Bibendum’s Taste Test is a ground-breaking tasting system, based on 80 years of psycho-sensory research, which aims to demystify the culture of wine, help newcomers find styles that they enjoy drinking and introduce new styles to wine drinkers who are stuck in a rut.
The test is a short series of questions, the answers to which help us calculate an individual’s sensitivity to different flavours. Everyone has their own personal sensitivity but in broad terms we all fit into one of four flavour profiles – Sweet, Fresh, Smooth or Intense.
By calculating a person’s sensitivity we can match them to wines that are more suited to their flavour profile.

Bordeaux is France's largest fine wine region in both production and vineyard acreage (300,000 acres) and is made up of five main districts: Medoc, St Emilion, Pomerol,
Graves and Sauternes with 89% of Bordeaux wine being red and 11% white.
The key grape varieties in Bordeaux are Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Carmenere, Malbec, Semillon, Saugivnon Blanc
and Muscadelle with almost all being blended.
The Bordeaux region produces approximately 60 to 70 million cases of wine each vintage and has more than 9,000 wine producers. It is said by many in the wine industry that Bordeaux is the very best in wine production and with the most expensive bottle of
Bordeaux wine selling for £135,000 it is hard to disagree.

Kleine Rust, produced by Stellenrust, bottled their first wine on the farm in 1928. Today the farm is run by brothers Tertius (winemaker) and Kobus (viticulturist), and it is the largest Fairtrade estate in South Africa, with 500 hectares under vine. The brothers are committed to following their father’s dream: to give something back to the workers, who have themselves given so much to the farm.
Stellenrust now boasts one of the biggest and most successful Black Economic Empowerment projects in South Africa. The project has resulted in seventy employees taking ownership of the land they farm. Tertius himself puts it more eloquently: ‘These are the men and women we grew up with, we played together when we were young and now we work together towards the same dream and goal.’

The white Rioja offers a different, and interesting inclusion to any wine list rather than the usual Pinot Grigio, Sauvignon Blanc and Chardonnay. The white Rioja is crisp, fresh with notes of apples, zesty citrus fruits and an aftertaste that will have you reaching for your glass again and again. The Rose Rioja is a fabulous alternative to the dry Pinot Grigio Blush or sweet Zinfandel. Its flavours of redcurrant, strawberry and cherry offer the taste of summer in a glass – dare you to try to have only one glass! The Crianza has an abstract label but the liquid is something else. It offers all the usual flavours of a Crianza, bright, juicy red fruits, vanilla and spice with such a silky smooth body.

Without the constraints of EU Law, Americans can grow what they want, where they want, have the money to invest in vineyards and are now producing some fantastic new styles as well as the classics. California has always been the “go-to” State when thinking of America, as you would with Bordeaux for France. However there are now states to the North of California and on the East Coast knocking on their door. Oregon and Washington State being those on the West Coast. Charles Smith’s range is perfect in understanding this new dynamic in America. Cool climate vineyards produce steely and mineral white wines while producing elegant reds that stand up to those from cooler climates in France. Charles Smith – Kung Fu Girl is one of my favourite white wines of all time. Peach, apple and slight apricot aromas balanced with fresh acidity for a palate cleansing mouth feel. With the modern label designs, Charles Smith brand looks great in a fridge or on the back bar. Californian Wines are still in demand, with Zinfandel Rosé being one of the most consumed wines in the UK, our Califia Falls Zinfandel Rosé is a perfect example of this. Red fruit notes including strawberry and raspberry create a fantastic tipple to drink in the Sun!

Craft brewers spend their time focusing the quality of their beer and there are loads of amazing ingredients to be found in craft beer. Most craft beers are between 5-10% ABV with the highest ABV of any craft beer recorded at 55% - the limited edition “The End of History” from Brewdog. Other benefits of Craft Beer are fewer calories and less trips to the loo (thanks to it not being watered down!) to name but two. There are now a staggering 1285 breweries operating in Britain so the choice is endless. We are increasing our range of craft beers for 2016 and customers will be able to buy Dead Pony, Abita Purple Haze, Portobello & Goose Island amongst others.

