What are defoamers / antifoams ?
Defoamers / antifoams are surface active substances – tensides - who are reducing the surface tension of a liquid
Defoamers are working more or less spontaneouslyAntifoams are acting more or less preventively
S o l u t i o n s . T a i l o r m a d e . W o r l d w i d e
How do defoamers / antifoams act ?
If water, foam activ substances and turbulencesare at the same place -> foam generates!
Foam bubbles contain a hugh amount of energy, due to the level of surface tension of the medium. The higher the surface tension, the smaller the bubble, the higher the level of contained energy
The lower the surface tension is, the bigger the foam bubbles, the easier they collapse.

How do defoamers / antifoams act ?
Defoamers / Antifoams are workingbest, when the areplaced at the boarderline betweenliquid and gas

Different types of antifoams
• esters on vegetable and synthetic base Struktol SB 303
• Polyalkylene glycols• fatty alcohols• dispersions of silica etc.• silicone emulsions
Struktol SB 2071• combination of a.m. products• powdered antifoams (“dry liquids”)

Where to dose defoamers / antifoams
The dosage points of defoamers / antifoams reallydepend on the process conditions and the equipmentitself.
Mainly defoamers / antifoams are dosed into the fermenter but also during the substrate preparationand right before the DDGS process starts.
Defoamers are also doesd before the distillingprocess.
The recommended way of dosing Struktol defoamers is to do it in controlled, undiluted preventive form.
Therefore Struktol provides control and dosagesystems.

Recommended products
For the startup phase of a plant we recommend a silicon emulsion, like our Struktol SB 2071- E-Numbercertified.
This defoamer is a general purpose defoamer and ready to use in every stage of the process.
Alternatively we recommend a silicon free product -Struktol SB 304 - which also complies to the FDA regulation.

Why does the foam situation vary by the use of different substrates ?
- Level of substrate entrained proteinsMore proteins -> tendencially more foam
- Metabolites of the used yeast strainCO2 , proteinogenic structures in accordance with the used
yeast strain
- Content of polysaccharides in the fermentation brewThe more sugar, tendencially more foam
S o l u t i o n s . T a i l o r m a d e . W o r l d w i d e
Does antifoams harm the production process?
In order to insure the quality of a high level product Struktol antifoamsare frequently tested at independent institutes to verify that there is no harm for e.g. a yeast fermentation with regard to yeast growth, etc.
If the antifoam is dosed in the recommended way – concentration, volume - there is no risk for the production process as Paracelsiustold us „Sola dosis facit venenum“
Due to the fact that the recommended Antifoams are food approved, there is also no risk for the DDSG production.
S o l u t i o n s . T a i l o r m a d e . W o r l d w i d e
What are the benefit of using antifoams
Often antifoams are used in order to run the process, because withoutit is immpossible.
If you want to utilise the full capacity of your equipment, antifoams /defoamers could help to realize it.
Antifoams / Defoamers could also make your process more stable, ifthey are dosed controlled and automatically.

Pro and contra – defoaming methodes
Discontinous, preventive defoamingPro
-Easy to handle technique -Contra
Doing an overdose -> losing money, influencing the fermentation process (yeast growth, etc.)
Continuous, controlled defoamingPro
- lower defoamer consumption -> saving money
