Mesclun Greens with Candied Pecans, Goat Cheese & Champagne Vinaigrette

Barbecued Butterflied LegOf Lamb With Mint

INGREDIENTS:For the pecans:• 1 cup (4 ounces) pecan

halves• 2 tablespoons organic

maple syrup• pinch salt

For the salad:• 10 cups mesclun greens

(or favourite mixed greenssuch as green or red leaf,Boston, bibb, or romaine)

• 3 ounces goat cheese,crumbled

DIRECTIONS:For the pecans:Preheat the oven to 375 degrees.Lightly oil or line two baking sheetswith parchment paper. In a small bowl,combine the pecans and maple syrupand toss gently to combine. Spreadthe pecans in a single layer on one ofthe prepared baking sheets. Roast inthe preheated oven, stirring once, untilthe syrup is bubbling vigorously, about5 minutes. Immediately scrape theglazed pecans onto the other pre-pared baking sheet, spreading them ina single layer. Sprinkle with a pinch ofsalt and set aside to cool.

INGREDIENTS:• 1 leg of lamb (5 to 6 lb.), boned and

trimmed of surface fat• 3/4 cup balsamic vinegar• At least 1/3 cup mint jelly• 1/3 cup minced fresh mint leaves• Fresh mint sprigs (optional)• Salt and pepper

DIRECTIONS:• Lay meat boned side up.• Slash about halfway through thick-

est portions, as needed, and pullmeat, patting cut edges down, tomake the piece even.

• Place lamb in a 9 by 13-inch pan.• In a 1 to 1 1/2-quart pan over medi-

um-high heat, stir vinegar with 1/3cup mint jelly just until boiling.

• Stir in minced mint leaves andpour evenly over lamb.

• Cover and chill in refrigerator for 2hours or up to a day.

• Turn meat over occasionally.• On a barbecue grill with a lid light

charcoal briquettes.• When briquettes are dotted with

ash, in about 30 minutes, spreadthem into a single layer; scatter 10to 12 more briquettes over coals.

• Set grill 5 to 6 inches above coals.• Lift meat onto grill; reserve mari-

nade.• Put lid on barbecue and open

vents.• Turn meat as needed to brown

evenly; baste often with marinade.• Cook until thickest part of meat is

done to your liking; for rare (140°on a thermometer) in centre ofthickest part, allow about 40 min-utes total.

• Thinner sections will be well done.• Transfer lamb to a platter and let

rest 5 to 10 minutes.• Garnish with mint sprigs.• Slice meat thin.• Season to taste with mint jelly,

salt, and pepper.

INGREDIENTS:For the vinaigrette: • 1 cup mild olive oil• 1/4 cup champagne vinegar• 1/2 cup champagne• Salt and freshly ground pepper• Pinch sugar, optional

Preparation:Whisk together olive oil, cham-pagne vinegar, and champagne.(You may use a blender for this ifyou wish.) Season to taste withsalt and pepper. If the vinaigrettetastes too sharp, add a pinch ofsugar and whisk until dissolved.

Refrigerate any leftover salad dressingand use within 1 week.

Yield: 1-1/2 cups, enough for 6 to 8 salads

For the salad: Place the greens in a large bowl,drizzle with about half of thevinaigrette and toss to combine.Add as much of the remainingvinaigrette as desired and tossagain. Divide among individualplates, sprinkle with the cheeseand reserved pecans and serveimmediately.

