Chapter 1 Dishes From Krystal Brown

VELVEETA PLEASE THIS IS REAL NACHO CHEESE

ingredients Directions~5 tablespoons of butter ~5 tablespoons of flour~2 cups of milk~1lb of sharp cheddar cheese shredded~1/2 package of taco seasonings ~1 small can of chopped green chili~a dash of salt to taste

Turn stove to med high.Make a rue by melting butter, and slowly whisking in flour, allow it to turn a golden color then slowly mix in milk. Do not overcook.Once milk is well mixed in add cheddar cheese.Add chopped green chili.Add taco packet seasonings and salt.Serve while hot.

Dishes From Krystal Brown continued......Grandma Yoko's Chicken Tonkatsu

ingredients Directions~2 lb boneless/skinless chicken breast or you can use pork (Tontaktsu means pork actually)~panko breadcrumbs~2 eggs~3 tablespoons milk/water*~dash of salt and pepper~frying oil~1 bottle of Tonkatsu sauce*use water for lighter batter*you can use BBQ sauce, ketchup, ranch sauce*

Heat oil on med high.Slice chicken to strips, and season both side lightly with salt and pepper.Make egg wash using milk/water.Put panko breadcrumbs in bag to shake.Take chicken coat in egg wash and add to panko bag shake well and coat evenly.Fry in oil until golden brown.

Lazy meat rolls ingredients Directions~2 rolls of already made dough, Pillsbury dough crescent rolls, or butter rolls, any kind.~1 1/2 pound ground beef or any kind of ground meat~3 tbs season salt~2 tbs pepper~2 chopped garlic cloves~2 tbs basil~1 tbs cumin~2 tsp olive oil

Heat olive oil on med, and add meat cook and drain.Add all seasonings and stir well. Let meat cool to warm.Roll out dough, or split apart biscuits/crescent rolls and add in any amount of meat depending on how big you want them. Heat oven on time from dough package and cook accordingly.Serve w/any side:french fries.

“It's Crack” (cuz you will be addicted)

ingredients Directions~1box of saltine crackers,~1 cup butter~1 cup packed brown sugar ~1 1/2 cup of chocolate chips

Heat oven to broil. Line a cookie sheet with foil.Arrange the crackers snugly in a single layer, filling the sheet completely.In a saucepan, melt the butter over medium low.Add the brown sugar and mix well. Let it cook until sugar is dissolved.Pour mixture evenly over crackers, spreading as necessary to cover evenly.Bake 4-7 minutes, or until the butter is bubbly whatever comes first, watch closely.Remove from the oven and sprinkle chocolate chips over the crackers. When the chocolate chips have softened, spread them over the crackers with a butter knife softly.Put in fridge until chocolate is all the way cool, about 8-10 mins.Break the formation with your hands in any size you want.

ingredients Directions~8-10 apples, best are the granny smith apples, and pippin but you can use any apples.~1/2 honey~Tablespoon Cinnamon~3tablespoons of water*if too thick for your taste you can mix in a little bit of water tablespoons at a time*

Peel Apples and slice taking out core, seeds.Heat stove on med-low heat.Add apples and water in large pot and let simmer till soft.Add Honey and Cinnamon, and smash apples leaving some chunky. Serve Hot.serve cold as a sweet applesauce, and smash apples more.

Yoko’s Gyoza ingredients Directions~1/2lb. Ground Pork~1/2 round cabbage, chopped~1 tsp. Garlic powder~1 tsp. Pepper~1 Tbsp. Shoyu~1 Tbsp. Sesame oil~1 package Gyoza or Wonton wrappers~Oil for cooking

Combine first 6 ingredients in a large bowl and mix together. Place a heaped teaspoon mixture down onto the center of each Gyoza wrapper and glaze edges with water.Pinch several times alongthe edges. Deep fry in hot oil, until golden brown. Serve immediately with shoyu.

