The 2015 Spokane Ag Expo and Pacific Northwest Farm Forum is scheduled for February 3-5, 2015 at
the newly expanded Spokane Convention Center Com-plex. The largest farm machinery show in the Inland Northwest will host 300 exhibitors and conduct 36 edu-cational seminars and forums relating to agribusiness from large-scale operations to small acreage farms and ranches. Exhibitors will range from large farm equipment manufacturers and service providers, to businesses ca-tering to small acreage and part-time farmers who hold down other jobs while also running their family farms.
Spokane Ag Expo has been bringing agri-businesses and farmers together for 38 years.
Spokane Ag Expo will again fill the Spokane Convention Center adjacent to the Spokane DoubleTree Hotel. Every foot of the new 120,000 square foot exhibit hall will be ready to welcome over 6000 visitors. 300 exhibitors in-cluding large and small acreage equipment dealers and a host of agri-business service providers with the latest in farming innovations will be on hand to talk the business of agriculture with attendees.
For 60 years, the Pacific Northwest Farm Forum has scheduled seminars ranging across a wide spectrum of current topics of interest to both full-time and part-time farmers, ranchers and agricultural producers. This year’s seminars are scheduled for Tuesday, February 3, 12 noon-3pm; Wednesday, February 4 from 10:30am-3pm; and Thursday, February 5, 10:30am-12 noon. The opening session of The Pacific Northwest Farm Fo-rum on Tuesday morning at 9am, again hosts Dr. Art Douglas, retired Professor Emeritus, Atmospheric Sci-ence Department, Creighton University, presenting his “2015 Forecast for Weather Conditions in the Pacific Northwest”. Following Dr. Douglas is a presentation by Professor Randy Fortenbery, the Thomas B. Mick En-dowed Chair in the WSU School of Economic Sciences, discussing the “2014 Farm Bill Impact on Acreage Al-locations and Land Prices”. Also, at the opening session, Ag Expo will announce the winners in the annual ‘Excel-lence in Agriculture’ Awards. Winners in each of the two categories, “Youth” and “Business/Organization” were chosen from nominations received by Ag Expo staff in early December. On Wednesday at 9am in the Double-Tree Main Ballroom, Kevin Van Trump, Chief Executive Officer, Farm Direction, returns this year and addresses the current agriculture markets with his analysis of what is changing and how to better manage the risks in the world marketplace.
Pacific NW Farm Forum is also offering 36 educational seminars scheduled to include topics relating to cattle, marketing crops and livestock, small farm planning and marketing, tax and estate planning and several recertifi-cation courses. The theme of the 2015 Spokane Ag Expo Photography is Agriculture in the Inland Northwest. Photographers were asked to submit photos that depict agriculture in the Inland Northwest. Entries were judged in two categories, youth and adult. All of the 93 entries will be displayed at the 2015 Spokane Ag Expo at the Spokane Convention Center Exhibit Halls during “Ag Week in Spokane” on February 3-5, 2015. Following the show, the winning photos will be posted on the show website www.agshow.org
The purpose of the contest is to promote Inland Northwest Agriculture and to give amateur photographers, particularly from rural areas, an opportunity for their work to be shown and recognized.

A good acorn producer with glossy leaves, the Burenglish Oak is fast growing and reaches a mature height of 80’ and width of 50’. Sometimes called a Heritage Oak, it is adaptable to various soil conditions and requires

A fast-growing tree, espe-cially when young, that reaches approximately 50-70’ when mature. The pa-per birch has leaves with pointed-tips and has bark that turns white and peels in long, papery strips. The paper birch prefers moist soils and is well-liked by songbirds.

Commonly grows to 75’ and can attain heights of 120’. This tree has a mod-erate growth rate. Fall color is brilliant ranging from yellow, to orange and some red tones. This large shade tree prefers welldrained, moderately moist, fertile soil.

A large deciduous tree with a medium growth rate, the leaves of the black walnut turn from green to yellow in the fall and have a strong walnut scent when crushed. They pro-duce an edible walnut encased in a semi-fleshy covering. It prefers moist, well-drained soils and does best in full sunlight. Walnuts can reduce LDL Cholesterol.