Sea Bass with Wine SauceINGREDIENTS:• 1/4 cup (1/8 lb.) butter or

margarine• 1 1/2 tsp drIed fine herbs mix or

1/2 tsp each dried thyme leaves,dry marjoram leaves, and dry tar-ragon leaves

• 1 tsp each minced onion andparsley

• 1/4 cup minced celery• 1 tb of minced Trinidad pimentos• 1 cup soft white bread crumbs• 1/2 pound cooked shelled crab• 1 1/2 to 2 pounds boned andskinned sea bass Wine saucePaprika Parsley sprigs

DIRECTIONS:• Melt butter in a 10- to 12-inch fry-

ing pan over medium heat.• Add fine herbs, onion, minced pars-

ley, pimentos and celery and stiroften until slightly browned, about

5 minutes.• Stir in the bread crumbs and crab;

set aside.• Rinse fish and pat dry, then cut

into 4 to 6 equal portions.• Lay fish in a buttered 8- by 12-inch

baking dish.• Evenly top fish with wine sauce.• Cover and bake in a 425° oven

until fish is opaque but still moist-looking in thickest part (cut totest), about 20 minutes if fish is 11/2 inches thick, less time if piecesare thinner.

• Uncover casserole, mound crabmixture on fish; baste crab withsome of the pan sauce, then sprin-kle generously with paprika.

• Bake 5 minutes longer; garnishwith parsley sprigs.

• With a spatula, transfer fish toplates and spoon sauce onto eachportion.

Flourless Chocolate Torte

Creamy Vanilla Soy & Roasted Garlic Mashed Potatoes

Brandied CarrotsINGREDIENTS:• Carrots - 24 small• Butter - 1 tablespoon• Lemon - 1, freshly squeezed• CHAMBORD (raspberry-

flavoured liqueur - 3 tablespoonsBrandy - 1/4 cup Honey - 1/4cup Parsley - 2 tablespoons,finely chopped

DIRECTIONS:• GETTING READY1. In a small bowl, combine the

lemon juice, Chambord, brandyand honey. Blend well and keepaside.

2. Grease a casserole or bakingdish with butter.

3. Preheat the oven to 350degree F before baking.

MAKING4. In a saucepan, add carrots and

cover with cold water. Add apinch of salt to the water.

5. Bring to a boil6. Reduce heat, cover and simmer

the carrots until they are ten-der-crisp.

7. Drain in a colander.8. Arrange the carrots in the

casserole.9. Spoon the prepared syrup over

the carrots to glaze well. 10. Dot with butter.

FINALIZING11. Bake the carrots uncovered, inthe preheated oven, for 10 to 15minutes, stirring once, until goldenand glazed.

SERVING12. Serve the glazed carrots hot, as a side

INGREDIENTS:• 16 oz. bitter sweet

chocolate –chopped ¾ cupunsalted butter

• 1 tbsp coffee liquor• 6 eggs• 1 cup sugar• 1 tsp. vanilla• 1 tbsp water•¼ tsp. salt•¼ cup

unsweetenedcocoa

For the ganache• 8 oz. semi-sweet choco-

late – chopped• 1 tbsp butter• 1 cup heavy cream

DIRECTIONS:• Heat the oven to 300

degrees. Line the bottomof a 9 inch spring formpan with some butteredparchment paper. Butterthe rest of the pan andset aside.

• Place the chocolate and butter in adouble boiler. Melt the chocolate, stir-ring constantly. You can do this in themicrowave as well. Whisk in the cof-fee liquor and remove from heat. Setaside and allow cooling.

• Beat the eggs, sugar, vanilla, waterand salt in a large bowl – until eggsare pale yellow and have doubled involume. Carefully add in the meltedchocolate. Continue beating for about2 minutes. Add the cocoa. Mix well.

• Pour the batter into the pre-pared pan. Bake for about 40to 45 minutes until an insert-ed cake pin comes out withmoist cake crumbs. Removepan from oven and place on acooling rack. Let it cool downcompletely. Cover the cakeand refrigerate for at least 6hours or overnight.

• Frost the cake with chocolateganache or dust it with con-fectioners’ sugar.

For the ganachePlace the chocolate and the butterinto a bowl. Bring the cream to analmost boil – when you start see-ing little bubbles you are done.Pour the hot cream over thechocolate and butter. Let it sit fora couple of minutes – untouched.Whisk the chocolate and creamuntil it turns even and smooth.

