Pastoral letterand Tide Times

SSppoottLLiigghhtt®

One of the disciples of Jesus was aman by the name of Thomas. He isperhaps best known as doubtingThomas because of his refusal atfirst to believe in the resurrection ofJesus from the dead. However Imust confess that I have a great dealof sympathy for Thomas along witha great deal of admiration for him.

There is one particular account inhis life that I find very interesting andit involves a conversation that heand the other disciples had one daywith Jesus. Jesus was seeking tocomfort His disciples by assuringthem that true peace is found intrusting in Him, and that He wasgoing to be going to prepare a placefor them, and come and take themto be with Him one day. And Jesusfinished by saying you know the

way to the place where I am going.

However Thomas was not so sureso he asked Jesus the ratherobvious question; “Lord, we don’twhere you are going, so how canwe know the way?” A rather obviousquestion and one that he seemed toask on behalf of all the disciples. Iimagine the situation was a bit likebeing in a class unsure of what theteacher means and so glad whensomeone else plucks up thecourage and asks the question youwanted to ask! Jesus responded bygiving the clearest message asregards entry to heaven when Hesays; “I am the way and the truthand the life. No-one comes to theFather except through me.”

This is a message that in our plural-istic post modern society has beenlost with the carefree attitude thatsays all roads lead to God. Jesus, the Son of God made it clear toThomas that day that He, Jesus, was the way, the truth and the life.

Jesus is not a way, but the way, nota truth but the truth, not a life but thelife. He came that we might have lifeand have it to the full, He came toforgive us and gives us peace, joy, forgiveness and eternal life withHim. Why not read the passage foryourself and, as you do, ask God tospeak to you through it. It is foundin the gospel of John Chapter 14and verses 1-6.

25- years, that is, since Relax opened.

A generation ago!And they’re still young at heart……

And they still have the best sofas, dining rooms, bedrooms, lighting, gifts, jewellery, watches and definitely the nicest pictures. Just ask anyone.

So be sure to visit them in October, their 25 year Anniversary month.

Owner Alastair Grant (age not important) said “We opened in October 1985 and here we are in 2010. Who would have thought? Doesn’t time slip

by when you are enjoying yourself?”

From simple to sublime, with fabrics for everyone, Relax

is the stockist in Moray for Fama, the

company who produces the most fantastic range of sofas and chairs.

At the vegetable section of mylocal supermarket I stoodponde r i ng….Organ i c…NonOrganic? What’s the difference?Well for those of you who want toknow, this is what it’s all about….

Organic farming is the name givento a variety of agricultural produc-tion systems that aim to work withnature, rather than by conqueringit. Organic is most commonly as-sociated with food production, both crop and livestock. However, organic methods are alsoemployed in the production ofmany other goods, leading toproducts as diverse as timber andclothing, to be labeled as organic.

The principal differences betweenorganic farming and conventionalfarming are:

❍ an extensive restriction of theuse of artificial pesticides, fertilis-ers and other agro-chemicals; ❍ a hostility to the agricultural ap-plication of biotechnology; ❍ a rejection of the routine use ofpharmaceuticals on livestock; ❍ an attention to animal welfare;and ❍ a focus on crop rotation, soilquality and maintaining biological

diversity as alternatives tochemicals.

In this way, organic farming is inmany respects, a return to tradi-tional farming methods.Organic food is felt by a growingnumber of consumers to be safer, more nutritious, taste better and beless harmful to the environmentand animal welfare than conven-tionally produced food, and themarket for it has grown in recentyears accordingly.

I recently spoke to Hugh Grierson, one of Scotland’s largest organicfarmers, and he talked to me abouthis father Sandy. “Sandy was notan Organic farmer but watchedwith interest as Hugh stoppedusing sprays and fertiliser. He stillworries about the weeds but thechange that he really noticed wasthe butterflies. Insects have thrivedsince we went organic, especiallythe butterflies. They are drawn tothe red clover that we plant for soilfertility. As they feed on the flowersthey fill the farm with colour andmovement. When the white cloverflowers it can be quite alarming towalk through. Every step disturbsa cloud of bees. Fortunately theyare well fed – too sleepy to bealarmed. Hoverflies and ladybirdshunt through our potato cropskeeping them free of aphids andthe diseases that aphids carry.Where there are insects there willbe birds and mammals. We havewetland fields with Lapwings, RedKite and Curlew. Other fieldsprovide seeds for finches, larks, and Tree sparrows. Sand Martinsfollow the cows, hunting for

insects. Barn owls hunt for volesand Red Kites clear up theleftovers.