PAVOLA ROLLS ingredients Directions~1 tsp butter, softened~3 egg whites~7 tbsp sugar~3/4 tsp cornstarch~3/4 tsp white vinegar~3/4 tsp vanilla extract~3/4 cup grated, unsweetened coconut~1/4 cup chopped nuts~3-4 cups strawberries, halved lengthwise~3/4 cup heavy cream

Preheat oven to 350Line 12 x 81/2 jelly roll pan or baking sheet with buttered baking paper.Beat egg whites with mixer until soft peaks form (1-2 min).Gradually add 6 tbsp sugar, beating constantly until stiff peaks form.Fold cornstarch, vinegar and vanilla into whites, spread in pan and sprinkle nuts and coconut over the top.Bake until meringue springs back lightly and lightly browned – 12-15 min.Cool in pan.Invert meringue onto clean work surface and peel off baking paper.Spread whipped cream over meringue and scatter strawberries on top.Roll long side of meringue onto itself.Transfer to platter.

ingredients Directions~Mashed potatoes from 2 1/4 potatoes or you can use mashed potato mix~1 lb. Sauerkraut, raw or cooked~ 3/4 lb. Ground beef or beef/Pork mixture~1 onion, diced~2 tbsp. Butter~salt, pepper~grease for pan~1 tbsp. Butter

Dice onion and in skillet saute’ in butter. Add ground meat and fry at high heat while stirring to make meat crumbly, add salt and pepper.Remove from heat. Grease baking pan.Spread one layer of mashed potatoes, add a layer of Sauerkraut. Add a good layer of ground beef.Repeat in that order until pan is full. The top layer must be mashed potatoes. Place a few flakes of butter on top and put in pre-heated oven at medium heat for 45 minutes.

Dishes From Chris Cuistas continued...... Yoko’s Spaghetti Sauce ingredients Directions~1 lb. Ground beef~1/2 onion, chopped~1 can tomato paste~1/2 cup ketchup~1/2 tsp. Oregano~1/2 tsp. Basil~1/2 tsp. Thyme~1 tsp. Black pepper~1tsp. Chili powder~3 Tbsp. Shoyu~1 cup water

In a pan over medium heat, cook onion until tender.Add meat and brown meat. Drain off fat. Add remaining ingredients and stir well.Lower heat to simmer. Cook at least 45 minutes or as long as a coupleof hours. Boil pasta as directed. Optional: add vegetables such aschopped mushrooms, zucchini. May also add drained red kidney beansto make chilli.

Chapter 3 Dishes From Lori Flauta-Lundy

BREAKFAST CASSAROLE ingredients Directions~1/2 loaf King's Hawaiian Bread~1 lb potagee sausage ~2 cups shredded cheddar cheese~6 eggs, beaten~2 cups milk~1 teaspoon dry mustard

**Sausage can be andoulle or any ground sausage**

Grease the bottom of a 9x13 casserole pan. Put the cut up bread and place in bottom of the pan. Sprinkle the crumbled sausage over bread pieces. Sprinkle Cheddar cheese over the sausage. Mix the eggs, milk and mustard together.Pour over casserole. Bake at 350 for 35-40 minutes.

THE THING ingredients Directions~1 stick butter or margarine, softened~1 box yellow cake mix~3 egg~1 1/2 cups pecans~1 - 8z. cream cheese, softened~1 box confectioner sugar

Soften butter and cream cheese.Mix: butter or margarine, box yellow cake mix, 1 egg, pecans.Press into 9x13 greased & floured pan.Mix: 2 eggs, cream cheese, andconfectioner sugar.Pour mixture in pan & bake at 350 for 45-50 minutes.Let cool, cut into squares.

ingredients Directions~1 lb. Lean Ground beef~1 Lg. chopped onion~3 cans (16 oz.) Mexican-style chili beans, undrained~1 can (16 oz.) whole kernel corn, undrained~1 can (16 oz.) chopped tomatoes, undrained~1 can (15 oz.) tomato sauce~1 ½ cups Water~1 can (4.5 oz.) chopped green chilies~1 pkg. (1.25 oz.) taco seasoning mix~1 Envelope Ranch Style Salad Dressing mix

Cook beef and onion in dutch oven, or pot until meat is brown, stirring until it crumbles, then drain.Stir in the rest of the ingredients, bring to a boil. Reduce heat and let simmer for 15 minutes.**May be frozen up to 3 months. Makes 3 ½ quarts. Each serving (1 cup) = 1 point (weight watchers recipe)**

GRANDMA USAI'S BANANA BREAD ingredients Directions~1 1/2 cup all purpose flour ~1 tsp. baking soda~1/2 tsp. salt~1/2 cup. soften butter~1 cup sugar ~2 beaten eggs ~1 tsp. vanilla~1/2 cup chopped nuts ~1 cup mashed bananas ~1/2 cup milk

Preheat oven at 350Soften ButterSift and set aside all. purpose flour, baking soda, and salt.In separate bowl, combine soft butter, sugar, and blend well. Add eggs and vanilla, mix well.Add chopped nuts, mashed bananas and milk.Add mixture to flour mixture and mix well. Pour into greased bread pans.Bake for 1 hour.Give it the knife test.

