This is a great way tostart the new year, andyes, there are plenty ofideas to increase nutri-ents and reduce fat andcalories in the foods youprepare at home. Beloware some favorites, pri-marily from Ohio StateUniversity Extension (see“Modifying a Recipe to beHealthier” at http://ohi-oline.osu.edu and eXten-

To reduce fat:Use evaporated skim
milk instead of cream.Use 1/4 cup egg sub-
stitute or two egg whitesin place of a whole egg.
In quick breads,muffins, brownies orcakes, substitute half orall of the oil, butter orother shortening withunsweetened apple-sauce, mashed bananasor fruit puree. Note: Mak-
ing this substitution willincrease carbohydratesin the end product —something to be aware ofif you have diabetes.
Use low-fat or nonfatyogurt in place of sourcream.
Use low-fat cottagecheese pureed untilsmooth or low-fat creamcheese in place of full-fatcream cheese.
Try lower-fat or nonfatversions of a variety offoods, especially milk,cheese, cream cheese,
mayonnaise, salad dress-ing and margarine.
Use an air popper forpopcorn.
To increase fiber:Replace half the all-
purpose flour in bakedgoods with whole-wheatflour.
Add oats or finelyground fiber-rich non-sweetened cereal to re-place some or all of thebread crumbs in arecipe, or to the crust orbatter when makingdesserts.
Add beans or barley tosoups, stews andcasseroles.
Add sauteed vegetables— cherry tomatoes,onions, spinach or zuc-chini, for example — toscrambled eggs.
Don’t peel apples, cu-cumbers, zucchini or po-tatoes before eating themor using them in recipes.
Choose high-fiber al-ternatives for cereal,bread and pasta — lookat the Nutrition Facts la-bels.
To increase other nu-trients:
Add cooked andmashed cauliflower tomashed potatoes, or addcooked chopped cauli-flower to macaroni andcheese.
Add chopped spinachor zucchini to pasta
sauce, soups andcasseroles.
For salads, choose ro-maine, endive or otherdark-green leafy lettuceinstead of iceberg lettuce,and include babyspinach leaves.
Increase calcium byadding nonfat milk or drymilk to a casserole’scream sauce or to creamsoups.
Increase antioxidantsby sprinkling hot sauceon foods. The capsaicinin it shows promise inanti-cancer studies,though it may take quitea bit to have a dis-cernible effect.

The markedand groomed trails pro-vide the highest level ofriding enjoyment for resi-dents and tourists alike.
Snowmobilers buildand maintain their trails.North America’s trail sys-tem is maintained by thesnowmobilers themselvesthrough area clubs andcouncils (groups ofclubs). Organized snow-mobilers see a need for atrail, plan its creation,and take on the responsi-bility and the financial
obligation to maintainthem during the year.
Snowmobilers are car-ing neighbors. Snowmo-bilers are involved withcharities throughout theU.S. and Canada. The In-ternational SnowmobileCouncil reported raisingmore than $3 million forcharity last seasonthrough state and provin-cial clubs.
The average snowmo-biler is 44 years old, mar-ried, with an annualhousehold income of$68,000. Eighty percentof snowmobilers use theirsled for trail riding andtouring. Top Advance Fee/Prepayment Scam:Nonexistent Loans
Most of the scams ad-vertise online and prom-ise things like no creditcheck or easy repaymentterms. Then the hook:you have to make the firstpayment upfront, youhave to buy an “insurance
policy,” or there is someother kind of fee that youhave to pay first to “se-cure” the loan. This year,we heard a new, aggres-sive twist on loan scams:consumers who werethreatened with lawsuitsand law enforcement ac-tion if they didn’t “payback” loans they said theyhad never even taken outin the first place.

up and then file a phonefraud report with the ap-propriate governmentagency (see below).

But the fileisn’t a new version ofFlash; it’s a virus or mal-ware that can steal confi-dential information fromyour computer or smartphone.
