Food & Beverage Policies and Procedures As a champion of low-impact, environmentally responsible events, the David Brower Center maintains a near-zero waste policy requiring the following for all events: ALL FOOD & BEVERAGE SERVICE ITEMS USED ON-SITE MUST BE REUSEABLE, RECYCLABLE, OR COMPOSTABLE. ITEMS THAT DO NOT FALL INTO ONE OF THESE THREE CATEGORIES ARE NOT PERMITTED. Small non-compostable plastic items that aren’t recyclable in Berkeley’s recycling facility (such as single-serve creamers, coffee lids, straws, and stirrers) are prohibited. Single-use items in non-compostable or recyclable packaging (such as butter packets, granola bars, snack bags, and candy bars) are prohibited. Single-use plastic water, juice, or soda bottles are prohibited. The use of reusable service ware (such as china, glassware, steel/silver utensils, linens and cloth napkins) is encouraged whenever possible, with certified compostable alternatives provided in all other instances. Floor mats are required under all bars, ice containers, or areas utilizing liquids, and over all carpeted prep areas. Continuous bussing and removal of waste within the rented spaces must be provided throughout an event to prevent breakage and spillage or the accumulation of food waste. All waste material must be collected and properly sorted with the intention of minimizing volume. In the event of contaminated bins, the client is responsible for ensuring that waste materials are resorted appropriately. All landfill waste must be taken off-premise for disposal. Compost and recycling facilities are provided. All staging, kitchen, and bar areas must be thoroughly cleaned and all associated waste properly disposed of following an event. Please plan 2 minutes at the start of your event to provide information to your guests about the green policies of the building and the proper sorting of waste. Your House Manager will assist with this. The use of caterers that are not on our approved vendor list must be preapproved by the Brower Center Events Department, and is subject to an outside catering fee, not to exceed three hundred dollars ($300). Compliance with the above policies is mandatory. A $100 penalty per occurrence will be assessed for any violation thereof.