Break the ice bucket habit – for whites
Many whites – especially bigger wines like Chardonnay or Viognier – will be a bit colder than is recommended when they first come out of the fridge. If they then get plunged straight into ice they will never get the chance to warm up and strut their stuff. Let them sit out for a bit on the table.
Get into the ice bucket habit – for reds
Lots of big reds – from punchy Aussie Shiraz to delicate Beaujolais and Pinot Noir – benefit from a quick ice bath, especially in warm weather or a warm room. Just a few minutes in ice are all it will take to make them much more refreshing.
Check the location of the wine rack
Every room has hot spots – close to radiators or appliances such as fridges. Make sure your wines are stored as far away from these as possible.
Offer a chilled red or two (and mark them on the wine list)
This is a great idea to show you take wine service seriously and an easy up-sell suggestion for customers looking for something different and delicious.
THE PERFECT SERVE
When it comes to serving wine perfectly, temperature matters. If you change the temperature, you change the wine. Too cold and it won’t taste of anything, too warm and it will taste alcoholic, soupy and thick.
Getting the temperature of wine right can have a big impact on your customer’s enjoyment and increase the chance of them ordering that second glass or bottle. The challenge in the On Trade is hitting the right temperature. Here are a few easy tips to ensure the temperature of the wine you serve is perfect every time:
15 - 18°C FULL-BODIED REDS Red wine should be served at room temperature but this doesn’t mean sat-next-to-the-radiator warm.
12 - 15°C LIGHTER REDS
Such as Pinot noir can be served slightly chilled.
12 - 14°C FULL-BODIED WHITES Such as oaked Chardonnay can be served slightly warmer than fridge temperature.
6 - 8°C SPARKLING
Chill well, otherwise the bubbles will disperse too quickly. If sparkling wine is
too warm you also risk the cork exploding out of the bottle when you open it.
7 - 12°C LIGHTER WHITES Must be cool but not too cold.

There is a correlation to the price paid for a bottle of wine and the quality of the juice inside. Below is a ‘Vino-nomic’ representation of costs for various priced wines.
A £10 bottle of wine is twice that of a £5 bottle but the value of the wine is 25 times more.
The diagram above shows the breakdown of the value in a bottle at three different price points, ex-VAT. Duty is fixed and Production/Distribution is variable, as is the cost of the physical wine at source.
When we look at the physical wine element of each bottle and in turn the relative quality, we can see that a small step up in price can deliver a huge step in quality. At £5.00 per bottle, the value/quality of the wine element is only 10%, but at £7.50, it rises by 243% and at £10 rises by 511%. This equates to a marked increase in overall quality, consumer satisfaction and retail profit opportunity.

FOOD & WINE PAIRING
Match the WeightMatch the weight of the wine with the weight of the food. Heavy dishes like braised red meat casserole will need a full-bodied wine. Light dishes like a salad needs a more delicate light-bodied wine.
Match the IntensityFoods that are intensely flavoured can overpower the flavour of wines, and intensely flavoured wines can overpower lightly flavoured foods. Try to match the intensity of flavours in both so that you can taste both the wine and the food, without one overpowering the other.
Match Acids with AcidsIf you have a dish with strong acidic content such as pasta with tomato sauce or a salad with vinaigrette, match the food with a wine that has high acidity too. The acid in the food will balance the wine, making the wine taste fruitier and less acidic.
OilinessIn the same way that lemon cuts through the oiliness of smoked salmon, acidic wines work well with oily and fatty foods by cutting through the richness.
Chilli HeatWhen you put chilli heat and tannin together, they accentuate each other, making the food seem spicier and the wine more tannic and alcoholic. Chilli heat can also make a wine taste less sweet and fruity.
SweetnessSweetness in food can make a wine taste drier, so when it comes to desserts, it’s a good idea to make sure the wine is sweeter than the food. Sweet wines are also a good contrast for salty foods, for example, try pairing blue cheese with Sauternes (a sweet dessert wine from Bordeaux in France).
Local food likes local wineIn many regions of the world, traditional foods have developed alongside the local wine styles, which is why regional dishes are often best paired with wine from the same region. Try for example, Chianti with a big bowl of Tuscan pasta, or dry Fino Sherry with salty tapas.
Food and wine matching is an excellent opportunity to sell wine. It can create a more enjoyable experience for your customers as well as encourage them to trade up. However, the whole subject of food and wine matching can be a minefield to navigate.
The most important thing to remember is there are no set rules – and the customer is always right, even if they like drinking vintage Port with oysters.
That said, here are a few simple guidelines that will help you create your own perfect matches:

