Testing whether turkey, chicken and poultry are cooked

When a turkey (or other bird) is cooking, the heat finds it hardest to reach the part where the thigh meets the breast. Test the bird for doneness here to be sure the rest of it will be cooked through.• Cut the skin where the breast and thigh join. • Pierce the thigh or breast meat that's exposed by the cut skin, in the thickest part.• If the juices run clear, the turkey is cooked through. If they are still pink, return the bird to the oven for a further 20-30 minutes, then try again.Visit BBC Food - Techniques for the

BOARDWALK UPDATEA meeting with both the HCC (part thereof) and community members held in Broad Haven Village Hall on Thursday 21st November to try and agree a way forward for the boardwalk, which is a huge asset to the village, being saved.HCC made it clear that they, as a body, cannot apply for grants for work to be carried out as they as a council are not eligible and therefore they would like a community group to be formed to apply for funds to repair/replace the boardwalk as required. The community members were reluctant to form such a group until HCC agreed a proposal of sustainability and a set of “rules” which would bind both parties. The HCC agreed that this would be put

on their next agenda, meeting will be held in December, and discussed and once they have a guideline another community meeting will be called to discuss. The replacement of the boardwalk, if done in its entirety, will cost in excess of £37,000 (excluding labour). It was pointed out that this is only one quote and this is for recycled plastic boards, posts etc. which has a longer life span that that of wood. Other quotes will be requested. However, some were concerned at using plastic which is not the most environmentally material. This is yet to be decided.

a snowman with a vampire? Frostbite.

CHRISTMAS IN THE MIDDLE AGESThe medieval calendar was dominated by Christmas-related holidays. The forty days before Christmas became the "forty days of St. Martin" , now known as Advent. Around the 12th century, these traditions transferred to the Twelve Days of Christmas (December 25 – January 5).The prominence of Christmas Day increased gradually after Charlemagne was crowned Emperor on Christmas Day in 800. King Edmund the Martyr was anointed on Christmas in 855 and King William I of England was crowned on Christmas Day 1066.King Richard II of England hosted a Christmas feast in 1377 at which twenty-eight oxen and three hundred sheep were eaten! The Yule boar was a common feature of medieval Christmas feasts. Caroling also became popular, and was originally a group of dancers who sang. The group was composed of a lead singer and a ring of dancers that provided the chorus. Various writers of the time condemned caroling as lewd. Misrule; drunkenness, promiscuity, gambling - was also an important aspect of the festival. In England, gifts were exchanged on New Year's Day, and there was special Christmas ale.The annual indulgence in eating, dancing, singing, sporting, and card playing escalated in England, and by the 17th century the Christmas season featured lavish dinners, elaborate masques, and pageants. It was during the Reformation in 16th–17th-century Europe that many Protestants changed the gift bringer to the Christ Child or Christkindl, and the date of giving gifts changed from December 6 to Christmas Eve.http://en.wikipedia.org/wiki/Christmas

THE HAVENS HISTORY GROUP The next meeting of the Havens History Group will be on Thursday 16 January 2014 at Haven Court, Little Haven at 7.30pm. The continuing theme is “Homes and Houses of the Havens” and we will be exhibiting at Little Haven Hall during the May half-term week as part of the Havens Festival. Current research includes Haven Fort (also known as The Havens or Gorselands), Pendyffryn (at one time The St. Bride’s Bay Private Hotel), Broad Haven House, Millmoor Mill, Haven Court, Bridge House, the Bowen Memorial Hall and the Bowen Family at The Cottage, Little Haven. Next year is the Centenary of the start of World War I and there will also be a section on the local men who served in the Great War. We have found that in many respects it is easier to trace a house history prior to 1911 – the last published Census Return. Whilst the Record Office holds a great many old records, there are no details of more recent house transactions. Therefore we rely on people providing us with information from the Deeds of their house which can give an insight into the names, dates and occupation of previous owners. Our display boards at the exhibitions may cover in detail the earlier years of a house and the occupying families but may stop short at any point after 1911 due to insufficient material.

If anyone can provide documentary evidence to help us in our searches we would be grateful. We are looking for maps, plans, architect’s drawings, house alterations/extensions, sub-divisions of land, bills and receipts for materials and labour, sales posters, details of house auctions, wills and inventories – anything that can tell the story of the house and the people who lived there. We are also looking for photographs of the inhabitants of the houses as well as the buildings themselves; they can be emailed to the address below or, if we can borrow them for a short while, they can be scanned and returned very quickly. Visits to the Record Office often take place on Wednesday evenings. If

you would like to join us please contact Ian Norman for further details: Tel: 01437 781775 or Email:

Summary of our discussions at the Boardwalk Meeting 21 Nov 2013

A group of residents and community councillors met to discuss the future of the Boardwalk. Residents and Councillors present agreed we did not want to see the Boardwalk closed.

