Niman Ranch started in the early 1970’s on family-
owned cattle ranch in Bolinas, CA, a small coastal town just north of San Francisco. Back then, our cattle were
raised with care using traditional, humane methods with wholesome, all-natural feeds – the same way we raise
them today. The buzz about our great tasting beef spread quickly and, before long, our burgers and steaks
became favorites in local grocery stores and popular San Francisco Bay area restaurants.
In 1995, we expanded to raising hogs when we met farmer Paul Willis of Thornton, Iowa. At the time, Paul
was busy revitalizing sustainable hog farming methods in the Midwest, moving away from the common
industrial practices. His dedication to animal welfare and stewardship of the land closely matched our
stringent principles. A partnership was quickly formed, allowing us to proudly offer a variety of proteins.
Today our network includes more than 700 family farmers and ranchers throughout the Midwest, Rocky Mountains, Pacific Northwest and Mid-Atlantic.
Whether they’re raising hogs, cattle, lamb or chickens for eggs, they all share our commitment to raising livestock under strict protocols, and the belief that humane

produced in the USA) and high choice are aged in our specially designed aging
rooms. The steaks age from 21-60 days or longer, and the rooms are filled with 5-6,000 steaks at a time, which is important for the promotion of good bacteria. The
controlled atmosphere draws out moisture and concentrates flavor. As the steaks age, the enzymes in the beef naturally tenderize the meat. The flavor of our aged
steaks is unique and sought after by the greatest steak connoisseurs in the world.

Turtle Beach Natural Hamburger Program
Turtle Beach Natural Foodservice partners with Plymouth Beef out of the Bronx,
New York, to create custom blends of hamburger patties for all tastes. All of our chopped beef blends are made from 100% whole muscles from domestically raised
beef. We never use trimmings or “pink slime” in our blends. The meat is chopped at very cold temperatures, which keeps the meat coarse and prevents it from
getting overworked. Our hamburger patties, available in any size from 2-8oz or 10oz, are formed by a low pressure machine with a noodle textured fill system.
This ensures a loosely packed patty that is juicier and more flavorful than a hand packed patty. Below you will find a list of our most popular blends, however we

Main Facility
Our 50,000 square foot, state-of-the-art facility is located in Reno, Nevada. It houses an oversized commercial size freezer and cooler, meat and fish processing
rooms, and our main office. We have a full-time USDA inspector on site to ensure we continually meet and exceed the strictest federal food safety guidelines.

Food Safety
Sierra Meat & Seafood is a leader in food safety. We operate under the inspection of the USDA and the FDA. Cleanliness and quality assurances are of the utmost
importance to us. We have strict requirements and high expectations for our suppliers of raw materials. Our employees are trained in HACCP, GMPs and food
safety. We are located in a state of the art processing facility that was custom-built in 2010. We do continuous microbiological testing of various surfaces and
products to ensure the safety of our customers.
Safe Quality Food Code The Safe Quality Food (SQF) code is a process and product certification standard.
The Level 2 certification is recognized by the Global Food Safety (GFSI) as a standard that meets its benchmark requirements. Products produced and
manufactured under the SQF Code certificate are widely accepted in global markets. Sierra Meat and Seafood earned the Level 2 certification with SQF in
December of 2010. Our certification is assurance that our food safety plans have
been implemented in accordance with the HACCP (Hazard Analysis and Critical Control Points) method.

Our breeders are chosen from only the best stock to produce healthy, great tasting birds. All our chickens are born and raised in the USA – and are fully
traceable back to their farm or ranch of origin. Day to day, they happily roam in
spacious heated or cooled barns, so they get plenty of exercise. Theirs are low-stress, humane, surroundings with no over-crowding, so they mature comfortably
and naturally. We allow them to eat when they want, so they grow happy and healthy according to their own natural time clocks.
Better than organic?
We take pride in meeting standards higher than what is required in most organic
programs. Our Naked birds are raised to the highest all-natural raising standards in the U.S.
Our Naked Chickens are never given antibiotics, even though organic programs allow antibiotics to be given
to day old chickens. In addition, our feed and our Naked Chickens are tested in a USDA approved
laboratory to ensure there are not pesticides, industrial contaminants, arsenic, and other residues
present. This testing is not required by organic standards.
What’s more, we heat the feed to eliminate any possible bacteria. Our feed is tested by a USDA-approved laboratory for pesticide residues, metals and toxins.
Our birds also drink only fresh water that is regularly tested for purity. And, because of these diligent regimens, we grow chickens that are naturally better
tasting and healthier for you ALWAYS. In addition, we raise our chickens in the cleanest, most natural environments to ensure we meet the highest health and
well-being standards in the industry. All our poultry are hand graded to standards higher than USDA Grade A, so you have yet another assurance of our quality.
To guarantee freshness, we carefully regulate to the ideal temperature every step of the way, from farm to fork. And because we aim to please even the most
discerning chefs, we then meticulously trim our chicken pieces so each is uniformly shaped and free of excess fat.
Our flavorful crab meat is available in various forms including (but not limited to):
Colossal, Jumbo Lump, Lump, Special Meat, Claw and Cocktail Fingers. The moist and succulent meat is excellent for use in crab cakes, stuffings, salads, and soups.
We use only the finest Blue Swimming Crab meat from China (Portunus Haanii), Vietnam (Portunus Pelagicus), Indonesia, and Thailand. We also offer Rock Crab
from Canada.
Our crab meat is harvested fresh all year, is available in Fresh or Frozen, and is pasteurized for your safety. Because
the pasteurization process requires heat, all our crab meat is fully cooked. This not only eliminates natural
microorganisms, it extends the shelf life of the crab meat as well.
Once pasteurized, this all-natural food has a refrigerated
shelf life of approximately one year. Newport International
was one of the first importers of Blue Swimming Crab meat and we have many facilities in different countries that
provide us with the versatility of supply to provide you with only the best quality crab meat possible.

