The advantages are clear to see, but what of the downsides for the restaurant operator? Smoke emissions have meant a compulsory fitting of expensive extractor units to protect both staff and customers. The heat up time of the traditional bars and diffusers means an erosion of precious margins, coupled with filters costs and maintenance of exhaust channels due to excessive smoke from the grills, or worse still heavy smoke emissions to atmosphere. Chargrills that are internally covered in residue from cooking which also contam-inate the function of the spark ignitors and pilot lights. Dripping oils from the food flaring which can lead to food waste, extractor air flows that have to be so high that they draw out the very same air that has been heated by the gas consuming heating boiler, the list goes on.

The Grillstream Commercial system takes over immediately after the gas burners themselves, the diffusers are designed to offer the optimum heat transfer from the burners to the cooking area. The Grillstream Commercial cooking area features a heavy duty design to ensure maximum heat sink retention even during maximum loading so no loss of valuable cooking space / time and profit. With its unique and patented open bar double layer grill, that allows fats and oils to be col-lected in its bespoke interlocking channel system where it is directed to the existing collection point inside the chargrill itself. The results are a more flexible system allowing burners to be turned down during quieter periods saving on valuable gas. Extensive independent tests have shown a massive reduction of smoke emissions in the order of 80% over existing cast grill bars. Chefs report equivalent cooking times using less gas and achieving succulent and appetising meals every time as intended. The reduction in smoke emissions is a ma-jor solution for environmental and safety concerns, coupled with a more manageable cleaning regime. These are major cost and time factors in the running of all restaurant sites and can be more acute in city centres where the combined outputs of the many establishments leads to tougher demands from the local authorities and neighbouring businesses.