GRANDMA USAI'S BANANA FRITTERS ( Maruya)

ingredients Directions~1 cup flour~3 tbsp. Sugar~2 tsp. baking powder~3/4 cup milk~1 beaten egg ~1 tsp. Vanilla.~ 4 bananas

Combine flour, sugar, baking powder,milk, 1 beaten egg and Vanilla. Mix well and add sliced bananas.Heat up cooking oil, add spoonfuls of banana mixture and fry til golden brown. Place on paper towel.**Be sure oil is hot before making another batch so that the Maruya doesn't get oily. Also you can add more bananas if you still have batter left**

BABY JO'S CHICKEN AND LONG RICE ingredients Directions~ 2 or 3 lbs Fryer or Thighs (chopped in serving pieces)~3 Dry Mushroom (cut in strips)~1 Bundle Long Rice Noodles- soak until soft (cut 3inches long)~3 Stalks Green Onion (cut 2 inches long)~2 tbsp Salad Oil for cooking~1 Clove Garlic Crushed~1 Ginger Crushed~1/2 tsp Curry Powder~1 Qt Water~1/2 tsp Salt

Heat oil in heavy pot.Add ginger, garlic, chicken & stir-fry until light brown. Add water and mushroom, cook until tender (about 45 mins). Add salt, curry & cook for 15 mins. Add long rice, green onion, and simmer for 10 mins.Add a dash of salt & pepper **makes 6-8 servings**

NIKKI'S SHOYU CHICKEN ingredients Directions~ 6 chicken thighs, with bone & skin~1/2 cup sugar~1/2 cup soy sauce

Place ingredients in pot, bring to boil. Lower heat, cover & simmer for about 30-45 mins.**1 inch piece ginger, grated and 1 clove garlic, grated optional**

PINACBET ingredients Directions~4 oz Pork, cut~2 Tbs Garlic, chopped~2 Tbs Ginger, chopped~2 oz Opae (dried shrimp)~2 Tbs soy sauce~1 round Onion, sliced~1 Tomato, quartered~3 cups Chicken Stock~Salt & Pepper to taste~2 oz Fish Sauce~3 ea Eggplant, sliced~3 ea Bitter melon, sliced~8 fingers Okra~4 oz Long Beans~1/2 lb King Crab~4 oz Island Fish~8 ea Mussels~6 ea Scallops/Shrimp

Heat pork in a large pot that is lightly oiled on the bottom. Add garlic, ginger and opae.Mix together, then drizzle with soy sauce. Combine onion and tomato. Pour in the chicken stock and bring mix to a boil stirring occasionally. Season with salt and pepper.Add fish sauce. Mix in vegetables, stir and let sit a few minutes. Add in seafood and cook stew till ready.

DOUGHNUT ingredients Directions~5 large eggs~1/2 block butter (melted and cooled)~1/3 cup Carnation milk (mixed with equal amounts of water to make 2/3 cup)~1/4 teaspoon vanilla~3 cups sugar~pinch of salt~2 teaspoon baking powder~6 cups flour (add more if texture is too soft)

Beat 5 eggs, add vanilla and sugar to eggs and mix will.In a separate bowl, mix the carnation milk, salt, and baking powder. Add milk mixture to egg mixture and slowly add in flour cup by cup and mix well.After about 3 cups, stop and add melted butter. From this point on, gently fold the rest of the flour in. (You may need to add more flour for consistency.)Drop batter into hot oil at 335 with a tablespoon or a 1oz ice cream scooper.Cook for approximately 9-11 minutes. Look at the color or poke a toothpick into the andagi to see if it comes out clean, if it does it is ready.

ingredients Directions~25-30 Taro leaves~2 lbs Pork, cut up/cubed~1 lb butter-fish cut in pieces~Hawaiian salt**Add cubed taro or sweet potato is optional**

Clean/remove stems from taro leaves. Season pork with Hawaiian salt. With 3-4 taro leaves, wrap pork/fish tight and layer in crock pot face down.Turn crock pot to medium for 6-8 hours or high for 4-6 hours.

Chapter 7 Dishes From Joy Talaroc

KICK LOBOT KHALBI RIBS ingredients Directions~4 lbs. short ribs*Sauce: 1/2 cup soy sauce~1 tablespoon sugar~A dash of black pepper~2 cloves garlic finely chopped~1 tablespoon honey~1 inch ginger finely sliced or ground~2 stalks green onions finely chopped~1 tablespoon sesame oil~1 tablespoon oil

Combine sauce ingredients and marinate meat for 1 hr. Broil or barbecue till desired.

