What is your main specialty?    COFFEE! We are focused on preparing outstanding espresso and brewed coffee through use of the best available equipment (our Synesso Hydra espresso machine, Malkonig/Mazzer grinders, and a custom-made pourover brew bar) and strict attention to brewing ratios. Each day, we are fastidious in dialing in our espressos and coffees; striving to showcase the natural flavors, acids, and aromatics of the beans. Once we are comfortably dialed in, we weigh out all of our espresso shots and our pour over doses to maintain consistency.  

Do you roast your own beans in-house? Caffé Streets does not roast for now, but we carry a wide selection light to medium roast espresso blends and single origin coffees from roasters all over the country. Our mainstays are Heart Roasters, Sightglass, and Handsome Roasters.

Can you describe the interior of the coffee shop?    The dining area is paneled wall to wall with 'marbleized' bamboo., a special light brown wood with a figure that resembles zebra stripes. To promote a more sociable coffee experience, we have foregone furnishing the shop with individual tables and instead decked out our dining room with long communal tables and benches, also fashioned out of bamboo.

Over our kitchen entrance is a customized stained glass panel with our logo. On the north and south dining room walls we have two 4' X 6' lightboxes with prints of Wicker Park's famed six corners intersection (photo by Darko) and a picture of a bearded madman in coke bottle glasses and a house dress drinking from one of our mugs. Recently, we hung up a bunch of neon painted deer skulls with antlers on the walls. Our light fixtures are also fairly unique, including one made out of old surveillance cameras and our trademark municipal street light fixtures over the bar area.  

What are some of your favorite blends or specialty coffee drinks that you serve? Please describe. For the past year or so, we have served Heart Roasters' "Stereo Blend" as our house espresso. Despite the seasonally rotating components of the blend (sometimes it's a Brazil/Ethiopia blend, currently it's a Costa Rica/El Salvador), Stereo has been a consistently outstanding house espresso, with lots of complexity and high notes for the stand-alone espresso drinkers and a nice chocolate-y roundness for customers who drink espresso with milk. We have also recently fallen in love with Sightglass's "Owl's Howl" blend on espresso, which when pulled properly has a creamy honey and wild mango finish.

What kind of food do you serve?  We are baking some of the best sweet & savory scones in the city. We have Blackberry Ricotta, Pear Rosemary, Gluten Free Mixed Berry, Bacon Parmesan Chive and Sundried Tomato Feta. We also carry a selection of Croissants and sweet breads as well. We always try to incorporate organic & seasonal ingredients as much as possible.

Anything else that you are known for?   Our slow drip-brewing tower is beautiful to look act, and makes some of the best cold brew iced coffee in the city. The tower sends a droplet of cold water through a small metal spigot once every 1 1/2 seconds through a small cylinder of coffee grounds. The extraction process takes approximately 14-16 hours and produces a syrupy, heavily concentrated ice coffee with a sweet, almost bourbon-y finish. Because this concentrate is so potent, we serve it two ways: either cut 50/50 with water over a cup of ice, or in a 6 oz pour of the un-cut concentrate which we call our "neat".

Sustainability and ecological consciousness are global issues that concern private citizens and businesses alike the world over. At Caffé Streets, we try to incorporate sustainable elements and practices in as many facets of our business as possible, from a responsible recycling policy to conservation of utilities to the building materials in our dining area.

Basic recycling is one simple, every day sustainable aspect of Caffé Streets’ business model. Our staff separates all recyclable materials from the regular waste and places them in the designated recycling bin at the end of the night. In addition, Streets puts out both a trash basket and a clearly-marked recycling basket in the dining area so that our customers also dispose of their waste responsibly.

Our space itself features numerous sustainable elements. Our eye-catching wooden floors, tables, and wall paneling are made from recycled bamboo and bamboo overgrowth. The majority of our light fixtures are fitted with LED lights or CFL bulbs instead of traditional light bulbs, for better energy efficiency. Our bathroom lights are also motion activated, to eliminate wasted electricity when patrons aren’t using the facilities.

Considering that Caffé Streets is a busy coffee shop, we understandably consume a great deal of hot water during a given business day. Knowing this, we installed a high efficiency water heater and furnace that consume an average of 10-50% less energy than most models. Running a coffee shop that meets all food safety and health codes unfortunately necessitates the use of many cleaning agents, some of them caustic or toxic in nature, but we try to substitute non-toxic cleaners whenever possible. For example, we use a natural drain cleaner with live microbial organisms to clean out our drains instead of relying on noxious commercial drain cleaners.

Caffé Streets also seeks out small and/or local vendors who share both our environmental concerns and standards of quality. For example, our milk is provided by Kilgus Farmstead in nearby Fairbury, IL. We chose this dairy not only for its locality, but also because of the high-quality, incredibly fresh milk they produce from ethically-treated, pasture-fed cattle without the use of rBST’s or other growth hormones. Heart Roasters, one of our primary coffee suppliers, roasts some of the most delicious coffee in the Pacific Northwest and has also recently switched the majority of their packaging over to bio-degradable bags.

Although there are certainly additional measures Caffé Streets can take in the future to become more sustainable, we are pleased that we have thus far been able to run a successful, quality coffee shop while implementing a greener business model.

People ask where do I find the energy to run a business and still have time for myself. Truth be told, one of the only things that gets me through my busy life, is my fresh veggie juice that I drink religiously every day. Economic Sustainability

Bamboo has been used through history not only because of the strength of the material, but also through the renewable prospects. Over the years, wood has become more and more scarce. This is simply because it takes sixty years to produce a full-grown tree. Species of bamboo equal to the height and width of a tree take as little as sixty days to mature completely.

Bamboo is also easy to grow, because of the root systems. Running bamboo species are especially easy to grow, as they produce several shoots at a time, and will take over as much room as they possibly can.

The unknown building material and resource of the future, bamboo has had a long and rich history. Bamboo is being used not only for building, but it is becoming increasingly popular in fabric, towels and bed sheets – surprisingly it is extremely soft, durable and breathes effortlessly.
