Let us introduce ourselves first...

Hello people on earth!

Our names are Melissa and Kay. We're both a 15-year-old girl

from Holland.

In today's issue we're going to share some of our favorite

recipes which are really easy and quick to make for those who

don't have much time to make a proper meal or if you're just

lazy...

BREAKFASTAvocado toastServes: 1

Ingredients– ½ avocado– 1 slice bread– cherry tomatoes– salt– pepper– lemon or lime juice

How to make?Mash up half an avocado with salt, pepper and lemon or lime juice to taste. Take some cherry tomatoes and cut them in half. Spread the avocado mash on a lightly toasted piece of bread, after that you put the tomatoes on top of it and you have it! It's that easy and this only takes like 2 minutes or so.

Vanilla overnights oatsServes: 1

Ingredients– 1 bag of instant oats– 150ml almond milk– 100ml vanilla yoghurt- 1 baby pinch of salt– blueberries– pecans– brown sugar

How to make?Put all the ingredients, in the order listed, in an individual food storage container. Except for the toppings. Don't stir it and refrigerate overnight.

In the morning, stir up the mixture; it should be thick and the oats should be soft. Then add the toppings (of your choice) to it.

Mango-yogurt smoothieServes: 2Time: 5 minutes

Ingredients- 1 ripe mango- 85g plain yogurt- 200ml milk- honey

How to make?1. You start by taking off the skin of the mango, and then cutting the mango in pieces. When you've cut the mango, blend it until it's smooth.2. When you've got the mango liquid, pour in the milk and the yogurt and blend well. 3. Add in as much honey (or any other sweetener of your choice) as you think is needed.4. Pour the smoothie in a glass and enjoy your drink.

Breakfast pizzaServes: 1Time: 5 to 10 minutes

Ingredients– 1 English muffin– sliced tomatoes– shredded mozzarella– basil, finely chopped

How to make?Top one half of the English muffin with the sliced tomato and then shredded mozzarella. Place it on a baking sheet, along with the other half of the English muffin. Put it in the oven until the cheese has melted. Remove from the oven and add as much tomatoe and basil as you want. Put the other half of the muffin on top.

LUNCH

Banana pancakesServes: 1

Ingredients– 1 banana– 2 eggs– butter– syrup or honey – berries (optional)

How to make?First, you need to take a large banana and mash it all up with a fork until you have a smooth substance. While you're mashing up the banana, you need to put some butter in the pan. Then you crack 2 eggs and mix it with the banana. After you've done that you just pour the batter on a hot pan and cook it like you'd cook a normal pancake. While they're hot off the pan, spread them with a little butter, drizzle it with syrup or any other sweetener you like and then throw some berries on top of it. This only takes like 2 minutes and it tastes heavenly!

Apple sandwichesServes: 1

Ingredients– 2 small apples- lemon juice– peanut or almond butter– granola- chocolate chips

How to make?Slice the apples into rounds first, then use a small cookie cutter to remove the core from the center of each slice. Spread one side with of half of the apple slices with peanut or almond butter then sprinkle with chocolate chips and granola. After that you put the other slice on top of it and you’re done! You can always change the toppings if you don’t like granola or chocolate chips. If you don’t eat them right away, I’d suggest you to brush the apple slices with some lemon juice to prevent them from turning brown

French toastieServes: 1Time: 10 minutes

Ingredients– 2 slices of bread– butter– cheese– ham– 1 tablespoon of oil– salt– salad leaves

How to make?Butter the outsides of the bread, and then put your cheese and ham on the not-buttered side. Place in a preheated toastie-maker for about 4 minutes until it’s golden brown.

BLT + avocado wrapServes: 1Time: 10 to 15 minutes

Ingredients- tomato- bacon- lettuce- avocado- lemon juice- wrap

How to make?Mash an avocado with lemon juice, then spread on a wrap. Put on a couple of lettuce leaves, sliced tomato, and bacon. Roll the wrap up and enjoy.

DINNERChicken PastaServes: 4Time: 15 to 20 minutes

Ingredients- 350g pasta bows- 300g broccoli- 1 tbsp. olive oil- 3 chicken breasts- 2 crushed garlic cloves

How to make?Cook the pasta following the packet instructions, a little before the pasta is done, add the broccoli. While cooking the pasta, fry the chicken, adding the garlic in the last 2 minutes. Add mustard to 3 tablespoons of pasta water, and mix well. Combine the pasta, broccoli and chicken, and cover in the mustard-water dressing.

Shrimp, leek and spinach pastaServes: 4Time: 20 minutes

Ingredients- pasta of your choice- 2 tbsp. of unsalted butter- 2 leeks - salt and black pepper- 400gr peeled and deveined raw shrimps- 280gr baby spinach- 150gr cooking cream How to make?Cook the pasta following the package. Meanwhile, add the butter in another pan and add the leeks, salt, and pepper. Add the shrimp and cook until they're opaque. Add the cream to the pasta and mix well. Add that mixture to the leeks and shrimp, and add the spinach. Now you're done and ready to eat.

Scrambled eggs with vegetablesServes: 1Time: 15 minutes

Ingredients- 1 tbsp. butter- 2 eggs- ½ red bell pepper, chopped- ½ small onion, chopped- zucchini, chopped- shredded cheddar cheese- salt and black pepper

How to make?Heat a pan over medium heat and add butter. Once the butter is melted, you add the onion and cook it 3-5 minutes. Then add the red bell pepper and zucchini. Cook another 5 minutes or until the vegetables are soft. Beat the eggs in a bowl and pour it into the pan. Cook it for a minute and flip it over. Sprinkle some cheese over it and cook it for another minute until the cheese is melted. Season with salt and pepper. Remove it from the heat and you can serve it immediately.Fried riceServes: 8

Time: 30 minutes

Ingredients- 3 cups cooked rice- 2 tbsp. sesame oil- 1 small white onion, chopped- 1 cup frozen peas and carrots- 2 tbsp. soy sauce- 2 eggs, lightly beaten- 2 tbsp. green onions, chopped

How to make?Preheat a large wok to medium heat. Pour oil in the bottom. Add onion, peas and carrots and fry until tender. Slide the onion, peas and carrots to the side, and pour the beaten eggs to the other side. Scramble the eggs with a spatula. Once cooked, mix the eggs with the vegetables. Add the rice to the veggie and egg mixture. Pour soy sauce on top. Stir and fry the rice and the veggie mixture until heated through and combined. Add chopped green onions if desired. I suggest you to cook the rice the night before and refrigerate it. But if you don't, it will still taste great though.
