Life-changingfood

When blogger and Quirky Cooking author, Jo Whitton

joined forces with whole food chef and writer Fouad Kassab something life-changing was bound to happen!

After individually overcoming health issues with a whole foods approach, they teamed up to create Life-Changing Food, an instant classic that focuses on empowering you to reclaim your health through eating a nutritious whole food diet. This book will change the way you think about food, for life.

Jo reversed life-long food intolerances and resolved her underweight issues; she also healed her young son Isaac’s severe OCD (Obsessive Compulsive Disorder) and anxiety through the GAPS (Gut and Psychology Syndrome) diet.

Fouad lost over 25 kilos and reversed life-long obesity problems, eczema, hay fever and systemic acne. The two friends connected over their passion for health and whole foods, and now work together to inspire others to return to a way of eating that has nourished human beings for thousands of years. Through their cookbook, gut health program, podcast,

seminars, health retreats, website and social media, they share their stories, research, recipes and passion for good food with over four million people each year. The Quirky Cooking online blog is one of Australia’s most prominent and loved online blogs for healthy eating, and has the same message as Life-Changing Food and that is, eat whole foods.

Throughout the entire book, authors Jo and Fouad explore the nuances and intricacies of this message of whole food living and provide the reader with a powerful, life-changing strategy to orient themselves towards better health.

Those of us with food intolerances will be glad to know that Life-Changing Food is entirely gluten-free (Jo and Fouad explain why in the book), and is packed-full with gut-friendly recipes, as well as those that allow the reintroduction of foods after intolerances are healed. Life-Changing Food Recipe

Makes 30 biscuits

Ingredients• 100g macadamias• 200g tapioca starch• 200g almond meal• 100g coconut sugar• 190g cold butter cut in

cubes or 190g coconut oil• 2 tbsp rosewater• 100g currants

Thermomix® method1. Place macadamias into

TM bowl and blend 4 sec/speed 5. Set aside.

2. Place tapioca starch, almond meal, coconutsugar, butter or coconutoil and rosewater into TM bowl and blend 10 sec/speed 6.3. Add currants and reserved macadamia and mix 4 sec/speed 5, using spatula.

4. Lay out a 40cm long piece of baking paper and place the shortbread mixture on top. Place another piece of baking paper on top and, using a rolling pin, roll out pastry to an 8-10mm thickness. Transfer to a fl at tray (still on paper) and place in fridge for 45-60 mins.5. Preheat oven to 150°C. Line two large baking trays with baking paper and set aside. 6. Remove the shortbread mixture from the fridge cut into desired shapes and place on prepared tray. Bake for 30-40 mins then leave to cool. Serve warm or at room temperature (any dough cut offs may require refrigeration before shaping and baking as they may be too soft to work with).Conventional method1. Place macadamias into a large and powerful food processor, and chop at high speed, until they resemble coarse breadcrumbs (approx. 15-20sec, depending on processor)Set aside.2. Place tapioca starch, almond meal, coconut sugar, butter or coconut oil and rosewater into food processor, and mix onhigh for 15-20 sec, or until mixture is homogenous and you can’t see the butter or coconut oil.3. Remove to a medium-sized bowl. Add currants and reserved macadamia and combine well, using a spatula or wooden spoon.

Restoring your acid/alkaline balance is critical for optimum

health. Go Vita health consultants explain why and how keeping a balanced pH should be your ultimate health goal.

Maintaining an overall slightly alkaline body pH balance of 7.30–7.45 can help you stay in good health. Diet has a huge role in its ability to maintain pH balance, and while the body can actually be too alkaline, with processed, modern diets, it’s more common for people to be overly acidic. An overly acidic body (known as acidosis) can’t function properly, creating a range of problems, including digestive, immune, nervous, and reproductive issues.

According to Larissa Cohen, founder of EASYpH, an imbalanced overall body pH could be the cause of many common problems such as constipation, poor digestion, weight gain, aches and pains, heartburn, headaches, frequent colds, fatigue and sleeplessness.

“Our goal is to balance out pH (not achieve total alkalinity) because every hormone, neurotransmitter and chemical reaction in the body works optimally at a

specifi c pH. If the pH is outside this range, bodily processes are compromised. For example, our stomach acid is very low pH, so it can effectively digest food,” she said.

“The only way you can fi nd out if you are too acidic is by testing. Testing is easily done with a urine or saliva pH kit, such as the EASYpH testing kit that you can purchase at your local Go Vita store. Most people are too acidic, experiencing chronic low-level acidosis. This is caused by unhealthy lifestyles, overeating and consuming processed food, white bread, sugar, take-aways, soft drinks, alcohol, tea and coffee.”

A balanced pH may help promote healthy body weight and normal digestion; prevent and manage diabetes; promote effi cient heart function; reduce the risk of hypertension; protect against premature ageing; reduce the risk of gout; and promote energy, physical vitality and stamina; enhanced mental clarity and acuity; recovery from illness, injury and exertion; good bone health, digestive health and immunity.