Ho, now das some good Hamburger Steak ingredients Directions~2 lbs. hamburger~1 teaspoon salt~dash pepper~3 teaspoons chopped onion~1 egg ~1 breadcrumbs

Mix all ingredients in a bowl. Press into individual little steaks about 3/4 inch thick.Fry in pan about 7 min. each side.

PORK ADOBE ingredients Directions~2-3 lbs pork butt~1/2 cup apple cider vinegar~1 bay leaf~1 teaspoon salt~3 cloves garlic-crushed~1/2 teaspoon pepper~1/2 inch fresh ginger root~1/2 teaspoon soy sauce

Put pork in 2 inch cubes. Combine meat, vinegar & seasonings in a deep skillet. Marinate for 10- 15 min. Cook at medium heat until it boils. Reduce heat & cook and until tender and oil is extracted from heat, stir frequently.

FRICKEN' GOOD K FRIED RICE ingredients Directions~3 slices bacon, cut small pieces~3 cups cooked rice ~3 eggs~4 tbsp. soy sauce~4 tbsp. oyster sauce~2 stalks green onions finely chopped~dash of pepper

Fry meat until crisp and remove from pain. Add a little more bacon fat and stir in the rice. Fry, stirring often, until rice is browned a little. Beat eggs slightly and add to rice. Add bacon, soy sauce & rest of ingredients & fry till sauce is absorbed, making sure rice is not wet or moist.**Options:spam, char siu, chicken, shrimp any kind of meat****Cooked rice day after cooked is best.**

Dishes From Joy Talaroc Continued..... Baby Jo's Jello Cream Cake

ingredients DirectionsCrust:~1 block butter~1 cup flour~1/4 cup brown sugar~1/2 chopped walnuts

Filling:~1-8 oz. cream cheese~3/4 cup white sugar~1-9 oz. cool whip

Topping:~3 box strawberry jello

Crust: Mix butter and sugar. Add flour & nuts. Mix well and press into 9x13 baking pan. Bake for 10 min. @ 350 degrees.Filling: Mix cream cheese w/ sugar till fluffy. Add cool whip and fold into mixture. Pour into cooled crust & chill.Topping:Dissolve jello in 3 cups hot water. Cool until just about to set. Pour on top of cheese mixture, making sure it is completely set before jello is poured on. 1 hr. 15 minutes to set.

Chapter 8 Dishes From Rebecca Cuestas-Flauta

SPARERIBS COOKED EASY ingredients Directions~5 lb spare ribs ~1/2 cup. shoyu~4 clove garlic ~pinch of salt~1/2 cup. cider vinegar ~2 teaspoons. cornstarch~1/2 cup. brown sugar ~1 can pineapple juice (6oz)

Brown ribs in big pot. Mix all ingredients except cornstarch pour over the meat. Simmer for 45 minutes. Mix cornstarch into paste with a bit of water not too thick little watery, then pour over the meat and cook for 15 minutes.

OYSTER SAUCE SHRIMP ingredients Directions~2lb shrimp~1/8 cup Oyster sauce~1/4 cup Italian Dressing~2 tablespoons sugar~1/4 cup butter

Cook shrimp in butter. Add all ingredients, simmer for 5-10 minutes.

SHORTBREAD PUMPKIN PIE ingredients Directionscrust mix:~1 cup butter/margarine~1/2 cup sugar~3 cups flourmix:~4 eggs, slightly beaten~1 lg can pumpkin (not pumpkin mix)~1 1/2 cup sugar~1 tsp. salt~1 tsp cinnamon~1/2 tsp ground cloves~1 tsp ginger powder~2 cans (lg) evaporated milk

Prepare crust first. Then prepare the "mix" and pour over the cooked crust. Press into greased 9x13 pan and bake at 375 degrees for 15 mins or until golden brown.Pour over baked crust.Bake 55 minutes at 350 degrees.

Kiholo Bay Short Ribs ingredients Directions~3 lbs. short ribs~1/2 c. sugar~3/4 c. soy sauce~2 Tbsp. sesame oil~1 clove garlic, minced~3 stalks green onion, chopped~1-inch piece of ginger, grated.~Crushed red peppers

Mix all ingredients, except short ribs. Marinate ribs overnight or at least half a day in a Ziploc bag (easy to turn over in the refrigerator). Cook ribs on the hibachi (BBQ grill) or broiler.

ingredients Directions~3 to 4 lbs. deboned chicken - cut in bite-size pieces~4 Tbsp. soy sauce~4 Tbsp. flour~4 Tbsp. sugar~3 eggs~8 Tbsp. cornstarch~1 1/2 tsp. salt~Four stalks green onion, chopped (optional)~1 Tbsp. toasted sesame seeds.