The possible solutions put forward at a recent Community Council Meeting were discussed along with why we had arrived at this situation. It was agreed a capital 'lump sum' alone would not be a long term solution as sustainability must be part of any plans and the community council members present reiterated that a Broad Haven Residents Environmental Association needed to be formed in order to be able to apply for the many community funding routes available now and in the future.Efforts have been made to keep the precept down for the last 7 years and whilst it was agreed a large increase would not be acceptable to The Havens Residents there would need to be a rise this year if the Community Council were to be able to contribute to repairs. Members of the council present will put this to the full Council together with an agreement to make a regular yearly donations to the fund. Those present agreed to accept the offer made by Pembrokeshire County Council to tarmac the cinder path running from the Swanswell footpath, past the picnic tables, to the Slash Pont viewing area, subject to receiving an agreement from Messrs Raymond, the owners of the land. It was also agreed to look at possible alternative materials with a longer life cycle than the existing wood being used

THE HAVENS COMMUNITY COUNCIL - BOARDWALK MEETINGand put together a rolling programme to replace/repair in order to ensure sustainability for the future.Residents were asked to make contact with other residents, to make them aware of what had been discussed and find out who would be willing to join the group.Everyone agreed to meet again in January - date to be advertised - when prospective members of the funding group could be identified and discussions started on how the group and the community council could work together to maintain this important tourist attraction. A date for the January meeting will

be advertised in due course.

Havens Community Council would like to wish all The

Havens Residents a Merry Christmas and Happy

New Year

CYD Cymru - Wales TogetherCollective Energy Switching

Scheme – Save Money on Your Bills!

By buying energy together, people who take part in collective switching schemes can save between £60 and £250 per household per year! The "Cyd Cymru" scheme has been developed to help people across Wales to save money by taking part in collective energy switching. Pembrokeshire County Council is backing the scheme, and is urging residents to sign up.The idea behind collective energy switching is similar to bulk-buying products in order to get a better price. However, in a collective switch those interested in receiving a better deal group together as a ‘collective' before approaching the energy suppliers. The more people that get involved the more attractive the group of customers are likely to be to the energy suppliers.“Cyd Cymru” has been developed by a number of partners across Wales to help you get a better deal on your energy prices. We would encourage you to get involved. With winter fast approaching and the cost of energy going up, this is a great opportunity to look at cheaper energy! The registration period will open on the 21st October 2013 and at this point we will ask you to provide some specific details about yourself and your energy bills so we can negotiate the best deal possible on your behalf. There will be a 6 week registration period and then we will undertake the

first switch before Christmas. Please visit our website for further details of how to register your interest and become part of the collective energy switch: www.cydcymru-energy.com 0800 093 5902

The more people that group together the bigger the savings we could make! How the process works is simple:

Registration : The first step is to register your interest, providing as much detail of your energy use as possible.

Energy Auction : An energy auction will then take place where Energy companies are invited to offer their best price to the people who are part of the collective

New rate offered : A personal offer will be calculated for you, based on the information provided

You decide if you want to accept your offer . If you accept, you will be assisted to switch to a new, cheaper tariff, which hopefully saves you money

The Utility Company will complete the switch.

CHRISTMAS CRACKERSWhat will happen to you

Councillors also pointed out that should the boardwalk be opened before the necessary repairs were completed the Council's Public Liability insurance would not cover any claim made for accidents that occurred.*Members of the public attending the meeting were asked if they wished to speak and some members of the public expressed concerns and views regarding the closure of the walk and the cost of maintenance. After a short discussion between the members of public and the councillors it was agreed

that a separate meeting should be held the following week and a notice to this effect be posted on Facebook and in the Hall. Both the Community Council and the members of public wished to minute their appreciation for time taken to get information together by the Clerk.PLANNING APPLICATIONS SUPPORTEDNP/13/0484 Enfield House, Broad HavenNP/13/0616 Sunnydene, Broad HavenNP/13/0287 Land at Broadway, Broad HavenNP/13/0474 Haroldston Glen, Broad HavenPLANNING APPLICATIONS REFERRED TO COMMITTEENP/13/0237 Land at Broadway, Broad HavenNP/13/0460/61/62/63 Plots 1,2,3,4 Blockett Lane *This would be contrary to the conditions of the Lease which requires the Council to fully indemnify Messrs Raymond, the landlords, against all losses arising directly or indirectly out of any act, omission or negligence of the tenants or persons at the premises, including death or injury to any persons arising out of the use of the premises.