To bring your body into the perfect pH balance ensure your diet is as unprocessed and natural as possible and follow these easy tips:

1Eat lots of vegetables, especially the green leafy ones. Greens like kale,

spinach, lettuce, and collard greens are great alkaline foods to incorporate into into main dishes or have in smoothies

for breakfast or snacks. Root vegetables like sweet potatoes, potatoes, yams, and carrots are also alkaline, as are cruciferous vegetables like broccoli, Brussels sprouts, cabbage, and caulifl ower. At least three-quarters of your plate should be salad and/or cooked vegetables. Fresh vegetables are more alkaline-forming than cooked vegetables. Also remember to ‘eat a rainbow’ – a variety of different colour vegetables – for optimal nutrition.

pH explainedpH stands for ‘potential of hydrogen’, which is a

measurement of the hydrogen ion concentration. The total

pH scale ranges from 1 to 14, with 7 considered to be neutral. A pH less than 7 is said to be

acidic and solutions with a pH greater than 7 are alkaline.

3Avoid additives, including artifi cial sweeteners. Preservatives, additives

and food colourings are highly acid-forming. If the body can’t eliminate or neutralise them, it will store them away in the tissues, especially in fat cells. The body will neutralise acids and chemicals with alkaline minerals, even using calcium as a buffer, leeching it out of bones and increasing the risk of osteoporosis.

4Avoid or reduce acid-forming tea, coffee, soft drinks, fruit juices, sports

drinks and alcohol. Water and herbal teas are your best options.

5Take a green supplement. Adding green supplements to your smoothie

or making a green drink provides hydration and an alkalising energy boost. Green drinks offer a large variety of nutrients in an easy-to-absorb form. Poor growing conditions and lengthy storage of vegetables means they don’t necessarilyhave optimal vitamin and nutrient content, making green drinks a valuable dietary supplement.

6Eliminate or reduce sugar. Sugar is devoid of nutrition and is acid-

forming.

7Eat alkalising snacks. Unsalted fresh nuts are high in nutrients and a small

handful make an excellent snack. Whole almonds are the most alkaline-forming of nuts and are high in calcium; cashews, macadamia andchestnuts are also great. Avocado is highly alkalising and a fantastic quick meal, being high in nutrients and healthy fatsand minerals.

Baked Chocolate Cheesecake Makes 8 slicesFrom Sugar-free Baking

filling• 450g quark• 3 large eggs• 1 large egg, yolk only• 130g Perfect Sweet® xylitol• 50g cacao powder• 1 tsp pure vanilla extract• 200g fresh berries, to decorate• Fresh mint leaves, to decorate

coconut base• 1 large egg, white only• 10g Perfect Sweet® xylitol• 70g desiccated coconut, toasted• Pinch of salt

Method:BASE: Preheat oven to 160°C/140°C fan-forced. Wrap the outside of a 20cm spring form pan with aluminium foil to prevent water seeping into cheesecake while baking. Lightly whisk the egg white, xylitol and salt in clean bowl. Add the

coconut and combine. Use fi ngertips to press mixture into base of spring form pan.FILLING: Use an electric beater on medium to beat quark, eggs and egg yolk until creamy. Add xylitol, cacao and vanilla extract and beat until combined. Pour fi lling over coconut base. Place pan in a baking tray and pour in enough boiling water to come halfway up side of pan.

Bake for 30 minutes or until set, so centre does not wobble when pan is gently shaken. Cool cheesecake at room temperature to prevent cracks forming. Leave in pan, refrigerate overnight. Decorate with berries and mint leaves.

Chocolate Raspberry Mousse Serves 6 • Created by The Little Plantation

Decoration• Loving Earth Buckinis chocolate clusters • Raspberries (optional) • Vegan yoghurt (optional)

MOUSSE• 1 block (80g) Loving Earth Raspberry Chocolate • ¾ cup (180 – 200ml) almond milk • 2-4 tbsp sweetener of your choice

Method: 1. Place chocolate in heat proof bowl over a pot of water on stovetop. Gently heat. Ensure bottom of bowl doesn’t touch water – this may cause the chocolate to become a bit gritty. Let the chocolate melt completely in the bowl.2. Set bowl with chocolate aside for a few minutes - cool slightly but make sure it remains runny before you add milk and sweetener (optional). Mix all the ingredients with an electric mixer for about 7-8 minutes until little air bubbles start to form (don’t panic if they don’t appear, as long as you’ve mixed for 7-8 minutes, it’ll be fi ne). While mixture still liquid-y, pour and distribute evenly into six small ramekins. 3. Place in the fridge for about an hour or until set. Remove from the fridge for about 5-10 minutes before decorating with Buckinis, raspberries and yoghurt.

Ingredients• ¼ cup coconut cream• 200g dark chocolate

(45% cocoa solids),chopped roughly

• 2 cups Brookfarmgluten-free granola

• ½ cup desiccated coconut,plus 2 tbsp extra

• ¼ cup shelled salted pistachios • ¼ cup dried cranberries• Extra pistachios, cranberries

and macadamias to top

Method: 1. Line a square 20cm slice tin with baking paper. 2. Place coconut cream in small saucepan and heat over low heat until it comes to a simmer. Remove from heat and add chopped chocolate. Stir, until chocolate is glossy and melted. 3. Place granola, ½ cup desiccated coconut, cranberries and pistachios in large bowl and mix well. Add half melted chocolate and stir to combine. Spoon mixture over base of tin, pressing gently into corners. 4. Add extra 2 tablespoons desiccated coconut to remaining melted chocolate and mix. Pour over the slice and spread evenly. 5. Top with extra pistachios, cranberries and macadamias.6. Refrigerate overnight cut into 16 squares. *Check consistency and add a little extra coconut cream if needed.
