Video Error • "Unrefined carbohydrates" is incorrect when

referring to white bread and pasta’s. They are actually refined carbohydrates.

• Refined carbohydrates undergo processing, which removes many essential vitamins and minerals. Natural foods such as whole grains, legumes, fruits, and uncooked vegetables are all top sources of unrefined carbohydrate.

CHOLESTEROL

• A fatty substance found only in animal foods.

• It is also made by our bodies.

• Small amounts are needed by the body for essential functions.

• Excessive cholesterol forms a fatty plaque, which sticks to the inside of our arteries.

• HDL “good” cholesterol

-Carries cholesterol to liver and out of body

-Helps avoid plaque and heart disease

• LDL “bad” cholesterol – Carries cholesterol around in the blood

– Forms plaque in the arteries

– Increases risk of heart disease

Sodium Function in Food • Preservatives • Inhibits growth of food-borne

pathogens • Modify flavor • Binds ingredients • Enhances color

Health Hazards: • High blood pressure (hypertension) • Heart Disease (#1 cause of death) • Stroke (caused by a blockage in an artery)

What you need to know: • The average daily sodium intake for Americans is

3,400 mg per day. • For optimal heart-health, you should aim to eat

no more than 1,500 milligrams of sodium per day.

• Calories- Units of energy from food

• Carbohydrates- Main source of energy (60% of diet)

• Fat- 2nd source of energy

(30% of diet)

• Proteins- Growth, development and repair of body tissue, especially muscles

(10% of diet)

What makes up our calories? THE 4-4-9 RULE

Calculating Calories • Find “Total Carbohydrates” and multiply the amount by 4. • Find “Protein” and multiply the amount by 4. • Find “Total Fat” and multiply the amount by 9. • Add all three amounts.

Calorie Calculations

Carbohydrates 1g = 4 calories

Protein 1g = 4 calories

Fat 1g = 9 calories 1g = 4 calories

Sample Calculation

• A slice of bread has 9g of carbohydrates, 2g of protein, and 1g of fat.

• Get out a piece of paper and see if you can do the calculations…..

Calculations

• 9 grams carbohydrates x 4 calories/gram

= 36 calories

• 2 grams protein x 4 calories/gram

= 8 calories

• 1 gram fat x 9 calories/gram

= 9 calories

Total calories = 53 calories