Jerky is easy to store, delicious to eat and surprisingly easy to make! Preparing your own jerky also means that you control exactly what kind/ cuts of meat you use and
what spices go into the process. Say goodbye to terrible chemicals!
Preparing the Jerky
1. Select a cut of meat. Choosing a lean cut like sirloin, flank steak, top round, or eye round will save time later. Turkey is also a great choice. Your jerky need not be limited to beef and turkey, however. Many types of jerky include bison, deer, elk, caribou and salmon.
Dry Your Own Jerky 2. Remove all noticeable fat. Fat causes the jerky to spoil much faster. Slice your meat into very thin strips less than 1/20” thick (sometimes a butcher will do this for you for an extra fee if you ask). To make it easier to slice, freeze it for about 5 hours before slicing. You can cut with or against the grain; some find that strips cut against the grain are easier to chew. Trim the fat as you go along, since fat does not dry.
3. Marinate the meat. Use a solution of olive oil and vinegar sea salt, or a recipe of your preference. Place in the refrigerator for 10-24 hours to allow the meat absorb the flavor. This step is optional as the additional moisture can make dehydration take longer and the resulting jerky may be stickier.
4. Coat the meat in the seasonings of your choice. Don’t be afraid to use salt. Salt will aid in dehydrating. Try dusting your marinated jerky with a little bit of salt, pepper, cinnamon and chipotle pepper.
Cooking and Storing Jerky
1. Dehydrate the meat. Now comes the rewarding part- removing all moisture from your jerky. Using a dehydrator is the standard way of cooking jerky, although you can use an oven. Leave enough room between pieces to allow air to flow around the meat. Avoid letting the meat separate if possible. In a dehydrator, spray the racks with non-stick cooking spray and place your prepared meat on the racks.
2. Wait and watch. Making jerky is a quick process. Since temperatures, humidity levels, and slice thickness will vary, there can be no set time for the process to com-plete. Usually, the process takes between 2-6 hours. Check the consistency of the jerky regularly after 2 hours, and every 30 minutes thereafter, until it meets your satisfaction. Cut into the jerky to ensure that it is not raw inside. Jerky should turn a deep brown or burgundy color.
3. Alternately, use an oven if you don’t have a dehydrator. Set the temperature to 165° F, any less may cause early spoilage as it’s not hot enough to kill bacteria in the meat, and will only incubate the bacteria already present in the meat, and allow it to preheat. Place your prepared meat directly on a wire rack, with a saucepan or catch under-neath to catch the marinade dripping from the jerky. Cook for 1-3 hours, depending on the cut of meat. Check the jerky after 90 minutes and every 30 minutes thereafter.
4. Place the fresh jerky somewhere dry to store. Mason jars work great. Place jerky in the refrigerator or freezer until ready to eat. Enjoy the homemade jerky within 2 weeks of its preparation. Ideally, the jerky should be vacuum sealed in plastic with a pouch of oxygen absorber in order to retard spoilage, although this is not practical in most home situations.

Greek Lentil SoupThis hearty lentil soup, known as Fakes (pro-nounced “Fah-kehs”) is a staple in the Greek kitch-en and an especially filling meal. It is traditionally served with a drizzle of olive oil and lots of vin-egar. Though the vinegar is of course optional, give it a try. It lifts the lentils and adds another dimen-sion of flavor!
Ingredients
• 8oz brown lentils
• 1/2 cup olive oil
• 1 Tbsp minced garlic
• 1 onion, minced
• 1 large carrot, chopped
• 1 quart water
• 1 pinch dried oregano
• 1 pinch crushed dried rosemary
• 2 bay leaves
• 1 Tbsp tomato paste
• Salt and pepper to taste
• 1 tsp olive oil, or to taste
• Red wine vinegar
Directions
1. Place lentils in a large saucepan; add enough water to cover by 1 inch. Bring water to a boil and cook until tender, about 10 minutes; drain.
2. Heat olive oil in a saucepan over medium heat. Add garlic, onion, and carrot; cook and stir un-til the onion has softened and turned translucent, about 5 minutes. Pour in lentils, 1 quart water, oregano, rosemary, and bay leaves. Bring to a boil. Reduce heat to medium-low, cover, and simmer for 10 minutes.
3. Stir in tomato paste and season with salt and pepper. Cover and simmer until the lentils have softened, 30 to 40 minutes, stirring occasionally. Add additional water if the soup becomes too thick. Drizzle with 1 teaspoon olive oil and red wine vinegar to taste.