Durham Ranch Wagyu are never administered hormones or growth enhancers and
are humanely treated. Most American Wagyu, also known as American Style Kobe Beef, are a cross between full blood Japanese Wagyu and either Red or Black
American Angus or Charolais. Durham Ranch Wagyu are born and raised in North America and consist of a minimum of 50% full blood Wagyu Beef.

OUR HISTORY
The creamery business was established in Doylestown, PA by the late Asher Lear.
The late George Sommer bought the dairy in 1918 and established a prosperous butter and egg business under the Sommer Maid trade name. When Mr. Sommer
died in 1941 the business was operated under the George Sommer Estate for 18 months until it was purchased by Harvey Umholtz. Under the direction of Mr.
Umholtz, Sommer Maid Creamery developed into one of the areas finest dairy
establishments. Eventually Sommer Maid merged with State Brand Dairies and AMPI. Today Sommer
Maid is owned by Frank Sexton Enterprises, a family owned and operated entity. What has never
changed is the company philosophy of bringing the best of Bucks County, Pa to our customers.

Central Milling is an employee owned and operated company. We are the Farmer, the Miller, and the Baker working together
with nature to preserve our farmland for tomorrow while educating the bakers today. It’s a simple idea that just makes
sense. The following words will give you an insight to how we consistently provide premium quality flour and grains.
Farmer
We are always on the hunt for grain with exceptional color, flavor, and
performance. These three factors contribute to what we call premium baking
qualities. Once we find these characteristics, we work directly with the farmer to grow the grain using sustainable methods that minimize impact to our
environment. The first step towards premium flour starts at the farm and requires a trusting relationship with the stewards of the land.
Our grain is farmed in very specific parts of the country. We select these farms
based on their geographic location. The main factors that attract our attention are altitude, weather patterns, and soil quality. If we approve the land, then we start a
long term relationship with the farmer and choose the varieties of wheat that will produce the highest quality grain with the greatest yield.
Miller
After the wheat is harvested, samples are taken into our lab and are tested for their color, flavor, and performance. This helps us to determine how we will blend
the wheat varieties and proteins for a better consistency all year long. If the wheat
complies with our standards, it is shipped to our mills in Northern Utah and stored in bins according to variety.
Central Milling is located next to the Logan River in Northern Utah, surrounded by the majestic Rocky Mountains. The Logan River provides the water that turns our
turbine which we use to power our milling operations.
We inspect and test the flour numerous times during the milling process to ensure that each lot is consistent from beginning to end. We mill our grain slow and cool
to minimize damage to the wheat and then age our flour, which allows it to oxidize naturally. After the aging period— which is typically around 14 days—the flour is
sent out to the bakeries or to other distribution hubs.
Baker
Our job is not complete when the flour or grain leaves our facilities. We follow and
support our flour everywhere it goes. If issues arise we are there to provide help
and resources. We have a full-time technical support staff to assist bakers during their entire bread baking process.
Safety First
Central Milling is a leader in the organic food industry on a number of levels. Heck,
organic certification agencies send their staff to train at our facilities. Our mills
have the highest levels of certification: SQF, Silliker Labs, AIB, and plenty of others.
Strides Towards Sustainability
We mill our premium organic flour using water power—hydroelectricity is
generated by our own water turbine. Our pallets of flour are bagged and wrapped using recycled and biodegradable materials. Our flour is shipped in Smart Way
certified low emission trucks. We strive to minimize the carbon footprint of our entire operation.
