Ginger Chicken Lettuce Wraps

1 lb. chicken breast, cut into small cubes*

1/2 cup of crimini mushrooms, chopped

1 tbsp. sesame oil 4 scallions, chopped

salt and black pepper 1/2 a can of diced water chestnuts

2 tbsp. minced ginger 1/2 lime

2 large garlic cloves, chopped

3 tbsp. soy sauce

1/2 cup red, orange, or yellow pepper, chopped 2 tbsp. honey

1/4 cup of cashews, chopped

1 head of Bibb lettuce, washed

* You may substitute pork, tofu, or shrimp.

1. Heat a large, nonstick skillet over medium high heat. Add the oil once the pan is hot.

2. Add the chicken and season with salt and pepper.

3. Stir fry for 2-3 minutes, until the meat is seared. Then add the garlic, ginger, peppers, cashews, and mushrooms. Cook for 3 minutes more.

4. Add three scallions and water chestnuts; stir fry for one minute. Then, add the honey and soy sauce. Cook for one more minute.

5. Remove the pan from the heat. Garnish chicken with one more scallion and lime juice.

6. Serve with two Bibb lettuce leaves.