Organic farming has brought thewildlife back into the fields but wehave also worked at improving thewoods and waste ground. Wehave planted hedges and wild-flower meadows. We have dugponds and planted woods. Welook after wetlands and rarehabitats. It is always veryrewarding because new plants andanimals moving in and setting uphome repay our efforts. They allbeautiful and all have a role to play. They are all a part of the jigsaw thatmakes up a healthy, living farm.”

Moray Coast and the Highland’shave some of the finest organicfarming in the world, so next time, like me, you stand ponderingOrganic or Non Organic, think ofHugh’s dad, Sandy!

Grateful thanks to:

Hugh Grierson Organic

SOUND & VISION30 YEARS

AND STILL ROCKIN’!I opened the shop in 1980 after 14 years as a localDJ playing the best music around between Wick inthe north and Arbroath in the south supplying DJgear and records to the local music lovers. After a short time the decision was taken to stockmusical instruments as the existing music shop hadclosed its doors.

We quickly established a reputation for stockingquality instruments at very keen prices along withexcellent back up service.Late in 1989 the opportunity arose to move into ourexisting showroom which gave me the space toexpand our range and selection of top brands, suchas Martin, Gibson, Fender and Ibanez guitars alongwith top amplifiers from Marshall, Blackstar, Line6,Peavey and many more.We also stock Digital pianos by Yamaha and Kawai,Violins, Saxophones and almost any other kind ofmusical instrument available.

Don't forget that we are also the only independentmusic shop still stocking a large choice of CDs andMusic DVDs. Special orders a speciality (let us trackdown that elusive CD or DVD).

We have 100s of Guitars, 1000s of CDs and MusicBooks, and more amplifiers and accessories that youcould shake a stick at!Some of our staff have been with us for over 20 yearsand have obtained a vast knowledge which they willgladly share with our many customers.Local Choice, Local Service and Local Backup withkeen prices to boot.Look no further than Sound and Vision Elgin!

Sticky Toffee Pudding andButterscotch Sauce

This month as the leaves are turning, one of ourmost popular sweets is sticky toffee pudding. Itfeatures often in our menu so I thought I would sharethe recipe. It is a fantastic sweet for the coolermonths and cheer up those dark evenings.

Ingredients - Pudding100g Pitted Dates50mls Water50mls Orange Juice75g Dark Or Light Brown Sugar65g Butter (Room Temperature)1 Egg125g Plain Flour7g Baking Powder5g Bicarbonate Soda1 tin condensed milk

Ingredients - Sauce75g Butter250ml Double Cream100g Light Brown SugarPinch Of SaltOne Vanilla Pod Seeded

Put dates, water and orange juice into a smallpan and bring to the boil. Simmer until they havebroken up slightly then leave aside (chefs tip - put in2-3 earl grey teabags to add flavour)

Cream sugar and butter with a hand blender orwooden spoon. Once soft, add your egg thencontinue to mix well. Sieve the flour and bakingpowder into creamed butter mix, then add bicarbon-ate of soda to date mix. Combine the date mix to thebutter mix, stir well, then put into a greaseproofpaper lined deep baking tin roughly 10”x 10”.

Boil the tin of condensed milk for 3 hours makingsure the tin is fully submerged at all times (to savetime, you may wish to purchase Carnation caramelavailable from local supermarkets). Take your boiled

condensed milk (toffee) and spread it around intothe mix before baking (the more the better). Cook inthe oven at 180°C (gas mark 5) for 15/20 minutes. The mix will still will be soft and wet when you testwith a skewer, hence the Sticky in Sticky ToffeePudding! Cut to desired size and shape.

Sauce method - this is simple - add all sauce in-gredients into a sauce pan then boil gently until allhas come together and sugar has dissolved. The dif-ference between this and toffee sauce is that but-terscotch has salt and vanilla in it.

I would serve the Sticky Toffee Pudding with yourfavourite ice cream and the butterscotch. You couldalso replace buttertscotch with custard if you liked.

This Recipe was given to me by my old head chefand good friend Mark Greenaway and I am nowpassing it out to you as I think we all love it! It's gotto be up there with chocolate brownie for me, whichI will leave for another month!

Police Business and National Security

Update

Anne Glover raised concerns at the

increase in the number of skateboards

and bikes being used on the Plainstones.

Alex Macmillan pointed out that the

Community Council raised this issue

many years ago and believed that once

the skate park had been erected the

Council were to consider the introduction

of a Bye-law prohibiting this on the Plain-

stones. George Littlejohn asked when

the railings around St. Giles church were

to be erected. The Chairman stated that

he believed that planning permission had

been granted. inspector Mowat agreed

to pass comments onto officers and ap-

propriate action would be taken.