LYN HAMBIDGE, HEAD OF HOUSINGDue to enquiries received from local residents Lyn was asked to join us to speak about the policy for the allocation of social housing.Lyn advised us that the Housing Policy is defined by law and operated in Pembrokeshire by Housing Partners made up of Pembrokeshire County Council, Pembrokeshire Housing and Cantref. Each of these partners manage their own stock of homes, to which apply tenancy agreements and conditions. They operate an Open Access policy but can suspend people should they have a valid reason such as anti social behaviour. Houses are allocated according to a set of criteria, the over riding factor being that of 'Need'. A summary of the system in place is as follows.

an application is made for housingthe application is assessedthe application is allocated a rating of

either gold, silver or bronze. With gold being those with highest needs down to bronze who would someone who would like housing or want to move but do not 'need' to do so.In addition to the gold, silver and bronze rating there is a priority status applied. This includes, for example, those to whom we have a statutory duty to house, those with a connection to the area, those who need to be near a relative or a particular school or need to

care for someone in the area. Additional preference is also given to people who can show a local connection with a community. The local connection criteria results in approximately 1 in 3 houses available in rural areas being offered to local people in the first instance. Households are also assessed on the basis of the size of property they need (1 bed, 2 bed etc). When properties becomes available they are advertised and expressions of interest are invited. Applicants can put in up to three bids. Officers then offer the property by applying the policy to the applicants applying. The applicant that most meets the criteria will be invited to look at the property and can either accept or refuse. If accepted they can move in, if they refuse the property is offered to the next on the list. Some properties are taken out of the advertising process due to their occupancy criteria, for example properties that have been adapted to meet the need of people with a disability. Each year a check is made of the people on the housing list to ensure that it is kept up to date. There is an affordable housing policy in Pembrokeshire to try to meet the demand for affordable housing in the County. Most affordable housing is provided through Housing Associations.Overview of Housing StatisticsPembrokeshire has 8,200 properties classed as Social Housing. The number and type vary considerably from one area to another. The number of applicants awaiting housing are

APPLE DAY AT ST BRIDESWell done the National Park local Ranger for dreaming up and carrying out plans for an Apple Day in her patch. The setting was entirely appropriate – on the edge of the ancient apple orchard once belonging to the Abbey of Saint Bride, and now leased by the NP to the Scout movement. It was a rare chance for members of the public to have access to the orchard, as well as to join in various activities (scrumping, apple juicing and bob-apple), and to enter the apple pie competition. Congratulations to 13 year old Ollie of Hitchin whose “appley creation” won first prize - the chance to have a tree in the Merlin’s Bridge orchard planting (November 9th) named after him!The rain held off, the site was sheltered and the occasion was enjoyed by a good number of individuals and families.

Please do it again next year, Hayley. We really enjoyed the experience, and give you and your team our warm thanks.

POTUS YPOCRAS - wine mulled with honey and spices

Drink like a King with this updated 14th century English drink!

Make it now and enjoy it on Christmas Eve!

Ingredients1 bottle (750 mll) of an inexpensive, sweet red or white wine 1 - 1 1/2 cups sugar (OR: 1 - 2 cups honey) 1 Tbs. each of ginger, cinnamon, cardamom, white pepper, clove, nutmeg, & caraway seed CheeseclothMethodBring the wine and sugar or honey to a boil; if using honey, skim off the scum as it rises. Taste for sweetness; add honey or sugar as necessary. Remove from heat, stir in spices, and allow to sit covered for 24 hours. After sitting, the spices will create a thick residue which will settle to the bottom. Using a ladle, pass the wine into another container through a strainer lined with 2 or 3 layers of cheesecloth to remove the spices, being careful to leave as much of the spice residue in the pot as possible. Bottle. Make as soon as possible before serving, the older the better!

THE HAVENS COMMUNITY GARDENS AND ALLOTMENTS

What should happen in December• Not a lot, thank goodness! • Carry on winter digging if and when you have the urge. Try to get it done before the ground freezes.• If you're feeling energetic, dig a bean trench about 60 cm deep and fill it with about 30-40 cm of fruit and vegetable waste before covering it with soil. It will be ready for planting in the spring.• If frost is forecast, nip out and cover vulnerable vegetables with horticultural fleece.• Pigeons haven't been a problem so far, but as winter draws on they may get hungry and fancy nibbling your brassicas. Protect them with netting.• Have a good browse through seed and plant catalogues (Parkers Plants and Bulbs are very good and cheap). • Get together with other gardeners to swap tips on the varieties that do well in The Havens. What happened on my plot in NovemberI was still picking baby broad beans in mid-November! The garlic that I planted in September is growing well, so I'm hoping for some decent bulbs next summer. What did well: I harvested some delicious leeks, carrots, parsnips, kale and chard. What didn’t do so well:The raspberry canes took a hammering in the gales. They're still

standing but need some extra wind protection. What went well on other people's plots:Magnificent sprouts! Huge carrots! Gigantic parsnips!Tip of the month:Don't plant comfrey unless you've got lots of room. It makes a good liquid feed but is very rampant and hard to dig out.

Happy Christmas!Bern Kershaw - 01437 781 762
