Ingredients 1/2 kg chicken with bones Garlic, at least half a bulb Black peppercorns 4 Tbsp light soy sauce 2 tsp dark soy sauce 2 Tbsp white vinegar, or small lime/lemon juice Optional: 1 Tbsp sugar 2 bay leaves 1 cup (~250 ml) water Salt, to taste Instructions Cut chicken into serving pieces Place in deep skillet. Separate garlic cloves and lightly crush. No need to peel. Add garlic, lightly crushed pepper, 1 tsp salt, soy sauce and bay leaves to the skillet. Mix with hand. Lightly massage in the ingredients. Add 1 cup water. Mix again. Marinate for about 30 minutes. Place skillet in medium heat. Bring to boil. Allow to boil for about 3 minutes before stirring. Cover. Stir every few minutes until the meat is soft. Add white vinegar into the sauce and mix. Lower the fire. Cover again until meat is tender to liking. Mix every few minutes. Add the sugar if desired. Cook until sauce is reduced to own liking. Or continue reduction until the oils come out and the meats start to fry in its own oil. (Dry version.)
