INTRODUCTIONS
WHAT IS COFFEE: FROM FRUIT TO SEED
Fruit on shrub-like trees that grow between
the Tropic of Cancer & Capricorn.
Cherries are picked from the trees & processed to
separate the seed from the fruit.
Roasting: the sugars within the bean get caramelized to
produce aromatic brown beans.

WHAT IS EXTRACTION?
• During coffee brewing, the soluble solids within coffee grinds dissolve into water (solvent).
• ~30% of coffee is soluble in water
• Ideal extraction: 18-20% of soluble solids results in a good brew
• More: Over-extracted and tastes bitter
• Less: Under-extracted and tastes sour
BEFORE THE BREW
Get freshly roasted whole beans
Store in a cool, dry, dark place
Buy a burr grinder for a consistent grind
DURING THE BREW
Water temperature195 - 205 F(30s off boil)