• George Littlejohn asked how many

Police officers were called upon and

what was the response time during the

Lesmurdie road incident. He also asked

if the local Police force was satisfied with

their involvement overall. inspector

Mowat advised that the initial Police unit

had attended very quickly and following

their risk assessment a number of

resources were called upon locally and

out with Moray. inspector Mowat advised

that he was happy with the response and

overall result of the enquiry and

commended the community and other

agencies for their part.

Committee Reports

• Planning. Bryan Watson advised that

the Sainsbury’s planning application was

ongoing and he was carrying out

research regarding flooding and

crossings etc.

• Bryan Watson reported that he had no

concerns regarding the application to

combine Vodafone and o2 on the same

transmitter based at Glenmoray Drive.

Environment

• Shop Greenery. Anne Glover advised

that some letters had been sent to shop

owners regarding removal of greenery

from gutters and the Environment

Committee were awaiting replies.

• Anne Glover advised that the r&L

Committee and Environment Committee

were currently working together.

Roads & Transportation

• road Markings on the roads within the

City of Elgin. A receipt of the letter sent to

Alexander ritchie, Moray Council has

been received but no response has yet

been received from ralph Newlands of

Bear Scotland regarding the road

markings on the A96 through Elgin. An

update from James Smith (Engineer

Traffic), Moray Council was received on

31st July 2010 outlining work on white

lines on present budget. Murray ross

contacted James Smith and was advised

that the maintenance team are working

all over Moray and should cover a good

number of roads on this years budget,

although next year’s budget may be a

different story.

• Speed limit on B9012 Duffus road.

Murray ross spoke with Kevin Price,

Moray Council roads Department on 5th

August 2010 regarding the alteration of

speed on Duffus road and the r&T

Committee’s objection to this increase.

Mr Price advised that three Moray Coun-

cillors have now withdrawn their objection

following a site visit and explanation of an

alteration to the bend coming into the

proposed 40mph. Murray ross informed

Mr Price that the r&T Committee’s

objection still stands. Mr Price also

explained that the 40mph is in line with

new guidelines from Transport Scotland

for this road, a 40mph can come about

where the development skirts one side of

the road. Murray ross requested details

of the average speed figures for this

stretch of the road to date and was

advised 37mph, this being on an existing

30mph. The new deadline for objections

has now been extended to october 2010.

Murray ross proposes that the

C&rBoECC r&T Committee stand firm

with their objections as previously stated.

This was agreed by all members present.

Parliament

Blog”“

Richard Lochhead MSP

Angus Robertson MP

Over the summer and

away from parliamentary

duties I have managed to

get back to cycling, which

I very much enjoy but

which also often takes a

back seat. Along with the

family I have been exploring the cycling

byways around Elgin and Lossiemouth

and introducing my two young children to

the activity before being rapidly out-

classed with youthful energy while I am

peching and wheezing my way up a hill.

Fortunately a few days out have blown the

cobwebs away and I am feeling a little

fitter than I was. The trick of course will

be keeping up the effort but with the same

two youngsters pestering me to take them

out it will hopefully continue!

With the time delay between

writing a column and it

being in print I suspect

summer will be a distant

memory, however I feel it is

still timely enough to make

mention of a new business in Fochabers

which is already enjoying great success with

locals and visitors alike. After a visit to

Fochabers Ice Cream Parlour you, like me,

will probably be amazed, not just at the very

cool old style signage complete with giant

cone, but also at the unbelievable mouth

watering selection of ice creams. With

flavours including ‘Blackforest Gateaux’,

‘Fudgy Mallow Swirl’ and the very old school

‘Parma Violets’ I can honestly say I had to be

dragged away, but not before managing to

get a cone. It’s great to see a new business up

and running and using local suppliers, espe-

cially in the current challenging economic

environment, and I wish them every success.

The Granary Bar & Club, tuckedaway in Thunderton Place in Elginis a traditional town centre pub in aquiet pedestrianised street, just offthe High Street. Formerly known asThe Foundry, the Granary nowoffers a warm & welcoming atmos-phere to customers of all ages, including families.

Owned by brewers Belhaven andmanaged by Derek Hess, theGranary has a modern yet homelyfeel to it, with stylish décor & leathersofas, as well as cosy booths withroom for 8 people and plasmascreen TV’s. Live sports fixtures area big crowd puller at the Granary, with large screen TV’s dottedaround the Bar area and, upstairs inthe Club, a live DJ plays host toweekend revellers.

