Issue 1The Christmas Edition

The Sustainability Committee is the largest club and society here at MTS. We aim to promote the issues regarding sustainability as well as improving the ecological footprint of the school. We will always welcome new members, and if you are interested in signing up please email [email protected] or come and join us in GY7 or GY10 on Friday lunchtimes. PS. It counts for DofE volunteering too! This eZine is the Sustainability Committe’s first online magazine and we hope there will be many more. We’ve been working very hard this term so have a flick through to see what we have been up to. I hope you enjoy the issue!

What we’ve been up to...This term alone has been very chaotic. On top of that, the school’s Sustainability Committee has been hard at work behind the scenes, trying to improve MTS’ ecological footprint. The Veg Patch Team have been m a k i n g a g r e e n h o u s e o u t o f recycled  plastic  bottles this term as well as preparing the vegetable patch for next term when we will start planting crops and then the banter can begin! Things have been on track for the Waste Department after having let it slip a little last year. Working closely with the Paper section, they have made sure that all recycling has been collected from around the school every week, and the paper collections have been very well attended! There has been a lot of planning and brainstorming going on, trying to come up with ways to reduce waste produced by the school and increase awareness about the importance of doing so. We hope to implement these new ideas from next term onwards. The first event is Waste Week.

Each year, 18mn tonnes of edible food goes to landfill in the UK at a cost of £23bn and, as a school, we waste much of our food. 6 million tonnes of edible food (one third of all food waste) is wasted from households in the UK and it is imperative that we learn how to reduce the amount of food that goes into our bins to conserve the environment we live in. In the diversity section of the Sustainability Committee, we are about to aid the aviary population in the area by the form of a few lovely hand-crafted bird-boxes (made by none other than the sustainability members), but upon discovering that these needn't be hung up until around March, the project has been frozen for the time being. Therefore, they have mainly concentrated on helping the Energy team on the 'switch-off fortnight' which has been a dazzling success. We saved over 150 kW of consumption simply by switching off monitors and shutting down computers when not in use. But we couldn’t have done all of this without you. Thanks!

Recipe

The best whole-baked carrotsby David Loftus

Serves 4

I love cooking any type of carrot in this way. By cooking them first covered by tinfoil, they steam and exchange flavours with the herbs and garlic. Then when you remove the foil they start to roast and sweeten. A really simple method but one that gives incredibly delicious

results!

Ingredients

• Olive oil• Herb or red wine vinegar• Sea salt and freshly ground black pepper• A few sprigs of fresh thyme

• 3 cloves of garlic, crushed• 750g/1lb 10oz young bunched carrots,

washed and scrubbed

Preheat your oven to 200°C/400°F/gas 6. Toss your carrots with a good glug of olive oil, a splash of vinegar, salt and pepper, the thyme sprigs and the garlic cloves. Place in a roasting tray or earthenware dish, cover tightly with tinfoil and cook for 30 to 40 minutes until just tender. Remove the foil and cook for a further 10 minutes until the carrots have browned and caramelized nicely.