Mix all ingredients together except chicken. Add chicken and marinate overnight. Deep fry.

Island Spareribs ingredients Directions~8 lbs. spareribs~3/4 c. brown sugar~3/4 c. cider vinegar~3/4 c. soy sauce~3 Tbsp. oyster sauce~2 Tbsp. granulated sugar~1 tsp. salt~2 tsp. Honey~1 small onion, chopped~1 clove garlic, chopped~Dash of Chinese Five Spice~5 Tbsp. Ketchup~1 orange (sliced)

Soak with ribs and mixtureCut spareribs into 2-inch by 4-inch slices. Soak spareribs in mixture for a few hours or overnight. Bake at 350 degrees for 1 1/2 hours with cover on. Take the spareribs out. Pour the fat out and then return ribs to the pan with the gravy. Boil them on the surface of the stove until tender.

ingredients Directions~1 box shrimp (raw, deveined, leave shell on)~1 c. mayonnaise~1 clove garlic, grated~2-3 tsp. sugar~Dash of soy sauce~Couple shakes of lemon pepper

Marinate for about two hours. Skewer shrimp on bamboo skewers. Cook over hibachi (BBQ grill).

Better Than Sex Cake ingredients Directions~1 box yellow or chocolate cake mix~1 box instant pudding mix (match with cake mix)~1 (8 oz.) container of sour cream~4 eggs~1/2 cup oil~1/2 cup water~1/2 cup chopped nuts~1 package (6 oz.) chocolate bits, peanut butter chips, toffee chips, or mini M&M's~Grated coconut

Mix together. Pour into greased Bundt pan or two loaf pans. Bake at 350 degrees for 40-45 minutes or until done.

Preheat oven to 350.Rinse the mochi rice and drain the rice well. Add 5 cups water to the rice and cook it in a rice cooker. Combine the coconut milk and 1/2 cup of brown sugar. Cook coconut milk and brown sugar for about twenty minutes over medium heat, stirring constantly. Put the cooked rice into a large bowl. Set aside 1/2 cup of the coconut milk mixture. Stir the remainder of the coconut milk and brown sugar evenly into the hot rice. Spread the rice in pan and top with the extra 1/2 cup of coconut milk mixture. Bake the mixture for twenty minutes then broil it for five minutes. Let it cool and cut into small pieces.

Tex Drive Inn Style Malasadas (Portuguese donut)

ingredients Directions~3 large eggs, room temperature~1 cup sugar~5 Tbsp. unsalted butter, room temperature~3/4 tsp. salt~5 1/2 cup (or more) all-purpose flour~Two envelopes of quick-raising dry yeast~1 cup hot water, 110-120 degrees~1/3 cup evaporated milk~2 tsp. vanilla extract~Vegetable oil for deep frying~Sugar for dusting for each batch.

Combine one egg, 3/4 cup sugar, butter, and salt in bowl of heavy-duty mixer fitted with dough hook attachment; beat until blended. Add 5 cups of flour and yeast; beat for one minute. Add 1 cup hot water, milk, and vanilla and beat until well-blended. Beat in remaining two eggs and the 1/2 cup of flour. Beat until dough is smooth, soft, and slightly sticky but begins to come away from sides of bowl, adding more flour by tablespoonfuls if very sticky, about ten minutes. Scrape down dough from sides of bowl. Cover bowl with plastic wrap and towel. Let dough rise in warm draft-free area until almost doubled in volumes (about two hours). Punch down dough. Cut into two equal pieces. Roll out one piece on lightly floured surface to 12-inch-by-16-inch rectangle.

Cut lengthwise into three strips and crosswise into four strips, making 12 4-inch squares. Repeat with remaining dough. Pour enough oil into large saucepan or deep frying to reach a depth of 1 1/2 inches. Heat oil to 350 degrees. Fry two to three malasadas until puffed and golden brown, turning once (about three minutes). Using slotted spoon, transfer malasadas to paper towels and drain. Repeat frying with remaining dough squares, heating oil to 350 for each batch. Place some sugar into a paper bag and place warm malasadas in bag and shake to coat with sugar. Yield: 24 malasadas.
