While We Were Apart The day after the ban on in-house dining went into effect, the staff at KatellaGrill transformed their restaurant into a ‘community kitchen’ repurposingexcess edible food from restaurants, hotels, schools, country clubs, distributorsand processors into nutritious, vacuum sealed, frozen meals for distribution toseniors, families and students through the Waste Not OC program.
The solarium dining room by nature of its washable glass ceilings wasconverted into a packaging room complete with three vacuum packagingmachines and heat sealing machines courtesy of So Cal Edison’s ResourceCenter. An additional freezer was donated by Starbucks and use of arefrigerated truck was provided by the LA Angels.
In conjunction with the Orange Coast College Restaurant Management team,The OC Food Bank, The White House Catering and the Orange HomegrownFarmer’s Market, Katella Grill staff members prepared, packaged and/ordistributed over 41 tons of packaged meals including prime grade filet mignon,lobster bisque, 15 different types of chicken entrees, soups, stews, fresh fruitsand vegetable plates.