This year’s event takes place August 21-22. That may seem far away, but it’s never too soon to get excited about this legume. Mark your calendars now. This 2 day event features lentil chili with a beer and wine garden, lots of entertainment and music, panel discus-sions about lentils, a co-ed softball tournament, 5k fun run, grand parade, cooking demos, 3-on-3 hoop classic, a kids area and so much more!
A major highlight of the Lentil Fest is the Lentil Family of the Year. 2015’s event will honor the Gary and Salli Heaton Family of Tekoa, WA. Gary Heaton served the
pulse industry for 40 years, working at Wallace Grain & Pea Co., Pulse Department for Northwest Pea & Grain & Bean Co. and more. Heaton graduated from Tekoa High School then earned a degree in math education from the University of Washington. He spent time teach-ing for a couple of years before returning to Tekoa to manage Stateline Processors Inc. Gary Heaton has been a board member of the Trade Association and the USA Dry Pea & Lentil Council for the last 14 years; he also served as Chairman of the US Pea & Lentil Trade As-sociation for three terms out of his 40 years of service. Gary and Salli have two daughters and a son, as well as a new grandchild. Have you thought about becoming a Master Gardener, but didn’t know where to begin? Don’t worry; it’s much more approachable than you think! Master Gar-
dener Volunteers serve as human links between WSU research-based horticulture in-formation and the general public. Volunteers answer questions about a wide variety of horticulture issues, including plant selection, installation and maintenance; plant problem diagnosis and treatment, environmentally sound gardening practices, pest identification and management, and effective landscaping practices. Volunteer work includes helping residents in the Master Gardener Plant Clinic and Resource Center, teaching youth, adults and seniors about gardening, researching and writing educa-tional information, staffing information booths at community events, and other activi-ties. Becoming a Master Gardener in Spokane County involves completing an applica-tion packet, being accepted for tra ining, completing an extensive horticulture training program - which includes online training and completing weekly quizzes and a final exam, and volunteering 40 hours or more each year. They train a class of new Master Gardeners in even-numbered years and there are usually limited spaces available.
MGs also enhance communities through demonstration gardens and donation of pro-duce to local food banks. Low-income citizens learn to grow their own food and become more self-sufficient with the help of Master Gardeners. Whatever the priority need may be, if it can be addressed through gardening, WSU Extension Master Gar-dener volunteers are there to serve as part of the solution. The WSU Extension Master Gardener Program is open to everyone with an interest in gardening and a willingness to use their knowledge, experience and enthusiasm to make a positive impact on their local community.
Master Gardener Volunteers make significant contributions to furthering safe and sus-tainable gardening practices. If you are an experienced gardener in Spokane County, want to increase and share your knowledge, and are available to volunteer during weekday hours, think about applying to be a WSU master Gardener.

1. Contact the WSU Extension office in your county.
2. Request and complete an application form. Some counties offer online applica-tion forms on their web site. Because WSU Extension Master Gardener volunteers work with children and the elderly, a criminal background check is required for all our volunteers.
3. If selected as a potential Master Gardener volunteer, you will be contacted with additional instructions. Those selected to enter the program will be asked to review and sign the enrollment documents and pay training fees. Ask about the availability of scholarships for training.
Do you Need Help from a Master Gardener?Master Gardener Volunteers engage in numerous educational services throughout the
community. Major projects must be scheduled a year in advance. If you or your orga-nization would like assistance in one of the following areas, call 509-477-2181.