A friend and I went for a meal at theGranary on a Friday evening andwere treated to an enjoyableevening meal in a vibrant weekendatmosphere. Live football was theorder of the day, with manyenjoying the match on the bigscreen and free half-time pies! Wehowever, opted for something alittle more formal and were pleasedby the quality of food on offer.Whilst the menu is small, it is

certainly perfectly formed, withsomething to suit all tastes. Tradi-tional pub favourites such asburgers, lasagne and steak piewere offered alongside temptingchicken dishes, chilli con carne anda range of daily specials. All thefood at The Granary is locallysourced and freshly cooked on thepremises - a delightful change for‘pub grub’.

For starters I had a small portion ofChicken Goujons, (a larger portionis available for those with a moresubstantial appetite!) which camepartnered with a lovely fresh saladwith a delicious honey & mustarddressing, and a choice of dips. Thefive chicken breast pieces weretender & moist with a light & crispybatter. My friend had BreadedMushrooms, which were perfectlycooked in a crunchy breadcrumbcoating, and these were also servedwith a fresh salad and dips.

For our main course, I opted for oneof the choices from the specialsboard -which is a neat and veryconvenient chalkboard on the table– Smoked Haddock Fish Cakes, whilst my friend had Sausage andMash, which featured pork and leek

sausages from the local butcher. The sausages were meaty &delicious, served on a pile of homemade mashed potato with afabulous onion gravy, just like yourGranny used to make! My fishcakes were exceptional, with acrispy coating and a soft & creamytexture on the inside. Whilst wewould have welcomed a side dishof vegetables with our main meal, inthe end we both felt too full tosample the puddings on offer –sticky toffee pudding had particu-larly caught our eye!

By the time we had finished eating, the football was all over, and the liveDJ in the Club on the upper levelwas getting everyone in the moodfor a great Friday night. TheGranary is the ideal one-stop venuefor a vibrant night out in Elgin – youcan enjoy a delicious, homecooked meal whilst watching livesports then move upstairs to theClub for drinks and a dance. Andbecause the Granary is just astone’s throw from the centre oftown, it’s ideally suited to cater forthose working or shopping in Elgin.Pop in during your lunch hour withcolleagues or take the kids alongfor lunch on Saturday and see justwhat the Granary has to offer.

planter at Eight Acres has been paid.

Elgin Ear Progress

• 005: overflowing bins at Elgin

Cemetery - Solution proposed by

emptying bins on a more regular basis

which proved to be non-effective.

• 006: i’m really concerned at the

amount of money being spent on the

A96 underpass project. it seems such a

waste of money when we are crying out

for things like the Bishopmill Bowl to be

sorted out. Surely the money can be

spent on better things that encourage

youth participation, fitness and team

building and building (football at the

Bowl etc). - response: Following a

second successful bid to the Scottish

Government for money from the Scottish

Town Centres regeneration Fund, one

of the projects was the refurbishment of

the A96 underpass so you will under-

stand that the money for that project was

obtained from the Scottish Government

specifically for the Town Centre. unfor-

tunately, restoration of the Deanshaugh

Playing Fields could not fall within the

scope of the Scottish Town Centres re-

generation Fund.

A.O.C.B

• Kathleen Masson raised concerns

regarding overhanging foliage from

walls and asked who was responsible as

she felt it needed addressing as it was

hazardous, in particularly for people with

visual impairment. Cllr russell advised

that the roads Department should be

contacted. recreation and Leisure

committee agreed to take forward.

• Bryan Watson advised that he had

been approached by two residents of

Springfield regarding a blocked drain.

He had contacted Moray Council who

advised that the particular drain in

question was not their responsibility. it

was agreed for Bryan Watson to

progress with Springfield.

• Harry Torry reported that on Saturday

7th August 2010 he had noticed a drain

overflowing in Morriston playing fields

sewage. He contacted Scottish Water

who advised that they needed a

postcode in order to help. Harry Torry

did not feel this was acceptable and

suggested the C&rBoECC write to

Scottish Water highlighting the difficulty

in contacting their emergency service

and the insistence of a postcode.

• Alex Macmillan informed members of

a telephone scam whereby the caller

advises that he is a representative of BT

and states that there is an unpaid bill

and unless payment is received imme-

diately he would disconnect the phone

and it would cost £118 to re-connect at a

later date. Police advice was to inform

as many people as possible of the scam.

The next meeting of C&RBoECC will

be Tuesday 12th October.
