in 1994 to provide technical and managerial assistance for the development, implementation, and maintenance of HACCP, GMP, and SSOP programs. • HACCP courses and manuals are available in English and Spanish. HCG Course Materials

• HACCP courses are designed to address all HACCP Principles as defined by the National Advisory Committee for the Microbiological Criteria for Foods, the Codex Alimentarius Commission and Global Food Safety Initiative (GFSI).

• HACCP courses are designed to address all aspects of HACCP plan development and

implementation including:

o Good Manufacturing Practices (GMPs); o Sanitation Standard Operating Procedures (SSOPs); o Introduction to Microbiology; o Biological, Chemical, and Physical Hazards; o The Seven HACCP Principles; o Ways to Develop a HACCP Plan; o Implementation and Maintenance Strategies; and o Regulatory Issues

• Accredited HACCP courses are available for meat and poultry processors (FSIS) and other food

processors (FDA)

• Accredited HACCP courses meet the requirements of the Global Food Safety Initiative (GFSI), SQF and BRC standards

HCG professionals have provided Accredited HACCP training for members of the North American Meat Association, the American Meat Institute; the American Association of Meat Processors; the (former) National Food Processors Association, and the National Snack Food Association to name just a few. HCG has also provided HACCP training in well over 40 countries to industry personnel as well as government Veterinary Service personnel.