INGREDIENTS:• 1-2 cups of vanilla soy milk

or almond milk• 3-4 tablespoons butter, or

any vegan butter of yourchoice

• 2- 2/12 pounds russetpotatoes, peeled

• 1-2 head of roasted-garlic,(oil then salt & pepper andplace on foil paper closedup and bake on rack inoven on 400 degrees forapprox 15-20min) Saltand pepper to taste

DIRECTIONS:• Cut potatoes in half, and then

cut into cubes.• Add potatoes to rapidly boiling

water.• Check potatoes for doneness

after 20 minutes. When itbreaks apart easily, they areready, approximately 25 min-utes. Strain potatoes, and thenadd them back into the pot.

• Using a whisk or your preferredtool, add vegan butter. Thenadd vanilla soy milk to pota-toes, a little bit at a time, mash-

ing and whisking to get thecreamy consistency you want.You may not use all of the milk.

• Add salt and pepper to taste.Enjoy!

• Note: if you don't want toroast the garlic, you canalways melt down vegan but-ter in a sauce pan over lowheat and add some mincedgarlic and stir about 2 minutes.You can also use the samerecipe with roasted shallots oronions.

CeramicTilesThere is a wide variety of ceramic tiles to choose from. They come in different colours and

shapes from tiny mosaics to one foot square.

A creative idea for using ceramic tiles would be tochoose more than one colour for your countertop.

You can choose as many colours as you like tocreate an interesting and colourful pattern. The bestthing about ceramic tiles is because they come invarying sizes, you can create a picture mosaic orchoose to create a random pattern.

Some ceramic tiles are machine madeand others are handmade. Of course, themachine made tiles are less expensive.The cost of tile installation is also basedon the type of tile that you choose. Aplain tile, for example, could costbetween $5 to $15 per square foot forsolid colours and $20 to $100 plus forpatterned tiles. Take into considerationthat using ceramic tiles requires thatthey be grouted and that will add toyour cost.

• Marking, Nipping,& Finishing CircularShaped Tile Cuts

In this example, we are installing ceramictile on a countertop and it is fairly easy tomark the tile we need to have cut. In somecases it is not possible to mark the tile cutdirectly. If this is the case, you will need tomake a template using a piece of cardboardand then transfer those markings to the tile.

Some tiles have very glossy surfaces andit can be difficult to mark the tile cut youneed made. If a grease pen will not mark thesurface of the tile you can mark the under-side of the tile using a pencil.

Tile nippers are used to make circular cuts in ceramic tile. Theycan also be used to make straight or angled cuts although youwill find it much easier to use a tile cutter or wet saw to makethese types of cuts. Always wear eye protection as very sharpfragments of the tile can shoot from the cut as it is being made.

After the tile is com-pletely cut and finished youcan use a piece of 60 gritsandpaper or a special rub-bing stone used by ceramictile contractors to smooththe finished edge. This isimportant to do when thecut will be exposed (e.g.around shower drains) asthe edge of the cut tile willbe very sharp and couldcause injury.

When you havereached the marked line,proceed very carefully soas not to “overbite" themarked line.

Once the tile has beenmarked, hold it firmlyover an empty containerand proceed to take small"nips" or "bites" out of itusing the tile nippers.Take your time and keepthe "bites" small, other-wise you risk breakingthe tile and having tostart all over again.

Pond liners can be found at any superstorehardware or pet supply store. Purchase a linerthat suits the size of pond you would like tobuild. Then get a submersible pump and a spit-ter. A spitter is that little ornament that spitswater back into the pond via the submersiblepump. It can be a stalk or a fish. Choose what-ever tickles your fancy.

Preparing the locationChoose a nice area for your pond where it’s

partially shaded and quite visible for yourpleasure. Enabling extra hands excavate to thedepth of your likeness. Because your liner isflexible you can use any shape to form yourpond.

A great trick is using your garden hose toform the shape which helps in giving youboundaries while you excavate.