and new businesses opened or working on.
Catch up on emails, and build up some customer pricing – at ViVAS we do not blanket price or use set ranges, each range is built up with
the customer to suit their individual outlet.
Luckily I live in Central London, therefore travel time is never too long for me. I pick up any wines needed for tasting from the fridge
and leave for the day.
Arrive at Strand Palace Hotel: Current client, check in with the Food & Beverage Manager, ensure he is happy with service and talk to him about
any new products and promotions we are running.
Meet with one of the Business Managers and visit one of their customers who don’t currently buy alcohol from Bidvest. We discuss what ViVAS has
to offer and agree a second meeting. I take a copy of their menu to price similar products for our next meeting.
We leave the meeting and the Business Manager and I walk around the immediate area and visit possible ViVAS venues.
A phone call from one of the Business Managers asking me when I am free to visit a potential new ViVAS customer the following week.
Travel to Kensington to a new wine opportunity for a second meeting before going to a Wine Tasting.
Speak with Restaurant Manager about pricing I sent through previously and if there is any more information needed or anything I can do to “Seal the
Deal” in getting the venue to start trading with us.
Arrive at a wine tasting and speak with the General Manager; we met on a few occasions prior and have been corresponding about wine pricing and
service. I have come to introduce the new wines to the Restaurant Team and to conduct a training with the Team before the new wine list goes live.
We work through the wines that will be on the menu and taste them with a number of fruits and spices; we also discuss which wines would work with
which dishes on their menu.
Follow up with any leads acquired during prospecting quickly ensuring nothing forgotten. Call any other clients or potential clients to arrange
meetings for next week. Admin at the end of the day including new wine pricing, supporting Business Manager’s in their questions, fill out expenses.
Finish for the Day – as it’s Friday maybe a Glass of Wine!!
Travel back home from Kensington
Arrive at Bidvest foodservice HQ and pick up various emails and admin to get up to speed for the day.
Meet with Sarah Sangster, our Beers and Spirits buyer, to discuss supplier updates, catch up on various current projects and make plans for our various supplier meetings later in the day.
Catch up with our B2B team and ensure that all promotional activity booked in is fit for purpose and all ready to go.
First supplier meeting with a leading cider supplier to discuss new products, promotional activity and some new point of sale items that they have to offer, Cider is a key category and we are growing our 30 strong product lines by supporting the customer base with price and POS – check out some of the new additions for this year!
Next supplier meeting with a leading beer supplier to look at some new brands that they have recently acquired. Follow up on some recent promotional activity we have run and plan in further promos based on its success.
Supplier meeting with one of our top 3 spirits suppliers to discuss support in national accounts, new products, and future promotional activity planned in. We pride ourselves on our wide range of spirits and our great relationships with the suppliers our customers get great price along with loads of support.
Final supplier meeting of the day with another one of our spirits suppliers to talk through a transition of brands, some future planned in telesales activity and a review of future point of sale items that we are able to make available for our customers.
Conference Call with our marketing agency to discuss the next monthly deals brochure layout and brands featured.
Catch up with the wider commercial team in regards to some future trade events that ViVAS form part of.

