Why Allergy Free Cookies?

Today the most common food allergens are gluten, peanut, egg and dairy. One of the little girls I take care off has 3 out of 4 of those, and I myself am allergic to peanuts. These cookies provide those unfortunate individuals the opportunity to still enjoy a yummy treat:)

*NOTE*This recipe is a remixed version of the Enjoy Life Company Chocolate Chip Recipe… Recipe measurements are copied but ingredients vary based off of my own personal preference

Gather your ingredients:You will Need:● ⅔ cup Earth Balance Vegan Butter● 1 tbsp. Extra Virgin Olive Oil● 1 ½ cup Organic Coconut Sugar● 1 tbsp. Organic Vanilla Extract● ⅓ cup Water● 2 ¼ Cup Organic Gluten-Free Coconut

Flour● 1 tsp. Organic Himalayan Pink Salt● 1 tsp. Xanthan Gum● 1 ½ tsp. Gluten-Free Baking Flour● 1- 10oz Bag Enjoy Life Semi-Sweet

Lets Get Started!

1.Preheat Oven to 375 degrees

2. In a large bowl combine vegan butter, extra virgin olive oil, and sugar3. Add in vanilla extract and water. 4. Combine gluten-free flour, salt, xanthan gum, baking soda and baking powder. 5. Lastly add in chocolate chips!

**Adding all ingredients into one bowl is okay! make life easier on yourself:)

6. Mix all Ingredients together, I used a basic cake spatula

**Ingredients will not be stuck together like typical cookie dough, due to gluten free mixes and absence of eggs this happens...Its OKAY!

7. Drop by spoonfuls onto a greased (coconut oil) pan (or parchment paper, I didn’t have any in the house) 8. Press cookie balls down to flatten slightly

There Almost Ready!9. Place cookies into oven and bake for 8-1o minutes

10. Let cookies cool for 10 minutes11. Serve and Enjoy!