Making the pond your ownOnce you've dug your pond out, put your

liner in. Using rocks, anchor your liner edge inplace. Then fill your new pond with water plac-ing plants strategically in and out of the pondto give a natural look.

Water brings life to any decor from swimming pools to a simple fountain. We have always been told that swimming pools are very expensive and I agree

that they should be done by professionals. But a simple water feature can be doneas a do-it-yourself weekend project. Sure if you can afford it you can hire someoneto build you an elaborate waterfall with stream and fountain. But here’s how thiscan be done in a very simple way while achieving the same effect.

Connect the hose to your pump and spitter.Submerge your pump and place your spitter ina position to allow good visibility of your spitterand water spraying back into your pond.

And that’s it! With a little elbow grease youhave created a beautiful water feature withoutspending a lot!

How many pond plants do I need?Here is a rule of thumb for deciding how many

pond plants to add to your pond. To each squaremetre of surface (10 square feet):

• 2 bunches of oxygenating plants will lookafter this size of pond

• 1 Water lily - there is a massive range ofthese pond plants to choose from

• 1 Bog plant - these pond plants can also beplanted around the perimeters of gardenponds.

You would of course combine plants intoareas and not space them according to this ruleof thumb.

Kessa Seale, who presently holdsthe titles of graphic artist, motherand wife, is currently a blossomingartiste in the Mosaic business.

She fell into the art form a fewyears ago when her sister brought

home a book on the sub-ject. Curiosity got the bet-ter of her and what wasjust a newfound hobby of

doing small pieces on a weekendquickly turned into a full time job (asof 2006).

The art form, which she says isactually done on mesh firsthandbefore being installed, is somethingthat came naturally to her since shewas versed in the fine-art realm ofpainting and creating art with herhands. Her inspirations come fromgraphical and nature books, since theyinclude all the colours and shapes sheneeds. Fabric prints, motifs, surfingand tattoo graphics inspire her as well.

Kessa, who is constantly busy build-ing templates for other artists, admitsthat marketing her company onlineand installing Mosaics balances hercareer and personal life as if they wereher only goals in life.

“Having a daughter attending Formone and being a newly-wed no lessthan 10 months now is time consum-ing, but I do it. Working from homecan have a lot of distractions if thereis no organisation, but with a lot ofself-motivation and a firm belief inGod (and my talent) makes every-thing flow smoothly and naturally.

Q&A@ HOME: What is the process or howis Mosaic done? KESSA: The design is made on thecomputer, I then resize, taking away oradding elements (such as the fishesor other elements) catering to thecustomers’ order, and then finally Iprint out the designs. Colour is thenspecified on the print; this is veryimportant since juxtaposed colourbecomes an important aspect of thedesign. Visually, grout can either pullthe tiles together or make themappear to separate. Therefore, Iemploy colours making sure they willbe always visible, no matter whatcolour the Diamond Brite/grout is. As

Here are some useful techniques for cleaningwindows: • Wash one side of a window with horizontal

strokes and the other side with vertical strokesso you can pinpoint which side of the windowhas a streak.

• Use a squeegee on a long handle or asponge/squeegee combination to preventstreaks on large windows.

• Eliminate tiny scratches on glass by polish-ing the affected areas with toothpaste.

• Washing windows should be done on acloudy day, because direct sunlight driescleaning solutions before you can polish theglass properly.

• Use a soft toothbrush or cotton swab to cleancorners.

• To give an extra shine to window glass, polishit with well-washed cotton T-shirts or old clothdiapers. Or rub a clean blackboard eraser over afreshly washed and dried window to give it adiamond-bright shine.

• Polish windows to a sparkling shine withcrumpled newspaper. The paper also leaves afilm that's resistant to dirt.

• Wash windows from the top down to preventdrips.

• Remember that window cleaners pose athreat to woodwork. Don't let them drip on thewindowsill where they can harm the paint orvarnish.