Promotions: to take advantage of any promotion, your delivery date must be between the advertised effective dates of the promotion.9. Minimum Delivery: Your order must be for at least £150 (ex-VAT). If you order is less than £150 consistently over a 6 month period, we may make an additional delivery charge and we would notify you of this when you place your order. 10. Splitting Charges: If you wish we are able to split many original cases. In some instances a minimum split quantity may apply and we may make an additional charge for split cases. 11. Last Orders: Unless we advise otherwise, orders must be received before 2.00 p.m. on the day prior to delivery.
DELIVERING YOUR ORDER12. Delivery: Delivery will be to the address that you give to us when you register for your trading account. We will make the delivery only to an adult (18 years of age or over). The delivery date and time which we arrange with you, are approximate only and other than as is set out at 18 below, we will not be liable for any cancelled or delayed delivery. You must ensure that there is an adult at the delivery address to sign for the delivery during the agreed date and time.13. Risk/Ownership: All risks in the goods will pass to you on delivery – it is your responsibility alone to store the goods safely, legally and correctly when delivered to you. Ownership of the goods delivered will remain with us until our receipt of full payment from you of all sums outstanding to us.14. Shortages: Please check your delivery with our driver as claims for shortages must be made at the time of delivery. 15. Returns: Damaged goods with the proof of delivery may be returned for full credit. For frozen/chilled goods this must be done at the time of delivery only and for all other goods on the day of delivery.16. Cages/Pallets: Roll cages, pallets and tote boxes remain our property at all times. We may charge for any items left at your premises at your request which are not returned or are lost.
PAYMENT17. Paying: Your account must be settled by the 16th of the month following invoice date and sent to the statement address. If your account is in arrears, we may withhold further supplies. 17. Refunds: If you have paid for goods in advance using a credit/debit card, your refund will be the credit/debit card account used and you will receive a confirmatory email of the refund within 7 days of the refund being agreed with us.
OUR COMMITMENT 19. Warranties: All goods offered for sale are warranted to be of the nature, substance and quality described and to comply with all statutory requirements from time to time in force relating to the sale of food (so far as applicable to such goods). 20. Durability: Most food product with a life from manufacture of 12 months or less must by law be dated either by ‘Best Before’ or a Use By Statement’.
We endeavour to ensure that all dated stock has an optimum remaining life when we sell it to you. Please check the durability dates at time delivery as we are unable to accept returned products relating to date coding after the time of delivery.
OUR LIABILITY 21. We accept unlimited liability for personal injury or death arising from our negligence and for all other matters for which it is unlawful for us to limit our liability under English law. We will not be liable to you whether in contract, tort (including negligence) or breach of statutory duty for any: (a) loss of profit, loss of business or business opportunity, loss of contract, loss of goodwill, management time; or (b) any special, indirect or consequential loss. Other than this, our liability arising out of any order by you for the supply of goods to you will be limited to the price of the goods in that order.22. We do not accept liability for any failure to perform or delay in performance caused by events outside of our reasonable control (such as strikes, trade disputes, accident, breakdowns, shortages affecting us or our usual sources of supply or our means of delivery of the goods).
INTELLECTUAL PROPERTY23. Copyright and all other intellectual property rights in all materials shown in our lists and/or on our website (including in any images or product data and/or pricing) shall remain at all times our property and you will not acquire any rights to such materials or be entitled to use them except as is expressly provided in these trading terms.
LAW24. The contract and any claims arising in connection with it shall be governed by English law and any dispute between us will be resolved in the English courts.
PRIVACY25. We may for the purposes of our business of foodservice, collect and store the names, contact details and other relevant personnel within your organisation. Please refer to our Privacy Policy which applies to our storage and use of such information.26. We may listen to your call to assist with ongoing training and development of our staff with the aim of giving you the best possible service.
