Last Thursday the Annual Health Week Lun-cheon was held in Richards Landing at The Royal Cana-dian Legion. The event has been going on for more than 30 years, with a variety of different organizations taking part with tables and 5 minute presentations given while visitors enjoy some healthy foods.

Close to 20 different organizations had booths, includ-ing, Dr. Treyfry Memorial Centre, North Shore Health Network Auxiliaries Matthews Site and the St. Joseph Island Cancer society branch and many more.

Various products were on display and it was a good opportunity to visit with many different organizations that you may not have a chance to communicate with otherwise, at least not all in one spot. There were plenty of freebies available and lots of good information. Some of the groups on hand you may not necessarily seek out, but with them there and available, it was a good oppor-tunity to et some professional advice.

last year, turnout was great with many arriving before the official 11am start time. This event takes place annually during Nurses’ Week, on the second Thursday of May.

While many of the booths do cater towards seniors there was plenty of useful information for people of all ages, one thing that anyone who has been on the Island for a short amount of time can probably related to is the fact it is difficult to get a doctor. The North Channel Nurse Practi-tioner-Led Clinic is taking new patients at both their Echo Bay and Thessalon locations.

There also was the opportunity to learn about Thai Chi, get a chair massage, learn about different supplements and re-ceive various health tips pertaining to all sorts of things, and there was a lunch for just $7.00.

Lets face it, not ev-eryone likes to go to the Sault for medical care, so this event is a great opportunity to see what other services are available here and in the sur-rounding areas.

Spring Peepers

One of the sure fire ways to know spring is here, besides warming temperatures and the arrival of spring migrating birds, is the sounds of the cho-rus of spring peepers chirping at night. They are one of the first frog species to begin calling in the springtime, sometimes with snow still on the ground.

Spring peepers are tiny tan to grey frogs, no bigger than 3cm, with “X” marks on their back. They are mostly nocturnal and live around marsh and wet-land areas close to forested areas so they can breed near the water and hibernated under fallen trees in the winter. The males sing trying to attract a mate. They inflate their vocal sacks producing that famil-iar “peep” noise that sounds like bells that echoes through the night throughout eastern Canada and the US. Their peeps can carry over a kilometre away. The female spring peeper will lay anywhere between 800-1000 eggs in water, which will hatch into tadpoles in 6 - 12 days and will fully turn into an adult frog in two months. They feed on ants, spiders, small beetles and other small bugs.

Spring peepers can survive with their bodies being 70% frozen, their hearts stop pumping and they appear dead. Once the temperature drops below freezing, the frogs will start preparing their bodies for colder temperatures so they can stay alive in the winter. Sugars in the frogs body concentrate in the cells to produce a kind of antifreeze for the frog and is also a source of nourishment as the frog hibernates. Temperatures below 21 F will kill a peeper, so they rely heavily on the surrounding leaf litter and snow cover of the area where it hiber-nates.

Although they are of least concern, spring peepers can not withstand urbanization and have almost completely disappeared from the Toronto area.

Local Snow Pile confused as to why it’s still here

“It’s May, I really should be melted by now,” the snow pile told the Island Clippings last week. The snow pile looks forward to melting by the end of the week, how-ever the chilly nights doesn’t have it too optimistic.

If you missed the last few snow piles here on the island, you can probably find a few stragglers in the Soo.

Recipe Corner

Dark Chocolate Salted Caramel Oreo Pie

Ingredients:

1 package (about 36) whole Oreos 1 cup (16 tablespoons) butter, divided 2/3 cup packed brown sugar 1 1/4 cup heavy whipping cream, divided 1 12 oz bag dark chocolate chips

Directions:

1. Finely crush the Oreos with a food processor or blender. Stir crumbs together with 8 tablespoons melted butter until well combined. Press into the bottom and sides of a pie pan. Freeze crust for 10 minutes until set.

2. Combine remaining 8 tablespoons butter and brown sugar in a small saucepan. Cook over medium heat, whisking constantly, until mixture begins to bubble. Continue cooking, whisking constantly, for 1 minute. Remove from heat. Slowly whisk in 1/4 cup heavy whipping cream until smooth. Cool car-amel about 15 minutes. Pour the caramel over the Oreo crust, then return to freezer for about 30-45 minutes until just chilled and set. (You don’t want the caramel to fully freeze.)

3. Place chocolate chips in a glass bowl. In a saucepan, bring 1 cup heavy whipping cream to a simmer over medium-high heat. Pour the cream over the chocolate chips and let sit for 5 minutes, then whisk until completely smooth. Pour the chocolate over the caramel and freeze for a final 30 minutes, until just chilled and set. OR refrigerate, covered, until ready to serve. Before serving, sprinkle the top with a flaky sea salt like kosher salt or Fleur De Sel.

Store covered in the refrigerator and serve chilled.

Get that old unit out of the way and
