to prepare. Here’s a quick low-fat recipe your family is sure to enjoy.

LINGUINE WITH SWEET BELL PEPPER SAUCE

● 1 Tbsp olive oil

● 4 peppers, any color, seeded & cut

into matchstick strips

● 2 carrots, thinly sliced or grated

● 1 ripe pear (or apple), peeled

& thinly sliced

● 2 crushed tomatoes

● 1 Tbsp chopped basil

● 1 tsp minced garlic

● salt & pepper (optional)

Heat oil over medium heat, add peppers and carrots, cook for about 10 minutes,

then add remaining ingredients. Bring mixture to a boil, cover, reduce heat, and

simmer for about 45 minutes. Cook linguine according to directions, drain,

and toss with the sauce. Top with your favorite cheese.
